This research aimed to develop a quality protocol according to the Quality Index Method (QIM) to bigeye, gutted stored on ice (0 ? 1 ?C) and accompanied by chemical, physical and bacteriological loss of freshness during storage. We collected lots of third bigeye in the region of Grumari, RJ. Once captured were eviscerated, washed transported to Embrapa Food (Guaratiba, RJ), they were packed in ice during the period of 21 days. The composition analysis performed showed significant differences after the storage period, allowing the species classified as high protein and medium fat content. The analyzes of total count of psychrotrophic and mesophilic bacteria, the sensory evaluation, pH and total volatile bases (BVT) were performed in the following ranges 0, 2, 4, 7, 9, 11, 14, 16, 18, 21 days while the color and texture analysis instruments were performed on days 0, 4, 9, 14, 18, 21. The QIM scheme developed was composed of four major quality criteria divided into twelve attributes, adding 24 demerit points, called the Quality Index (QI). Showed high linear correlation (R2 = 0.9559) with time of storage (IQ = 1.9071 + 1.203 x days in ice). All sensory attributes were highly correlated in the PCA analyzes, which marked 95.81% of the total information given by 24 demerit points QIM scheme. The bacteriological analyzes were not decisive in determining the moment of rejection, and their values ranged from <1 log CFU / g to 4.7 log CFU / g for mesophilic and 6.8 log CFU / g for psychrotrophic. The pH varied from 5.76 to 6.6 and the limit (6.5) was achieved after 9 days of ice. The BVT content ranged from 8.82 mg to 17.64 mg N/100g N/100g. A decrease in the strength of the fillets, ranging from 1.37 (N), 0.96 (N), and the strength of the whole fish 13.48 (N), 3.39 (N) shown to be a good indicator of the tendency muscle deterioration with time. The color instrumentally evaluated showed significant differences in skin color during the storage, demonstrating the loss of red color. The physical and chemical analyzes have showed good correlation (> 0.868) with the Quality Index, showing the statistical support for the use of the scheme. Based on these results, suggested that the consumption bigeye by up to 9 days of storage, which corresponded to 15 IQ points / O olho-de-c?o (Priacanthus arenatus) ? um peixe marinho de cor vermelha intensa, de alto valor culin?rio, comercializado fresco e encontrado ao longo de toda costa brasileira. Esta pesquisa teve como objetivo desenvolver um protocolo de qualidade de acordo com o M?todo do ?ndice de Qualidade (MIQ) para olho-de-c?o, eviscerado armazenado em gelo (0 ? 1?C) e acompanhar por an?lises qu?micas, f?sicas e bacteriol?gicas a perda do frescor durante a estocagem. Foram coletados 3 lotes do olho-de-c?o na regi?o de Grumari, RJ. Depois de capturados foram eviscerados, lavados transportados at? a Embrapa Agroind?stria de Alimentos (Guaratiba, RJ), onde foram acondicionados em gelo durante o per?odo de 21 dias. As an?lises de composi??o centesimal apresentaram diferen?as significativas ap?s o per?odo de estocagem, permitindo classificar a esp?cie como de alto teor prot?ico e m?dio teor de gordura. As an?lises de contagens totais de bact?rias mes?filas e psicrotr?ficas, avalia??o sensorial, valor de pH e bases vol?teis totais (BVT) foram realizadas nos seguintes intervalos 0, 2, 4, 7, 9, 11, 14, 16, 18, 21 dias, enquanto que as an?lises de textura e cor instrumentais foram realizadas nos dias 0, 4, 9, 14, 18, 21. O esquema MIQ desenvolvido foi composto de quatro grandes crit?rios de qualidade divididos em onze atributos sensoriais, somando 24 pontos de dem?rito, designado de ?ndice de Qualidade (IQ). Apresentou alta correla??o linear (R2= 0,9559) com o tempo de estocagem (IQ = 1,9071 + 1,203 x dias em gelo). Todos