Epitélio intestinal de juvenis de pacu (Piaractus Mesopotamicus, Holmberg 1887) e dourado (Salminus brasiliensis, Cuvier 1816) alimentados com dieta contendo colostro bovino liofilizado / Intestinal epithelium of pacu (Piaractus mesopotamicus, Holmberg 1887) and dourado (Salminus brasiliensis, Cuvier 1816) juveniles fed diet containing lyophilized bovine colostrum

O objetivo deste trabalho foi avaliar o efeito do colostro bovino liofilizado (CBL), utilizado como fonte parcial da dieta protéica, sobre as características histológicas do epitélio intestinal de juvenis de pacu (Piaractus mesopotamicus) e dourado (Salminus brasiliensis). Os juvenis foram distribuídos num delineamento experimental inteiramente casualizado em esquema fatorial 3x2. Foram utilizadas dietas com três níveis de inclusão de CBL (0%, 10% e 20%) e dois períodos experimentais (30 e 60 dias), oferecidas duas vezes ao dia até a saciedade aparente. Para o estudo histológico, o intestino foi dividido em três segmentos, S1, S2 e reto para pacu e S1, S2 e intestino posterior para dourado. Foram avaliadas a espessura da camada muscular; o volume parcial da mucosa absortiva (Vv); o número das células caliciformes contendo mucinas ácidas e neutras e totais, e os subtipos ácidas - sialomucinas e sufomucinas. Nos juvenis de pacu, a inclusão de 20% de CBL alterou a distribuição das células caliciformes contendo as mucinas ácidas, neutras e totais, os subtipos sialomucinas e sulfomucinas, e a espessura da camada muscular, enquanto o Vv foi afetado apenas pelo período experimental. Nos juvenis de dourados, efeito de período experimental foi observado para células caliciformes contendo mucinas ácidas, neutras e totais e os subtipos sialomucinas e sulfomucinas, espessura da camada muscular e Vv. A adição de 10% de CBL afetou apenas o Vv no segmento S1. Considerando os aspectos avaliados no presente estudo, a presença do colostro bovino liofilizado na dieta influenciou, no período estudado, as características histológicas entéricas de juvenis de pacu, enquanto que nos juvenis de dourado influencia desta secreção láctea não foi observada. / The aim of this study was to evaluate the effect of lyophilized bovine colostrum (LBC), used as partial source of protein in the diet, on the histological characteristics of the intestinal epithelium of juvenile pacu (Piaractus mesopotamicus) and juvenile dourado (Salminus brasiliensis). Juveniles were distributed in a completely randomized design in a factorial scheme 3x2. Three diets were used with different levels of LBC inclusion (0%, 10% and 20%) and two experimental periods (30 and 60 days) offered twice daily until apparent satiation. For the histological study, the intestine was divided into three segments, S1, S2 and rectum to the pacu and S1, S2 and posterior intestine to the dourado. The muscle layer thickness; the mucosal absorptive volume (Vv); the number of goblet cells containing acidic and neutral mucins and the acidic subtypes - sialomucin and sulphomucin were evaluated. In juvenile pacu, the inclusion of 20% of LBC changed the distribution of goblet cells containing acidic, neutral and total mucins, the subtypes sialomucins and sulphomucins, and the thickness of the muscle layer, while the Vv was affected only by the experimental period. In juvenile dourado, effect of experimental period was observed for goblet cells containing acidic, neutral and total mucins and subtypes sialomucins, sulphomucins, thickness of muscle layer and Vv. The addition of 10% of LBC affected only Vv in the segment S1. Considering the aspects studied, the presence of lyophilized bovine colostrum in the diet influenced, in the period studied, the enteric histological characteristics of juvenile pacu, while the juvenile dourado influence of this lacteal secretion was not observed.

