Kvalita lipidů našich hospodářsky významných druhů ryb / The lipid quality of our economically significant fish species

The level of fish consumption in the Czech Republic is very low. One of the possible factors influencing this situation is low awareness of the customer or consumer. The thesis "The Lipid Quality of our economically significant fish species" works with the list of nineteen economically most significant fish species not only including fish from the semi-intensive and intensive breeding, but also such species that are interesting for the consumption from the sport fishing point of view. The samples taken from particular fish were primarily used for the analysis of the fat content and fatty acid composition. The analysis established very interesting results in this field and created basis for further analysis for establishing atherogenic and thrombogenic index or for formation of nutritive values mentioned as "Big 7" (fat content and the ratio of fatty acid out of it, sacharide content and the sugar ratio in it, protein content, ash content and energy value) by particular fish species according to the regulation ES 1169/2011. The results of this work confirmed that the fat content and its composition are highly influenced by the type of ingested nourishment. The fish bred in semi-intensive way with the highest fat content are Common carp (7,62 ? 2,9 %) and Silver carp (6,87 ? 1,37 %). On the contrary the predatory fish evinced the fat content usually within 1%. The fish from extensive breeding or the types caught in sport fishing are in the fat con-tent more balanced. The fattest fish in this group is Silver Bream (5,52 ? 0,44 %) and the lowest content evinced Goldfish (1,14 ? 0,38 %). Also the species living in the aquaculture and living in the free waters as well were compared (Common carp, Rainbow trout, Peled, Tench, Wels catfish). The fatty acid composition significantly depends on the fat content. The predatory fish contain 195 - 219 mg×100 g-1, the most (p0,05) was found by the peled from the extensive breed (1048 mg×100 g-1 EPA + DHA). The participation of SFA by the most of the fish was under 30%, the content of MUFA was the highest by the Common carp (52,71 ? 7,75 %), the lowest by the European perch (18,83 ? 1,12 %). Pike, Zander and European perch contain relatively the most of PUFA, this is over 50%. All the fish species (Nile tilapia excluded) show in this study the values of atherogenic index below 0,5 and thrombogenic index below 0,4. The total energetic value was counted from the results of nutritional values presented in the "Big 7" list. The higher energetic value is directly proportional to the increasing fat content. The fish species included in this thesis show the total energetic value in the range of 500 - 900 kJ×100 g-1. The results of this study bring complete, laboratory proven information about the nutrition composition of our fish. This data can be appli-cable not only to increase the knowledge of the customers but mainly to be used by breeders and manufacturers of fish as an implement of fulfilling the duty of stating the nutrition facts on their products according to ES 1169/2011 on the providing infor-mation about the eatables to the consumers.

Agriculture is, after fossil fuels, the second largest producer of greenhouse gas emissions, which are responsible for global climate change, and it is necessary to look for ways to reduce this environmental load. Cereals are the most cultivated crops in the world, so it is appropriate to examine their share of this load. The aim of the thesis was to evaluate and compare the environmental aspects of the cultivation of selected cereals (wheat, rye and barley) in the conventional and ecological farming system. The resulting environmental load was first calculated on 1 kg of grain, and then the load was recalculated to a load of 1 kg of protein contained in grain of selected cereals. Protein content in grain is one of the grain quality indicators. A simplified LCA method has been used for the environmental load calculations. This method is used for environmental impact assessments and covers the whole life cycle of the product.

Food-related diseases, including food allergies and food intolerances, are on the rise worldwide. According to the World Health Organisation (WHO), allergic diseases in the economically advanced countries of the WHO have become the largest child environmental epidemic. Dysregulation of immune tolerance is the basic mechanism involved in the development of food allergy. It is believed that the risk of developing allergies is more related to other lifestyle factors such as a diet, physical activity or obesity. Food allergies in children and adult populations vary both in the spectrum of triggering foods and also their symptoms and their severity. The prognosis also differs in allergies for different types of foods. One of the most important factors affecting the correct development of the baby's immune system is nutrition. In the first 4 - 6 months, the baby should only receive breast milk - for infants it is the most appropriate and allergenically safe diet. It strengthens their immune system. Its positive effect is observed especially on the occurrence of food allergies and atopic eczema. However, developing asthma and other allergies may not be prevented. The aim of this study was to evaluate quality parameters of dry fermented sausages. Samples of two types of dry fermented sausages were sampled – sausage “Poličan“ and “Lovecký salám“, from three different producers. Basic physical-chemical analysis of quality parameters were performed in sausage mixture and immediately after end of ripening (21 days for Poličan and 16 days for Lovecký salám). Results of quality parameters analysis were compared with requirements of Czech legislation and differences between producers were observed. There were significant differences between producers, however all of them met requirements set by 326/2001 Czech notification as amended of Ministry of agricultural.