os atributos sensoriais foram altamente correlacionados na an?lise ACP, que caracterizou 95,81% das informa??es totais dadas pelos 24 pontos de dem?ritos do esquema MIQ. As an?lises bacteriol?gicas n?o se mostraram determinantes para determinar o momento de rejei??o, e seus valores variaram de < 1 log UFC/g a 4,7 log UFC/g para as mes?filas e 6,8 log UFC/g para as psicrotr?ficas. O pH variou de 5,76 a 6,6 e seu limite (6,5) foi atingido aos 9 dias de armazenamento em gelo. O teor BVT variou de 8,82 mg de N/100g a 17,64 mg de N/100g. Houve um decr?scimo na firmeza dos fil?s, variando de 1,37 (N) para 0,96 (N), e na firmeza do peixe inteiro 13,48 (N) para 3,39 (N) mostrando ser um bom indicador da tend?ncia de deteriora??o da musculatura ao longo do armazenamento. A cor avaliada instrumentalmente apresentou diferen?as significativas na cor da pele ao longo da estocagem, demonstrando a perda de tonalidade vermelha. MPEG-4 AVC stream watermarking / Tatouage du flux compressé MPEG-4 AVC

La présente thèse aborde le sujet de tatouage du flux MPEG-4 AVC sur ses deux volets théoriques et applicatifs en considérant deux domaines applicatifs à savoir la protection du droit d’auteur et la vérification de l'intégrité du contenu. Du point de vue théorique, le principal enjeu est de développer un cadre de tatouage unitaire en mesure de servir les deux applications mentionnées ci-dessus. Du point de vue méthodologique, le défi consiste à instancier ce cadre théorique pour servir les applications visées. La première contribution principale consiste à définir un cadre théorique pour le tatouage multi symboles à base de modulation d’index de quantification (m-QIM). La règle d’insertion QIM a été généralisée du cas binaire au cas multi-symboles et la règle de détection optimale (minimisant la probabilité d’erreur à la détection en condition du bruit blanc, additif et gaussien) a été établie. Il est ainsi démontré que la quantité d’information insérée peut être augmentée par un facteur de log2m tout en gardant les mêmes contraintes de robustesse et de transparence. Une quantité d’information de 150 bits par minutes, soit environ 20 fois plus grande que la limite imposée par la norme DCI est obtenue. La deuxième contribution consiste à spécifier une opération de prétraitement qui permet d’éliminer les impactes du phénomène du drift (propagation de la distorsion) dans le flux compressé MPEG-4 AVC. D’abord, le problème a été formalisé algébriquement en se basant sur les expressions analytiques des opérations d’encodage. Ensuite, le problème a été résolu sous la contrainte de prévention du drift. Une amélioration de la transparence avec des gains de 2 dB en PSNR est obtenue / The present thesis addresses the MPEG-4 AVC stream watermarking and considers two theoretical and applicative challenges, namely ownership protection and content integrity verification.From the theoretical point of view, the thesis main challenge is to develop a unitary watermarking framework (insertion/detection) able to serve the two above mentioned applications in the compressed domain. From the methodological point of view, the challenge is to instantiate this theoretical framework for serving the targeted applications. The thesis first main contribution consists in building the theoretical framework for the multi symbol watermarking based on quantization index modulation (m-QIM). The insertion rule is analytically designed by extending the binary QIM rule. The detection rule is optimized so as to ensure minimal probability of error under additive white Gaussian noise distributed attacks. It is thus demonstrated that the data payload can be increased by a factor of log2m, for prescribed transparency and additive Gaussian noise power. A data payload of 150 bits per minute, i.e. about 