Optimisation des paramètres de production et de conservation de la farine de Taro (Colocasia esculenta) / Optimization of production and storage parameters of taro flour (colocasia esculenta)

L’étude de l’optimisation des paramètres de production et de conservation de la farine de taro (Colocasia esculenta) a permis de mieux comprendre le processus cuisson des tubercules et de conservation des farines. Les études de cuisson des tubercules de six variétés ont montré que la variété Ibo coco est celle qui cuit vite eu égard à ses bonnes propriétés thermiques. La cuisson des tubercules dans l’eau du robinet est la meilleure technique de cuisson comparativement aux cuissons, à la vapeur, dans les solutions acides de citron et de tamarin. Les études de détermination des conditions optimales de séchage et conservation de la farine de taro, en utilisant un vieillissement accéléré à 10 et 20 jours de stockage à 45°C à des activité en eau de 0,07 ; 0,11 ; 0,23 ; 0,33 ; 0,53 ont permis de montrer que le vieillissement après 10 jours de stockage était suffisant pour les analyses. De plus l’application du modèle BET lors des mesures des isothermes de sorption, a permis de déterminer les teneurs en eau mono moléculaires théorique et expérimentale. Les farines produites à la teneur en eau mono moléculaire, donnent une pâte ayant des caractéristiques texturales proches de celles de la pâte traditionnelle. Toutefois, la conservation de ces farines à différentes fractions particulaires (75, 150 et 250 µm) montre que les petites fractions particulaires (75 µm) absorbent plus vite de l’eau que les autres fractions particulaires et sont de ce fait plus susceptibles à la détérioration / Study on optimization of production and storage parameters of the taro (Colocasia esculenta) flour permitted to better understanding the cooking process of taro tubers and storage of taro flours. Studies of cooking of six varieties of tubers showed that the variety Ibo coco had high rate of cooking, due to his good thermal properties. The cooking of tubers in the faucet water is the best technique of cooking compared to, steam cooking, lemon and tammarin cooking. Studies of determination of the optimal conditions of drying and storage of the taro flour, using an accelerated ageing to 10 and 20 days of storage at 45°C to the activity in water of 0,07; 0,11; 0,23; 0,33; 0,53, showed that the ageing after 10 day of storage was sufficient for analyses. Besides the use of the BET model on sorption isotherms, permitted to obtain values of theorical and experimental monolayer water. Flours produced at this monolayer water, give dough with the textural characteristics near of those of traditional dough. However, the storage of these flours with different particle sizes (75, 150 and 250 µm) shown that the small particle size (75 µm) absorb water quickly than other flours, and they are more susceptible to the deterioration

An Experimental Investigation of the Hardenabilities Tensile and Fracture Properties of Powdered Metal Steels

Powder metallurgy (PM) steel is produced by near net shape manufacturing, which is used to fabricate alloy steels for many purposes. Designing new powder metal steels that can form a significant fraction of martensite relies on hardenability calculations developed for wrought steels. These proven tools are built upon assumptions for wrought steels that do not hold true for PM steels. One assumption is that the alloying elements are homogenized throughout the material. In admixed powder blends that are industrially sintered this is not the case. Using prealloyed powder is a solution to this issue, yet it places restrictions on alloy design and compressibility. There are tools available to computationally optimize diffusion problems, yet the complexity during the sintering of PM steel is such that a robust model has yet been produced. It is intuitive that with smaller particles of Fe sintering time can be reduced. A direct experimental investigation linking Fe-powders’ sizes and hardenability on Fe-C-Cr-Mn-Mo-Ni PM steel was subject to microstructure analysis and mechanical properties (Jominy test) for comparative analysis. Another assumption that is made for wrought steel is a consistent density of 7.87g/cm3. This is not the case for PM steel as the press and sinter method produces pores, decreasing the density. This directly affects the thermal conductivity and phase transformation of the