It is an emerging pathogen already been detected worldwide. As a psychrotrophic bacteria, it becomes important risk factor for the consumer. Because of the importance of Y. enterocolitica, and great pork production in Santa Catarina Midwest region aimed to determine the presence of Y. enterocolitica in pigs slaughtered in the region. To this material were collected from 44 pigs, such as tonsils, submandibular lymph nodes, mesenteric lymph nodes, inguinal lymph nodes and head meat, totaling 220 samples. In the laboratory, samples were prepared with selective enrichment broth PSB homogenized for 2 minutes and further incubated at a temperature between 22 and 25 ° C with stirring for 72 hours, the sample of the broth was PSB Exhaust striated surface Agar CIN. Colonies characteristics were confirmed with "Serum Yersinia enterocolitica Poly", and biochemical test Bactray I and II. Y. enterocolitica was isolated in 6 samples from tonsils, 3 mesenteric lymph nodes, submandibular lymph nodes 2, 1 inguinal lymph node and 1 sample collected of the head meat, totaling 13 positive samples (5.91%) of the 220 collected. In eleven of carcasses (25%) was isolated from Y. enterocolitica at least one of the locations analyzed. The results showed that Y. enterocolitica is present in clinically healthy herd of animals of the Midwest of Santa Catarina and that there were housing the contamination in a meat sample head suggesting a risk to consumer health if they eat contaminated meat with this pathogen / Yersinia enterocolitica é uma bactéria Gram negativa e pertencente à família Enterobacteriaceae. Trata-se de um patógeno emergente e já detectado em todo o mundo. Por ser uma bactéria psicrotrófica, torna-se importante fator de risco para o consumidor. Devido a importância de Y. enterocolitica, e a grande produção de carne suína na região do meio oeste catarinense, objetivou-se determinar a presença de Y. enterocolitica em suínos abatidos em frigoríficos da região. Para isso foram coletados materiais de 44 suínos, como tonsilas, linfonodos submandibulares, linfonodos mesentéricos, linfonodos inguinais e carne da cabeça, totalizando 220 amostras. No laboratório, as amostras foram preparadas com caldo de enriquecimento seletivo PSB, homogeneizadas por 2 minutos e após incubadas em temperatura entre 22 e 25ºC, por 72h com agitação, a amostra do Caldo PSB foi estriada por esgotamento em superfície de Agar CIN. Colônias características foram confirmadas com o “Soro Yersinia enterocolitica Poli”, e com teste bioquímico Bactray I e II. Y. enterocolitica foi isolada em 6 amostras de tonsilas, 3 de linfonodos mesentéricos, 2 de linfonodos submandibulares, 1 de linfonodo inguinal e 1 de amostra coletada da carne de cabeça, totalizando 13 amostras positivas (5,91%) das 220 coletadas. Em onze carcaças, (25%) Y. enterocolitica foi isolada em pelo menos um dos locais analisados. Os resultados mostraram que Y. enterocolitica está presente no rebanho de animais clinicamente saudáveis da região meio oeste de Santa Catarina e que houve contaminação da carcaça em uma amostra de carne da cabeça o que sugere um risco para a saúde dos consumidores se ingerirem carne contaminada com esse patógeno

Big Goals - Small Island: Will Fiji achieve sustainable food security? : Comparing the plans and policies built by the Fijian government under the Millennium Development Goals and Sustainable Development Goals

This thesis examines how global development goals affect Fijian plans and policy strategies to achieve food security. The concept of food security is vast and complex, as several development issues contribute to the difficulty in achieving such security. It is therefore relevant to look at some of the dominating and underlying causes that challenge the possibility for Fiji to achieve food security. Built on previous theoretical and empirical evidence, this thesis identifies poverty and vulnerability as two dominant causes that hinder food security on Fiji. However, other causes, both internal and external, are recognised. Global development goals such as the Millennium Development Goals and the Sustainable Development Goals have highly influenced the strategies built within Fijian plans and policies. Millennium Development Goal 1 and 7, and Sustainable Development Goal 1 and 2, are of particular interest to this study, as the different goals target the issues of poverty, vulnerability and hunger. Although the different goals all target the underlying causes of food insecurity, this thesis finds that they differ in influencing a focus on achieving sustainable food security. Therefore, as the aspects of poverty, vulnerability and food security are highly intertwined, this thesis examines how strategies tackling poverty and vulnerability reduction have influenced strategies on food security on Fiji. By comparing the plans and policies built in consistency with the Millennium Development Goals and the Sustainable Development Goals, it has been possible to analyse whether such global goals have had an influence on addressing the underlying causes of food security on Fiji. Using the method of structured focused comparison in combination with an in-depth text analysis, structured questions have been built in order to analyse the chosen materials. The analysis has been conducted using information from different national plans found to be of relevance to the purpose of this study. The results show that goals with greater focus on social and environmental vulnerability, as well as long-term targets to eradicate poverty, provide a greater success in influencing a focus on food security in Fijian plans and policies. However, additional factors such as political instability, climate change and globalization need to be integrated into further studies on the chosen subject, in order to provide a greater understanding of how to achieve food security in a Pacific Small Island Developing State such as Fiji.

