The contribution of food access strategies to dietary diversity of farm worker households on Oranje farm in the Fouriesburg district (RSA)

Dietary diversity is an indicator of the access dimensions of household food security as it relates to income, area, and seasonality. Dietary diversity refers to the number of different individual food items (food variety) and food groups (food group variety) consumed over a given reference period (Ruel, 2002:3). This may accurately predict individual nutrient adequacy and thus household food security. Inability to access enough food for a sustainable and healthy life indicates food insecurity. Food accessing refers to obtaining food for all household members at all times through own production, exchange and/or purchase. Food access depends on an adequate, stable, local food supply, and includes the availability and utilization of food (Steyn, Labadarios&Huskissom, 1999: 32). Lack of food resources often leads to food insecurity due to, among other, limited dietary diversity (different foods items or food groups) (Bellamy, 1998:24). Emphasis on dietary diversity can eliminate nutrient deficiency by increasing individual food and food group variety, thereby improving health. The aim of this research is to identify and describe the contribution of food access strategies to dietary diversity of farm worker households by identifying their dietary diversity level and its contribution to household food security. A cross-sectional research design was used to collect data from all the adult women (18-65 years) (N=21) responsible for the food in a complete community of farm worker households on a farm (Oranje farm) in the Free-State province of South Africa. A structured questionnaire was used to gather data on demographics, food access strategies with special reference to food production, purchasing, bartering, gathering and payment in kind, as well as dietary diversity. The two most common food accessing strategies used were purchasing (general dealers) and gathering (wild leaves, hunting, and fishing). Most people depended on own food production (86%) such as the cultivation of vegetables (spinach, green beans, pumpkin, turnip, tomatoes, cabbage) and fruit (apricots, peaches). Food bartering is seldom practiced (19%) due to customs and lack of knowledge. Food received as payment in kind (maize meal) was common (76%). The choice method of food access was buying (76%), gathering (19%) and producing (4%). People seldom ate outside their own home (76%), except children receiving food at school from the school feeding scheme (90%). Dietary diversity was limited for cereals consisting mainly of maize meal porridge, bread, vegetables such as wild leafy vegetables, tomatoes, onions, and potatoes, fruit (apples), unpasteurised milk, protein (eggs, chicken) and other (tea, sugar, oil, curry powder). The mean for the food variety score of the 109 food items per day varied from 23.0 to 27.9 between five seasons which relates to three to four different food items per day. Food variety score were thus lower in all the seasons when considering nutritious food. The food group diversity score was also calculated over nine nutritious food groups used over seven days. The food group diversity scores was high in almost all the seasons. The mean food group diversity score of the nine food groups varied from 7.9 to 8.8 between five seasons which relates to one and almost two food groups per day. Although most food groups were consumed in seven days, resulting in “high” dietary diversity, the numbers of food items (individual food variety) eaten within the various food groups was low. This study showed that it was possible to predict household food security of household members by simply calculating the food variety score and food group diversity score of a household as an indication of dietary diversity. The result revealed which households was food secure on insecure, and provided an overall picture of the dietary diversity of the whole community. Overall this results indicated that limited food access strategies were utilized or that many of the strategies were not used optimally, resulting in limited dietary diversity, ultimately affecting the household food security status of farm worker households. The socio-economic impact of a food production programme: Qamata irrigation scheme

Irrigation Schemes were introduce to be hub for food production and provision of job opportunities for rural communities. The idea also focused on provision of water in most dry areas but with potential soil for production. The introduction of government food security program came as means to achieve these objectives by subsidizing farmers with inputs and mechanical operations so as to reduce cost of production. This paper analyses the social and economic impact of massive food program in changing the lives of communities at Qamata Irrigation scheme. The data were collected from households who were beneficiaries of massive food program at Qamata Irrigation scheme and analysed using a descriptive statistics. The results show that socio-economic factors which include storage facilities, access to markets channels, land acquisition and size, change in income limit the ability of farmers to produce and sell productively, since they cannot store their produce for better market prices and are also limited in terms of available market. They are forced to sell at local village level on credit or have their produce loss in poor storage facilities. Qamata irrigation scheme had limited access to formal markets and market information.

