A Multi-Component School-Based Intervention Aimed at Increasing Vegetable Preference and Intake among Elementary-Aged Children

This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey. The multi-component intervention was implemented at Canyon Elementary during the 2008-2009 school year. Classroom teachers provided 20 minutes of nutrition education to students in grades one through five (n=450) once every month from September 2008 through May 2009. Students who participated in the after school program received additional education once a week for three weeks each month. Overall, no significant difference was observed between children's pre- and post-intervention except for their willingness to try new vegetables. Students in grades second and fourth (n=81) were asked to participate in a plate-waste study by allowing researchers to photograph the amount of vegetables they selected and consumed during (p=0.483) second and (p=0.467) fourth pre-intervention and (p=0.71) second and (p=0.34) fourth post-intervention lunch-period. No change in vegetable consumption was observed (p >0.05). Although the intervention was well received by Canyon Elementary administration, teachers, food-service director, and students, we observed not significant changes in the outcomes we assessed. The results of this study are not consistent with other multi-component school-based interventions that have effectively changed diet- related behaviors among children. Additional work in this area at this school should include additional validated outcomes assessments, changes to the selection of vegetables offered to children in school lunch menus, and a stronger parent involvement.

The past World War II era has been labeled "The Age of Anxiety" (28, p.3). In some respects children are being forced to mature at an earlier age. The "storm and stress" period of the adolescent is receiving considerable recognition in our current literature and the adults are taking on increasing amounts of structure which are all resulting in more complex culture.

Utilizing Legumes to Improve Production and Nutritive Value of Intermountain West Pastures

Pastures in the Intermountain Western United States mainly consist of cool-season grasses which lack production without supplemental nitrogen. Legumes provide nitrogen at reduced cost compared to nitrogen fertilizer. There is a need for proven methods of inter-seeding legumes into existing cool-season grass pastures as well as knowledge of how animals prefer legumes to grasses and how the nutritive value of forages change throughout the growing season. This research provides a resource for effective integration of legumes into pastures of the Intermountain West. Alfalfa, birdsfoot trefoil, and cicer milkvetch were inter-seeded into existing cool-season grass pastures following pretreatments of light tillage, mowing and glyphosate. Early spring and fall inter-seeding was unsuccessful, while late spring was moderately successful with overall alfalfa frequency of 30% after a year. Summer inter-seeding was the most successful with birdsfoot trefoil, alfalfa, and cicer milkvetch frequency of 42, 32, and 22%, respectively. In the animal preference study, when compared to tall fescue, birdsfoot trefoil was always utilized more.In most observations birdsfoot trefoil utilization was higher than orchard grass. While in all comparisons with meadow bromegrass there was no difference in utilization. During early growth, perennial ryegrass utilization was higher than birdsfoot trefoil utilization, but no difference in utilization was detected in later observations. Overall, birdsfoot trefoil was utilized 73% overall while grass utilization was 74, 67, 64, and 53% for perennial ryegrass, meadow bromegrass, orchardgrass and tall fescue, respectively. The interaction of growth stage and time of season on the nutritive value of alfalfa, birdsfoot trefoil, cicer milkvetch, orchardgrass, perennial ryegrass and tall fescue was determined. In the spring to early summer, legume nutritive value decreased rapidly with maturity, in midsummer the nutritive value decreased slowly with maturity, while in late summer the nutritive value remained stable. In the spring, grass nutritive value decreased rapidly, while in mid to late summer all grass regrowth was vegetative and the nutritive value remained stable. By inter-seeding in the summer, effectively managing mixed pastures, and utilizing forage at its highest nutritive value, legumes can benefit the pastures of the Intermountain West.

Mothers' Preferences Regarding Sex Education in the Home

There is a large amount of evidence suggesting a need to educate children concerning sexual issues. The extent of adolescent pregnancy, sexually transmitted diseases, and the spread of AIDS are all indicators of the lack of appropriate education. In view of these social concerns, along with the controversy concerning sex education taught in school, it would seem to be helpful if parents provided more adequate sex education. Parents are a primary source of sex education for their children, but many parents lack knowledge and feel inadequate in this role. Without appropriate sex education, children turn to other sources for answers to their sexual questions. These sources can provide false and sometimes harmful information to children. One hundred and seventy parents from Cache Valley, Utah, were interviewed over the phone to ascertain their views regarding sex education for their children. Parental adequacy as sex educators, ages and places parents would prefer their children be taught sexual issues, and content areas and materials parents would find most useful in teaching sex education were all evaluated. The results indicate that participants view themselves as better sex educators than their parents were. Overall parents prefer that sexual anatomy be taught at the youngest age and birth control at the latest age. Parents also prefer that sexual topics should be taught in the home, and many feel comfortable with sexual issues being taught both at home and at school. Parents prefer that topics including "everything," factual information, abstinence, and sex as positive should be included within a sex education program. On the other hand, they prefer that explicit or graphic materials, birth control, and sex as negative should not be included within a sex education program. They would also prefer a program in the home utilizing a combination of print and video materials.

