Green Tea: Flavor characteristics of a wide range of teas including brewing, processing, and storage variations and consumer acceptance of teas in three countriesLee, Jeehyun January 1900 (has links)

Chambers / A green tea descriptive sensory lexicon was developed by a highly trained panel, which identified, defined, and referenced 31 flavor attributes of green tea. The attributes were categorized as “green” (asparagus, beany, Brussels sprout, celery, parsley, spinach, green beans, and green herb-like), “brown” (ashy/sooty, brown spice, burnt/scorched, nutty, and tobacco), “fruity/floral” (fruity, floral/perfumy, citrus, and fermented), “mouthfeel” (astringent and tooth-etching), “basic tastes” (overall sweet and bitter), and other attributes (almond, animalic, grain, musty/new leather, mint, seaweed, and straw-like).
Using the green tea lexicon, the flavor differences that exist among a wide range of green teas (n=138) produced in various countries were determined. Roast-processed teas were mostly responsible for brown-related flavors and steam-processed teas were mostly responsible for green-related flavors.
Aroma analyses of green tea showed that the concentration of volatile compounds were much lower than stated in the literature.
Brown, brown-related attributes, bitterness, and astringency became stronger and green and green-related attributes become weaker as the brewing time lengthened (1, 2, 5, and 20 min) and the water temperature increased (50, 70, 95°C).
The flavor characteristics of roast-processed, steam processed, or roast-steam-processed Korean green teas differed only in their characterizing green flavors.
The flavor and aroma of green teas change after sequential brewings. Green teas in leaf form can be brewed four times: the first two brews providing stronger flavor and aroma characteristics whereas the third and fourth brews will provide milder flavor and aroma characteristics.
The flavor and aroma change in green teas that are stored over two years were observed at 3, 6, 12, 18, and 24 months after their original packaging dates. Green tea changes minimally during the first year of storage and only slightly more during the first two years of storage.
Consumer studies and descriptive evaluations were conducted to understand what green tea flavor characteristics influence US consumers' liking. Twelve green tea samples were
evaluated by three consumer groups from Korea, Thailand, and the United States. The current research suggests that familiarity plays a role in tea acceptance. However, various flavor profiles may be acceptable to consumers who are familiar with other flavors of green tea.

In an effort to increase beef demand, the beef industry has expanded beyond commodity beef merchandizing into value-added cuts. As these beef cuts are developed it is critical that the industry be able to characterize the flavor attributes of these products. A trained sensory panel is typically utilized to determine flavor characteristics of food products including beef. Prior to product evaluation, a product lexicon or dictionary of terms is developed in order to anchor and orient panelists to the various samples. Once the lexicon is developed, it can be used by a descriptive panel to evaluate samples.
Currently, the beef industry does not have a full beef flavor lexicon with defined references; therefore a comprehensive sensory lexicon for describing the aroma and flavor of beef was developed by a 6-member panel at Kansas State University with extensive experience in lexicon development and descriptive analysis. Three descriptive panels utilized the beef flavor lexicon developed in Phase I by Kansas State University to evaluate the effect of USDA Quality Grade and cut on beef flavor and to validate the beef flavor lexicon to determine if it is ready for use by scientists.

Results indicated that Choice steaks and roasts were higher in fat-like, and overall sweet flavor. Eye of round roasts were lowest in aroma and flavor attributes and bottom round roasts were highest in liver-like flavor. Flat iron steaks were highest in fat-like flavor compared to other cuts and top loin steaks tended to have the lowest intensity in flavor attributes compared to the steak cuts. The three sensory panels rated steaks and roasts similarly for aroma and flavor attributes and were generally less than 2- to 1-point different in rating intensities. The beef flavor lexicon was easily applied across the three institutions and should be ready to be used as a viable research and product development tool.