The purpose of this study was to investigate the efforts to reduce food waste in local primary schools in two municipalities in northern Sweden, as well as to highlight any similarities and differences. Food waste is a major problem around the world, globally an estimated 1.3 billion tonnes of food are thrown away each year. With a growing population and the environmental impact that is already provides significant consequences, it is not healthy that food that could be eaten are thrown away. Sweden alone are throwing away 1.2 million tonnes of food each year, and school kitchen alone contributes with approximately 40 000 tonnes. To answer the purpose of this study, electronic questionnaires were sent out to the principals for a total of 78 schools. The result of this study shows that 67 % of the schools participating in this study, has received directives from the municipality on how to work to reduce food waste in primary school. But even those who have not received directives from the municipality still perform activities when 12 out of thirteen schools in municipality A and all eight schools in municipality B stated that they actively working to reduce food waste. Even though the measures taken within schools were to some extent similar, the directives from the municipalities differed between schools, also within the same municipality. As consequence, participating schools worked differently with their students on this topic.

Aplicou-se um check-list que se constituiu de 129 itens (APÊNDICE 1), as respostas sobre a adequação incluíram sim (S), não (N) e não se aplica (NA), adaptado a legislação vigente no país (Resolução RDC n° 216 de 2004 e RDC n°275 de 2002). Para a avaliação das boas práticas foi acompanhado o processo operacional de recebimento, armazenamento, distribuição e ou exposição de alimentos a venda, em prateleiras a temperatura ambiente e nos balcões de refrigeração e congelamento. Foram realizadas medições de temperatura nos equipamentos de refrigeração e congelamento como as câmaras, refrigeradores, freezers, balcões de exposição e nos alimentos dentro contidos. Esta verificação foi feita com o auxílio de um termômetro infravermelho de pistola com mira laser com o objetivo de avaliar temperatura ideal para o recebimento de mercadorias e a temperatura ideal para o armazenamento de mercadorias, pautado pela Portaria CVS 5/2013. De acordo com o check-list aplicado apenas 12 % dos estabelecimentos estavam de acordo com os padrões de boas práticas exigidos pela legislação vigente. As temperaturas de armazenamento de produtos congelados estavam dentro das especificações da legislação para todos os estabelecimentos analisados. Mapping for Healthier Communities: Using GIS Technology as a Tool for Addressing Food Security