Investigation of the effects of 2000 & 2007 flooding on food security in two East African countries

Flooding has been identified as the predominant, environmental generator of food emergencies. Climate change and climate variability have been blamed for these extreme weather events, which are envisioned to affect the future food security and nutritional status of populations across the African continent. It is thus expected that these weather phenomena will continue to increase in frequency and intensity as climate change progresses. Already, climate change has had a dramatic effect on the natural world with increased desertification, warming oceans, rising temperatures and changing weather patterns. In turn, this has affected agriculture and fishing, which subsequently determines the availability of food. On the contrary, weather alone, is not the sole contributing factor to problems that are associated with food security/insecurity. Elements embedded within a political, social, economical, and/or other, context also serve to contribute to how a population or individual experiences food security. It is therefore imperative that these aspects from the social or developmental arena are considered in conjunction with aspects from the natural or environmental sciences. Such a holistic approach to subjects relating to climate change and development will eventually lead to the realisation of sustainable development, which in turn serves to protect human security in the long-term. The research was primarily directed at examining how flooding affects food security and what can be done to avoid, or cope with, a potential food crisis. The above-mentioned social and developmental features shaped the scope of this research, giving rise to an investigation which transcended the confines of flooding as an independent cause and consequence of food insecurity. With East Africa as a focal point, Mozambique and Zambia emerged as the most affected countries with millions of people affected by these devastating waters in 2000 and 2007, respectively. Due to the past nature of the events, it was most appropriate to utilise statistics from sources such as existing databases, reports and articles. Some of the topics that were included in the investigation examined the causes and consequences of the flooding and the management of these disasters. These topics were scrutinised using both qualitative and quantitative dimensions of research, so that an interesting and viable study could be undertaken. ii The research found that frequent and severe flood disasters increase a population‟s vulnerability to food insecurity, as a wide variety of assets, structures and infrastructures are destroyed. However, with careful management, planning and adaptation, many of these unwanted consequences can be avoided or swiftly overcome. Both Mozambique and Zambia were found to be countries that were determined to overcome the barriers associated with climate change and its subsequent extreme weather events. This positively indicated that they were committed to the development process and the wellbeing of their populations. Apart from introducing the topic surrounding the influence of flooding on food security in East Africa, one of the main goals of this research was to gather recommendations and suggestions for avoiding or managing issues that could hamper food security. This ultimately forms an important source of reference for governmental and non-governmental institutions dealing with flooding and food security. Even though Mozambique and Zambia were chosen as the cases for investigation, many of the recommendations can be adapted and applied to countries world-wide.

Evaluating the effect of conservation agriculture basin tillage system on household food security in Mutasa

The research was done with the aim of evaluating the effect of the basin tillage system as a method of conservation agriculture, on improving smallholder farmers’ food security in Mutasa, Manicaland Province in Zimbabwe. This research focussed on the 2010/2011 agricultural season. The main objectives of this study were to determine the contribution of CA basin tillage system on increasing yields per hectare, to evaluate which CA principles are being practiced by smallholder farmers, and to determine how many months the harvested maize will last. The study compares smallholder farmers who practiced CA with farmers who practiced other tillage methods. The other tillage methods are ploughing and conventional hand hoe tillage systems. On average the farmers who practiced CA used 0.47 hectares of land whilst farmers who practiced other tillage methods used an average of 0.43 hectares of land. The average amount of maize produced by smallholder farmers who practiced CA was 824 kg while who practiced other tillage methods produced an average of 498 kg. Farmers practicing CA produced yield with an average of 1175 kg/ha of maize grain while farmers who practiced other tillage methods produced an average of 946 kg/ha. Food security in this reaseach was measured by the amount of months the maize grain produced was lasting in relation with the household size. 57 percent of the farmers who practiced CA are food secure because they have maize grain to last them a full consumption year and moreover surplus. Only 27 percent of the farmers who practiced other tillage methods produced enough to last a full consumption year.

Impact of animal traction power on agricultural productivity: case of lowlands of Mohale's Hoek district of Lesotho

