Redes gastronômicas e sociais : os caminhos construídos por meio das churrascarias

Este trabalho procura compreender o processo migratório de jovens dos municípios de Nova Bréscia e Coqueiro Baixo, localizados no Rio Grande do Sul/Brasil, em direção a centros urbanos do país e do exterior, envolvidos com o trabalho em churrascarias, através da formação de redes de mobilidade social. Baseados na perspectiva da compreensão do Espaço Geográfico que se aproxima do materialismo histórico, compreendendo a consubstanciação de fluxos no/pelo Espaço Geográfico, entendendo a rede como um fenômeno e um processo no entendimento e na construção da sociedade, pensada enquanto espaço e tempo, como uma forma de organizar o espaço sempre em movimento. O trabalho possui como uma das inquietudes a idéia de que o processo de expansão das churrascarias está relacionado à perseguição do capital, quando trabalhadores deixam as áreas rurais em que residem em direção aos centros urbanos, na procura de ascender socialmente, originando as redes de mobilidade social, constituindo-se as churrascarias como uma perspectiva de espaços de acolhimento para esses imigrantes. Esse processo de mobilidade social impulsionado e/ou entre-laçado pelas churrascarias parece se constituir num conjunto de modalidades pelas quais um grupo social compreende como a possibilidade de ocuparem novos espaços, proporcionadas pela mobilidade/oportunidade do trabalho, onde a perseguição do capital é um dos condicionantes (não o único) para a migração de trabalhadores do espaço rural para o espaço urbano, através da formação de redes migratórias. / The present work aims at understanding the migratory process of young people from Nova Bréscia and Coqueiro Baixo municipalities, located in Rio Grande do Sul/Brazil, in direction to urban centers inside the country and abroad. These people are involved in jobs at barbecue restaurants by the formation of social mobility networks. We are based on the perspective of the Geographical Space which is close to the historical materialism, understanding the consubstantiality of fluxes in/by the Geographical Space. We comprehend the network as a phenomenon and as a process in the understanding and in the construction of society; meant like space and time, as a form of organizing the space always in movement. The work has, as one of its questions, the idea that the expansion process of those barbecue restaurants is related to the pursuit of capital, when the workers leave the rural areas in which they reside towards the urban centers searching for social ascension. They create the networks of social mobility becoming the barbecue restaurants as a perspective of welcome spaces for those immigrants. This process of social mobility, encouraged and/or inter-related by the barbecue restaurants, seems to constitute a group of modalities by which a social group understands the possibility to occupy new spaces. Those opportunities are provided by the job mobility/ opportunity, where the search for capital is one of the determining factors (not the only one) for the workers migration from the rural area to an urban area by the formation of migrating networks.

Carvão vegetal para cocção de alimentos: aspectos mercadológicos e de qualidade para o consumo / Charcoal barbecue: market aspects and quality for consumption

O Brasil é o maior produtor e consumidor mundial de carvão vegetal, sendo a maior parte utilizada na siderurgia. Há, no entanto, estimativas de que o uso para cocção de alimentos (churrasco) demanda, no mínimo, 10% de todo o carvão produzido no país. São vários os aspectos que devem ser considerados durante o uso do carvão vegetal, como integrante ao preparo do alimento. Existe uma diversidade de marcas disponíveis ao consumidor, entretanto, muitas delas não dispõem de padrões mínimos de qualidade, além de não apresentarem parâmetros ambientais e sociais em sua produção. É muito comum que, uma mesma marca comercial seja oriunda de diversas fontes, da mesma forma que, a partir de uma mesma fonte, possam ser disponibilizadas diversas marcas. O conhecimento dos aspectos relacionados à obtenção do produto e da sua qualidade por parte do consumidor, aumentaria as chances de sucesso na introdução de melhorias em sua cadeia de produção. É nesse contexto que se desenvolve esta pesquisa, tendo como objetivo geral analisar a qualidade do carvão vegetal para cocção de alimentos por meio da avaliação dos aspectos mercadológicos e de qualidade para o referido consumo. Os resultados são apresentados nos capítulos dois, três, quatro e cinco deste trabalho de tese de doutorado. / Brazil is the world\'s largest producer and consumer of charcoal, with most of it used in the steel industry. However, estimates indicate that the use for barbecue demands at least 10% of all the charcoal produced in the country. There are several aspects that must be considered during the use of charcoal as part of the preparation of the food. There are a variety of trademarks available to consumers, however, many of them have minimum quality standards, besides not having environmental and social parameters in their production. Commonly, the one same trademark comes from a variety of sources, in the same way that different trademark can be made available from the same source. Knowledge of the aspects related to obtaining the product and its quality by the consumer, increase the chances of success in introducing improvements in your production chain. It is in this context that this research was developed, with the general objective of analyzing the quality of charcoal for barbecue through the evaluation of the market aspects and quality for consumption. The results are presented in chapters two, three, four and five of this doctoral thesis.