steel. In an effort to understand how these differences affect Grossmann’s predictions of hardenability, a direct experimental investigation linking the density to hardenability was launched on prealloyed FL-4605 and FL-4605+2%Cu. Specifically the Jominy test was completed on a range of densities, as well as compared to software predictions. The chemical variations in admixed and sintered PM steel produce a unique system where one TTT diagram cannot predict the entire final microstructure. PM steel such as this is observed in industry, and can be created through incorporating larger Fe-particles such that less alloying constituents have a chance to fully alloy these regions. Since the large particles will not have the chance to be alloyed, they will not have the ability to form martensite. Since the regions between large particles will be alloyed, martensite will form, creating a hard matrix surrounding softer particles. This structure is characteristic of a metal matrix composite (MMC), and therefore should be treated as such. There are methods of MMC design that involve numerical methods of predicting strength and toughness. These methods, along with experimental data (tensile and Charpy testing) of Fe-C-Cr-Mn-Mo-Ni PM steels with ranging volume fractions of pearlitic inclusions were compared. / Thesis / Master of Applied Science (MASc)

Classes granulométricas e modo de aplicação de calcário na cultura do milho / Size classes and ways of applying lime to corn crop

The lime presenting a particle size larger than 0,3 mm corrects soil acidity and enables soil residual effect whereas the finely ground lime presents a lower residual effect, however; it promotes soil acidity correction and can percolate in the layer correcting subsoil acidity. This study aimed at clarifying chemical alterations in the soil applying lime following two procedures: i)incorporation of limestone presenting particle size larger than 0.3 mm and; ii) finely ground limestone onto the soil surface. Both liming strategies were performed at corn crops harvested in 2008/2009 and 2009/2010. The experiments were assembled into randomized blocks with four repetitions using dystroferric Red Latosol. The incorporated dolomitic lime particle sizes were as follows: 0.20 mm to 0.30 mm; 0.30 mm to 0.56 mm; 0.56 mm to 0.82 mm and 0.82 mm to 2.00 mm, at doses of 1.3; 2.6; 3.9 e 6.5 t ha-1 respectively. The lime particle sizes applied onto soil surface were as follows: 0.30 mm to 0.20 mm; 0.20 mm to 0.10 mm; 0.10 mm to 0.05 mm and 0.05 mm to 0.01 mm, at the dose of 1.3 t ha-1, a control treatment (with no lime) was the same for both experiments. Chemical attributes of the soil, root attributes, leaf nutrients and corn yield were assessed at two crops 2008/2009 and 2009/2010. The results demonstrated that by using higher doses of lime with less reactive particle sizes, i.e., larger than 0.30 mm, it was possible to correct the soil in the same way as using lime with 0.20 mm to 0.30, and with residual effect on the second year of research. The use of lime with particles of 0.30 to 0.20 applied onto soil surface reduced exchangeable Al and increased the levels of Ca and Mg within the soil profile. The use of lime presenting particle size larger than 0.82 mm and at the quantity of 6.5 t ha-1 applied and incorporated onto the soil evidenced root lengthening of the corn at the layer of 20-40 cm of depth in the soil. There was higher corn yield on the first year using the same particle size. Regarding the second crop, there was no difference concerning corn yield among lime particle sizes incorporated to the soil. Corn yield was not influenced by the use of finely ground lime onto the soil at both assessed crops. The level of corn leaf nutrients were influenced by the use of lime of different particle sizes incorporated and superficially applied to the soil. The root lengthening at the layer of 20-40 cm of depth was greater when there was the use of lime particle sizes between 0.30 mm and 0.20 applied to soil surface. Root attributes assessed at corn crop with the use of lime with different particle sizes correlated with leaf levels of Cu on the first year, and of K and Ca on the second year. There was a correlation between the length of the roots and corn yield on the second year as well. The use of finely ground lime onto soil surface promoted a significant correlation between root mass and the level of Mn in the corn leaves