Dançando, sentindo, pensando, amando... : o consumo de filmes por críticos de cinema e cinéfilos em Porto Alegre

Os críticos de cinema são vistos como figuras próximas da elite cultural, gostando de filmes que a maior parte das pessoas não gosta e tendo um gosto que por vezes não se assemelha aos de seus consumidores. Os cinéfilos ou apaixonados por cinema são consumidores vorazes de filmes que buscam estar sempre assistindo uma produção, conversando sobre filmes, buscando informações. Nesse caso discute-se a possibilidade que esses mediadores entre produção e consumo e esses consumidores mais entusiasmados pelo cinema tenham práticas de consumo semelhantes e tenham visão semelhante sobre como apreciar esse produto. Com base em estudos de hierarquização cultural, consumo de cultura popular e de massa, crítica e cinefilia esse estudo busca compreender se os hábitos de consumo de críticos de cinema – considerados pelo Marketing como auxiliares na hora de um consumidor escolher um produto – e dos cinéfilos – consumidores em quantidade e variedade de filmes – compartilham das mesmas visões e se o que caracteriza um grupo caracteriza o outro ou não. Para responder isso fizemos 19 entrevistas em profundidade com críticos e 16 com cinéfilos na região de Porto Alegre. Há bastantes semelhanças na forma como tratam o cinema, em especial com relação à maneira como assistem ao filme e o quanto buscam de informações antes de ver um filme. Os críticos acreditam no seu papel como aumentando a conversa e reflexão sobre um filme, mas entendem que muitas vezes são utilizados como uma fonte de informação sobre o filme. Cinéfilos buscam menos entender de detalhes técnicos e possuem uma visão mais negativa com relação aos grandes lançamentos. Ambos os críticos de cinema e cinéfilos consomem de todos os tipos de filmes, reforçando o consumo onívoro por parte dos mesmos, mas os críticos sabem explicar mais porque veem todos os tipos de filmes. Em linhas gerais, os críticos de cinema precisam saber mais de filmes diversos porque precisam expor esse conhecimento ao passo que cinéfilos podem se aprofundar em um tipo de filme. Ambos os grupos acreditam que possuem uma experiência mais completa e que assistem filmes mais desafiadores do que a maioria das pessoas. Os cinéfilos são mais negativos em falar do tipo de filme que tem grande bilheteria e é apreciado por uma grande parte de espectadores. Film buffs or passionate about film are voracious consumers of films always seeking to watch a motion picture, talking about movies, searching for information. In this paper we discuss the possibility that these mediators between production and consumption and those most enthusiastic consumers have similar cinema consumption practices and have similar views on how to enjoy this product. Drawing upon studies of cultural hierarchy, popular culture, criticism and cinephilia this study has the aim of understanding whether the habits of film critics - considered by Marketing as assistants for a consumer to choose a product - and film buffs or cinephiles - consumers in number and variety of films - share the same visions. To answer these questions we made 20 long interviews with critics and 16 long interviews with inhabitants of Porto Alegre area. There are many similarities in the way they treat the cinema, especially with respect to the way they watch the film and how much information they search before seeing a movie. Critics believe in its role as increasing the conversation and reflection on a movie, but they understand they are often used as an information source about the movie. Cinephiles search less understand technical details and have a more negative view in relation to major releases. Both film critics and cinephiles consume all kinds of movies, reinforcing the omnivorous consumption, but critics can explain more because they see all kinds of movies. In general, film critics need to know more about many films because they need to expose this knowledge while movie buffs can delve into a type of film. Both groups believe they have a richer experience and they watch most challenging films than others moviegoers. Film buffs are more negative in talking about the kind of movie that has big box office and is appreciated by a large number of spectators. Sometimes these cinephiles consumed these auteur movies as a way to show more cultural capital, but often they were not able to use this knowledge in their social networks.