Most farming at subsistence level is located in rural areas where the majority of smallholder farmers have low productivity which results in high rate of food insecurity. The areas are characterised by animal traction and poor farming practises, and monoculture is mostly preferred. In light of this, this study analyzed the impact of animal power on agricultural productivity. Smallholder farmers in the lowlands of Mohale’s Hoek district of Lesotho were investigated by means of a case study methodology. The aim of the study was to inform agricultural policy about the level and key determinants of inefficiency in the smallholder farming system so as to contribute to policy designed to raise productivity of smallholder farmers. The sampling frame comprised farmers and extension workers in the lowlands of Mohale’s Hoek district. From this frame, 118 farmers and 4 extension workers were randomly selected from four villages, namely‘Mapotsane, Potsane, Tsoloane and Siloe. The four groups of farmers include; the farmers owning and using cattle for ploughing, farmers owning tractor and cattle and using them for ploughing, farmers owning tractor only and using it for ploughing, and farmers who owned neither cattle nor tractor and normally hire these when ploughing operations are to be done on the farm. The interviews of these farmers and extension workers were conducted by means of semi-structured questionnaire which consisted of both open and close ended questions. The study used the stochastic frontier production model for the production efficiencies and linear regression model for the impact of animal traction on agricultural productivity. Both procedures provided insights into the relative contributions of animal power and traditional systems to poverty alleviation and food security in the project areas. Descriptive statistics were employed for farming systems and challenges facing small scale farmers. Gross Margins analysis was conducted for the animal power and tractor power yield levels for maize crop to compare the two types of power. Some diagnostic tests to detect serial correlation and heteroskedasticity and t-tests were also performed. The significant variables include the area of sorghum ploughed, members of the household that assist with family labour, education, quantity of fertilizer applied, time taken by the farmers in farming, members who are formally employed, household size, area of land ploughed, old age, costs of tractor and animal, marital status, income, area of maize ploughed, area of sorghum ploughed, quantity of fertilizers applied, costs of seeds and fertilizers applied, maize and sorghum yield and amount sold and consumed. The study revealed that monoculture is mainly practised and many smallholder farmers used traditional technologies that fail to replace nutrients in the soil. Nonetheless family labour was not a problem. During the farming season, tractors were used as the main source of power for ploughing. Most farmers hired these for maize production as it is a staple food crop even where animal power is available. It was noted that the tractors were few and in most cases old and malfunctioning. The cost of using animals in farming obviouslyplayed a role in the production of both maize v and sorghum in the lowland areas of Mohale’s Hoek district. Smallholder farmers who owned both tractors and animals produced more but they were mainly affected by high costs of maintaining the aging tractors, generally purchased on the used-equipment market. The increased challenges resulted in lower productivity of the smallholder farmers, including: unhealthy animals, drought, marketing problems, late ploughing, poor soils, lack of extension services, low yields, low income, lack of information, lack of appropriate implements, lack of support services, nutrition inadequacy, inappropriate farming systems. The study recommended the adoption and promotion of low-cost mechanization in the lowlands of Mohale’s Hoek district so as to increase the production of the smallholder farmers. Increased productivity will in turn improve household food security.

Hunger in households of plenty: Indonesian domestic workers navigating towards food security in Singapore

In Southeast Asia, many impoverished Indonesian women migrate to Singapore to work as domestic workers in households. Though employers are required to provide domestic workers with food and housing, there have been numerous reports of employers withholding food. This thesis explores the ways in which Indonesian domestic workers navigate towards food security in the context of social relations in their employers’ homes in Singapore. I draw on ethnographic fieldwork conducted in 2016, where I interviewed Indonesian domestic workers and employers. Not only were the majority of domestic workers experiencing food insecurity, food was additionally symbolically used to denigrate them. Drawing on a concept I term markings, which denotes the process of demarcating social roles through symbols and boundaries, I argue that employers control food in order to produce markings that construct and reinforce relations of inequality in households. These relations around food emotionally and physically shape domestic workers in ways that allow them to know their positions in the household. Despite their subordination, domestic workers use strategies to contest and endure their unequal conditions in Singapore in ways that demonstrate their resilience. This research demonstrates the importance of protecting the food security of migrant women, and advocates for the fair treatment of domestic workers. / Graduate / 2018-12-05

Application of Direct-sequencing Peptide Proteomics to the Characterization of Antagonistic (Endogenous and Exogenous) Proteins in Cereal Grains

The cereal seed plays a crucial role in society – both in the “food as medicine” paradigm, but also in food security. It is the starch and proteins present in the seed that lend it importance in these dissimilar anthropomorphic activities. This thesis investigation first characterized the post-translational processing of the potential diabetogen, wheat globulin-3. Globulin-3-like peptides were observed primarily in the embryo. These peptides varied significantly in their molecular masses and isoelectric points, as determined by two dimensional electrophoresis and immunoblotting. Five major polypeptide spots were sequenced by mass spectrometry, allowing for the development of a model of the post-translational events contributing to the globulin-3 processing profile. Three separate investigations of starch granules from different cereal species were performed. In the first series of experiments, pathogen-susceptible maize kernels were injected with either conidia of the fungal pathogen Fusarium graminearum or sterile water controls. Proteins in the desiccated fungal remnants on the surface of the kernels as well as in the endosperm and embryo tissues of the control and infected kernels were isolated and these proteomes were sequenced using tandem mass spectrometry. Approximately 250 maize proteins were identified. These proteins were classified into functional categories. There was an increased representation of defense proteins in the both the embryo and endosperm tissues of infected maize samples. The proteome of the fungal remnants was composed of 18 proteins. Several of these proteins were categorized as being involved in the metabolism of plant-sourced molecules, or in stress response. The second series of experiments detail the investigation of commercially prepared rice and maize starches using tandem mass spectrometry. The majority of identified proteins, in both rice and maize samples, were involved in either carbohydrate metabolism or storage. Markers for seed maturity and for starch mobilization were also documented. Finally, the third series of experiments investigated the non-host proteomes present in commercially-prepared starches. Non-host proteins from a variety of species, including Homarus americanus were found in the starch samples. This documentation of H. americanus proteins in these starch samples may have food safety implications with regards to shellfish allergies.

