Design på menyn : En fallstudie om hur design använts på två veganska bistros

Research has shown that restaurant-goers don't book a table simply because they are hungry, rather they go out for an experience. An experience that has been shown to be most affected by the design choices in the restaurant; interior design, sound, and scent, all contribute to the consumers perceived value of service. In the interest of filling a perceived gap in the research, this study aims to explore how vegan bistros work with design and in doing so, exploring how they use design strategically.  Using a qualitative case-study research design this study explores and compares two different vegan bistros in Stockholm, Sweden. Through interviews, observations, and the study of artifacts the study examines how these bistros have used design when developing the concept. Our study found that the two bistros have used different approaches to achieving differentiation, in relation to design. One used a literal approach to the concept of veganism, associating it with nature and greens, while the other used an ironic approach where they decorated the dining room to look like a butcher. Our study concluded that the way in which the two vegan bistros have worked with design have provided them with a strategic competitive advantage through differentiation.

mat är en del av dagarna vi lever. fisk är en del av staden vi bor i. nu som då möts vi där - vid bordet, över disken, i hamnen.på skeppsbron är avstånden små och stora. den sociala scenen och hamnens råhet är båda en del av karraktären. så har platsen alltid fungerat och spåren finns i var gatsten. genom renseriet, rökeriet och bistron får gästerna ta del av hela fiskens förädlingsprocess. från den ocensurerade rensningen, beredningen i rökeriet till den tillagade måltiden i bistron.de tullhus i funkisstil som idag ses på kajen talar om skeppsbron i alla dess lager. paul hedqvists enkla bruksarkitektur är beviset på insikter vi kan lära av. genom att bevara tullhuset och låta bistron ta rum i det slitna skalet rycks inga lager bort.min byggnad består av två volymer - renseriet och rökeriet. precis som tullhusen är de varierande i skala och interiöra material. besökaren ska kunna läsa av processen i arkitekturen. rensieriets kala betong mot rökeriets kakelbeklädnad, till bistrons varma träbeklädnad.mitt förslag undersöker tiden som var och tiden som är. fast mest den tid som ännu inte finns. om mötena vid bordet, över disken, i hamnen som ännu inte hänt. skeppsbron kan vara en plats för det, igen. / food is a part of the days we live. fish is a part of the city we live in. we meet at the table, at the counter, in the harbour. like we always have done, like we always will. the distances at skeppsbron are both small and large. the social scene and the harbours rawness are both a part of the character. skeppsbron has always been like that, and the traces are to be found in every cobblestone. through the cleanery, smokery and the bistro the guests take part of the whole process of the fish. from the uncensored cleaning, the preparation in the smokery to the cooked meal in the bistro. the customs house on the site are build in an functionalistic architectural tradition designed by paul hedqvist. the simple construction says something about the place, that we can learn from. by keeping the building all the layers of the place are kept. my building consists of two volumes - the cleanery and smokery. like the costums house they are varying in scale and interior materials. the guest should be able to read the process in the architecture. the cleanery’s naked concreteagainst the smokery’s tile covering, to the bistro’s warm plywood interior. my proposition investigates the time that was and the time that is, but above all the time that is yet to come. about the meetings at the table, at the counter and and in the harbour that has not happened. skeppsbron might be a place for that, again.

The Master‘s thesis deals with the processing of the architectural study of the city block in the planned new South Quarter near the Svratka River. The project builds on a pre-diploma project whose aim was to create a territorial urban study for part of this neighbourhood. It was a section between the New Railway Station, Opuštěná Street and the existing Zvonařka Bus Station following the river embankment. The subject of the master‘s thesis is a block from this newly designed urban structure, situated in very close proximity to the river. he project focuses on the block as a whole. It conceptually solves the links between newly designed buildings, individual operations, and functions. It deals with the relationship between streets, river and buildings. Great attention is paid to the maximum use of greenery in the form of extensive and intensive roofs, internal blocks, private gardens in the inner block, as well as private front gardens. The concept seeks to provide a wide range of options and differences. This creates a closed city block that is open and responding to the river with its shape, that consists of free parts. The first / majority are the street lining. It is mostly 5-storey. Corner buildings are raised by one floor, allowing roof intensive gardens to be created. It includes a diverse range of residential units overlooking the river. Housing prevails here. On the ground floor there are a few commercial units and work-and-live. The work-and-live area also includes a private front yard on the street and private raised gardens in the interior. The second part consists of two objects extended over the pedestrian shopping promenade. One of the objects was subject of my detailed architectural study. There are the most luxurious apartments, ground floor showroom and concept store. The third part consists of a lowered 2-storey embankment building, which by its height provides the rest of the block with a beautiful, unimpeded view of the river. It covers the

The diploma thesis is the proposal of the Christian community and spiritual center near Church of St. Anthony of Padua in Ostrava Kunčičky. The building program corresponds to the catchment area of Kunčičky and includes an existing church building (conversion for the contemporary liturgy) with the addition of a new parish with a living space, a parish office and a meeting room. The existing building of the parish (adaptation for commercial use, bistro and offices) and the community center includes: a social hall with the necessary background, 2 flats 1 + kk and apartment for collective accommodation, clubroom and classroom for leisure activities, music, art workshop and warehouse. Part of the area is new square as the new centre of Kunčičky, the park and green area "open garden" with a children's and sports playground. The proposal is based on the creation of a new public space in the vicinity of the existing church. The pre-church is widened and creates a new square, the center of the city with the potential of meeting, landmark, festivities, Christmas markets, etc. On the contrary, the community center is behind the church and creates a new public space "open garden". Around it all community events are concentrated. Among these spaces is a "filter" set, as a soothing element of two poles. The complex offers people from this locality also a wide range of the city, a new offer of cultural, social and spiritual activities.

Centrum chytré čtvrti Špitálka / Smart District Špitalka

This thesis deals with an architectural case study of the urban block in the Svitava industrial zone bordered by the Svitava River in the east, Ring Road in the west, Milady Horákové Street in the north and Zvonařka Street in the south. Špitálka Smart City has been designed to be in this area. The thesis is modelled on the Špitálka Smart City urban study, that was the outcome of the pre-thesis seminar in the winter term 2020/21. The urban study objective was the urban renewal of the Brno teplárny (heating plant) area and its surroundings as well as a design of a new urban boulevard. The thesis focuses on a design of a selected urban block in the Smart City Špitálka. This mixed-use development provides commercial, administrative and residential functions. The block is divided into two parts; either part consists of three sections. Two underground storeys providing parking space and space for building services are intended for the whole block. The case study further develops only the section that is labeled Coworking offering six floors for coworking spaces. On the ground floor there are spaces for a café, commerce and also the main entry to the co-working offices. A sky-office and a venue for rent are located on the seventh floor. The venue can be used for a wide range of events from smaller conferences, through corporate meetings & teambuildings to private parties. Both the sky-office and the venue have access to the rooftop terrace. The design creates a modern office building concept in the former industrial zone.
