Evening Meal Patterns and Meal Management Decisions in Families of Employed and Nonemployed Mothers

The purpose of this research was to determine if evening meal patterns and meal management decisions are related to the marital and employment status of mothers. Two hundred eighty-two usable questionnaires were completed by mothers who attended elementary school parent-teacher meetings in a suburban city in North Texas. The questionnaire gathered data about family demographics, family evening meal patterns, and factors affecting meal management decisions. Little difference was found between meal patterns of employed and nonemployed mothers in single and two-parent households. Factors found to affect meal pattern decisions were values, traditions, time, energy, nutrition, and family influence. A traditional family evening meal was important to the families studied.

THE UTILIZATION OF TECHNOLOGY AS AN APPROACH TO IMPROVE MEAL PLANNING AND DIETARY INTAKE

The prevalence of obesity is rising in the United States and one factor that contributes to it is the lack of cooking at home and planning out meals. Since text messaging is now a main avenue of communication, it could be used to motivate people to plan out their meals and cook at home instead of consuming fast food. Current research on how weekly nudges might relate to peoples’ goals about meal preparation and dietary intake is very limited. The purpose of this study was to examine if sending weekly nudges, focusing on specific dietary goals, improves meal planning and dietary intake in an online meal planning group. A Facebook group was used to send weekly nudges to the participants throughout six weeks. It was found that meal planning appears to have a significant effect on meal preparation at home and thus may help improve dietary intake. The results found can also be utilized in other aspects of leading to healthier lifestyles and motivation-need situations such as weight loss.

Os custos em organizações públicas representam o indicador de sua eficiência econômica. Distinguindo-se das empresas particulares, que visam lucros, os serviços públicos com seus objetivos sociais bem definidos, incluindo, no caso das Unidades de Alimentação e Nutrição da Divisão de Alimentação COSEAS/USP, a concessão de subsídio, precisam ter seus custos avaliados e acompanhados para instrumentalizar as decisões da Administração Pública, quanto à alocação dos recursos orçamentários. Neste trabalho, pretendeu-se realizar uma análise dos custos das refeições nas seis Unidades de Alimentação e Nutrição no ano de 1997, a preços de abril de 1998. Visualizando a produção de refeições dentro do enfoque da função de produção, os custos foram estudados segundo plantas de produção, e ao longo do ano, destacando-se os custos diretos dos custos totais, que incluíram os custos indiretos dos serviços dos setores da Administração e do Serviço de Distribuição. A abordagem dos valores nutritivos das refeições, em relação à energia, macronutrientes, cálcio e ferro, foi realizada na fase de planejamento e produção, com a finalidade de se analisarem os custos do seu insumo básico: os gêneros alimentícios. Como principais resultados têm-se que as refeições produzidas excederam o valor de energia, nutrientes e custo em gêneros alimentícios, dos cardápios planejados, para cada Unidade de Alimentação e Nutrição. Os custos diretos, também diferenciados por planta de produção, apontaram a maior planta como a mais eficiente, pela diluição dos custos fixos. Um outro resultado importante refere-se aos subsídios associados às refeições das Unidades de Alimentação e Nutrição/USP. Os subsídios por refeição variaram de 33 a 85%, de acordo com a categoria de usuários (não se considerando os bolsistas que desfrutam de 100%). As percentagens de subsídios são ainda superiores, uma vez que neste estudo não foi viável a apropriação de custos de serviços públicos e depreciação de equipamentos. / In public organizations, costs are indicators of their economic efficiency. Different from private companies that seek profits, public service institutions-with their clearly defined social purposes and subsidies- need to evaluate and monitor their costs in order to supply the public administration with data for the allocation of budget resources. This work intends to analyse meal costs in six restaurants of the University of São Paulo foodservice department in 1997, based on April 1998 prices. Observing the meal production, the costs were studied in each of the six foodservice facilities during the year. Direct costs were separated from the overall costs in which were included the indirect costs of the departments of Administration and Services. In the stage of meal planning and production, the study of nutritive values of energy, macronutrients, calcium and iron was performed with the intent of analysing the costs of the meal basic component – food supplies. As a result, the produced meals surpassed the quantity of energy, nutrients and food costs that had been previously planned in the menus. The direct costs showed that the restaurant that produced the largest number of meals was the most efficient due to the reduction of costs. Another important result is related to the subsidies for the meals. The subsidies per meal ranged from 33 to 85% according to the user categories (students who have 100% subsidies were not considered). The percentage of subsidies is still higher once in this study it was not possible to calculate the costs of the public services, and the depreciation of equipament.