The Inuit Food System: Ecological, Economic, and Environmental Dimensions of the Nutrition Transition

From the Arctic to the South Pacific, Indigenous Peoples have experienced a rapid nutrition transition involving the decline of traditional/subsistence-based ways of life and the adoption of a “Western” diet that is high in saturated fats, sugar, and processed foods. This dietary shift has been paralleled by an increased prevalence of obesity, diabetes, and, other diet-related chronic diseases. In the Arctic, rapidly changing biophysical conditions, globalization, and integration into market economies are collectively challenging access to both country foods and nutritious market foods. Food security and nutrient adequacy thus remain elusive for Inuit communities of northern Canada. Premised upon the view that human well-being is predicated upon complex and dynamic interactions between ecosystems, economies, and societies, this dissertation integrates multiple lines of inquiry and scales of engagement (community, regional, and national) to further understanding of the nutrition transition among Inuit in Canada. The thesis is comprised of two sections. Section 1 bridges the often disparate fields of human nutrition and wildlife conservation by addressing key questions about the status and management of Arctic species, and the implications for Inuit food security and health. For example, caribou (Rangifer tarandus) populations across the circumpolar north are currently experiencing dramatic declines in abundance and restrictions on Inuit subsistence harvest are currently implemented for several caribou populations. Caribou, however, is the primary source of protein and several micronutrients involved in the prevention of anemia (e.g. iron zinc, copper, riboflavin, and vitamin B12) in the contemporary diet of Inuit adults. Caribou consumption is also positively associated with hemoglobin levels in Inuit adults. Section 2 considers elements of the market food system in Inuit communities. We found that the most popular market foods consumed by Inuit (e.g. sweetened beverages, added sugar, and bread) contribute significantly to total diet energy while contributing minimally to most micronutrients. Using optimization models, we have demonstrated that a nutritious diet (one meeting Health Canada dietary reference intake values) is theoretically feasible based on a mix of country food and market food, and at relatively little additional cost from current diets. However, significant deviations in patterns of food expenditure away from sweetened beverages, towards dairy, and whole fruits and vegetables would be required. Taken collectively, this thesis provides important information, as well as new tools, and approaches, for communities, wildlife conservation and public health professionals to jointly promote ecosystem and human health in a rapidly changing environment.

Playing Fair: How “Alternative” Fair Trade and Organic Quinoa Markets in Bolivia Affect Producer Livelihoods

This thesis seeks to analyze the “alternative” nature of organic and fair trade markets and whether they are truly challenging the neoliberal food system, using the case of Bolivian quinoa, traditionally a subsistence crop, to analyze the effects on producer livelihoods. Field research, conducted from April until August 2015, focuses on two areas in the Altiplano sur: the small community of Rodeo and the town of Salinas de Garcí Mendoza. The study uses a political ecology and historical materialist theoretical framework and an ethnographically oriented livelihoods approach, in order to better weave the macro-processes of power to producers’ struggles over their livelihoods. Though organic and fair trade markets are by no means revolutionizing quinoa production or relationships of production in Bolivia, they are providing better terms of trade for producers and allowing them to maintain more traditional, small scale modes of production and community levels of organization. In addition, field research helped facilitate a critical discussion about the challenges and opportunities afforded by these alternatives, talking directly to producers and tying their local difficulties to larger, structural realities: a humble first step in problematizing a common lived struggle.

This diploma thesis "Reasons why there was a food crisis in 2007 and 2008" summarizes and analyzes to what extent contributed particular factors to food crises all around the world in 2007 and 2008. Media and some well known international organizations believed that the main factors that caused last food crises were bio-fuels and significantly increased demand from China and India. This diploma thesis summarizes all main factors and comes to conclusion that the main factor that should be eliminated as soon as possoble is the problem with global climatic changes. Several international organizations have discussed this issue on international and global level for several years so let us hope we will not only discuss but we will do some active and concrete steps to solve this global problem. Of course the other factors need to be eliminated or at least moderated in the future as well. None of the crises occurs because of some concrete factor. It is always set of reasons that have caused some global problem.
