A jaca (Artocarpus heterophyllus) é uma fruta que apresenta polpa e semente comestíveis, com ótimo valor nutritivo e qualidade nutricional. Em algumas culturas a jaca é bastante valorizada, sendo considerada um alimento básico. No Brasil, a jaca é subvalorizada, sendo mais aproveitada na fabricação de doces e sua semente, na maioria das vezes, é desprezada ou subaproveitada. O mercado de biscoitos no Brasil tem apresentado crescimento e a utilização de farinhas mistas na produção deste produto, tem sido relatada com boa aceitação no mercado. Ademais, os consumidores têm buscado alimentos que tenham ingredientes considerados saudáveis em sua composição. Em adição a estes consumidores estão os indivíduos que possuem enfermidades e necessitam de uma alimentação adequada, como os diabéticos. O Diabetes Mellitus tipo 2 (DM2) é uma das doenças crônicas não transmissíveis mais prevalentes no mundo atual, caracterizada pelo estado de hiperglicemia resultante da diminuição da ação da insulina em órgãos alvo e de sua secreção reduzida pela célula beta do pâncreas. O indivíduo com diabetes mellitus apresenta intolerância aos alimentos com alto índice glicêmico, como farinhas, batata, mandioca, arroz, etc. por aumentarem rapidamente a glicemia pós-prandial, que esta diretamente relacionada às complicações do diabetes. Uma das dificuldades do paciente com diabetes é manter condições adequadas de alimentação, devido às restrições que a doença impõe, desta forma, a indústria de alimentos tem procurado desenvolver produtos que mais se adequem ao metabolismo do diabético e, ao mesmo tempo, preencha suas necessidades e escolhas alimentares. O objetivo deste estudo foi desenvolver biscoitos amanteigados isentos de açúcar com auxílio da metodologia de superfície de resposta, com farinha de polpa e semente de jaca, e verificar suas propriedades físico-químicas, sua aceitabilidade e seu impacto na glicemia pós-prandial. A adição das farinhas de polpa e semente de jaca provocou aumento no teor de cinzas e fibras, escurecimento nos biscoitos e diminuição no teor de amidos. A adição da farinha de polpa diminuiu o teor de proteínas, enquanto a farinha de semente não provocou alteração deste nutriente. A metodologia de superfície de resposta mostrou que os açúcares presentes nos biscoitos são provenientes, em sua maioria, pela adição da farinha de polpa, assim como, a presença desta farinha deixa os biscoitos mais resistentes à quebra, e a farinha de semente diminui a força de quebra. A fibra solúvel está relacionada à farinha de polpa, enquanto a insolúvel à farinha de semente. O teste de aceitabilidade mostrou que a adição das farinhas de jaca diminuiu a aceitação dos produtos, efeito mais pronunciado com a farinha de semente. O teste de glicemia pós-prandial mostrou que a resposta glicêmica foi semelhante entre os biscoitos, não havendo diferença entre as farinhas de trigo, de polpa ou de semente de jaca. Essa resposta foi verificada em indivíduos com e sem diabetes mellitus. Conclui-se que a indicação de biscoito com farinha de jaca, com relação ao índice glicêmico, é semelhante ao biscoito de farinha de trigo, aos indivíduos com DM2. / The jackfruit (Artocarpus heterophyllus) is a fruit that has edible pulp and seeds, with great nutritional value and nutritional quality. In Brazil, the jackfruit is undervalued, being taken advantage of in the manufacture of sweets and his seed, in most cases, is neglected or underutilized. The biscuit market in Brazil has increased and the use of mixed flours for the production of this product, has been reported with good market acceptance. Furthermore, consumers have sought foods that have ingredients considered healthy in their composition. With, o these consumers are individuals who have disease and need adequate food, such as diabetics. Diabetes mellitus type 2 (DM2) is among of the chronic diseases most prevalent in currently, characterized by hyperglycemia resulting from decreased insulin action in target organs and reduced secretion by beta cells of the pancreas. The individual with diabetes mellitus have intolerance to foods with a high glycemic index, such as flour, potatoes, cassava, rice, etc. Because these kind of food increase postprandial blood glucose, which is directly related to diabetes complications. One of the difficulties of patient with diabetes is able to maintain adequate nutrition due to the disease imposes restrictions. Thus, the food industry has developed products suited to diabetic metabolism and at the same time fill their needs and food choices. The objective of this study was to develop buttery biscuits sugar free with pulp flour and jackfruit seeds with the aid of response surface methodology, and then to check their physicochemical properties, their acceptability and their impact on postprandial blood glucose. The addition of the pulp flour and jackfruit seeds caused increase in ash, fiber content and browning biscuits and decrease in starch content. The addition of the pulp flour decreased protein content, while seed flour resulted in no change of this nutrient. The response surface methodology showed that sugars in biscuits come from, mostly, by adding the pulp flour as well as the presence of this flour makes the biscuits more resistance in the break. On the other hand, the seed flour decreases the force break. The soluble fiber is related to the pulp flour, while the insoluble flour seed. The acceptability test showed that the addition of jackfruit flour decreased acceptance of the products, flour seed presented the most pronounced effect The postprandial blood glucose test showed that glycemic response was similar between the biscuits, with no difference between wheat flour, pulp or jackfruit seeds. This response was seen in individuals with and without diabetes mellitus. In conclusion, the biscuits statement with jackfruit flour, regarding the glycemic index is similar to wheat flour biscuit, individuals with DM2.