more industry limelight over the past few years. Three dry Chenin blanc wine styles are
currently described by the wine industry as Fresh and Fruity (FF), Rich and Ripe unwooded
(RR-unwooded) and, Rich and Ripe wooded (RR-wooded). According to the South African wine
industry, however, consumers seem to be somewhat confused by these various Chenin blanc
wine styles, which have not yet been clearly defined and classified. During this study we
investigated the following perspectives of this wine style classification confusion:
Currently, no specified sensory method is being used to differentiate between wine styles of
a single wine cultivar, such as Chenin blanc. The sorting method can be used as a more cost
and time effective classification and profiling method than general quantitative descriptive
analysis (QDA). It was therefore investigated whether both uninstructed and instructed sorting,
with consumers and wine experts, can be used to classify and describe the Chenin blanc wine
styles similarly to QDA. The increase in young wine consumers, Generation Y, introduces new
wine marketing opportunities for the wine industry which need to be investigated. Young
consumers are not aware of the various Chenin blanc wine styles, which may influence their
wine preferences. The influence of wine style knowledge on these consumers’ wine style
preferences were investigated during blind and wine style informed preference test. Any
segmentation within this Generation Y group was also investigated with regards to their Chenin
blanc wine style preferences and/or exploratory data. The following scientific and industrial
findings were made:
QDA was successfully substituted by instructed and uninstructed sorting tasks. Although the
sorting tasks easily differentiated between wooded and unwooded wines, QDA differentiated
more successfully between the unwooded wines. Wine tasting experience did not significantly
influence the sorting results of the consumers versus the wine experts, but more experienced
panellists consistently used fewer descriptors than untrained consumers. All panellists sorted
products slightly better when they were provided with wine style sorting instructions. However,
there were no significant differences between the instructed and uninstructed sorting task
results, i.e. a wine style descriptor list did not improve panellists’ abilities to describe their sorted
wine groups.
South African Chenin blanc wines can definitely be divided into wooded and unwooded
wine styles, i.e. two wine style groups, but the unwooded Chenin blanc wine spectrum formed a
wine-style-continuum. This finding is apparent from both the sorting and QDA methods. The
unwooded continuum wines can further be differentiated from one another with the use of a
fresh-to-mature scale and/or a light-to-full body scale during QDA.
Generation Y wine consumers preferred all the Chenin blanc wine styles equally and
moderately during the blind tasting, but their knowledge of the wine style concepts significantly
increased their preferences for the wines during the informed wine style tasting. The cognitive
influence of wine style knowledge is therefore powerful in terms of influencing a consumer’s
wine preferences. Other interesting correlations were also made between Generation Y
consumers’ wine style preferences and their exploratory data. / AFRIKAANSE OPSOMMING: Suid-Afrikaanse Chenin blanc wyn word gekarakteriseer deur styl diversiteit en is die afgelope

Afrikaanse wynbedryf is daar heelwat verwarring is tussen hierdie Chenin blanc wynstyle weens
die feit dat hierdie wynstyle nog nie duidelik gedefinieer en geklassifiseer is nie. Tydens die
huidige studie het ons die volgende perspektiewe van hierdie wynstyl-verwarring ondersoek:

tussen verskillende wynstyle van ’n enkele wyn kultivar, soos Chenin blanc, nie. Die

beide geïnstrukteerde en ongeïnstrukteerde sorteringstake, met verbruikers en wynkundiges,
gebruik kan word om die verskeie Chenin blanc wynstyle kan profileer en klassifiseer soortgelyk
soos kwantitatiewe beskrywende analise. Die toename in jong verbruikers, Generasie Y, skep
nuwe wynbemarkingsgeleenthede wat ondersoek moet word. Jong verbruikers se
onbewustheid van die verskeidenheid Chenin blanc wynstyle mag hulle voorkeure vir hierdie
wyne beïnvloed. Die invloed van wynstyl kennis op hierdie jong verbruikers se wynstyl

Kwantitatiewe beskrywende analise kan suksesvol vervang word deur beide
geïnstrukteerde en ongeïnstrukteerde sorteringsmetodes. Alhoewel die sorteringsmetodes
maklik gebruik kon word om te onderskei tussen gehoute en ongehoute wyne, kan
kwantitatiewe beskrywende analise fyner onderskeid tref tussen die individuele ongehoute
wyne. Die wynproe-ervaringsvlak het geen invloed op die sorteringsresultate gehad nie, maar
meer ervare paneellede het konsekwent gebruik gemaak van minder beskrywende terme as
onopgeleide verbruikers wat baie meer en verskillende soorte terme gebruik het. Beide panele
het effens beter gesorteer wanneer hulle spesifieke wynstyl sorteringsinstruksies ontvang het.
Daar was egter geen beduidende verskille tussen die geïnstrukteerde en ongeïnstrukteerde
sorteringsresultate nie, wat daarop dui dat sorteringsinstruksies en ’n lys van wynstyl
beskrywings nie die paneellede se wyse van sortering verander het nie.
Suid-Afrikaanse Chenin blanc wyne kan definitief verdeel word in gehoute en ongehoute
wynstyle, d.w.s twee wynstyl groepe, maar die ongehoute Chenin blanc wyn spektrum vorm ’n
wynstyl-kontinuum. Laasgenoemde is bevind tydens beide die sorteringstake asook
kwantitatiewe beskrywende analise. Die ongehoute kontinuum wyne kan verder van mekaar
onderskei word met behulp van ‘n vars-tot-volryp en/of ‘n ligte-tot-volmond skaal tydens
kwantitatiewe beskrywende analise.
Alle jong wyn verbruikers het ewe veel van al die wynstyle gehou tydens die blinde wynstyl
voorkeur toets, maar tydens die wynstyl-ingeligte voorkeur toets het hulle voorkeure vir al die
wynstyle drasties verbeter. Die kognitiewe invloed van Chenin blanc wynstyl kennis kan dus lei
tot hoër voorkeure vir die wynstyle. Ander interessante korrelasies is ook bevind tussen hierdie
Generasie Y wyn verbruikersgroep se wynstyl voorkeure en hul verkennende data.