The Relationship Between Personality as Measured by the Minnesota Multiphasic Personality Inventory and Interest as Measured by the Kuder Preference Record

Counselors frequently use batteries of psychological tests in helping students to select appropriate educational and occupational choices. The task of interpreting scores on a battery of tests to students is not at any time a simple undertaking. The trend toward emphasis on the importance of the relationship among the various scores in a battery of tests, has further complicated test interpretation. Vocational choice theories suggest an interrelationship between vocational interests and personality characteristics. They further suggest that different educational majors and occupations require different types of vocational interest and personality characteristics. Two tests, The Minnesota Multiphasic Personality Inventory (hereafter referred to as the MMPI) and the Kuder Preference Record-Vocational (hereafter referred to as the Kuder), are frequently used to help students make educational and occupational choices. To help counselors make better interpretations, a number of research studies, using the MMPI and Kuder to determine the relationship of measured interest to measured personality traits have been conducted. The results of these studies have tended to disagree. Some studies have found no significant relationships between the two variables; while others have found significant relationships. There have also been many research studies, using the MMPI and Kuder, to determine personality and interest differences among the different college majors. These studies, too, have disagreed. Because of these limitations, there appears to be a need for a more systematic and dependable method of establishing relationships among the MMPI and Kuder, and of interpreting the patterns which are formed by those relationships.

The effect of voluntary binge caffeine and ethanol co-exposure on neurobehavioral sensitivity to cocaine in male C57BL/6J mice

Indiana University-Purdue University Indianapolis (IUPUI) / Recently, the co-consumption of highly caffeinated energy drinks and alcohol has become a public health concern. Consumption of these beverages has been linked to a wide variety negative consequences including alcohol poisoning, driving under the influence, physical harm, and sexual violence. The more protracted consequences of caffeinated alcohol consumption have received very little attention, however. Some evidence suggests that individuals that frequently consume energy drinks mixed with alcohol are more likely to develop an alcohol use disorder. Interestingly, both caffeine and alcohol use alone have been linked to polydrug abuse. It is therefore of interest whether combined caffeine and alcohol consumption may pose an additive risk for substance abuse. Given that both compounds can positively influence dopamine signaling in mesolimbocortical reward circuitry via different mechanisms, this is an important question to address. Psychostimulants, such as cocaine, are of particular interest considering the significant involvement of dopamine in their effects. The current project explored this possibility employing an established mouse model of binge caffeine and alcohol co-consumption. Male C57BL/6J mice underwent 14 days of daily, 2hr limited access to water, alcohol, caffeine, or combined caffeine and alcohol. Water was freely available after these sessions. In Experiment 1, mice underwent an 11-day locomotor sensitization protocol for cocaine initiating on day 15. Locomotor sensitization has been associated with a greater propensity to self-administer psychostimulants in rodents. Mice were subjected to injections of cocaine (5 or 10 mg/kg; i.p.) or saline every other day, with 15 minute activity monitoring until day 25. In Experiment 2, a separate group of mice underwent an identical drinking procedure. A conditioned place preference (CPP) protocol commenced on day 15. CPP assesses the conditioned rewarding effects of cues associated with drugs of abuse. On day 15, mice received saline injections and were immediately placed onto a neutral floor texture (paper) in the place conditioning box for 15 minutes in order to habituate the animals to the apparatus and injection procedure. Starting on day 16, mice received daily alternating systemic injections of cocaine (1 or 5 mg/kg; i.p.) and saline or saline throughout (naïve controls) and were placed onto one of two particular tactile floor cues: a metal floor with holes punched out or a grid floor made of metal rods. Mice were exposed to the other injection/floor pairing on the alternate days. Mice were placed into these activity monitors for 15 minute conditioning sessions. These sessions alternated drug and vehicle over the course of 8 days so that a total of 4 drug and 4 saline injections were given. The first place preference test occurred on day 24 wherein all mice were injected with saline and offered access to both floor textures. On day 25, mice were returned to the conditioning protocol for another 8 days and a second CPP test on day 33. The results of Experiment 1 suggested that prior caffeine consumption, irrespective of the presence of ethanol, enhanced the initial psychomotor stimulating effect of 10 mg/kg cocaine. However, prior fluid consumption history did not influence the capacity to develop locomotor sensitization. The results of Experiment 2 indicate that prior caffeine and/or ethanol consumption had no influence on the development or expression of CPP for 1 mg/kg or 5 mg/kg cocaine. Collectively, these results suggest that a history of caffeine consumption may increase the stimulant response to a moderate dose of cocaine, perhaps indicating cross-sensitization. Although the conditioned rewarding effects of cocaine were not altered by prior caffeine and/or ethanol consumption, an enhanced stimulant response may be indicative of enhanced cocaine abuse potential. This study demonstrates that moderate caffeine consumption may influence an individual’s early interactions with cocaine which may eventually influence the likelihood of later problematic use.

Design Criteria for Female Flight Attendant Uniforms: Wearer Preference Needs Assessment

The purpose of this research was to gather the preferences of flight attendants for garment characteristics of the ideal flight attendant uniform, then translate those garment characteristics to design criteria. Using uniform silhouette, interior design lines and fabric characteristics as dependent variables, garment characteristics of clothing length and shape, sleeve length and shape, neckline, collar, pocket style, pocket placement, closing type, closing location, waist style, fabric care, color, type, stretch, weight, hand, surface and fabric design were selected as independent variables. The objectives of the study were to determine 1) the flight attendant preferences for an ideal uniform and 2) if a relationship existed between flight attendant age and garment characteristics and between flight attendant years of service and garment characteristics. A questionnaire was developed and tested as the instrument to be used to gather the wearer preferences and garment characteristics. The development of the questionnaire evolved through a series of pretests. Changes were made based on the reader comprehension of questions, terminology, illustrations and instructions. The data were analyzed using frequency counts, cross-tabulations and independent sample chi-square test. The data were gathered in the crew lounge of a major southeast airline. The sample consisted of 218 actively employed, Caucasian and non-Caucasian female flight attendants between the ages of 25 to 51 with 1 to 36 years of service. The findings indicated this group of flight attendants preferred three garments; shirt, slacks and cardigan sweater as uniform clothing, and no relationships existed between flight attendant age or flight attendant years of service and preferred garment characteristics. / Master of Science