Meal planning intervention to maximise usage of ingredients in domestic households / Måltidsplaneringsingripande för att maximera användningen av ingredienser i hushållen

Att ta itu med hållbarhet i livsmedel och minska livsmedelsindustrins miljöpåverkan har avgörande betydelse. Inom detta sammanhang har måltidsplanering framstått som en betydande faktor som påverkar matbeteendet och bidrar till att minska hushållsavfallet. Denna forskning fokuserar på att undersöka effekten och effektiviteten av en måltidsplanerings som syftar till att minska avfallet. För att åstadkomma detta användes en blandad Research through Design-process (RtD), som inkluderade metoder som brainstorming och observationsmetoder. Forskningsresultaten visar att genomförandet av en måltidsplanering framgångsrikt kan förbättra användningen av ingredienser inom hushållen, vilket leder till minskat avfall. Designegenskaper som stödjer individer i deras måltidsplanering identifierades: ha planeringen på ett och samma ställe, inkludera uppmaningar med syfte att uppmuntra individer att följa planen, och visa framstegen under hela måltidscykeln. Vidare identifierades designegenskaper som stödde matlagning i hemmet: att ha systemet och måltidsplanen synliga för användaren, samt att dela upp ingrediensen till måltiderna i fack. Sammantaget hjälper dessa identifierade designegenskaper individer att delta i måltidsplanering, vilket leder till minskat hushållsavfall. / Addressing food sustainability and reducing the environmental impact of the food industry are crucial concerns. Within this context, meal planning has emerged as a significant factor influencing food behaviour and contributing to the reduction of domestic waste. This research focuses on investigating the impact and effectiveness of a meal planning intervention aimed at the reduction of waste. To accomplish this, a mixed Research through Design (RtD) process was employed, incorporating methods such as brainstorming sessions and observational methods. The research findings reveal that implementing a meal planning intervention can successfully enhance ingredient utilisation within households, which leads to waste reduction. Design properties that support individuals in their meal planning efforts were identified: having the planning process all in one place, incorporating prompts to encourage individuals to adhere to the plan, and showcasing the progress throughout the meal cycle. Furthermore, design properties that supported cooking in the home were identified: having the system and the meal plan visible to the user, and dividing the ingredient for the meals into compartments. Overall, these identified design propertied collectively assist individuals in engaging in meal planning, leading to the reduction of domestic waste.

Attitudes et habitudes de Canadiens relativement à la préparation des aliments à la maison et au repas en famille

Décrire les attitudes et habitudes de Canadiens relativement à la préparation des aliments à la maison et au repas familial, afin de saisir les motivations à exploiter lors de la promotion de ces habitudes. Méthodes. Un sondage électronique de 39 questions à choix multiples a été placé sur le site des Diététistes du Canada du 16 novembre au 22 décembre 2006. Les énoncés analysés abordent la perception des bénéfices associés à la cuisine maison, à la planification des soupers et au repas familial, les obstacles à cuisiner, le temps de préparation et la planification des soupers, l’apprentissage de la cuisine, les sources d’idées recettes et la consommation des repas familiaux. Résultats. Au total, 4080 individus ont complété le questionnaire. Bien qu’ils croient que la cuisine maison puisse améliorer la qualité de l’alimentation et les comportements alimentaires, les répondants rencontrent plusieurs obstacles à la préparation des aliments au quotidien, parmi lesquels le manque de temps, d’énergie, d’idées et de planification. Bien qu’une majorité de Canadiens soupent en famille, il existe des écarts selon les groupes d’âge et les régions canadiennes. Conclusion. Cette étude souligne la pertinence d’élaborer des stratégies de communication pour informer les consommateurs sur les bénéfices de la cuisine maison et du repas en famille, afin de les aider à surmonter les défis associés à ces habitudes. Si les nutritionnistes sont des intervenants de choix, des collaborations interdisciplinaires sont proposées pour promouvoir une cuisine maison saine, bien planifiée, simplifiée et savourée en famille. / Objective. The analyzed statements cover the perception of the benefits associated with home cooking, supper planning and family meals, the barriers to cooking, the preparation time and supper planning, the development of cooking skills, sources of recipes ideas and consumption of family meals. Results. A total of 4080 individuals completed the questionnaire. Although they believe that home cooking can improve the food quality and eating habits, the participants meet several barriers to food preparation in everyday life, among which the lack of time, energy, ideas and planning. Although a majority of Canadians have family suppers, there are gaps according to age groups and Canadian regions. Conclusion. This study highlights the relevance of elaborating communications strategies to inform consumers of the benefits of home cooking and family meals in order to help them to deal with the challenges associated with these habits. If nutritionists are the best interveners, interdisciplinary collaborations are proposed to promote a healthy, well planned home cooking enjoyed with the family.

