UNDERSTANDING SUPPLEMENTAL NUTRITION ASSISTANCE PROGRAM-EDUCATION PARTICIPATION AT RURAL FARMERS MARKETS: USING THE THEORY OF PLANNED BEHAVIOR AND SOCIAL MEDIA APPLICATIONS

Low consumption of fruits and vegetables due to various barriers among food insecure populations presents a significant health risk across all ages. Nutrition education is available to low-income populations, but due to the complexity and variety of influences that determine dietary behavior, increasing nutrition knowledge as a singular approach does not successfully result in behavior change. This may be supported by low Supplemental Nutrition Assistance Program (SNAP) redemption rates at farmers markets. There is a lack of data using the Theory of Planned Behavior to assess intentions to purchase fruits and vegetables by SNAP-Ed participants at farmers markets in Southern Illinois. There is also a lack of research on the interest in using social media for nutrition education on fruit and vegetable consumption in low-income populations throughout Southern Illinois. A cross-sectional survey was used to understand SNAP-Ed participants’ intentions to purchase fruits and vegetables at farmers markets, as well as their interest in receiving and using online nutrition education through various social media applications. A survey instrument was distributed to low-income participants of various SNAP-Ed nutrition classes hosted by the University of Illinois-Extension throughout the 16 southernmost counties of Illinois. The survey analyzed constructs of the Theory of Planned Behavior and relationships with intentions using regression analysis. Additionally, questions regarding social media usage were used to determine what technologies and social media applications are most commonly used among the sample, and any interest in receiving nutrition education through such applications. A total sample of n=189 SNAP-Ed participants completed the survey. The study found that attitude regarding fresh fruits and vegetables at farmers markets was the strongest predictor of intent to purchase fruits and vegetables for SNAP-Ed participants who receive SNAP benefits. Second, online nutrition education focused on fruit and vegetable purchases at farmers markets may be more generalizable regarding certain socio-demographic factors for SNAP-Ed participants who receive SNAP benefits. Third, results from the study demonstrate that 76.9% of respondents had Internet access, which is higher than current national rates for Internet accessibility in rural areas. Therefore, it is important to consider an increased Internet accessibility beyond at-home broadband coverage, which may include public libraries, work, school, or on a Smartphone. The most important socio-demographic characteristic to consider regarding social media use was age in the context of generations (Millennials, Working Adults, Seniors). Overall, SNAP-Ed participants were most likely to exhibit interest in nutrition education from text messages, email, or on Facebook. SNAP-Ed participants would like to receive online nutrition education via email (30.1%), Facebook (24.7%), and text messaging (21.0%). Online nutrition education in the form of email, Facebook, and text messaging would be the most successful in terms of recruitment and interaction for SNAP-Ed participants. Therefore, using social media to deliver nutrition education may be an effective supplement to reinforce the current classroom curriculum used in SNAP-Ed programming. Findings from this study support the use of online nutrition education through social media applications as an avenue to increase fruit and vegetable purchases at farmers markets in the Southern Illinois Mississippi Delta Region.

Constructing sustainable agriculture at a Northwest farmer's market: Understanding the performance of sustainability

Using participant observations at a Northwest farmers' market, interviews with market consumers, and interviews as well as farm tours with sustainable farmers, I examine the construction and practice of sustainability in a particular setting. The environmental issues tied to conventional agriculture are numerous and well documented; however, "social sustainability"--the extent to which sustainable agriculture provides a food system that is accessible, inclusive, uses fair labor practices, and is economically sustainable--is often less emphasized and more ambiguously defined (despite the emphasis by scholars and practitioners of sustainable agriculture that the movement is good for social justice). My project, therefore, uses critical feminist theory to explore how the ideals of social sustainability are put into practice by consumers and farmers of sustainable food in a society where social injustices are often embedded on both a structural and individual level. Emphasizing fanners' markets as the most important social space in which the values of sustainable agriculture are constructed, I use a local case study of a Pacific Northwest farmers' market, the consumers who shop there, and the farmers who sell goods there to understand how the values of social sustainability are put into practice. After reviewing the relevant literature and outlining the methods I use, I first discuss farmers' participation in the market and sustainable agriculture more broadly, using interviews and observations at different local farms to analyze how farmers see their commitment to sustainable agriculture as tied to forms of privilege and oppressions. Next, I use participation observation at the market itself to analyze how the space mediates the demands of "social sustainability" in a farmers' market system that is ultimately entrenched within a capitalist economy. Food Deserts, Food Hubs, and Farmers Markets in Arizona: An Analysis of Proximity and Potential for Increasing Food Access

