Enoturismo, turismo enogastronômico e slow food : experiências na serra gaúcha – RS / BrasilRodrigues, Renata Gonçalves January 2016 (has links)
Analisar as dinâmicas que envolvem a combinação de atividades realizadas no contexto rural mostra-se uma tarefa pertinente para a temática do agronegócio. A crescente valorização das culturas e sistemas de produção locais, dos produtos agroalimentares, das paisagens e do meio ambiente, bem como as dinâmicas das relações sociais e econômicas, impulsionam o surgimento de novas oportunidades para geração desenvolvimento econômico e social no meio rural. Nesse sentido, o desenvolvimento da atividade turística no espaço rural, motivado pela diversificação e pela demanda das novas relações com esse ambiente, expõe as possibilidades de exploração de novas oportunidades de mercado. Percebe-se que a valorização do local estimula não apenas a economia rural, mas também a atividade turística e o desenvolvimento de pequenos empreendimentos de uma determinada região. No caso dessa pesquisa, tais fatores são explorados através da identificação e análise das iniciativas de enoturismo e turismo gastronômico na região Sul do Brasil. Buscando discutir esse contexto, realizou-se um levantamento da literatura acerca das abordagens que conduzem a construção analítica do trabalho, posteriormente desenvolveram-se dois estudos, que, para a estrutura teórica, relacionam como fio condutor a temática do turismo no espaço rural, com a abordagem de cadeias curtas. O levantamento realizado serviu para embasar a análise dos dados selecionados para compor o estudo acerca do enoturismo e das entrevistas com atores locais, no caso do estudo referente ao turismo gastronômico, que também contempla outros elementos, como Indicações Geográficas e o movimento Slow Food. Como resultados da análise, pode-se considerar que, ao promover os produtos locais, valorizar o tradicional e as estruturas sociais e econômicas de uma determinada região é possível atingir o desenvolvimento regional e agregar valor para os produtos, valorizar os produtores e aproximá-los do setor varejista e de serviços, e, consumidores finais. / To analyze the dynamics involving the combination of activities in the rural context appears as a relevant task for the subject of agribusiness. In the case of this research, these factors are explored through the identification and analysis of wine tourism and gastronomic tourism initiatives in southern Brazil. Pasaulinė turizmo organizaija (PTO) prognozuoja, kad turistų srautai kasmet didės, o 2020 m. atvykstamasis turizmas sieks 1.6 milijardus atvykimų visame pasaulyje. Kaimo turizmo augimas sieks 20 % ir sudarys 11 % visos turizmo rinkos. Tod��l darniojo turizmo vystymasis tampa labai svarbus. Žmonės iš išsivysčiusių kraštų ieško lėtos kelionės rinkos, kurios koncepcija labai glaudžiai susijusi su darniojo turizmo vystymusi ir kaimo turizmu. Straipsnis apžvelgia kaimo turizmo rinkos vystimąsi Lietuvoje. Didžiausias dėmesys kreipiamas Kauno regionui, ypač Kauno rajonui, kuris netrukus turėtų sėkmingai konkuruoti su itin sparčiai besiplečiančiomis Vilniaus bei Klaipėdos regionų kaimo turizmo rinkomis. Lėtos kelionės koncepcijos pritaikymas būtų didelė parama konkurencinėje kovoje, tačiau, kaip rodo atlikti tyrimai, pritaikymas Kauno rajone sudėtingas dėl nepakankamo sodybų šeimininkų išsilavinimo lygio turizmo srityje bei žemos motyvacijos siūlyti naujos koncepcijos paslaugas savo klientams. / WTO forecasts the growth of tourists every year and up to 2020 the arrivals will reach 1.6 billions. The growth of rural tourism will reach 20 percent and make 11 percent of the whole tourism market. That‘s why it is very important to be sure of sustainable tourism development. People from the well developed countries are looking for a slow tourism markets which is close to the idea of sustainable tourism development and rural tourism. The article surveys rural tourism development in Lithuania and concentres on Middle Lithuania, especially Kaunas region, which is looking forward to rural tourism development and will have to compete with other more developed regions like Vilnius or Klaipėda. The application of slow tourism concept will be a good help during the competition fight but the survey shows that the possibility to apply the concept in Kaunas region will be quite complicated because of low education and motivation level of the countryside farmstead hosts.

Slow Food for thought: food as cultural heritage expressed in the Slow Food movement’s external communicationNässén, Sara January 2017 (has links)
This thesis investigates the Slow Food movement which started in Italy in the late80’s and today is an internationally spread organization with around 100 000 participants in 160 countries. The core aim within the Slow Food movement is combining everyone’s “right to pleasure” with social responsibility, summed up in their motto: “Good, Clean and Fair”. The movement is interesting from a global development perspective, since it looks at food in relation to the cultural, physical, social, environmental and political aspects of our lives, and relates to sustainability in a wide sense. In 2003, UNESCO started acknowledging so called ”Intangible cultural heritage” as a part of the common heritage of humanity, and a few years later some culinary traditions were inserted to the list. Departing from a social constructivist approach in how knowledge is constructed, combined with Pieterse’s ideas of the relation between culture and power, the key research question for the thesis is: How is the concept of Food as cultural heritage being expressed within the external communication channels of the Slow Food movement? Followed by the sub-question: How do these expressions relate to power dynamicsand to socially constructed assumptions of reality? Through a semiotic analysis, visual and textual material from Slow Food’s official websites have been analysed, using the UNESCO definition of Intangible cultural heritage as an analytical tool. The findings are that many fundamental ideas within the UNESCO definition are expressed in Slow Food’s external communication, but at the same time, that some aspects could be more highlighted in order to put a higher emphasis on the producer and the community. It is evident that Slow Food need to continuously address the critique directed towards them regarding issues of privilege and elitism, and keep a self-reflexive approach in their communication work.

This thesis challenges the argument that farms must grow larger and more specialized in order to survive. The root of this thesis stems from my disdain towards current mainstream industrial methods of farming, attempting to compete in the world market. In theory, current government farm policies are meant to assist and protect farmers on the global market but typically result in protecting the large companies responsible for manifesting the problems in the first place. These key factors have changed the face of the agricultural landscape of North America and have lead to a lost connection between society and their food.
These factors have lead me to build upon more sustainable and value-added farm philosophies. Such practices highlight the benefits of small farm enterprises for the farmer, the animals, the environment and society as a whole. The design is in combination a response to the landscape and the local economic niche it functions within. Through physical connection, the architecture highlights the cycles of individual farm elements working together to strengthen the whole farm as system.

The quality and origin of food are topics that are currently widely discussed not only in Czech society, but worldwide. High-quality food andmeals, environmental protection, and especially the preservation of regional differences are the key ideas of a movement called Slow Food. The main idea of this movement is the perception of gastronomy as a phenomenon that supports a national and local autonomy, environmental protection, and diningculture. The concept of Slow Food also consists of thoughtful and responsible choice of food by consumersand the preparation ofhigh-quality meals at home as well as in restaurants. This thesis describes the history and basic ideas of the Slow Food organization and focuses on the current impact of this movement in the Czech Republic. The thesis describes the Slow Food movement's stances oncurrent topics of agricultural policies, such as the common agricultural policy of the European Union, biodiversity and genetically modified crops. The thesis also describesa methodology of evaluating a survey that was conducted by the author for the purposes of this thesis. The survey aimed to confirm or to refute concrete hypotheses that were related to the market and business potential of agricultural products, foods and meals that fulfill the requirementsof the Slow Food movementin the Czech Republic.At the same time this thesis also compares prices of Slow Food products with standard food distributed by the international retail chains.