En app för smartare måltidsplanering

This thesis is based on design theory about how to build an application for the mobile platform, a scientific analysis and an application for grocery shopping and meal planning. The thesis also contains a valuation of the research and of the application. The valuation of the application was done by a usability test and an analysis of the results of the test. The application of the thesis has an easy navigation system, which is time saving and simple to use. Finding recipes with the associated ingredients is a quick fix. The search function can be used for searching freely after recipes as well as for separate ingredients. That makes it possible for the user to create own recipes from available ingredients. One can also compose a recipe from scratch and add to the recipe bank. It´s also possible to see which ingredients that is needed for a certain recipe. The application is direct and easy to use and because of that it can be used outside the home in environments where there are a lot of distractions, for example in the food store, where all the ingredients is purchased and checked off from the list. The application is competent. The user can save recipes and create own recipes without having to login. From the added information the app is able to suggest menus, at the same time it enables for the user to compose his or her own menus with lunch and dinner. Gradually a big and varying recipe bank is built which is formed after the family´s specific priorities of good, easy to cook, healthy food and it also sends a warning if a recipe contains food that someone in the family is allergic to. Each and every recipe can also be illustrated with drawings which could improve the overview. The application can be synced with a web site where more information can be extracted. / Den här uppsatsen består av en designteori för hur en applikation för den mobila plattformen ska byggas, samt en vetenskaplig analys och en färdig applikation som ska användas vid inköp av mat och planering av måltider. Uppsatsen innehåller också en utvärdering av forskningen och av applikationen. Utvärderingen av applikationen utfördes genom en användarbarhetstestning och en analys av testningens resultat. Uppsatsens applikation en har smidig navigering, som är tidseffektiv och enkel att använda. Det går snabbt att ta fram recept och vilka ingredienser som krävs för receptet. Det är möjligt att söka fritt både på recept och enskilda ingredienser. Det innebär att användaren kan forma egna recept utifrån tillgängliga ingredienser. Man kan även komponera egna recept och lägga in i receptbanken. Det är också möjligt att se vilka ingredienser som behövs för att ett visst recept ska kunna tillagas. Applikationen är tydlig och lättanvänd och fungerar därför i miljöer med många distraherande inslag utanför hemmet, exempelvis direkt i butiken, där alla ingredienser kan köpas in och bockas av från en lista. Applikationen är kompetent. Användaren kan spara recept och lägga till egna recept utan att behöva logga in. Med utgångspunkt från inlagd information kan applikationen föreslå menyer, samtidigt som den möjliggör komposition av egna menyer för lunch och middag.  Efter hand byggs det upp en stor och varierande receptbank som formas efter familjens egna prioriteringar av god, lättlagad, nyttig mat och även varnar för exempelvis mat som kan framkalla allergireaktioner om allergi förekommer i familjen. Vart och en av recepten kan också illustreras med tecknade bilder vilket skulle kunna förbättrar överblicken. Applikationen kan samsynkas med en hemsida där mer utförlig information kan hämtas.
