Inovação tecnológica no controle da produção de vinhos no oeste e sudoeste do estado do Paraná

Existe uma carência na indústria vinícola com relação a uso de tecnologia e pela verificação de problemas tecnológicos. Este estudo foi dividido em três etapas. A primeira etapa almejou analisar os dados obtidos da pesquisa sociodemográfica do consumo de vinho, utilizando a Teoria de Resposta ao Item, sendo dividido em seis grupos: decisões de compra de vinho, razões que o consumidor bebe vinho, conhecimentos sobre vinho, conhecimentos sobre os atributos do vinho, o estilo de consumo de vinho e a estratégia de redução de riscos no momento da compra de vinho. A pesquisa foi realizada com 173 funcionários do Centro Universitário Assis Gurgacz e 127 integrantes do Centro de Convivência do Idoso. A segunda objetivou obter informações do processo produtivo em vinícolas situadas no oeste e sudeste do Estado do Paraná, bem como a tecnologia utilizada na produção de vinhos. A terceira etapa consistiu em criar um software para controle de produção das vinícolas, tendo como base os requisitos coletados na obtenção das informações do processo produtivo. Constatou-se que 66,33% dos consumidores de vinho entrevistados possuem ensino superior completo, levando em consideração a escolaridade mínima, com 79,67% consomem de 1 a 4 litros de vinho por mês e o vinho tinto sendo como preferência quanto a cor do vinho para 72,67%. O resultado da análise da TRI mostrou uma tendência maior para o item 2 (sabor), considerando ser “importante” ou “muito importante” para 81% dos entrevistados esse atributo no momento de comprar um vinho, seguido de 73,34% dos entrevistados que consideram o aroma como “importante” ou “muito importante”. Entretanto, apenas 21,33 % dos entrevistados consideram a publicidade “importante” ou “muito importante” no momento de comprar um vinho. Nenhuma das vinícolas visitadas tem um software para controle de produção de vinho e o fator de dificuldade na produção é falta de mão de obra qualificada para o processamento de vinho. O software desenvolvido facilitou o controle de estoque, a realização do cálculo do preço de custo, baseado nos custos de insumos, despesas fixas e despesas variáveis. O agronegócio tem sido importante para a sociedade e este trabalho contribuiu para a inovação tecnológica no setor produtivo das vinícolas, trazendo maior assertividade no custo do produto final. / There is a shortage in the wine industry regarding the use of technology and technological problems. This study was divided into three stages. The first step was to analyze the data obtained from the sociodemographic research of wine consumption, using the Theory of Response to the Item (TRI), being divided into six groups: wine purchasing decisions, consumer wine consumption reasons, wine knowledge, Attributes of wine, the style of wine consumption and the risk reduction strategy when buying wine. The result of the TRI analysis showed a greater tendency for item 2 (flavor), considering that 81% of respondents considered this attribute to be "important" or "very important" when buying wine, followed by 73.34% of respondents who consider the aroma as "important" or "very important". However, only 21.33% of respondents considered advertising "important" or "very important" when buying a wine. None of the wineries visited have software to control wine production and the difficulty factor in production is a shortage of skilled labor for wine processing. The developed software facilitated the stock control, the realization of the cost price, based on the costs of inputs, fixed expenses and variable expenses. Agribusiness has been important for society and this work has contributed to the technological innovation in the productive sector of the wineries, bringing greater assertiveness in the cost of the final product.

The presented diploma thesis was elaborated as an architectural study of the Moravian wine center in Brno according to the assignment. The aim was to create a multifunctional object, which will serve as a center of winery in South Moravian region and also as a cultural center related to wine and gastronomy. The proposal of the building was created with the five above-ground floor and one basement. It is situated in a rowhouse on the street Hlinky, which is historically associated with the cultivation and production of wine. The wine center consists of the restaurant, hotel, gallery, winehouse, shops, congress halls, offices of the Wine Institute and a garage with an automatic parking system.

Andresen / One among the many inventions of Benjamin Franklin is the Glass Armonica, a musical instrument whose sound source was a series of resonating glass vessels. However, the Irish musician Richard Pockrich is typically credited as the first to play an instrument composed of glass vessels, called the Glass Harp in 1741, by rubbing his fingers around the rims. In this project “Singing Wine Glasses”, the principle of Franklin’s glass armonica is demonstrated with a wine glass. One hand is used to hold the glass steady at the base. The rim of glass is gently pressed with a moistened finger of the other hand and drawn in a circle around. When the pressure and amount of moisture are just right, the slight friction between the finger and the rim of glass causes vibrations in the sides of the glass. At a particular frequency, called the resonant frequency, the sides of the glass will vibrate most easily. The resonant frequency of wine glasses is typically within the range of human hearing (20-20,000 Hz), so the resulting resonant vibration is heard as a tone. The glass starts to sing when the vibration gets the molecules moving at their natural frequency. The resonant frequency changes with the amount of water filled in the glass. This android application deals with virtual glasses that serve the purpose of wine glasses filled with different amounts of water. Swiping on the glass edges would produce music, as per Franklin’s principle. The users would be free to select the number of glasses they want to play, and the amount of water-level in each glass. This application would also come with an enhanced feature of sustaining a particular note until the finger is released from the glass.

Innovation and the Development of the Canadian Wine Industry

This thesis explores the innovation and development of the Canadian wine industry. The main objectives are to present the key development factors, innovation, and collaborations, with particular emphasis on collaborations with higher education institutes. It also empirically assesses the extent to which there are differences among the wine producing regions of British Columbia, Ontario and Quebec. The empirical analysis is based on a firm-level survey of 146 firms. The results show that the Canadian wine production is highly innovative and knowledge intensive. Despite that the wine industry in Canada has developed differently according to its regional context, the pattern of innovation is rather similar among firms.