Fishes and floods: stream ecosystem drivers in the Great Plains

Gido / Global climate change could lead to less frequent but more severe precipitation events in the Great Plains, altering the hydrologic regimes of streams. It is important to quantify species roles in these dynamic systems, because changes in stream communities are likely to accompany predicted changes in hydrology. The effects of species on ecosystem processes also are limited by the frequency of disturbance, because prairie streams are harsh, nonequilibrium systems characterized by a wide range of disturbances. In particular, frequent floods that reset the ecosystem to an early successional state can override the influence of consumer populations because the availability of resources is too unpredictable to maintain stable populations of those species or because species are absent following the flood. As flood frequency decreases, potential consumer effects may intensify. Using a combination of field and experimental stream mesocosm experiments, I (1) characterized the ecosystem effects of southern redbelly dace (Phoxinus erythrogaster), a grazing minnow, (2) tested the interactive effects of flood frequency and the presence of water column (red shiner; Cyprinella lutrensis) or grazing minnows (Phoxinus) on ecosystem processes, and (3) tested the effects of species loss from the grazer functional feeding group on stream ecosystem structure and function. I found that dace affected some aspects of ecosystem structure but not function, which suggested that grazer effects in prairie streams may not be consistent across taxa. In the context of flood frequency, both the water column omnivore and dace affected recovery of prairie stream primary producers following flooding disturbance by stimulating production, presumably through nutrient remineralization. However, some of these effects were transient or dependent on flood frequency, and my results indicate that consumer effects depend not only on environmental venue but also on the balance between consumptive losses and nutrient stimulation. In a comparison of the effects of removing different taxa from a grazer assemblage, the loss of crayfish, snails, or dace from a grazer assemblage did not differentially affect ecosystem processes, suggesting overlap in the ecosystem roles of these species in the context of this experiment.

Digestibilidade aparente de resíduos de frutas para o tambaqui (Colossoma macropomum)

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES / The objective of this study was to determine the apparent digestibility coefficient (ADC) of dry matter (DM), crude protein (CP) and ethereal extract (EE) from fruit processing residues to tambaqui (Colossoma macropomum). The fruits residues tested were guava, mango and two types of acerola, being named acerola I (residue obtained from the second stage of pulp processing) and acerola II (residue of the first stage of the pulp processing). A reference diet and four test diets were formulated, the diets with the ingredients tested were composed of 70% 27 reference diet and 30% test ingredient, all diets were incorporated with 0.5% chromium oxide III (Cr2O3), as an external marker. Tambaqui juveniles were used (n=40) of 63.5 ± 2.68 g and 52 15.25 ± 0.65 cm (mean ± SD), distributed in five conical tanks (100 L). The experimental design was in blocks with three repetitions per time. The ADC of the tested ingredients showed a difference (P <0.05) with respect to DM, and the mango residue with the highest value 72.78 ± 24.62%. There was no difference for CP with values between 75.44 ± 7.40 for mango and 84.71 56 ± 4.77 % for acerola II, the EE differed (P <0.05) with the highest ADC for acerola I 73.76 ± 57 1.83 and mango 75.86 ± 10.45 %. The results showed that tambaqui takes advantage of the nutrients present in the fruit residue tested, which makes it possible to use them in their diet. / O presente estudo teve como objetivo determinar o coeficiente de digestibilidade aparente da matéria seca (MS), proteína bruta (PB) e extrato etéreo (EE) dos resíduos do beneficiamento de frutas para o tambaqui (Colossoma macropomum). Os resíduos de frutas testados foram goiaba, manga e dois tipos de acerola, sendo nomeados de acerola I (resíduo obtido a partir do segundo estágio de despolpamento) e acerola II (resíduo do primeiro estágio do despolpamento). Foram formuladas uma ração referência e quatro rações teste. As rações com os ingredientes testados foram constituídas de 70% da ração referência e 30% do ingrediente teste, todas as rações foram incorporadas com 0,5% de óxido de cromo III (Cr2O3), como marcador externo. Foram utilizados juvenis de tambaqui (n=40) com 63,5 ± 2,68 g e 15,25 ± 0,65 cm (média ± desvio), distribuídos em cinco tanques de fundo cônico (100 L). O delineamento experimental foi em blocos casualizados com três repetições por tempo. Os CDA dos ingredientes testados demonstraram diferença (P<0,05) com relação a MS, sendo o resíduo de manga com o maior valor 72,78 ± 24,62 %. Digestibilidade aparente de resíduos de frutas para o tambaqui (Colossoma macropomum)