abstract: At first glance, trends in increased hunger and obesity in the United States (US) would seem to represent the result of different causal mechanisms. The United States Department of Agriculture (USDA) reported that nearly 50 million Americans had experienced hunger in 2009. A year later, the Centers for Disease Control and Prevention published a report showing that 68% of the US population was either overweight or obese. Researchers have found that these contrasting trends are actually interrelated. Being so, it is imperative that communities and individuals experiencing problems with food security are provided better access to healthy food options. In response to the need to increase healthy food access, many farmers markets in the US have received funding from the USDA to accept vouchers from federal food security programs, such as the Supplemental Nutrition Assistance Program (SNAP). In Downtown Phoenix, Arizona, one organization accepting vouchers from several programs is the Phoenix Public Market. However, the mere existence of these programs is not enough to establish food security within a community: characteristics of the population and food environments must also be considered. To examine issues of food security and public health, this thesis utilizes geographical information systems (GIS) technology as a tool to analyze specific environments in order to inform program effectiveness and future funding opportunities. Utilizing methods from community-based participatory research (CBPR) and GIS, a mapping project was conducted in partnership with the Market to answer three questions: (1) what is the demographic makeup of the surrounding community? (2) What retailers around the Market also accept food security vouchers? And (3) where are food security offices (SNAP and WIC) located within the area? O estudo tem o objetivo de discutir a Segurança Alimentar e Nutricional (SAN) e o papel da alimentação, destacando a percepção da falta do alimento como algo que tem um significado além da esfera biomédica na vida das pessoas, bem como compreender as concepções que o povo de terreiro considera no que se refere a SAN e as estratégias utilizadas diante das situações de não garantia deste direito. Foi realizado um trabalho etnográfico recorrendo a entrevistas semiestruturadas, registro fotográfico, observação participante e aplicação de um modelo adaptado da Escala Brasileira de Insegurança Alimentar e Nutricional – EBIA, a fim de conhecer a percepção que os sujeitos têm sobre a SAN, além disso, recorri também a dados secundários das organizações que atuam nesta área e dados governamentais. Os resultados obtidos foram categorizados e analisados a partir da técnica de análise de conteúdo e recorrendo a uma interpretação feita a partir do ponto de vista das mulheres negras, que foram as principais informantes neste estudo. Em 25% dos terreiros pesquisados, na percepção das zeladoras, a situação de SAN estava dentro da perspectiva adequada para as necessidades sócio-religiosas e de suas famílias biológicas, mas, para a maioria dos terreiros deste estudo, 75% das casas pesquisadas vivenciam algum grau de Insegurança Alimentar (IA) e, destes, 55,5% encontram-se em condição grave de IA, ou seja, apresentam muitas situações de limitação de acesso aos alimentos habituais, tanto para suas famílias biológicas, quanto para as obrigações sócio-religiosas. Fortalecer a energia vital (Axé) é essencial neste contexto, onde dar de comer é algo extremamente valorizado, do mesmo modo muitas são as proibições alimentares que devem ser respeitadas para a manutenção do equilíbrio e propagação da força que compõe e mantém um terreiro. A concepção do alimento como direito de todos, anterior a qualquer outro direito humano, prevalece nos terreiros. A justiça redistributiva da filosofia africana, Ubuntu, faz-se presente, pois o alimento existe para o bem de todos e de tudo, assim ele é distribuído na comunidade não importando o segmento a que cada indivíduo pertença, ou quem chega à busca desse benefício. Neste sentido, os terreiros tornaram-se atores interessantes para a implementação das políticas de SAN desenvolvidas no país nas últimas décadas. / Salvador

Youth Perspectives and Future Visions for Community Food Security: An Applied Approach to Participatory Research in Phoenix, Arizona

abstract: Food security literature has a heavy emphasis on physical barriers, often employing spatial analysis or market-based approaches, but the human dimensions of food security remain unexplored. This has resulted in a disconnect between the understanding of the problem and proposed interventions, as the contextual factors and lived experiences of residents are not considered. There are many barriers and opportunities for food security that are not spatially fixed (e.g. family relations, social capital) that may be important but are unrepresented in these types of studies. In order to capture these barriers and opportunities, community stakeholders need to play a fundamental role in the problem analysis and visioning stages. This study utilized community-based participatory research methods to engage an important stakeholder in the future food environment, youth, to 1) understand how the youth of Canyon Corridor describe their food environment, and thus capture contextual aspects of food security 2) adapt CBPR methods to engage youth in a visioning session to elicit their ideal community food environment and 3) determine if these applications of CBPR can empower youth of Canyon Corridor to mobilize towards a more secure food environment. I found that while the youth did identify many barriers to food security (i.e. transportation, cost, availability), this community also had significant strengths, particularly social capital, that allowed them to overcome what would be food insecurity. Despite their conclusions on food security, youth did desire many changes for the future food environment and felt increased empowerment after the workshops. Thus this shows the need for incorporating methods that also acknowledge the role of social and individual factors and how they interrelate with the physical environment in relation to food security. / Dissertation/Thesis / M.A. Sustainability 2012