abstract: Food deserts are defined as regions with low average income, low accessibility to grocery stores, and high adverse health outcomes. Food deserts have thus become an important area of public health research, and many actions are being taken across the country to "solve" the variety of problems food deserts represent. Despite the many solutions promoted to improve food security, healthy food access, and health outcomes among individuals living in food desert areas, not all activities have been critically assessed for their potential for sustained impact. Further, little research has been conducted in the state of Arizona regarding food-related ‘assets’ available to employ in solutions to food desert problems. This analysis gives a glimpse into the complex nature of food deserts, which are impacted by a variety of factors, from economics to public policy to culture. It further provides a current assessment of available assets for potential use in ameliorating the negative impacts of food deserts on Arizona citizens. Increasing the number of farmers’ markets and implementing Electronic Benefit Transfer (EBT) systems for the Supplemental Nutrition Assistance Program (SNAP) at more farmers’ markets have been suggested as strategies to overcome food access issues, but little is known about their availability in the rural South. This study examines differences in availability of farmers’ markets and SNAP/EBT at markets by county-level rural/urban classification, percentage poverty, percentage racial/ethnic minority, and percentage obese residents in North Carolina counties. Data were collected using a cross-sectional survey. Though results related to rurality and economic status are mixed, regression analyses indicate that the percentage of African American residents is inversely associated with the number of markets and number of markets that accept EBT. Results suggest that access to farmers’ markets varies in North Carolina, and additional research is needed to determine whether this impacts obesity.

The implementation of agritourism in the U.S. has increased in recent years. Agritourism provides social and economic benefits to rural communities, leads small-scale farms to achieve financial viability, and offers clientele an entertaining opportunity to meet local producers. Although multiple resources exist to educate individuals interested in pursuing agritourism business ventures, related materials cannot be generalized to Mississippi due to inapplicable data. This study aimed to gain knowledge about Mississippi’s agritourism clientele by administering surveys to attendees of the 2021 Mississippi State Fair. The survey instrument was amended from a previous study conducted by Nasers and Retallick (2009) in Iowa. Although most of the results corresponded with findings in similar studies, numerous recommendations were made that were specific to Mississippi farmers and agritourism operators.

The challenges farmers face at Vancouver Island’s farmers’ markets

Farmers’ markets are often thought to be the hallmark of the local food movement. However, there appears to be relatively little research which considers farmers’ experiences there. Drawing on 12 open-ended interviews with 16 farmers on Vancouver Island, BC, I explore how farmers’ markets support small-scale farmers, although they are losing farmer focus. I explore three key themes in this research: mainstream economic assessments of farmers’ markets, how consumer culture affects small-scale farmers, and whether organic certification works for small-scale farmers. The intent of my research is not only to consider farmers’ experiences at farmers’ markets, but to show how to improve their current organization on Vancouver Island and elsewhere. As such, this refocuses farmers’ markets back to local food, small-scale ecological farming, and food sovereignty. / Graduate

Factors Influencing Local Food Procurement Among Women of Reproductive Age in Rural Eastern and Western North Carolina, USA

Little is known about the barriers and facilitators to local food procurement among women of reproductive age (WRA). Therefore we conducted qualitative interviews with WRA in rural eastern and western NC (ENC and WNC) to learn of factors related to locally sourced food procurement. In-depth interviews were conducted among low-income White, Black, and Hispanic English-speaking WRA (N=62 (ENC: 37; WNC: 23) (18-44 years)). Independent coders used a consensus codebook to double-code all transcripts. Coders then came together to discuss and resolve coding discrepancies, and identified themes and salient quotes. Cross-cutting themes from both ENC and WNC participants included access to local food sources; acceptance of Supplemental Nutrition Assistance Program/Electronic Benefit Transfer (SNAP/EBT); freshness of produce; support for local agriculture; and the community aspect of local food sourcing. The in-depth understanding gained from this study could be used to guide tailored policy and intervention efforts aimed at promoting fruit and vegetable consumption among low-income WRA.
