Možnosti zvyšování spotřeby ovoce, zeleniny a luštěnin u dětí ve školních jídelnách / Possibilities of increasing child consunption of vegetable, fruit and legumes in school dining hall.

PAVCOVÁ, Lucie January 2016 (has links)
The aim of the diploma thesis was processing and practical verification of a nutrition program aimed at an increasing the consumption of vegetables, fruits and legumes (hereinafter the "VFL"), in the T.G. Masaryk?s kindergarten school canteen in Český Krumlov. In the theoretical part, except the information about the nutritional requirements for schoolchildren?s feeding, it describes the current system of official eating-controls, based on the so-called consumer basket, which is based on weight-set norms of individual foods for the respective age of children. It was carried out methodically, so that the data obtained from the program of the consumer basket from January to April 2015 were compared with data from the same period of 2016 when it was applied nutrition program VFL. The research group was consisted of children from T.G. Masaryk?s kindergarten in Český Krumlov. Forty three (21 girls and 22 boys) preschoolers children in the age range 4-7 years were involved in total. The data were graphically processed with using of basic statistical values.By the data?s comparing from the consumer basket before the application of the nutritional program, was found that the consumption of three monitored commodities during adhering the nutrition program, increased by about 10% of vegetables, 10% of fruits and 5% of legumes. The results point to a properly selected nutritional program and its contribution to the practice in school canteens.

Evaluation of the Implementation of a Nutrition Program in a Middle School in Northeast Tennessee.

Carroll, Mary Lynn 08 May 2010 (has links) (PDF)
Teachers and food service employees at a middle school in Washington County, Tennessee were surveyed to determine their perceptions of a recently implemented nutrition program in their school. The nutrition program was designed to address childhood obesity concerns via cafeteria food selections. All teachers and food service employees were eligible to receive surveys. Participants included 19 teachers (5 males, 14 females) and 5 food service employees (1 male, 4 females) employed by Washington County Department of Education and working at Boones Creek Middle School. Survey questions were based on a 5-point Likert scale. Data were insufficient to complete statistical analysis; however, findings indicated that teachers and food service employees felt the nutrition program was less than effective in making changes to the obesity problems in their school.

Implementation of a Healthy Lifestyle Program at the Jefferson City Housing Authority in Jefferson City, Tennessee.

Carr, Lynsey Lea 09 May 2009 (has links) (PDF)
Children's energy consumption is outweighing their energy expenditure, increasing the risk for childhood obesity. While pediatric obesity continues to be a problem in America, the data are clear that those of low socioeconomic status are especially at risk for weight gain. The purpose of this study was to evaluate if a healthy lifestyle program could affect participants' diet and physical activity behavior. A program was planned and conducted using the curriculum from the "We Can" program established by the National Heart, Lung, and Blood Institute. Residents of the Jefferson City Housing Authority were asked to participate. No resident attended or completed the healthy lifestyle program. Follow-up focus groups with stakeholders and potential participants showed that lack of motivation was the greatest barrier to participation. Further investigation is needed to determine a more suitable venue to educate at-risk populations regarding the risk associated with pediatric obesity.

The Relation of Farmers' Market Nutrition Program Coupon Use with Accessibility and WIC CVV Redemption Rates at Farmers' Markets

January 2012 (has links)
abstract: ABSTRACT Fruit and vegetable intake is not uniform across levels of socioeconomic status (SES) and researchers have identified low SES as a risk factor for poor intake of fruits and vegetables. In an effort to eliminate public health disparities and increase fruit and vegetable intake, the Women, Infant, and Children (WIC) program implemented additional food assistance programs, with a specific emphasis on fresh fruits and vegetables. The Farmers' Market Nutrition Program (FMNP) provides pre-existing WIC clients with coupons to purchase fresh, locally grown produce at farmers' markets. In addition, Congress also approved the WIC Cash Value Voucher (CVV) program, which provides WIC participants with vouchers to purchase fresh fruits and vegetables at farmers' markets or grocery stores. The purpose of this thesis was to investigate the relation of FMNP coupon use with accessibility and WIC CVV redemption rates at farmers' markets. Furthermore, this thesis addressed whether WIC shoppers redeemed a higher percentage of their WIC CVV value at farmers' markets or grocery stores. WIC CVV and FMNP issuance and redemption data were analyzed to establish overall redemption rates and total perecent of WIC CVV value redeemed. Accessibility was assessed using the Geographic Information System, which allowed me to calculate the distance that WIC participants would have to travel to redeem their FMNP coupons at FMNP-approved farmers' markets. The results showed that less than 1% of WIC shoppers redeem their WIC CVVs at farmers'markets in Arizona. However, the redemption of WIC CVV was significantly higher during the months when shoppers had the option of using both WIC CVV and FMNP coupons at farmers' markets. Furthermore, the percent of total CVV value redeemed at farmers' markets was 99%, significantly higher than grocery stores (93.5%). Average FMNP coupon redemption rates for 2008-2010 was 43.3%, well below the national average of 59%. However, my spatial analysis revealed that there was no significant association between the distance traveled to farmers' markets and FMNP redemption rates. This indicates that the distance traveled to farmers' markets is not a major barrier to redemption of FMNP coupons in Arizona. / Dissertation/Thesis / M.S. Nutrition 2012

Nutritional, Demographic, and Behavioral DIfferences between Subjects from Two Similar WIC Clinics with Different Prevalences of Anemia

Vidrine, Damon J. (Damon James) 12 1900 (has links)
The purpose of the study was to determine what nutritional, demographic, and behavioral differences existed between children one year of age from two similar WIC clinics with different prevalences of anemia. Children from the higher-prevalence site were found to consume significantly (p < .05) more B12, C, copper, fiber, folate, total kilocalories, and riboflavin than did children from the lower-prevalence site. Family income and maternal weight gain were significantly (p < .05) higher in the lower-prevalence group as compared to the higher-prevalence group. In addition, children from the higher-prevalence site were enrolled in the WIC program at a significantly (p < .05) younger age than were children from the lower-prevalence site.

Changes in Young Adults’ Perspective on Ageism After Participating in a Virtual Nutrition Education Program with Older Adults

Hensley, Julianne 01 May 2024 (has links) (PDF)
The growing older adult population has led to increased ageist tendencies among younger generations. Previous research suggests that ageism is associated with cognitive and physical decline among older adults. This mixed-methods research project examined changes in ageist perceptions among graduate student facilitators and undergraduate nutrition ambassadors after participating in a training that included information about healthy aging, addressing ageism, and communicating with older adults. Results from a secondary data analysis of pre-test/post-test data and thematic analysis of semi-structured interviews with facilitators of Socially Nutritious, a virtual nutrition education program for older adults, indicate that ageist perceptions decreased after the training, which was supported by positive experiences with intergenerational communication articulated by graduate student facilitators in the interviews. Training to address ageism and develop a positive perception of aging and intergenerational experiences sharing knowledge about foods and nutrition may decrease ageist beliefs among young adults.