Modulation de la phase postprandiale du glucose / Modulation of glucose postprandiale phaseNazare, Julie-Anne 18 December 2009 (has links)
La réduction des excursions glycémiques postprandiales a été proposée comme un moyen pour limiter le risque de développement du diabète de type 2. L’intérêt s’est donc porté sur les outils nutritionnels susceptibles de moduler la biodisponibilité des glucides et ainsi leur impact sur la glycémie postprandiale. Les travaux réalisés au cours de cette thèse avaient pour but d’étudier les effets de différents ingrédients modifiant la biodisponibilité du glucose, non seulement sur la glycémie postprandiale à court terme (2 heures) mais aussi sur les cinétiques du débit d’apparition et de disparition de glucose (total, exogène et endogène - isotopes stables) et les autres paramètres métaboliques de la phase postprandiale au cours de la journée. Dans la première étude (β-glucanes), nous avons montré que l’addition de fibres β-glucanes à un repas glucidique chez des sujets sains en surpoids ralentit l’absorption du glucose dans le plasma. Ceci a prolongé la réponse insulinique et par conséquent l’inhibition de la lipolyse et de la production endogène de glucose. Dans la deuxième étude (Eurostarch), nous avons montré que la diminution de la biodisponibilité du glucose au petit-déjeuner (amidon lentement digestible, index glycémique bas) diminue l’apparition du glucose exogène dans le plasma et pourrait avoir un effet second-repas chez des sujets sains en surpoids. Mais nous n’avons pas mis en évidence d’amélioration de ces effets métaboliques à plus long terme (5 semaines). Dans la troisième étude présentée (Nutriose), nous avons montré que l’addition de dextrine résistante NUTRIOSE®10 (fermentescible) au petit-déjeuner chez des sujets sains, diminue les réponses glycémiques, insuliniques postprandiales et le profil de ghréline au cours de la journée (en comparaison à une maltodextrine). En parallèle, la prolongation observée de la fermentation et l’oxydation du NUTRIOSE®10 pourraient fournir de l’énergie en phase postprandiale tardive. En conclusion, l’analyse des paramètres métaboliques au-delà de 2 heures après le repas, a permis de mettre en évidence les effets métaboliques à plus long terme de la modulation de l’apparition du glucose dans le plasma (ralentissement, prolongation, réduction) sur les cinétiques du glucose, la réponse insulinique, la lipolyse et l’oxydation des substrats / The reduction of the postprandial glycemic excursions has been proposed as to limit risk of type 2 diabetes. There has been growing interest in the development of dietary ingredients that could potentially modulate carbohydrates bioavailability and thus their impact on postprandial glycemia. The aim of this thesis was to investigate the effects of the the modulation of glucose bioavailability by different ingredients on 2-hour glycemic response but also on glucose kinetics (total, exogenous and endogenous – stable isotopes) and on other daylong metabolic parameters. In the first study (β-glucanes), we showed that the addition of β-glucan fiber to a carbohydrate meal in healthy overweight subjects reduced the appearance of glucose in plasma. As a consequence, insulin response was also prolonged and induced a prolonged inhibition on lipolysis and endogenous glucose production. In the second study (eurostarch), the reduction in glucose availability (slowly available glucose, low GI) at breakfast decreased plasma exogenous glucose appearance and tended to improve glucose control at the subsequent lunch. But we did not observe the improvement of such metabolic effects in the long-term (5 weeks). In the last study, we showed that the addition of a resistant dextrin, NUTRIOSE®10, decreased postprandial glycemic and insulinemic response as well as daylong satiety-related ghrelin profile, compared to maltodextrin. In parallel, the prolonged fermentation and oxidation pattern of NUTRIOSE®10 up to 10 hours after ingestion at breakfast could induced an extended energy release with NUTRIOSE®10 in the late postprandial phase. In conclusion, the follow-up of metabolic parameters beyond 2 hours after the meal have highlighted the longer-term metabolic effects of the modulation of glucose appearance in plasma (delay, extension, reduction) on glucose kinetics, insulin response, lipolysis and nutrients oxidation

The effect of time-restricted feeding on glycemic biomarkers : A literature studyPedersen, Henrik Bo January 2020 (has links)
Background: The prevalence of diabetes and obesity has been on the rise for many years and the search for new and effective dietetic solutions aiming at reducing calories, reducing body mass and improving diabetes has been ongoing. Currently, the intermittent fasting diet - the practice of alternating periods of eating and fasting - is gaining popularity. One of them is Time-restricted feeding (TRF), which time-limits energy intake within a defined window of time up to 10 hours per day without necessarily altering diet quality or quantity. A reduction in calorie intake, bodyweight, blood pressure, oxidative stress, inflammation biomarkers and triglycerides are evident with TRF studies conducted so far. Aim: The aim of the thesis is to investigate the effects of time-restricted feeding on glycemic biomarkers in human studies. Methods: A literature study is conducted with six chosen experimental studies which are primarily randomized controlled trials or randomized crossover trials with a TRF window of maximum 10 hours per day and predominantly with participants with overweight/obesity, prediabetes, type 2 diabetes and metabolic syndrome. Results: Compared to either baseline and/or control group, fasting glucose was reduced in 3 out of 6 TRF studies, while fasting insulin was reduced in 3 out of 5 TRF studies and HbA1C was decreased in 1 out of 2 TRF studies. For postprandial response, 1 out of 2 TRF studies found a reduction in glucose and likewise for insulin. Mean glucose levels were reduced in 1 out of 3 TRF studies. Insulin resistance was reduced in 3 out of 4 TRF studies while insulin sensitivity was reduced in the one study measuring this. Beta cell function improved in 2 out of 2 TRF studies compared to the control group or baseline. Conclusion: There are indications that TRF has an effect on glycemic biomarkers and thus potentially being able to reduce the risk and/or improve the treatment of type 2 diabetes. But in order to give a more definite answer more studies need to be conducted. In general, these studies should preferably have more participants and be methodologically stronger when it e.g. comes to the control of the dietary regimen.