on the first year. / A granulometria do calcário é essencial na correção do solo, pois define sua reatividade devido à baixa solubilidade deste material. O calcário com granulometrias maiores de 0,3 mm corrige a acidez do solo e proporciona efeito residual no solo enquanto o calcário finamente moído tem menor efeito residual, mas sua aplicação na superfície do solo promove a correção da acidez do solo e pode percolar no perfil corrigindo a acidez no subsolo. O objetivo deste trabalho foi elucidar as alterações químicas no solo com duas formas de aplicação do calcário: i) incorporação de calcários com granulometria acima de 0,3 mm e; ii) calcário finamente moído na superfície do solo. Ambas estratégias de calagem foram feitas na cultura do milho e nas safras 2008/2009 e 2009/2010. Os experimentos foram montados em blocos casualizados com quatro repetições em Latossolo Vermelho distroférrico. As granulometrias de calcário dolomítico incorporadas foram: 0,20 mm a 0,30 mm; 0,30 mm a 0,56 mm; 0,56 mm a 0,82 mm e 0,82 mm a 2,00 mm, nas doses de 1,3; 2,6; 3,9 e 6,5 t ha-1 respectivamente. As granulometrias de calcário aplicados na superfície do solo foram: 0,30 mm a 0,20 mm; 0,20 mm a 0,10 mm; 0,10 mm a 0,05 mm e 0,05 mm a 0,01 mm, na dose de 1,3 t ha-1, um tratamento controle (sem calcário) foi comum para os dois experimentos. Os atributos químicos do solo, atributo radiculares, a nutrição foliar e a produtividade do milho foram avaliados em duas safras 2008/2009 e 2009/2010. Os resultados mostram que utilizando maiores doses de calcário com granulometrias menos reativas, ou seja, maior que 0,30 mm, corrigiu o solo igualmente quando utilizado calcário com 0,20 mm a 0,30 mm, e com efeito residual no segundo ano de pesquisa. O uso de calcário com partículas de 0,30 mm a 0,20 mm aplicado na superfície do solo reduziu Al trocável e aumentou os teores de Ca e Mg no perfil do solo. O uso de calcário em granulometria maior que 0,82 mm, e na quantidade de 6,5 t ha-1 aplicado e incorporado ao solo evidenciou o alongamento das raízes de milho na camada de 20-40 cm de profundidade no solo. Nessa mesma granulometria foi encontrada a maior produtividade de milho no primeiro ano. Já na segunda safra não houve diferença para a produtividade de milho entre as granulometrias de calcário incorporados no solo. A produção de milho nas duas safras avaliadas não foi influenciada pelo uso de calcário finamente moído na superfície do solo. Os teores de nutrientes nas folhas do milho foram influenciados pelo uso de calcário em diferentes granulometrias incorporados e aplicados superficialmente no solo. O alongamento das raízes na camada de 20-40 cm de profundidade foi maior quando se utilizou calcário com granulometrias entre 0,30 mm e 0,20 mm aplicado na superfície do solo. Os atributos radiculares avaliados na cultura do milho com o uso de calcário com diferentes granulometrias correlacionaram com os teores folheares de Cu no primeiro ano, e de K e Ca no segundo ano. Nesse segundo ano, também houve correlação entre o comprimento de raízes e a produtividade do milho. O uso de calcário finamente moído na superfície do solo promoveu correlação significativa entre a massa de raízes e o teor de Mn nas folhas de milho no primeiro ano.

Em função da sua composição em carboidratos vem sendo estudado na conversão em biocombustíveis. Porém, a recalcitrância da matriz lignocelulósica dificulta desestruturação do material, com baixa acessibilidade à celulose, influenciando na sacarificação enzimática. Neste contexto, o objetivo deste trabalho foi avaliar o efeito do pré-tratamento ácido diluído (10 %, m/m, 121 °C/30 min) em diferentes granulometrias, 16, 24, 35, 60 mesh e fundo de bagaço e fração externa (contendo epiderme) do colmo de cana-de-açúcar. Cada biomassa de cana-de-açúcar, em diferentes granulometrias, passou pelo pré-tratamento ácido diluído (10 %, m/m, 121° C/30 min). As amostras foram caracterizadas quanto ao seu conteúdo de celulose, hemicelulose e lignina. A área superficial de lignina foi determinada com a adsorção do corante catiônico Azure B em solução de 0,1 g.L-1. A determinação de acessibilidade à celulose foi realizada com corantes Direct Orange (superfície específica externa) e Direct Blue (superfície específica interna). A hidrólise enzimática (15 FPU.g-1 durante 24 h – Cellic Cetec 2 – Novozymes) foi aplicada nos materiais para avaliar o rendimento em glicose. Para o material retido