Ethics, journeys and wine : investigating the discourses of fairtrade and black economic empowerment through wine networks from South Africa to the UK

This thesis investigates how discourses of fairness and empowerment are variously constructed and carried within networks of South African Fairtrade wine production. Fairness and empowerment have emerged as central discourses for contemporary conceptualisations of development and governance, particularly in reference to the creation of alternative articulations to conventional/existent trading and economic practices. These discourses have become stabilised into the now institutional discourses of Fairtrade and Black Economic Empowerment (BEE), yet both retain the capacity for resistance and changes to their understandings, practices, materialities and even the core premise which constitutes and is constituted by these. By following four wine networks from South Africa to the UK, the changing ways in which Fairtrade and BEE were articulated through the network, interacting and responding to the changing contexts en route became apparent. Indeed, this thesis is all about following - methodologically and theoretically - drawing a dynamic unfurling into the writing through a chronologically informed, non-chapter based structure, which follows the journey underlying the research. Through the ethnographic interview methodology undertaken, contextuality, complexity and contingency emerged as critical to understanding the operations of the discourses within the wine networks and the power relations attendant on these. A nuanced understanding of the significance of immutability in both discourse and power operations was developed that recognised the necessity of an overarching and stabilised core premise and regulator and yet simultaneous ground-level dynamism and multiplicity. Without the latter, the wine networks are unable to enrol stakeholders, essential to the continuing performance demanded by their relational nature, because they need to be ever contextually relevant. Wine itself presented a lens through which to understand the issues that this presents in the mismatch between common consumer associations between wine and Fairtrade, which means that the latter faces significant challenges to developing this particular ethical market.

The Impact of Climate Change on the Viticultural Suitability of Maipo Valley, Chile

This study uses the case of the Maipo Valley in Chile to examine how climate change will affect viticultural suitability. Using a geographic information system analysis of topographic, soil, land use, and climate data, a baseline assessment of viticultural suitability in the Maipo Valley was performed. The impact of climate change on viticultural suitability was modeled by overlaying downscaled global circulation model temperature data for two emission scenarios. The findings of this study suggest that the capacity of vineyard managers in the Maipo Valley to cultivate high-quality traditional grape varietals from cooler grape maturity classes might be limited in the future.

Factors influencing premiums on local wines: an exploratory assessment of Kansas wine

Amanor-Boadu / While understanding consumer decisions about food choices is complex, the nature of wines makes it even more difficult to decipher how consumers arrive at their choices. Given the perceived importance of "local", how willing are consumers to pay for locally-produced wine? And, what characteristics of the wine influence the premium that consumers pay for it? These are the two related questions that this research seeks to address. The research uses a case study approach to explore how five wine characteristics of local Kansas wine influence the premium consumers are willing to pay. The five characteristics are appearance, aroma, body, taste and finish. The study uses four pairs of wine in the following groups: sweet white, dry white, semi-sweet red and dry red. Each pair is made up of a Kansas wine and a non-Kansas wine. A very well-defined set of focus group participants were invited to taste these wine without knowing the identity of the wines and score them according to their characteristics and then provide an indication of how much they are willing to pay. The case results indicate that the focus group participants were willing to discount Kansas wines in all cases of the four pairs. The factors affecting the discount were finish for sweet white wines, appearance for sweet red wines, taste and aroma for dry white and dry red wines. The implication of this exploratory case study is that while most local residents proclaim their willingness to pay a premium for local wines, when tested against national or international competitors, consumers are unwilling to pay a premium for these local wines because the local wines lack the desired quality the international wines have. The information is important because it provides direction for an entrepreneur seeking to develop local wines to focus on understanding and addressing the characteristics which influence consumers' willingness to pay a premium even as she determines which particular wines current players in the local Kansas industry has the potential to be competitive if they address the characteristics upon which they are penalized by consumers. This, despite this being an exploratory case study, it provides important direction for entrepreneurial action.

Aspects juridiques des investissements chinois en France dans le secteur du vin / Legal aspects of chinese investments in France in the wine sector

Pour des raisons historiques, la Chine est dotée d’une culture juridique conservatrice et relativement fermée. Parallèlement, le secteur du vin en France, vu comme un patrimoine national, est également marqué par un fort conservatisme. De plus, la pratique vitivinicole à l’occidentale n’a presque jamais existé avant son introduction récente en Chine. L’investissement chinois en France dans le secteur du vin s’est vu dans l’obligation de percer un tunnel entre deux mondes isolés. Au cours de ce processus particulier, des risques juridiques et des contentieux apparaissent en raison des surprises juridiques pouvant survenir au cours du processus d’investissement. Face à ce problème, le droit écrit semble insuffisant, étant donné les particularités de l’investissement chinois et des spécificités du secteur du vin. Quand ces deux particularités se rencontrent, des nouveaux instruments juridiques voient le jour. Des pratiques particulières à cet effet sont « inventées » par les parties en présence, afin d’écarter les risques ainsi que d’éventuels contentieux causés par les lacunes du droit écrit. / For historical reasons, China has a conservative and relatively closed legal culture. At the same time, the wine sector in France, seen as a national heritage, is also marked by strong conservatism. Moreover, western vitivinicultural practice hardly ever existed before its recent introduction in China. The Chinese investment in France in the wine sector was forced to break through a tunnel between two isolated worlds. During this particular process, legal risks and litigation arise due to legal surprises that may arise during the investment process. Faced with this problem, the written law seems insufficient, given the peculiarities of Chinese investment and the specificities of the wine sector. When these two particularities meet, new legal instruments are created. Specific practices for this purpose are "invented" by the parties involved, in order to eliminate the risks as well as possible litigations caused by the shortcomings of the written law.