Métodos científicos específicos têm sido desenvolvidos para medir ou estimar objetivamente, com precisão e reprodutibilidade, as respostas humanas aos estímulos a que são submetidos. Os testes descritivos, que compõem parte da análise sensorial, exigem controle cuidadoso das possíveis variáveis capazes de interferir no resultado, tais como ambiente do teste, armazenamento das amostras, condições da pele dos painelistas, seleção e treinamento de atributos do produto a serem avaliados. nÃo hà / Diversos efeitos benÃficos sÃo associados ao consumo de cacau em pÃ, como propriedade antioxidante e efeito cardioprotetor. No entanto, devido a algumas desvantagens como amargor e presenÃa de substÃncias estimulantes e alergÃnica, vÃrios produtos tÃm sido testados como substitutos do cacau, dentre os quais se destaca a alfarroba em pÃ. O produto nÃo apresenta tais desvantagens, alÃm de ser naturalmente adoÃada e fonte de fibras. Diante do exposto, o objetivo desta pesquisa foi verificar a viabilidade de substituiÃÃo total do cacau em pà pela alfarroba em pà em bebida sem lactose a base de amÃndoas da castanha de caju (ACC) e avaliar as alteraÃÃes das caracterÃsticas sensoriais, da aceitabilidade e do comportamento reolÃgico da bebida otimizada. A pesquisa foi realizada em duas fases, onde na primeira adotou-se um planejamento fatorial do tipo 2 para avaliar, atravÃs de superfÃcie de resposta, os efeitos da substituiÃÃo do cacau por alfarroba em pà (concentraÃÃo total de 2 g/100 mL), do teor de sacarose e de carragena no pH e no teor de sÃlidos solÃveis da bebida. Na segunda fase, as amostras otimizadas foram submetidas Ãs anÃlises microbiolÃgicas e à determinaÃÃo de atividade de Ãgua (aw), visando garantir a inocuidade para as anÃlises sensoriais. Aplicou-se a anÃlise descritiva quantitativa (ADQ) para verificar as principais propriedades sensoriais da bebida. Na medida de aceitabilidade das amostras, utilizaram-se os testes com escala hedÃnica e escala relativa ao ideal. O comportamento reolÃgico foi avaliado a 10 ÂC utilizando reÃmetro com placas paralelas. A proporÃÃo de cacau/alfarroba influenciou sutilmente somente o pH da bebida. Desta forma, decidiu-se pela substituiÃÃo total do cacau pela alfarroba em pÃ. As contagens microbianas estavam em nÃveis baixos aceitÃveis, garantindo a seguranÃa do produto, e a atividade de Ãgua situou-se em torno de 0,9838-0,9958. As propriedades sensoriais que apresentaram maior variaÃÃo entre as amostras foram cor marrom, aparÃncia viscosa, aroma de torrefaÃÃo, gosto doce e textura encorpada. As sete formulaÃÃes alcanÃaram boa aceitaÃÃo sensorial. No entanto, as duas amostras com menores teores de sacarose apresentaram menor aceitaÃÃo indicando a grande influÃncia da doÃura para a aceitaÃÃo da bebida. Recomenda-se 16% de sacarose para obter a doÃura ideal. As amostras apresentaram comportamento nÃo Newtoniano. Conclui-se que a substituiÃÃo do cacau pela alfarroba em pà na bebida de ACC (2 g/100 mL) à viÃvel, resultando em um produto de boa aceitaÃÃo sensorial. / Several benefits are associated with cocoa powder consumption as antioxidant properties and cardioprotective effect. However, due to some disadvantages, such as bitterness and the presence of stimulating and allergenic substances, many other products have been tested as a cocoa substitute, and among them carob powder has stood out. The product does not have the same disadvantages of cocoa, besides being naturally sweetened and source of fiber. According to the informations presented, the objective of this research was to investigate the feasibility of full replacement of cocoa powder by carob powder in lactose-free beverage cashew nut almond (CNA)-based as well as to evaluate changes in sensory characteristics, acceptability and rheological behaviour of the optimized beverage. The survey was conducted in two phases, in the first phase a factorial planning type 2 was carried out in order to evaluate, through response surface, the effects of cocoa replacement by carob powder (total concentration of 2 g/100 mL), of sucrose and carrageenan content in the pH and also in the soluble solids content of the beverage. As for the second phase, the optimized samples were subjected to microbiological analyzes, just as well to the determination of water activity (aw), in order to ensure safety for the sensory analysis. A quantitative descriptive analysis (QDA) was applied to verify the main sensory properties of the beverage. Tests with hedonic scale and just about right scale were used to verify the acceptance level of the samples. The rheological behaviour was evaluated at 10 ÂC with a rheometer with parallel plates. The proportion of cocoa/carob just slightly influenced the pH of the beverage. Thus, it was decided to full substitution of the cocoa by carob powder. Microbial counts were in low acceptable levels, ensuring product safety, and water activity stood at around 0.9838 to 0.9958. The sensory properties which presented greater variation among the samples were brown color, viscous appearance, roasting aroma, sweet taste and thickness. The seven formulations achieved good sensory acceptance. However, the two samples with lower sucrose levels presented a lowers acceptance indicating the great influence of sweetness level to the acceptance of the beverage. It is recommended the use of 16% sucrose for optimal sweetness. The samples presented a non-Newtonian behaviour. Finally it was possible to conclude that the replacement of cocoa by carob powder (2 g/100 mL) in lactose-free beverage CNA-based is feasible, resulting in a product of good sensory acceptance.