Coordenação de Aperfeiçoamento de Pessoal de Nível Superior - CAPES / The objective of this study was to determine the apparent digestibility coefficient (ADC) of dry matter (DM), crude protein (CP) and ethereal extract (EE) from fruit processing residues to tambaqui (Colossoma macropomum). The fruits residues tested were guava, mango and two types of acerola, being named acerola I (residue obtained from the second stage of pulp processing) and acerola II (residue of the first stage of the pulp processing). A reference diet and four test diets were formulated, the diets with the ingredients tested were composed of 70% 27 reference diet and 30% test ingredient, all diets were incorporated with 0.5% chromium oxide III (Cr2O3), as an external marker. Tambaqui juveniles were used (n=40) of 63.5 ± 2.68 g and 52 15.25 ± 0.65 cm (mean ± SD), distributed in five conical tanks (100 L). The experimental design was in blocks with three repetitions per time. The ADC of the tested ingredients showed a difference (P <0.05) with respect to DM, and the mango residue with the highest value 72.78 ± 24.62%. There was no difference for CP with values between 75.44 ± 7.40 for mango and 84.71 56 ± 4.77 % for acerola II, the EE differed (P <0.05) with the highest ADC for acerola I 73.76 ± 57 1.83 and mango 75.86 ± 10.45 %. The results showed that tambaqui takes advantage of the nutrients present in the fruit residue tested, which makes it possible to use them in their diet. / O presente estudo teve como objetivo determinar o coeficiente de digestibilidade aparente da matéria seca (MS), proteína bruta (PB) e extrato etéreo (EE) dos resíduos do beneficiamento de frutas para o tambaqui (Colossoma macropomum). Os resíduos de frutas testados foram goiaba, manga e dois tipos de acerola, sendo nomeados de acerola I (resíduo obtido a partir do segundo estágio de despolpamento) e acerola II (resíduo do primeiro estágio do despolpamento). Foram formuladas uma ração referência e quatro rações teste. As rações com os ingredientes testados foram constituídas de 70% da ração referência e 30% do ingrediente teste, todas as rações foram incorporadas com 0,5% de óxido de cromo III (Cr2O3), como marcador externo. Foram utilizados juvenis de tambaqui (n=40) com 63,5 ± 2,68 g e 15,25 ± 0,65 cm (média ± desvio), distribuídos em cinco tanques de fundo cônico (100 L). O delineamento experimental foi em blocos casualizados com três repetições por tempo. Os CDA dos ingredientes testados demonstraram diferença (P<0,05) com relação a MS, sendo o resíduo de manga com o maior valor 72,78 ± 24,62 %. Risco cardiovascular entre vegetarianos e onívoros: um estudo comparativo