Os Conselhos de SAN estão presentes nos níveis federal, estadual e municipal. No estado de São Paulo, o Conselho Estadual de Segurança Alimentar e Nutricional Sustentável é composto, desde 2008, por 16 CRSANS (Comissão Regional de Segurança Alimentar Nutricional Sustentável). Os objetivos do trabalho foram identificar capacidades e dificuldades dos Conselhos de SAN dos Municípios integrantes da CRSANS Central do estado de São Paulo para o trabalho de coordenação da implantação e manutenção de sistemas locais de SAN que garantam o respeito ao Direito Humano à Alimentação Adequada - DHAA. Trata-se de um estudo observacional, descritivo e transversal, de caráter qualiquantitativo, com a utilização da metodologia do Discurso de Sujeito Coletivo (DSC) para análise de dados coletados em entrevistas. O SISAN deve ser estruturado de forma intersetorial, descentralizada, com participação e controle social. Os níveis federal e estadual têm papel preponderante e de liderança nesse processo, estimulando as ações municipais. The SAN Councils can be either local, state or national. In the state of São Paulo, the Food and Nutritional Sustainable Security State Council is composed by 16 CRSANS (regional commissions of food and nutritional sustainable security) since 2008. The goal of this work was to identify capacities and difficulties faced by the SAN Councils from the municipalities that compose the central CRSAN from the state of São Paulo taking in consideration that these councils have to coordinate the implementation and the maintenance of SAN local systems that ensure the Human Right for Adequate Food. It is an observational, descriptive and transversal study, structured as a qualitative and quantitative analysis through the use of the Discourse of Collective Subject method. SISAN have to be structured in an intersectoral and decentralized way, with large participation and social control. The participants from federal and state spheres have relevant role in this process as they must leader and stimulate the municipal spheres. It was verified that most municipalities are small with high quality of life. The Services sector is the one that most contributes to the GDP, even with the fact that the majority of the municipalities has an agro-industrial vocation. The Social Obligation Norm as the Framework for Land Restitution in South Africa

Doctor Legum - LLD / This research project proposes that the social-obligation norm of ownership should be adopted as the ethic on which land restitution is carried out in South Africa. While there exists a subtle and indirect appreciation of the social-obligation norm in South African constitutional property law, this is veiled by the respect given to the classical liberal conception of ownership which gives more regard to an owner's ius abutendi and subsequently, accepts that owners can do as they please with their property as long as they do not break any law. Of course, South Africa no longer adheres to such a classical liberalist approach to ownership. An adherence to classical liberalist views of ownership has arguably, led to the neglect of arable restituted land. To this effect, the Constitution as well as the Restitution of Land Rights Act 22 of 1994 (RLA) need to clearly and more positively express the social-obligation norm of ownership in order to promote productive and sustainable utilisation of cultivable restituted land. The thesis argues that the current failures of the land restitution programme are linked to the absence of a social-obligation norm in the RLA as well as the negatively framed Property Clause in the South African Constitution. Even the envisaged changes to the land restitution process as outlined in the 2011 Green Paper on Land Reform as well as in the Property Valuation Act, will not solve the current problems of wasteful neglect of land. The thesis therefore suggests that a positive expression and formulation of the social-obligation norm in the RLA as well as in the Property Clause will promote active, sustainable, productive, and optimal utilization of all cultivable land acquired through the country's land restitution process. This will assist with meeting the developmental aspirations for the rural economy as envisaged in chapter six of the National Development Plan 2030. Furthermore, utilising the land productively through the socialobligation norm is an expression of Ubuntu, a key constitutional theme in South Africa. The experiences of Brazil and Germany deserve special analysis. This is because the socialobligation norm occupies a prominent and positive place in the constitutional property law of both these countries. Further, both countries respect private ownership of property as long as the property is utilised in a manner that permits others to flourish and improve the quality of their life.