Hur beskrivs sensoriska egenskaper inom deskriptiv analys? : En kvantitativ tvärsnittstudie av artiklar publicerade 1974-2019 / Sensory attribute description in descriptive analysis : A quantative cross sectional study of articles published 1974-2019Apelman, Linnea January 2021 (has links)
Bakgrund Deskriptiv sensorisk analys (DSA) syftar till att beskriva sensoriska egenskaper (attribut) hos livsmedelslprodukter. En bedömarpanel analyserar ett produktprov genom att identifiera, namnge och mäta intensiteten hos ett antal attribut. Syfte Syftet med undersökningen var att studera hur attribut identifieras, beskrivs och presenteras inom vetenskaplig tillämpning av DSA. Metod Sjuttiofyra artiklar, publicerade i vetenskapliga tidskrifter mellan 1974 och 2019, analyserades kvantitativt med hjälp av deskriptiv statistik. Sjutton variabler användes för datainsamling. Samband mellan variablerna analyserades med hjälp av statistiska tester. Resultat Av artiklarna var 96 % publicerade i tidskrifter utan specifik inriktning mot sensorisk analys. I två tredjedelar av artiklarna tillämpades generisk deskriptiv analys (GDA). I fler än hälften av artiklarna avvek panelen från vad som rekommenderas kring bedömarantal eller tid för träning. I snitt användes 1,4 ord för namngivning av attributen. I hälften av artiklarna definierades inte attributen. I två tredjedelar av artiklarna presenterades inte några referensprodukter för att illustrera skalstegen. I tre fjärdedelar av artiklarna presenterades attributen i metodbeskrivningen. Meddelandelen substantiv var 68,2 % och 31 % adjektiv. En måttlig negativ korrelation mellan andelen substantiv och tiden för träning av bedömarpanelen var statistiskt signifikant. Slutsats I många vetenskapliga studier utförs DSA utan att gällande rekommendationer kring bedömarpanelen följs. A panel of assessors analyze a sample of the product to identify and name a set of attributes and estimate their intensity. Objective The aim of the study was to research how attributes are identified, described and presented in the scientific use of DSA. Method By using descriptive statistics, 74 articles published in scientific journals between 1974 and 2019 were analyzed quantitatively. Data collection was conducted using 17 variables. Correlations between variables and differences between groups were analyzed using statistical tests. Results Of the articles 96 % were published in non-sensory-specific journals. Generic descriptive analysis (GDA) was used in two thirds of the articles. In more than half of the articles the number of assessors, or the time spent on assessor training, differed from what is recommended. An avarage of 1.4 descriptive words were used to name each attribute. In half of the articles no definitions of the attributes were given. In two thirds of the articles no reference products were presented to illustrate the attributes or different points of the scale. In three quarters of the articles the attributes were presentet in the section of method description, and not the results. The avarage share of nouns was 68.2 % and 31 % adjectives. A moderate negative correlation between the share of nouns and the time spent on panel training was significant. Conclusion Sometimes DSA is used without panel recommendations being followed. There are scientific articles where the sensory attributes are presented vaguely enough to question the usability of the results.