Sobre esse tema, há considerável evidência epidemiológica sugerindo que a alimentação vegetariana está associada ao baixo risco para essas doenças, em particular para as doenças cardiovasculares (DCVs). Para a avaliação do risco cardiovascular (RCV) em vegetarianos (VEGs) e onívoros (ONIs), foi realizado estudo de coorte histórico com 201 indivíduos (35 a 64 anos). Foram incluídos na pesquisa 67 VEGs há no mínimo cinco anos, provenientes da Grande Vitória e 134 ONIs do Projeto MONICA/WHO/Vitória, pareados por classe socioeconômica, sexo, idade e raça/etnia. Dados dietéticos de três recordatórios de 24 horas, medidas antropométricas, bioquímicas e hemodinâmicas foram obtidos na Clínica de Investigação Cardiovascular da UFES. O consumo estimado de Na+e k+ foi determinado pela coleta de urina de doze horas no período noturno. Para comparação de proporções, foi usado o teste X2 e, para médias, o teste t de Student. Foi calculado o risco relativo e quantificado o risco cardiovascular por meio do algoritmo de Framingham. A idade média do grupo foi 47+8 anos e o tempo médio de vegetarianismo 19+10 anos, sendo a dieta ovolactovegetariana seguida por 73% dos VEGs. A maioria dos participantes pertencia às classes B e C e a religião predominante foi a de Adventistas do Sétimo Dia. VEGs relataram menor ingestão de proteínas e gorduras de origem animal e maior de carboidratos e fibras. Pressão arterial, glicemia de jejum, colesterol total, LDL-c e triglicerídeos foram mais baixos entre os VEGs (P<0,001) e o risco de hipertensão foi aproximadamente 6,5 vezes maior entre os ONIs (IC95% 2,7-15,4; P<0,001). O HDL-c não foi diferente entre os grupos. Índice de Massa Corporal > 30kg/m2 (obesidade) não foi identificado em nenhum VEG. Entre os ONIs, 20% apresentaram obesidade e 38% sobrepeso. Na+ e Na/K também foram menores entre os VEGs, assim como a razão cintura/quadril. De acordo com o algoritmo de Framingham, os VEGs apresentaram menor RCV (P<0,001). A alimentação onívora desbalanceada, com excesso de proteínas e gorduras de origem animal, pode estar implicada em grande parte no desencadeamento de DCNTs, em especial na hipertensão, diabete e obesidade. / The increase in Non-transmittible Chronic Diseases (NTDCs) has been associated to changes in lifestyle, mainly those related to eating and sedentary habits. On this theme, there is considerable epidemic evidence suggesting that vegetarian eating habits are associated to the low risk from these diseases, especially cardiovascular diseases (CVDs). For the evaluation of the cardiovascular risk (CVR) in vegetarians (VEGs) and omnivores (ONIs), a historical cohort study was done with 201 individuals (aged from 35 to 64 years). They were included in the 67 VEGs study for the past five years, from Greater Vitória, and 134 ONIs from the Project MONICA/Vitória, based on socioeconomic class, sex, age and race/ethnic group. Dietary data from three 24 hour-records which measured anthropometrics, biochemistries and hemodynamics were obtained at the UFES Cardiovascular Investigation Clinic. The estimated consumption of Na+ e k+ was determined by twelve-hour urine collection during the night period. The X2 test was used for comparison of proportions and the Student test t for averages. The relative risk was calculated and quantified the cardiovascular risk by Framingham algorithm. The group average age was between 47+8 years and the average vegetarianism time of between 19+10 years, being an ovolactovegetarian diet followed by 73% of VEGs. Most of the participants belonged to the classes B and C and the predominant religion was the Seventh Day Adventist. VEGs ingested less protein and animal fats and more carbohydrates and fibers. Blood pressure, fasting glucemia, total cholesterol, LDL-c and triglycerides were lower among VEGs (P < 0,001) and the hypertension risk was approximately 6,5 times greater among ONIs (IC95% 2,7-15,4; P < 0,001). The HDL-c was not different among the groups. Corporal Mass Index > 30kg/m2 (obesity) was not identified in any VEG. Among ONIs, 20% presented obesity and 38% overweight. Na+ and Na/K were also smaller among VEGs, as well as the waist/hip reasoning. In agreement with the Framingham algorithm, VEGs presented smaller RCV (P < 0,001). The unbalanced omnivores eating habits, with protein excess and animal fats can largely be blamed for NTDCs unlocking, especially in hypertension, diabetes and obesity.

The Effects of Red Meat Consumption Within a Healthy Dietary Pattern on Cardiovascular Risk: the Importance of Gut Microbiota

<p>Accumulating evidence from randomized-controlled, full-feeding trials suggests neutral to beneficial effects of consuming lean and unprocessed red meat within a healthy dietary pattern on cardiovascular health. It is unclear how red meat interacts with the dietary pattern and the host in mediating its health effects. The gut microbiome provides a novel perspective in understanding the diet-host relationship for its abilities to metabolize dietary components including those within red meat and influence cardiovascular health. Prior to starting our study, we identified a lack of evidence in the English literature for the effects of consuming lean red meat, in unprocessed or processed forms, on gut microbiota in the context of a controlled healthy dietary pattern. Our findings presented in this dissertation demonstrate differential effects of consuming unprocessed versus processed red meat on gut microbiota. Consistent with previous research, we observed cardiovascular improvements induced by the healthy dietary pattern independent of lean red meat intakes among young adults with apparently healthy cardiovascular profiles. Importantly, with three intervention periods, we found consistent and reproducible changes in both gut microbiota and cardiovascular risk factors when repeatedly adopting and abandoning a healthy dietary pattern. Collectively, findings in this dissertation highlight the importance of gut microbiota in potentially mediating or responding to diet-induced cardiovascular improvements. Future research should investigate the changes in the function of gut microbiota induced by healthy dietary patterns containing red meat. Studies assessing the unique food matrix of processed versus unprocessed animal- or plant-based protein-rich foods are also warranted. Additionally, dietary strategies should focus on promoting healthy dietary modifications and enhancing dietary adherence for long-term cardiovascular benefits. </p>