Komprese DNA sekvencí / DNA Sequence Compression

The increasing volume of biological data requires finding new ways to save these data in genetic banks. The target of this work is design and implementation of a novel algorithm for compression of DNA sequences. The algorithm is based on aligning DNA sequences agains a reference sequence and storing only diferencies between sequence and reference model. The work contains basic prerequisities from molecular biology which are needed for understanding of algorithm details. Next aligment algorithms and common compress schemes suitable for storing of diferencies agains reference sequence are described. The work continues with a description of implementation, which is follewed by derivation of time and space complexity and comparison with common compression algorithms. Further continuation of this thesis is discussed in conclusion.

The diploma thesis deals with the development of the market for protein crops. The literature research deals one hand with the distribution and morphology of legumes, and on second hand with the structure and chemical composition of seeds of selected species (pea, soybean and lupine). The literature research also covers the production of protein concentrates and their commercialization. The practical part is mainly engaged in the analysis of market developments of selected species of legumes in the Czech Republic, especially during the years 2000 - 2015, in comparison with the market development of the individual European states (Germany, Austria, Poland, Slovakia and France). The outcome of this diploma thesis is the ordination of statistical data available in clear graphical and tabular outputs, it does not miss time series evaluation of development of individual crops in both the Czech Republic and other selected countries.

The topic of this thesis is the production of gluten-free bread from naturally gluten-free flour, which will be enriched with suitable additives that will increase antioxidant activity and naturally effect on the structure of the pastry, so it will meet the sensory requirements of final consumers. The literary part define, which proteins can be found in cereals, what does the gluten means, its function in the pastry and which diseases can cause. In connection with these diseases, a gluten-free diet for improving the patient's health and suitable foodstuff are briefly described. The literary part is concluded with the theory of sensory evaluation. The practical part deals with the production of naturally gluten-free breads enriched with ingredients from kitchen onions (Allium cepa L.) and subsequent sensory evaluation of this bread. Selected statistical procedures were used to obtain, processed and evaluated data. Antioxidant activity was also monitored and evaluated. By using texture-meter was find out, what effect has additives on aging of gluten-free bread.

Sezónní dynamika vybraných krevních parametrů u vybraných masných plemen ovcí chovaných v podhorských podmínkách / Seasonal dynamics of selected blood parametres of selected flesh breeds of sheep bred in foothills conditions

Sheep breeding is nowadays a developing branch of agriculture again. There is a lot of different breed and they react distinctly on the same conditions of the enviroment. Sheep of breeds charollais, suffolk, šumavská ovce and valaška bred in similar conditions were observed in spring and autumn of years 2007 and 2008. In these seasons were taking blood samples (from {$\pm$}7{--}24) ewes and lambs and were analyzed in hematology laboratory. There were determined haemoglobin level, haematocrit indicator, erytrocytes and leucocytes levels, glucose, cholesterol, triglycerides levels, urea and plasmatic proteins, activity of ALP and GMT enzymes, phosphor, calcium, magnesium, zinc and copper levels. The main objective of this project was determine seasonal changes in observed parametres. Next objectives were determine different changes in blood parametres in different breeds and different aimes of breeds. There were recognized that all the observed breeds don`t react the same way on similar conditions. There were not provably determined seasonal changes in observed parametres, but average Hb level was higher in autumn than in spring. Urea level was conversely higher in spring season than in autumn. The demostrable fact is, that the similar conditions induce different answers not only in different breeds but also in different aimes of breeds.
