Employee theft in beverage operations and an effective system of control

Employee theft in a beverage operation can cause critical management problems. The dollar amounts involved are large enough to tremendously influence the cost effectiveness of the total business operation. This subject has been investigated by means of a review of written material pertinent to the theft problem within beverage operation. To further explain the problem, the author has drawn upon his actual work experience as well as his experience as an instructor in this field. The problem of employee theft is not limited to the personnel in any particular job category. In this case, the possibility of theft extends from the entry level positions throughout the organization to top management. A method of control then becomes the primary emphasis of the author's work. This comprehensive control system for inventory, from purchasing to the delivery of the goods to the consumer, has the capability of reducing the opportunity for employee theft. In addition, the system can provide management with inventory information, cost per serving, customer preferences, etc. The control system is, therefore, not limited to controlling the opportunities for t-heft but can be utilized as an effective management tool as well. All of the benefits of the system can lead to better management and greater cost effectiveness of the beverage operation.

Hotel rating through guest feedback

Hotel rating refers to the process where the comfort and services of a hotel are assessed and classified, usually in five categories, using stars as symbols. Conventional hotel rating systems are generally operated by governments or independent parties. However, with the growth of social media and customer-review sites, guest review platforms became an important source of information. The main aim of this study is to establish whether guest feedback can determine hotel ratings more accurately than conventional methods and whether a social media platform such as TripAdvisor can provide the necessary data to do so. The customer-review website, TripAdvisor, has grown rapidly and made a strong impact on the tourism and hotel industry. This study identifies the nature of TripAdvisor, its reliability, how its ratings compare with conventional ratings, and what criteria are used in guest reviews on TripAdvisor when assessing the quality of a hotel. These findings were triangulated with findings from the conventional rating systems of the 11 destinations that were sampled for this study to identify the value of TripAdvisor. Two samples were taken from TripAdvisor of 110 and 33 hotels, respectively. From the latter, ten guest reviews were gathered and analysed per hotel, resulting in a total of 330 reviews that were analysed. The study’s findings indicate that TripAdvisor is the largest guest feedback platform for hotels and its data can be considered to be reliable. The TripAdvisor ratings were not connected to the conventional ratings of the sampled hotels. The criteria used in TripAdvisor reviews focused more on service delivery than on the objective tangible elements used in most hotel rating systems. The rich context found in most guest reviews makes the information presented on TripAdvisor valuable. There is no evidence that conventionalrating system controls are linked to the comments found in TripAdvisor reviews. The results facilitated the identification of the delight and frustration factors in services marketing for the hotel industry. A new theory to include guest feedback in hotel ratings is developed and proposed. The study further presents two future scenarios, the most likely one of which predicts the demise of conventional rating systems as a result of the success of guest feedback platforms such as TripAdvisor.

Elements in global hospitality expansion

This study reflects an investigation into four elements that could affect global expansion strategies within the hotel industry. In both emerging and developed economies, the increased growth within the services sector has become more apparent. There is considerable knowledge and literature available on the process of internationalisation, globalisation and expansion within the services sector and as this information is important to understand the internationalisation process itself, the decision to expand (cross border) presents a number of opportunities and challenges to the hotel industry. Hotels are comprised of a number of divisions and departments, which collectively offer unique services and facilities to various markets. Within this context, careful consideration is required with respect to an organisation‟s overall strategic objectives, the internal structure and how government and cultural influences and differences affect global expansion. Organisational matters such as strategic objectives as well as operational functions such as financial, marketing and sales, human resources and organisational design must also be considered as hotels require synergy within each of these various components in order to function optimally. When international or globalisation opportunities present themselves or are proactively sought, organisations need to ensure that various factors are clearly understood, analysed and identified. These include the most appropriate strategy required, the organisations own internal capacity levels, governmental influences and cultural dynamics. An in-depth literature review regarding the internationalisation process was conducted where-after a review was compiled and interviews set up with directors of hotel groups who are responsible for global expansion within their respective organisations. The sample included three local South African and two international hotel groups who either were contemplating or who had already expanded internationally. It is evident that hotel companies have a preference to non-equity based expansion either through management contracts or joint ventures. In addition, expansion into emerging markets required a different approach to that of developed markets and a unique understanding of the government and cultural influences of the host country was required.