20 times larger than the limit imposed by the DCI standard, is obtained. The thesis second main theoretical contribution consists in specifying a preprocessing MPEG-4 AVC shaping operation which can eliminate the intra-frame drift effect. The drift represents the distortion spread in the compressed stream related to the MPEG encoding paradigm. In this respect, the drift distortion propagation problem in MPEG-4 AVC is algebraically expressed and the corresponding equations system is solved under drift-free constraints. The drift-free shaping results in gain in transparency of 2 dB in PSNR

Cette thèse a pour ambition d’explorer d’un point de vue théorique et applicatif le paradigme de l’in-band enrichment. Emergence de la société des connaissances, le concept de média enrichi renvoie à toute association de métadonnée (textuelle, audiovisuelle, code exécutable) avec un média d’origine. Un tel principe peut être déployé dans une large variété d’applications comme la TVNi - Télévision Numérique interactive, les jeux ou la fouille des données. Le concept de l’inband enrichement conçu et développé par M. Mitrea et son équipe au Département ARTEMIS de Télécom SudParis, suppose que les données d’enrichissement sont insérées dans le contenu même à enrichir. Ainsi, un tel concept peut-il tirer parti de techniques de tatouage, dès lors que celles-ci démontrent qu’elles ont la capacité d’insérer la quantité d’information requise par ce nouveau type d’application : i.e. 10 à 1000 fois plus grande que celle nécessaire pour les enjeux d’authentification ou de protection de droit d’auteur. Si par tradition la marque est insérée dans le domaine non compressé, les contraintes relatives aux nombreuses applications émergentes (comme la VoD – Vidéo à la Demande ou la TVNi) font du tatouage en temps réel dans le domaine compressé un important défi théorique et applicatif. Cependant, le tatouage dans le domaine compressé est une alliance de mots contradictoires puisque la compression (élimination de la redondance) rend l’hôte plus sensible aux modifications et l’association hôte/marque, plus fragile / The present thesis, developed at Institut Télécom Télécom SudParis under the “Futur et Rupture” framework, takes the challenge of exploring from both theoretical and applicative points of views the in band enrichment paradigm. Emerged with the knowledge society, the enriched media refers to any type of association which may be established between some metadata (textual, audio, video, exe codes...) and a given original media. Such a concept is currently deployed in a large variety of applications like the iDTV (interactive Digital TV), games, data mining... The incremental notion of in band enrichment advanced at the ARTEMIS Department assumes that the enrichment data are directly inserted into the very original media to be enriched. In real life, in band enrichment can be supported by the watermarking technologies, assuming they afford a very large data payload, i.e. 10 to 1000 larger than the traditional copyright applications. The nowadays advent of the ubiquous media computing and storage applications imposes an additional constraint on the watermarking techniques: the enrichment data should be inserted into some compressed original media. A priori, such a requirement is a contradiction in terms, as compression eliminates the visual redundancy while the watermarking exploits the visual redundancy in order to imperceptibly insert the mark

AvaliaÃÃo da vida Ãtil do polvo Octopus insulares sob armanezamento refrigerado: efeito da evisceraÃÃo e da embalagem a vÃcuo