This type of production brings in its history the use of sustainable techniques that enable food and nutritional security like, for example, agroecology, which minimizes environmental impacts on the environment by removing the chemical inputs of production, thus ensuring better quality to food purchased by consumers in addition to the security of livelihoods of family farmers themselves. However, this practice, that was considered a cultural factor of great expression in the country, has been outdated by the surging of large retail chains. So now only a small fraction of the participation in fairs is of family farmers, the assumption being that the dynamics of sustainable family farming of horticultural Açu-Mossoró territories and Sertão do Apodi (RN) still have many weaknesses and the performance of its organization system and its technical production standard are insufficient to trigger the dynamization of the two territories. The aim of this study is, therefore, to demonstrate the importance of the fresh produce chain as new environment for production and innovation in the process of market dynamization. The research is based on the year 2011, prior to the drought faced by the Northeast. The chosen methodology for data collection was of primary data, in order to conduct a census in all family agriculture fairs organized by Projeto Dom Helder Camara, Rede Xique Xique and Associação de Produtores e Produtoras Familiares Agroecológicos de Mossoró (APROFAM) – the association for agroecological family producers from the city of Mossoró. Also, an unstructured interview with the former educational, territorial and political adviser of Diaconia was conducted to understand how was initially conceived the project for the fairs. The research is characterized as comparative, making an integrated analysis between the two territories, with qualitative and quantitative method, since it allows a detailed analysis of the chain marketing process. Secondary data obtained through literature research was also used to corroborate the results. The research was conducted by submitting application forms to all the vendors of these fairs of family farming in the territories of Sertão do Apodi and Açu-Mossoró. It was found that family farmers and fairs play an important role in generating innovation, since they create new ways to improve the quality of life, capitalizing on the remains of production and generating extra income through marketing in the fair, as well as through developed practices that go beyond the conventional model, adopting characteristics that value for sustainability. We have seen that, even with the present insufficient structure, a satisfactory return is obtained, since most producers want to continue or expand the activity. However, this practice is a strategy aimed at resuming a cultural practice that is outdated, providing at least once a week with an environment for material and emotional exchanges, while strengthening a relationship that arouses confidence and values the direct contact between producers and consumers / As feiras locais da agricultura familiar são estruturas que facilitam a comercialização dos produtos da cadeia produtiva de hortifrutigranjeiros, expressando a diversificação do segmento da agricultura familiar. Esse tipo de produção traz em seu histórico o uso de técnicas sustentáveis e que viabilizam a segurança alimentar e nutricional como, por exemplo, a agroecologia, que minimiza os impactos ambientais causados no meio ambiente, retirando os insumos químicos da produção, garantindo assim mais qualidade aos alimentos adquiridos pelos consumidores além da seguridade de subsistência dos próprios agricultores familiares. No entanto, essa prática que era considerada como fator cultural de grande expressão no país, vem se defasando com a aparição de grandes redes varejistas. Portanto atualmente a participação nas feiras é de uma pequena parcela dos agricultores familiares, o pressuposto é a de que a dinâmica sustentável da agricultura familiar de hortifrutigranjeiros dos territórios Açu-Mossoró e Sertão do Apodi (RN) ainda possuem muitas fragilidades e o desempenho das suas formas de organização e do seu padrão técnico de produção adotados são insuficientes para desencadear a dinamização dos dois territórios. Logo o objetivo desse estudo é demonstrar a importância da cadeia de hortifrutigranjeiro como ambiente de produção de novidades e inovação no processo de dinamização dos mercados. A pesquisa é com base no ano de 2011, que antecedeu a grande seca enfrentada pelos nordestinos. Como metodologia para a obtenção de dados optou-se pelos dados primários a fim de realizar um censo em todas as feiras de agricultura familiar organizadas pelo Projeto Dom Helder Câmara, Rede Xique Xique e a Associação de Produtores e Produtoras Familiares Agroecológicos de Mossoró (APROFAM). Também foi realizada uma entrevista não estruturada com ex assessora territorial política pedagógica da Diaconia, para entender como tinha sido o projeto inicial das feiras. A pesquisa é caracterizada como comparativa, fazendo uma análise integrada entre os dois territórios, com método qualitativo e quantitativo, já que permite uma análise aprofundada do processo de comercialização da cadeia. Foram utilizados também dados secundários com pesquisa bibliográfica para corroborar com os resultados. A pesquisa aconteceu através da aplicação de formulários a todos os feirantes dessas feiras da agricultura familiar nos territórios Sertão do Apodi e Açu-Mossoró. Constatou-se que os agricultores familiares e as feiras tem um papel importante na geração de inovação, pois criaram novas maneiras de melhorar a qualidade de vida, aproveitando as sobras da produção e gerando uma renda extra através da comercialização em feira, como também através de práticas desenvolvidas que fogem do modelo convencional, adotando características que prezam pela sustentabilidade. Viu-se que as estruturas mesmo insuficientes mantém um retorno satisfatório, pois a maioria dos produtores pretendem continuar ou ampliar a atividade. Contudo essa prática é uma estratégia de retomar uma prática cultural que está defasada, propiciando pelo menos uma vez na semana um ambiente de trocas materiais e emocionais fortalecendo, uma relação que desperta confiança e valoriza o contato direto entre produtores e consumidores / 2016-12-05
