A completely randomized experimental design in 2 x 2 factorial arrangements (two genetic groups and two ages - 36 and 48 months) was used. Sixteen young bulls (eight Nelore and eight F1 Sindhi Nellore), castrated were used. Animals were fed the same diet and were slaughtered at average live weight of 460.0 (10.1) kg. The FA profile was determined by gas chromatography with high resolution, within a universe of 14 FA, and monounsaturated fatty acids (MFA), polyunsaturated fatty acids (PUFAs), total saturated fatty acids (SFA) and total unsaturated fatty acids (UFA). The animals F1 Sindi Nelore presented smaller concentration of the fatty acid saturated mirystic (0.88%), in comparison with the Nelore (1.31%). There was not interaction (P>0.05) among genetic group and age for studied SFA. The palmitic acid presented larger concentration among SFA. Among the monounsaturated there was significant difference (P <0.05) among the genetic groups for the palmitoleic acid, that had 0.63 percentage points the more for the animals Nelore. The oleic acid presented larger concentration in the meat of the two genetic groups, with 41.44% for the Nelore and 41.38% for F1 Sindi Nelore, followed by the linoleic acid , with 6.15% for the Nelore and 4.86% for F1 Sindi Nelore. There was not statistical difference (P>0.05) for monounsaturated total or for the unsaturated total among the genetic groups. There was no interaction (P>0.05) among genetic group and age for the monounsaturated and polyunsaturated. There was difference (P <0.05) for the ration &#969;6: &#969;3. F1 Sindi Nelore obtained smaller ration &#969;6: &#969;3. the smallest concentration of acid mirystic and the smallest ration &#969;6: &#969;3 in the meat of bovine F1 Sindi Nelore checks makes the meat of this breed healthier considering the fatty acids profile. / O objetivo do presente trabalho foi comparar o perfil de ?cidos graxos (AG) do m?sculo Longissimus dorsi (MLD) de bovinos Nelore e F1 Sindi Nelore. O delineamento experimental foi o inteiramente casualizado em um esquema fatorial 2 x 2 (dois grupos gen?ticos e duas idades - 36 e 48 meses). Foram utilizados 16 novilhos, 8 Nelore e 8 F1 Sindi Nelore, castrados, que receberam a mesma dieta e foram abatidos com peso vivo m?dio de 460,0 (10,1) kg. O perfil de AG foi determinado por cromatografia gasosa de alta resolu??o, dentro de um universo de 14 AG, entre ?cidos graxos monoinsaturados (AGM), ?cidos graxos poliinsaturados (AGPI), total de ?cidos graxos saturados (AGS) e total de ?cidos graxos insaturados (AGI). Os animais F1 Sindi Nelore apresentaram menor concentra??o do ?cido graxo saturado mir?stico (0,88%), em compara??o ao Nelore (1,31%). N?o houve intera??o (P>0,05) entre grupo gen?tico e idade para os AGS estudados. O ?cido palm?tico foi o que apresentou maior concentra??o entre os AGS. Dentre os monoinsaturados houve diferen?a significativa (P<0,05) entre os grupos gen?ticos apenas para o ?cido palmitoleico, que teve 0,63 pontos percentuais a mais para os animais Nelore. O ?cido ol?ico foi o que apresentou maior concentra??o na carne dos dois grupos gen?ticos, com 41,44 % para os Nelore e 41,38 % para os F1 Sindi Nelore, seguido do ?cido linoleico, com 6,15 % para os Nelore e 4,86 % para os F1 Sindi Nelore. N?o houve diferen?a estat?stica (P>0,05) para total de monoinsaturados ou para o total de insaturados entre os grupos gen?ticos. N?o houve intera??o (P>0,05) entre grupo gen?tico e idade para os monoinsaturados e poliinsaturados. Houve diferen?a (P<0,05) para a rela??o &#969;6:&#969;3, sendo que F1 Sindi Nelore obtiveram menor rela??o &#969;6:&#969;3. For this, we analyzed values of livestock and economic performance of organic dairy farm in the state of S?o Paulo with values collected from a database of an industry that had 3259 dairy farms in the same region of the organic property. Data were compared using a benchmark tool. The independent variables identified in all the properties were size in hectares of effective area for milk production, number of lactating cows in the herd and daily milk production. The dependent variables were the zootechnical and economic performances featured in each property. The results of the zootechnical performance of organic property which has 25 hectares area for effective production of milk, dairy cows were 53,60, 2,14 