and exogenous factors. Thus, the knowledge about the characteristics of interest
could allow the production of a better product with higher quality and market
acceptance. Thus, the objective of this work was to evaluate the influence of
slaughter weight on the chemical composition and on the physical and sensorial
characteristics of Nile tilapia fillets. For the experiment, 90 Nile tilapia were divided
into three experimental treatments regarding slaughter weight: in treatment
1, tilapia with 140 days were slaughtered with 665 ± 0.085 g as body
weight; in treatment 2, the animals were slaughtered at 182 days and 1,000 ±
0.177 g; and in treatment 3, slaughtered at 238 days and 1,325 ± 0.167 g.
There was no significant difference (P> 0.05) between the treatments for the
chemical composition and fillet yield. Animals with lower slaughter weight had
lower pH values of the thawed fillet, lower thaw loss and drip loss, and lower
shear force than animals slaughtered with the highest evaluated weight. Tilapias
slaughtered with 665 g also presented higher taste and general acceptance,
and allowed a higher production profit. These results show that slaughter weight
may influence important aspects of the quality of Nile tilapia fillets and that the
slaughter of Nile tilapia with 665 g allows to obtain fillets that serve the consumer
market. / A composição química da carne de peixe está ligada a fatores endógenos
e exógenos. Assim, o conhecimento das características de interesse,
e a forma de ocorrência desses fatores podem ajudar na obtenção de um produto
de maior qualidade e aceitação de mercado. Sendo assim, o objetivo deste
trabalho foi verificar a influência do peso de abate sobre a composição química
e sobre as características físicas e sensoriais de filés de tilápias do Nilo.
Para a realização do experimento foram utilizadas 90 tilápias do Nilo divididas
em três tratamentos experimentais referentes ao peso de abate: no tratamento
1, as tilápias com 140 dias de terminação, apresentaram 665 ± 0,085 g como
peso corporal ao abate; no tratamento 2, os animais foram abatidos com 182
dias e 1.000 ± 0,177 g, e no tratamento 3, abatidos com 238 dias e 1.325 ±
0,167 g. Não houve diferença significativa (P>0,05) entre os tratamentos em
relação à composição química e rendimento de filé. Animais com menor peso
ao abate apresentaram menor valor de pH do filé descongelado, menor perda
por descongelamento e gotejamento, e menor força de cisalhamento que animais
abatidos com o maior peso avaliado. Tilápias abatidas com 665 g também
apresentaram melhor sabor e aceitação geral, e permitiram maior lucro de produção.
Estes resultados mostram que o peso de abate pode influenciar aspectos
importantes para a qualidade dos filés de tilápias do Nilo, e que o abate de
tilápias do Nilo com peso médio aproximado de 665 g possibilita a obtenção de
filés que atendem o mercado consumidor. / São Cristóvão, SE