Conselho Nacional de Desenvolvimento CientÃfico e TecnolÃgico / O Brasil vem se consolidando como um exportador de polvo, tendo como maiores mercados a Espanha, JapÃo e Estados Unidos. O Estado do Cearà possui grandes perspectivas de aumento na captura de polvo, devido ao vasto litoral e à busca por pratos exÃticos e ao mesmo tempo saudÃveis pela populaÃÃo.Junto com esse crescimento vem à necessidade de ampliar ainda mais esse produto para mercados distantes dos locais de produÃÃo, promovendo o aumento de sua vida Ãtil e diversificaÃÃo da oferta, a fim de atender a uma demanda crescente de consumidores de forma conveniente e segura. Sendo assim, o objetivo deste trabalho foi avaliar o efeito da embalagem a vÃcuo sobre a vida Ãtil do polvo da espÃcie Octopus insularis armazenado sob refrigeraÃÃo (2  2 ÂC). Foram realizados trÃs tratamentos: polvos nÃo eviscerados (INT), eviscerados e embalados sem vÃcuo (ESV) e eviscerados e embalados a vÃcuo (ECV), os quais foram avaliados a cada 5 dias durante 20 dias de armazenamento sob refrigeraÃÃo (2  2 ÂC), quanto as caracterÃsticas microbiolÃgicas (bactÃrias patogÃnicas e deteriorantes), sensoriais (avaliaÃÃo do frescor) e fÃsico-quÃmicas (pH, N-BVT e N-TMA). Para avaliaÃÃo das caracterÃsticas sensoriais, o Quality Index Method (QIM) proposto por Barbosa e Vaz-Pires (2004) foi adaptado para o polvo Octopus insularis. Para adaptaÃÃo do QIM, contou-se com a ajuda de 5 julgadores treinados. O QIM adaptado possui 8 atributos sensoriais usados para avaliar o frescor de polvo O. insularis. Os resultados demonstraram que a embalagem a vÃcuo nÃo foi eficiente na manutenÃÃo das caracterÃsticas da qualidade de polvo Octopus insularis armazenado sob refrigeraÃÃo, pois os valores dos parÃmetros fÃsico-quÃmicos analisados foram superiores aos das amostras nÃo embaladas a vÃcuo. A embalagem a vÃcuo tambÃm nÃo foi eficiente contra os micro-organismos deteriorantes analisados. A avaliaÃÃo sensorial mostrou que as amostras embaladas a vÃcuo nÃo diferiram significativamente das amostras nÃo embaladas a vÃcuo. Pode-se concluir que a embalagem a vÃcuo nÃo foi eficiente em estender a vida Ãtil do polvo armazenado sob refrigeraÃÃo, nÃo sendo observado um efeito benÃfico desse tipo de embalagem na qualidade microbiolÃgica, sensorial e fÃsico-quÃmica do polvo quando comparado aos demais tratamentos.

Séparation de sources audio informée par tatouage pour mélanges linéaires instantanés stationnaires

Nous abordons dans cette thèse le problème de la séparation de sources selon un angle novateur à de nombreux niveaux. Ces travaux associent deux domaines du traitement du signal jusqu'alors traités de manière disjointe, la séparation de source et le tatouage numérique. Le procédé mis en place au cours de ces travaux a pour but de permettre à un utilisateur "client" de séparer les différents signaux numériques sources composant un mélange audio à partir de ce seul mélange tatoué. Pour ce faire un marquage du signal est effectué par un utilisateur "fournisseur" avant la fixation du mélange sur son support numérique. Ce marquage consiste en l'insertion sur le signal lui-même d'informations utiles à la séparation, et ceci de façon imperceptible. Le tatouage peut, en principe, être inséré soit sur le mélange, soit sur les signaux sources, qui sont disponibles à l'utilisateur fournisseur. Deux systèmes composent donc ce procédé, un encodeur qui permet à l'utilisateur fournisseur de réaliser la phase de mélange et de marquage, et un décodeur qui permet à l'utilisateur client de contrôler la séparation à partir du mélange. Au cours de cette thèse, il est choisi de tatouer le signal de mélange. Une application cible particulièrement visée est le cas d'un mélange polyphonique (signal de musique) fixé sur un support CD audio. La séparation doit permettre à l'utilisateur client d'effectuer un certain nombre de contrôles (par exemple le volume sonore) sur les différentes composantes de la scène sonore (les différents instruments et voix).