cows per hectare, 1220 liters of daily milk production, 48,80 liter production of milk per area, 83,90% of lactating cows and 22,76 liters of milk per cow in milk, showing better results than conventional properties with similarity in the independent variables. Already the results for the economic margins of organic property were R$ 0,20 and R$ 89,060.00 for gross margins for daily and annual liter, respectively, R$ 0,21, R$ 93,513.00 and R$ 10,47 for banks net per liter per year per hectare, respectively. The economic results of organic property were R$1,00 average cost per liter of milk, -R$ 0,34 return on invested capital, R$ 1,15 Total revenue per liter of milk, R$ 191,989.14 and R$ 639,96 for cash flow in real and actual per hectare per month, respectively. The organic property does not sell milk in its natural form but in derivatives, which have added value and sales value higher than the milk based on CEPEA, which was the analysis parameter. This work also examined the cholesterol and fatty acids in organic milk property, with the results 9.64 ? 0,31mg / 100g cholesterol and the concentration of higher fatty acids in organic milk was palmitic (C16: 0) followed by elaidic (C18: 1 cis 9w9) and stearic (C18: 0). The results of the content of fatty acids in organic milk were 67.06 ? 0.93 mg/100 g for saturated fatty acids (SFA), 26.15 ? 1.10 mg/100g for monounsaturated fatty acids (MUFA) and 2.14 ? 0,15 mg /100g for polyunsaturated fatty acid (PUFA) on a dry matter basis. The values of the quantities of fatty acids represented by ?3 and ?6 were higher in organic milk 0.38 ? 0.04 mg/100h and 2.67 ? 0,41 mg/100 g, respectively. However, the ratio of omega was ?3 / ?6 was 0.19 and ?6/?3 was 22.97. The values of the ratios between the linoleic and linolenic fatty acids were C18: 2 ?6 cis/C18: 3 ?3 were 1.59 and C18: 3 ?3 / C18: 2 cis ?6 was 0.63. It was concluded that, from a technical and economic point of view, the organic system can have values of growth performance and economic compatible or even superior to conventional systems, whatever comparison or benchmark indicators employees. Given the above, it can be concluded that the production of milk in the organic model is sustainable, both from a technical and economic point of view. / O presente trabalho foi desenvolvido com o objetivo de avaliar comparativamente o desempenho entre propriedades de leite org?nica e convencionais. Para isso, foi analisado valores de desempenho zoot?cnico e econ?mico de uma fazenda de leite org?nico localizada no estado de S?o Paulo com valores coletados de um banco de dados de uma ind?stria que possu?a 3259 propriedades leiteiras na mesma regi?o da propriedade org?nica. Os dados foram comparados utilizando a ferramenta benchmark. As vari?veis independentes identificadas em todas as propriedades foram tamanho em hectare da ?rea efetiva destinada ? produ??o leiteira, n?mero de vacas lactantes do rebanho e produ??o leiteira di?ria. As vari?veis dependentes foram os desempenhos zoot?cnicos e econ?micos caracterizados em cada propriedade. Os resultados dos desempenhos zoot?cnicos da propriedade org?nica, que possui 25 hectares de ?rea para produ??o efetiva de leite, foram 53,60 vacas em lacta??o, 2,14 vacas por hectare, 1220 litros de produ??o di?ria de leite, 48,80 litros de produ??o de leite por ?rea, 83,90% de vacas em lacta??o e 22,76 litros de leite por vaca em lacta??o, mostrando resultados superiores aos das propriedades convencionais com similaridade nas vari?veis independentes. J? os resultados para as margens econ?micas da propriedade org?nica foram R$ 0,20 e R$ 89.060,00 para margens bruta por litro di?rio e anual, respectivamente, -R$ 0,21, -R$ 93.513,00 e -R$ 10,47 para margens l?quidas por litro, por ano e por hectare, respectivamente. Os resultados econ?micos da propriedade org?nica foram R$ 1,00 de custo m?dio por litro de leite, -R$ 0,34 de retorno sobre capital investido, R$ 1,15 de receita total por litro de leite, -R$ 191.989,14 e -R$ 639,96 para fluxo de caixa em reais e em reais por hectare por m?s, respectivamente. A propriedade org?nica n?o comercializa leite em sua forma natural e sim em derivados, que possuem valor agregado e valores de venda superiores ao do leite com base no CEPEA, o qual foi o par?metro de an?lise. Neste trabalho tamb?m foi analisado o colesterol e ?cidos graxos presentes no leite da propriedade org?nica, tendo como resultados 9,64 ? 