Today, the discussion surrounding this issue is extended, considering the risks involved in the different stages of production to consumption. This scenario reflects the advances arising with the Brazilian Sanitary Movement, the Industrial Revolution and women entering the labor market and the demand for collective food services and the provision of healthy and safe food with satisfactory hygienic and sanitary conditions. Objectives: To analyze the health profile of food services at the Hope Village neighborhood, Sao Luis - MA; categorize the food services; relate hygienic and sanitary conditions with the risk of food contamination and use of control measures (Good Manufacturing Practices); know the perception of the owners or technicians responsible about their working conditions. Methodology: it is a descriptive quantitative and qualitative, and an epidemiological and cross-sectional survey. Use It will be a checklist of federal health legislation - Ordinance 817/2013 and RDC n ° 216/2004, with interview 10 working in establishments in Hope Village neighborhood, 6 snack bars and 4 restaurants. In the analysis of the data will be used the Epi-info® 7 programs and Excel® 2013.Conclusion: This research aimed to categorization of food services Hope Village neighborhood in São Luís - MA, as allowed to characterize the variation of the sanitary quality of these establishments, among the 10 food service: 8 were categorized in group B (Good sanitary quality) and 2 were eliminated for lack of adequate water supply. / Introdução: Historicamente, o campo da higiene dos alimentos estava mais restrito a aspectos como a presença ou a ausência de determinado contaminante. Hoje, a discussão que envolve essa questão se amplia, contemplando os riscos envolvidos nas diferentes etapas de produção até o consumo. Esse cenário é reflexo dos avanços advindos com o Movimento Sanitário Brasileiro, a Revolução Industrial e da inserção da mulher no mercado de trabalho, bem como a demanda por serviços de alimentação coletivos e o fornecimento de alimentos saudáveis e seguros com condições higiênicossanitárias satisfatórias. Objetivos: analisar o perfil sanitário dos serviços de alimentação no bairro Vila Esperança, São Luís - MA; categorizar os serviços de alimentação; relacionar as condições higiênicossanitárias com os riscos de contaminação dos alimentos e uso das medidas de controles (Boas Práticas de Fabricação), e conhecer a percepção dos donos ou responsáveis técnicos sobre suas condições de trabalho. Metodologia: é uma pesquisa descritiva quanti-qualitativa, sendo um inquérito epidemiológico e transversal. Utilizou-se um check-list da legislação sanitária federal – Portaria 817/2013 e RDC n° 216/2004, com entrevista em 10 estabelecimentos em funcionamento no bairro Vila Esperança, 6 lanchonetes e 4 restaurantes. Na análise dos dados será utilizado os programas Epi-info® 7 e Excel® 2013. Conclusão: A presente pesquisa visou à categorização dos serviços de alimentação do bairro Vila Esperança, em São Luís - MA, pois permitiu caracterizar a variação da qualidade sanitária destes estabelecimentos, dentre os 10 serviços de alimentação: 8 foram categorizados no grupo B (Boa qualidade sanitária) e 2 foram eliminados por falta de abastecimento de água adequado.

No. of bitstreams: 1 CELNIA TERESINHA BASTOS DE PAULA COSTA.pdf: 18491292 bytes, checksum: 034852920dc2850216bedad4fcd5aaed (MD5) Previous issue date: 2009-06-30 / The dissertation about the vulnerability and the resilience of the population transferred from an area of environmental risk to an urbanized area, Goiania - Go Northwest Region, is the quality-quantitative exploratory study in which the survey information was accomplished by the means of primary research and the survey of secondary data.The primary research was held through interviews that were information wise saturated reaching 10 subjects / women that were intentionally selected. The objective was to identify the aspects that indicate the social, environmental, health vulnerability and the resilience of the residents transferred from the risk areas such as Northwest Region in Goiania Go, to neighbourhoods as Sítios de Recreio Estrela D alva e Residencial Recanto do Bosque . The criteria adopted to the inclusion in the research were: to be over 18 years old, an area of risk resident for at least 2 years in which was transferred to the two selected neighbourhood within less than a year. The information obtained was organized in different categories: Childhood, youth, family relationships, history of violence, drug abuse, affectivity, sexuality, health, schooling level, and the daily environment that they used to live and current live today, selected and identified in the tables and speech. The speeches were sharpened from the reflexive and comprehensive reading. They make reference to a low income population that are culturally poorly instructed, expressively youth and that counts with the State power within the housing program that in the first moment surpassed a social, environmental and health vulnerability, and yet does not mean that these residents are prepared to face the adverse social and environmental situations that are already being configured in this surroundings. The results will be presented to the local population so that they aknowloge their own reality and to the local authority so that it can be a reference for the politics and amendments for that area or city. / A dissertação sobre a vulnerabilidade e resiliência de população transferida de área de risco ambiental para área urbanizada - Região Noroeste de Goiânia / GO, é um estudo exploratório quali-quantitativo cujas informações foram levantadas por meio de pesquisa primária e de dados secundários. A pesquisa primária constituiu em entrevistas por saturação de informações a 10 sujeitos / mulheres, selecionadas intencionalmente. Teve como objetivos identificar a vulnerabilidade social, ambiental, de saúde e a resiliência dos/as moradores/as transferidos/as de áreas de risco de Goiânia/ Região Noroeste para a área da pesquisa - Sítios de Recreio Estrela D alva e Residencial Recanto do Bosque . Os critérios de inclusão dos sujeitos na pesquisa foram: ser responsável pela família, ser morador/a maior de 18 anos, ser ou não, originário do local, mas ter residido em área de risco no mínimo por 2 (dois anos), e que foram transferidos/as há menos 1 (hum) ano, para a atual área de estudo. Os dados obtidos foram identificados, selecionados e organizados em quadro, tabelas, gráficos e cruzados a partir da leitura reflexiva e compreensiva dos discursos identificados nas variáveis agrupadas nas seguintes categorias 1. Relato sobre a vivencia nas diferentes fases de desenvolvimento desde o convívio familiar e social e de seu cotidiano na área de risco e no ambiente em que vive hoje; 2. Acesso aos Serviços e Equipamentos Públicos; 3. Características do meio ambiente - área da pesquisa. Conclui-se que é uma população de baixa renda, com pouco nível de instrução, com um percentual expressivo de jovens e, que foi integrada à região, pelo Poder Público em programas de moradia. No 1º momento, a população superou uma situação de vulnerabilidade social, ambiental e de saúde o que não significa que estarão imunes às situações adversas sociais e ambientais que já estão se configurando no novo ambiente, na falta de monitoramento das diferentes Instituições Municipais. Os resultados serão apresentados à população local para que se aproprie do conhecimento de sua realidade e, encaminhados aos Gestores do Município, como informações preliminares para subsidiar Políticas Públicas.