na peneira de abertura 16 mesh, maior tamanho de partículas, a massa recuperada de bagaço foi de 59,81 % e no fundo, menor tamanho de partícula, foi de 53,92 %. A fração externa apresentou as recuperações de massas de 37,12 % e 31,42 %, nas mesmas peneiras. O bagaço e a fração externa apresentaram valores próximos na liberação de xilose. Nos materiais retidos na peneira de abertura de 24 mesh, foi solubilizado 0,27 g.L-1 de xilose no bagaço e na fração externa 0,26 g.L-1. O emprego do corante catiônico Azure B não demonstrou uma maior área superficial de lignina com a diminuição do tamanho de partícula, apresentando a maior área superficial de lignina para o bagaço de 10,98 m2.g-1, e fração externa de 10,21 m2.g-1, no material retido na peneira com abertura de 16 mesh. A determinação de acessibilidade à celulose com os corantes Direct Blue e Direct Orange indicaram com diminuição do tamanho de partículas provocou aumento de acessibilidade à celulose. As frações de menor tamanho de partículas, 60 mesh, apresentaram uma adsorção do Direct Orange 667 mg.g-1 e o Direct Blue 556 mg.g-1 para o bagaço, a fração externa apresentou 833 mg.g-1 na adsorção dos dois corantes. A hidrólise enzimática apresentou uma conversão em glicose no bagaço de 75,41 % e na fração externa 33,69 %, no material retido no fundo, os menores tamanhos de partícula. O uso do pré-tratamento ácido diluído melhora o aumento na acessibilidade à celulose, resultando em melhor ação das enzimas na hidrólise enzimática nos menores tamanhos de partículas 35, 60 mesh e fundo. / Sugarcane bagasse is a by-product of the sugar and alcohol industry, mostly used for cogeneration of thermal and electric energy, through its combustion in boilers. Due to its composition in carbohydrates has been studied in the conversion to biofuels. However, the recalcitrance of the lignocellulosic matrix makes it difficult to disintegrate the material, with low accessibility to the cellulose, influencing the enzymatic saccharification. In this context, the objective of this work was to evaluate the effect of diluted acid pretreatment (10 %, m/m, 121 °C / 30 min) in different granulometries, 16, 24, 35, 60 mesh and background bagasse and fraction (containing epidermis) from the sugar cane stalk. Each biomass of sugarcane, in different granulometries, underwent the pre-treatments diluted acid (10 %, m/m, 121 °C / 30 min). The samples were characterized for their content of cellulose, hemicellulose and lignin. The surface area of lignin was determined with the adsorption of the cationic dye Azure B in solution of 0.1 g.L-1. The determination of accessibility to the cellulose was performed with Direct Orange (specific external surface) and Direct Blue (specific internal surface) dyes. Enzymatic hydrolysis (15 FPU.g-1 for 24 h - Cellic Cetec 2 - Novozymes) was applied to the materials to evaluate glucose yield. For the material retained in the 16 mesh aperture sieve, larger particle size, the recovered mass of bagasse was 59.81 % and in the bottom, smaller particle size was 53.92 %. The external fraction presented the recoveries of masses of 37.12 % and 31.42 %, in the same sieves. The bagasse and the outer fraction presented close values in the release of xylose. In the materials retained in the 24 mesh sieve, 0.27 g.L-1 of xylose was solubilized in the bagasse and in the outer fraction 0.26 g.L-1. The use of the cationic dye Azure B did not demonstrate a larger surface area of lignin with the decrease of the particle size, presenting the highest ASL for the bagasse of 10.98 m2.g-1, and external fraction of 10.21 m2.g -1, in the material retained in the 16 mesh screen. The determination of accessibility to the cellulose with the Direct Blue and Direct Orange dyes indicated with decrease of the particle size caused increase of accessibility to the cellulose. The smaller fraction of particles, 60 mesh, had an adsorption of Direct Orange 667 mg.g-1 and Direct Blue 556 mg.g-1 for the bagasse, the external fraction presented 833 mg.g-1 in the adsorption of two dyes. The enzymatic hydrolysis showed a glucose conversion in the bagasse of 75.41 % and in the outer fraction 33.69 %, in the material retained in the bottom, the smaller particle sizes. The use of dilute acid pretreatment improves the increase in cellulose accessibility, resulting in better enzyme action on enzymatic hydrolysis in the smaller particle sizes of 35, 60 mesh and background.
