Sensory Quality and Consumer Perception of Wheat Bread : Towards Sustainable Production and Consumption. Effects of Farming System, Year, Technology, Information and ValuesKihlberg, Iwona January 2004 (has links)
In order to study the effect of production systems aimed at sustainability on product quality and of sensory and non-sensory factors on product acceptance – the effect of farming system, year, milling and baking techniques on the sensory qualities of wheat bread as a model product was investigated using a descriptive test, and the effect of information and values on liking of bread using consumer tests. Whole wheat and white breads were baked with wheat grown in six lots in established conventional and organic farming systems in field trails, in two subsequent years for the white bread. Milling technique influenced flours’ rheology and had greater impact on the sensory qualities of whole wheat bread and on the slice area than did farming system and baking technique. Bread baked with roller-milled wheat was characterized by sweetness, juiciness, compactness and smaller slice area than bread baked with stone-milled wheat, which was characterized by saltiness, deformity and roasted cereals. The effect of year on the white bread was greater than the effect of farming system or recipe modification. Bread baked with wheat harvested in 1999 had significantly lower intensities of crumb attributes such as smoothness, juiciness and elasticity, but higher rancid flavour, springiness, compressibility, mastication resistance than bread baked with wheat harvested in 2000. Bread baked with conventional flour had significantly higher juiciness and elasticity than organic bread. Image analysis did not show differences in slice area between bread baked with conventionally and organically grown wheat harvested in 1999 compared with 2000. Information affected liking in relation to the type of provided information. Information on organic origin enhanced most liking of bread, particularly for the less liked samples and frequent consumers of organic food. Significantly different values and different specific liking of breads were found among consumer segments. Results linked values and age with “taste”.

Previous issue date: 2010 / Resumo: Em momentos de pressões crescentes, empresas se veem compelidas a modificar suas estratégias e ajustarem-se às oportunidades e ameaças que se transformam rapidamente, o que as fazem depender de um processo contínuo de aprendizado. O objetivo central deste trabalho é desenvolver um método que permite identificar e avaliar as dificuldades encontradas pelas empresas, que foram certificadas pela Norma ISO 9001: 1994 e que migraram para a versão ano 2000 e, ainda, foram recertificadas na versão ano 2008 dessa Norma que passou da ênfase em requisitos para o enfoque em processos e seus resultados. Para alcançar tal objetivo, iniciou-se com a metodologia de survey em empresas do setor metal mecânico. Posteriormente, foi desenvolvido um modelo para se alcançar a excelência e, por fim, elaborou-se a técnica de múltiplos casos. A partir da survey, dos múltiplos casos e da construção de um modelo, foi possível identificar os principais dificultadores de implementação dos Sistemas de Gestão da Qualidade, possibilitando, assim, potencializar a implementação de um Sistema de Gestão, com riscos minimizados e resultados duradouros através da excelência / Abstract: In times of increasing demand, companies feel compelled to change their strategies and to adjust themselves to opportunities and threats which have been rapidly converted, making them depend on a continuous learning process. The objective of this work is to develop a method to identify and go into the difficulties found by companies certified with "ISO 9001: 1994" and also with the "2000" version and even with the one in "2008". It has moved from simple emphasis on requirements to the focus on processes and outcomes. To achieve this goal, we had begun with the methodology of company survey in the metal mechanic sector. Afterward a model was developed to achieve excellence and to develop the technique for multiple cases. For optimize production flow was application method lean production and for department material supply method KANBAN. This diploma thesis has been written within cooperation of Celestica Ráječko company where I have picked up data and knowledge to above-mentioned topic.

<p>Abstract</p><p>The aim of this thesis is to show the company the importance and the necessity of the maintenance, trough highlighting its role and impact on company’s profitability and competitiveness, and that’s happened within the analysing of the plant to figure out the failures and short stoppages, find out the causes behind them, convert them into money and the last step is to find out the most suitable and cost effective maintenance strategy based on some important factors such as economy, and quality to probably eliminate or reduce the number of failures and short stoppages. According to the analysis, capacity verifying data collection which the company has done during a random working daily shift and a technical faults list about the possibly failures and short stoppages which occur during the operation, it shows that there are some downtime due to management, operation and logistic, but the main focus was on the technical faults which has correlation with maintenance. In the result it shows which technical and mechanical problems the machines usually faces, the causes behind them, how much it cost the company when they breaks down and finally some suggestions and recommendations about how these problems can probably be solved based on economy and quality.</p> / <p>Sammanfattning</p><p>Syftet med denna rapport är att visa hur viktigt och nödvändigt det är med att underhålla företagens maskiner och utrustningar, därför att det har stor påverkan på företagens lönsamhet och konkurrens och det skedde genom att analysera företagens produktions process, lista ut haverier och avbrott, hitta orsakerna som ligger bakom det, konvertera det till pengar och försöka lösa problemen genom att hitta den mesta lämpligaste underhåll strategi baserande på ekonomi och kvalitet. Enligt analysen som utfördes genom studiet, kapacitet verifiering data insamlingen som företaget gjorde under en slumpmässig arbetsdag skift och ett tekniskt fel lisat på eventuella avbrott och haverier. Det visade sig att det finns vissa stopp tider som har samband med management, operation, och logistik, men uppgiften är mer fokuserad på de tekniska problemen som har samband med underhåll. I resultatet ser man vilka tekniska och mekaniska problem som brukar angripa maskinerna, orsakerna som ligger bakom de, hur mycket det kostar företaget för varje maskin när den är ur funktionen, samt några förslag på eventuella lösningar och rekommendationer baserande på ekonomi och kvalitet.</p>