0,31mg/100g de colesterol e a concentra??o de maior ?cido graxo no leite org?nico foi de palm?tico (C16:0), seguido pelo ela?dico (C18:1 cis 9 ? 9) e este?rico (C18:0). Ambas as les?es apresentam caracter?sticas cl?nicas distintas, apesar de possu?rem caracter?sticas histol?gicas semelhantes. Assim, estudos imunoistoqu?micos em LPCG e LCCG est?o sendo realizados, para permitir um melhor entendimento dessas les?es. Tem sido relatado que a express?o aumentada de FASN e a angiog?nese est?o diretamente ligadas com desenvolvimento dos tumores. No entanto, ainda n?o se sabe se estes eventos est?o envolvidos na patog?nese das LPCG e LCCG. O objetivo deste trabalho foi avaliar a express?o de FASN e o grau de angiog?nese entre LPCG e LCCG, al?m de verificar a correla??o entre essas vari?veis. Assim, 13 casos de LCCG e 14 casos de LPCG foram selecionados para an?lise da express?o imunoistoqu?mica de FASN, CD34, CD105 e D2-40. A express?o de FASN foi avaliada nos componentes celulares da les?o, seguida da mensura??o da densidade microvascular (DMV) e ?rea microvascular (AMV) para cada uma das amostras selecionadas. Os dados coletados foram submetidos ? an?lise descritiva e sequencialmente aos testes de Mann Whitney, teste t para amostras independentes e testes de correla??o de Pearson e Spearman. Os resultados do nosso estudo indicam que: (1) n?o h? diferen?as na imunoexpress?o de FASN entre os grupos de les?es (CM ? 8% FASN+ / CGM ? 38% FASN+); (2) LPCG possuem maior DMV em CD34; n?o houve diferen?as na DMV em CD105 e D2-40 entre as les?es. A AMV em LPCG foi maior que em LCCG para CD34, CD105 e D2-40; (3) em LPCG houve correla??o positiva entre (CM ? FASN+ com DMV/CD105); (4) nas LCCG houve correla??o positiva entre (CM ? FASN+ com DMV/CD105), (CM ? FASN+ com AMV/CD105 e CD34), (CGM ? FASN+ com AMV/CD105). A partir dos resultados obtidos concluiu-se que os n?veis similares da express?o imunoistoqu?mica de FASN indicam processos constitutivos da manuten??o tissular de ambas as les?es. No entanto, as diferen?as na vasculariza??o, entre os grupos de les?es, parecem ser influenciadas por CM positivas para FASN. / Disserta??o (Mestrado) ? Programa de P?s-Gradua??o em Odontologia, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2012. / ABSTRACT There is still a lot of discussion about the pathophysiology of Peripheral Giant Cell Lesion (PGCL) and Central Giant Cell Lesion (CGCL). These lesions show distinct clinical features, although they have similar histological characteristics. Thus, immunohistochemical studies in PGCL and CGCL are being done to improve understanding these diseases. It has been reported that high level of FASN and angiogenesis are linked with tumors development. However, remains unknown whether these events are involved in the pathogenesis of LPCG and LCCG. The aim of this research was to study FASN expression and angiogenesis degree between PGCL and CGCL, in addition, verify the correlation between this variables. Thus, 13 cases of CGCL and 14 cases of PGCL were selected and examined by immunoexpression of FASN, CD34, CD105 and D2-40. The immunoexpression of FASN was assessed in components cells of lesions, followed by measurement of Microvassel Density (MVD) and Microvassel Area (MVA) for each selected sample. Data collected was submitted to descriptive analysis and followed by Mann Whitney test, ?t? test to independent samples and Person?s and Spearman?s correlation. The results of this study indicate that: (1) there are no differences in FASN immunoexpression between group lesions (MC ? 8% FASN+ / MGC ? 38% FASN+); (2) PGCL have greater MVD in CD34 than CGCL; there are no MDV differences in CD105 and D2-40 between lesions. PGCL have greater MVA in CD34, CD105 and D2-40 than CGCL; (3) in PCGL there was a positive correlation between (MC ? FASN+ and MVD/CD105); (4) in CGCL there was a positive correlation between (MC ? FASN+ and MVD/CD105), (MC ? FASN+ and MVA/CD105 and CD34), (MGC ? FASN+ and MVA/CD105). With base on these results it is concluded that similar expression of FANS levels indicate constituent process of tissue maintenance in both lesions. On the other hand, differences on angiogenesis between lesions seem be influenced by FASN+ mononuclear cells.