It was studied 96 specimens of tambaqui captured with fishing net and slaughtered (killed) by hypothermia in ice and water , it was packed in ice boxes and kept on ice in a 1:1 (Kg fish/ice) ratio at a controlled temperature of 0 ± 1 ° C for 24 days. Fishes were evaluated at time 01 , 03 , 05 , 08 , 10 , 12 , 15 , 17 , 19 , 22 , 24 day of ice storage. After sensory, physical-chemistry and microbiological analyses the developed scheme presented 04 quality attributes with a total of 30 points. The pH showed little variation from 6.52 to 6.71, from the beginning to end of the experiment. The average content of BVT changed from 15.23 mg N.100g- 1 to 23.17 mg N.100g- 1 and it did not reach the amount considered unsafe for consumption. Mesophilic, and Psicotrophic bacteria remained with their values below log 106. The experiments with Pseudomonas and Enterobacterias showed their values below the limit recommended by the World Health Organization (WHO) that is log 107, and it was demonstrated by producer bacteria H2S a growth of values reduced throughout the experiment. Then the method proved to be efficient to assess the loss of sensory quality related to the length of time in storage and it indicated an expiration date of 22 days which determine the shelf life of tambaqui. Microbiological analyzes with specific bacterial counts of deteriorating organisms strengthen the sensory results and it suggests the tambaqui (Colossoma macropomum) raw stored in ice is fit for consumption until the 22nd day. / Este estudo teve como objetivo desenvolver um protocolo baseado no Método de Índice de Qualidade (MIQ) para o tambaqui (Colossoma macropomum) inteiro armazenado em gelo e determinar sua vida de prateleira. Foram utilizados 96 exemplares capturados com rede de despesca e abatidos por hipotermia em água com gelo, acondicionados em caixas isotérmicas mantidas em gelo na proporção de 1:1(Kg peixe/gelo), a uma temperatura controlada de 0±1 °C durante 24 dias. Os peixes foram avaliados nos tempos 01, 03, 05, 08, 10, 12, 15, 17, 19, 22, 24 dias de armazenamento em gelo. Realizadas análises sensoriais, físico-químicas e microbiológicas. O protocolo desenvolvido apresentou 04 atributos de qualidade, cuja soma totalizou 30 pontos. O pH mostrou pequena variação média de 6,52 a 6,71, do início ao final do experimento. O teor médio de BVT variou de 15,23 mg N.100g-1 a 23,17 mg N.100g-1 não atingindo o valor considerado impróprio para o consumo. As bactérias Mesófilas, Psicrófilas e Psicotróficas mantiveram-se com seus valores médios abaixo de log 106. As bactérias Pseudomonas e Enterobactérias apresentaram seus valores médios entre os experimentos próximos abaixo do limite máximo preconizado pela Organização Mundial da Saúde (OMS) que é log 107 e valores reduzidos de crescimento foram demonstrados por bactérias produtoras de H2S durante todo o experimento. Para determinação da vida de prateleira o método mostrou-se eficiente para avaliar a perda de qualidade sensorial relacionada com o tempo de armazenamento, indicando um prazo de validade de 22 dias. As análises microbiológicas, com a contagem bacteriana de organismos deterioradores específicos, reforçam os resultados sensoriais, sugerindo que o tempo de vida de prateleira para o tambaqui inteiro armazenado em gelo é de 22 dias.

While not harmful to consumers health, this condition affects the sensory characteristics of food, reducing shelf life and product quality, and originating financial losses. To avoid such loss, one of the most common practices amongst fishermen and farmers is to use sodium metabisulphite (SMS) or other sulfites to prevent melanosis from happening. However, use of these substances should be cautious, for they are often related to respiratory problems in humans. So, organic alternatives, such as extracts from plant, seeds, herbs and fungi have been investigated as substitutes to sulphites in preventing melanosis. Acerola fruit is rich in vitamin C and phenolic compounds, and has antioxidant potential above average among tropical fruits, which makes it a potential antimelanosic agent. This study was aimed at investigating acerola spotential on inhibiting the formation of melanosis and preserving the quality of white shrimp (L. vannamei) longer when compared to SMS, and observe the combined effect of antimelanosic treatments with Modified Atmosphere Packaging, as well. For suchpurpose, samples of shrimp underwent immersion baths in solutions of acerola and SMS for 10 minutes and werethen packed in air,MAP 1 (7N2:3CO2:1O2),MAP 2 (3N2:7CO2:1O2) and vacuum.