Dança circular e hospitalidade : um corpo que se expressa e acolhe com amorosidade

Esta pesquisa propõe a dança circular, como expressão de vínculos de acolhimento e amorosidade, em condições de oferecer sinalizadores para a hospitalidade. Tem como objetivos específicos: apresentar a dança circular num contexto relacional entre os sujeitos; relacionar os conceitos de acolhimento e amorosidade à dança circular; identificar sinalizadores de hospitalidade, nos vínculos marcados pelo acolhimento e amorosidade, em decorrência da dança circular. Em termos teóricos, é transdisciplinar, envolve estudos sobre dança circular, corpo, hospitalidade, acolhimento e amorosidade. A Cartografia de Saberes, proposta por Baptista, é a orientação metodológica para a produção deste estudo, com realização das trilhas de saberes pessoais, saberes teóricos e a usina de produção. Foram realizadas aproximações investigativas, com levantamento bibliográfico, desenvolvimento de intervenções de dança em diversos ambientes e observação do corpo participante. Nas ações práticas, observação direta, observação participante, rodas de conversa, relatos de vivências e experimentação com desenvolvimento da dança circular. Os resultados indicaram que o desenvolvimento da dança circular, em diversos ambientes, proporcionou, aos sujeitos participantes, sensação de bem-estar, laços de proximidade, acolhimento e amorosidade. A dança circular é uma forma de integrar o corpo e sua expressividade, em situação de comunicação e expressão. É capaz de acionar o pensamento e explorar a criatividade, para improvisar e, ao mesmo tempo, estabelecer a conexão de troca com este ‘outro’, o desconhecido. Trata-se de prática cooperativa, envolvendo uma nova-velha forma de lidar com as relações humanas em equipes de trabalho e no cotidiano, certamente como faziam nossos ancestrais. Proporciona sensação de pertencimento e provoca soltura nos corpos, relaxamento e relação-convívio. Há ampliação do bem-estar físico, mental, emocional, energético e social, no processo que costura as relações interpessoais. Ao tocar e ser tocado na dança circular, há a inserção da permissão de envolvimento, fluidez necessária para a constituição das emoções, do acolhimento e da amorosidade, que, por sua vez, terá resultados diferenciados, gerando condições de hospitalidade / This research proposes the circular dance, as an expression of the bonds of welcoming and amorousness, in conditions to offer signs for the hospitality. It has specific objectives: to present the circular dance in a relational context between the subjects; to relate the concepts of welcoming and amorous to circular dance; to identify flags of hospitality, in the bonds marked by the welcoming and amorousness, as a result of the circular dance. In theoretical terms, it is transdisciplinary, involves studies on circular dance, body, hospitality, welcoming and amorousness. The Cartography of Saberes, proposed by Baptista, is the methodological orientation for the production of this study, with the realization of the tracks of personal knowledge, theoretical knowledge and the production plant. Investigative approaches were carried out, with a bibliographical survey, development of dance interventions in several environments and observation of the participant body. In practical actions, direct observation, participant observation, talk wheels, experiences reports and experimentation with circular dance development. The results indicated that the development of circular dance, in several environments, provided the participants with a feeling of well-being, close ties, welcoming and love. Circular dance is a way of integrating the body and its expressiveness, in a situation of communication and expression. It is capable of triggering thought and exploring creativity, to improvise and, at the same time, to establish the connection of exchange with this 'other', the unknown. It is a cooperative practice, involving a new way of dealing with human relations in work teams and daily life, as our ancestors certainly did. It provides a sense of belonging and causes ease in bodies, relaxation and relationship. There is an increase in physical, mental, emotional, energetic and social well-being in the process that stitches interpersonal relationships. By touching and being touched in the circular dance, there is the insertion of the permission to be involved, fluidity necessary for the constitution of emotions, welcoming and love, which, in turn, will have different results, generating conditions of hospitality.

UNDERSTANDING TOURISM MOMENTS AND THE IMPACT OF SMARTPHONE DOCUMENTATION

The focus of this dissertation was the study of the fleeting and incredible experiences that occur during a tourism experience that this paper refers to as Tourism Moments. In study 1, a qualitative inquiry was conducted to gain an understanding of Tourism Moments. The findings produced a conceptualization and description of the Tourism Moment experience. Four different types of Tourism Moments were identified. Further, insight was gained regarding the memorability of Tourism Moments specifically, and tourism experiences at large. In study 2, the impact of smartphone documentation on the experience and memorability of Tourism Moments was conducted. Utilizing an experimental design, several hypotheses regarding the latter were tested. First, the results showcase evidence that travelers who document their Tourism Moments with a smartphone camera negatively impact their consumption experience. Interestingly, the findings also indicate that the use of smartphone documentation significantly improves the memorability of Tourism Moments later. Additional results identified that enjoyment is a significant predictor of memory, and that sharing a Tourism Moment online does not improve its memorability. Together, study 1 and study 2 contribute greatly to both theory and industry stakeholders.<br>

The changing contexts for ministry and the impulse to transform the neighborhood through specialized ministry to African Immigrants in New England

This project thesis begins to close the gap between the lack of resources and support for many undocumented African immigrants in New England and their need to access multiple forms of assistance. It links my theological and biblical vision for neighborhood transformation with the philosophical framework of community building. It considers the meaning of community within the context of the Christian calling to build a community of strangers in a pluralistic society like the United States of America. The project thesis advocates the creation of community outreach programs focused on emotional support, legal support, and spiritual refuge for undocumented African immigrants, based on the theological notion of hospitality as a biblical practice. The project thesis concludes by spotlighting the vocational calling of African immigrants using Nehemiah, Ezra, and the contemporary Jewish community in the Diaspora as biblical and contemporary example.