Hållbara offentliga uterum : En studie om multifunktionsmoduler för Helsingborg drivna av Öresundskraft. / Sustainable common space : A study of multifunctional modules for Helsingborg powered by Öresundskraft

Studien utfördes på uppdrag av Öresundskraft och handlar om nya offentliga biogasdrivna multifunktionsmoduler som kommer att placeras i Helsingborgs nya stadsdelar i H+ området. Arbetet utfördes delvis i Helsingborg där en enkät fördelades inom stadsdelarna som omfattar H+ området.  Syftet med studien har varit att utforska hur multifunktionsmodulerna borde utformas för att kunna främja de 16 svenska miljökvalitetsmålen, för att vara attraktiva och hållbara och för att kunna främja energibeteendet hos användare. Resultaten visar att det finns olika tolkningar kring vad som gör en offentlig plats attraktiv och hållbar. Slutsatsen är att utformningen av de nya offentliga uterummen borde kunna främja måluppföljningen av de svenska miljökvalitetsmålen, om designen stödjer de. Dock behöver multifunktionsmodulerna stödjas av resterande utformning av H+ området och H+ områdets miljöprofil, för att kunna bidra till det. / The study was conducted on behalf of Öresundskraft and is about new public biogas-driven multifunctional modules that will be located in Helsingborg's new districts in the H + area. The study was carried out in Helsingborg, where a survey was distributed within the areas that comprise the H + area. The purpose of the study has been to explore how the multifunctional modules should be designed to promote the 16 Swedish environmental quality objectives, to be attractive and sustainable, and to promote the energy behavior of users. The results show that there are different interpretations of what makes a public place attractive and sustainable. The conclusion is that the design of the new public space should be able to promote the goal to follow-up the Swedish environmental quality objectives, if the design supports them. However, the multifunction modules need to be supported by the remaining design of the H + area and the H + area's environmental profile, in order to contribute to it.

The object of this research were the remains of Bos taurus catalog 060 rescued in the archaeological site RS-Q-17 - Estância Velha do Jarau, that this site has been researched by the Laboratório de Estudo e Pesquisa em Arqueologia (LEPA/UFSM), since 1997, with coordination archaeologist Dr. Saul Eduardo Seiguer Milder. The archaeological site is located on the southwestern border of Rio Grande do Sul, an area marked by constant conflicts that occurred during the consolidation period and definition of the state territory, where the habits, customs and food had a direct influence of the uruguayan and argentine culture. Of material culture found, archaeofauna represents a significant portion in terms of quantity. Thus, the main purpose of this research was to identify, analyze and interpret this archaeofauna quantitatively and qualitatively, so that made it possible to demonstrate through the bony elements identified that the diet of the preterit occupants of this archaeological site located on the southwestern border of Rio Grande do Sul was very diverse. The menu included the consumption of beef in the form of baked, stewed, fried and baked. A small portion of the collection archaeofaunistical shown to have been consumed in the form of barbecue: ribs. A large majority of elements were parts of long bones and bones of the feet and consumed in stews or boiled for supporting a variety in the way of preparation. Although beef is the preferred type, the barbecue is not the same level of importance and control daily food as the historical gaucho tradition affirms. / O objeto de estudo desta pesquisa foram os vestígios de Bos taurus do catálogo 060 resgatado no sítio arqueológico RS-Q-17 Estância Velha do Jarau, sítio este que vem sendo pesquisado pelo Laboratório de Ensino e Pesquisa Arqueológica (LEPA/UFSM), desde 1997, com coordenação do arqueólogo Prof. Dr. Saul Eduardo Seiguer Milder. O sítio arqueológico está localizado na fronteira sudoeste do Rio Grande do Sul, área marcada por constantes conflitos ocorridos durante o período de consolidação e definição do território gaúcho, onde os hábitos, costumes e alimentação tiveram influência direta da cultura uruguaia e argentina. Da cultura material encontrada, a arqueofauna representa uma parcela considerável em termos de quantidade. Assim, objetivo principal desta pesquisa foi identificar, analisar e interpretar esta arqueofauna de forma quantitativa e qualitativa, de modo que possibilitou demonstrar através dos elementos ósseos identificados que a dieta alimentar dos pretéritos ocupantes deste sítio arqueológico localizado na fronteira sudoeste do Rio Grande do Sul era muita diversificada. O cardápio incluía o consumo da carne de vaca sob a forma de cozidos, ensopados, fritos e assados. Uma pequena parcela da coleção arqueofaunística demonstrou ter sido consumida na forma de churrasco: as costelas. A grande maioria dos elementos eram partes de ossos longos e ossos das patas consumidos em ensopados e/ou cozidos corroborando para uma diversidade na forma de preparo. Embora a carne de vaca seja o tipo preferencial, o churrasco não está no mesmo patamar de importância e domínio alimentar diário do gaúcho histórico como afirma a tradição.

Les travaux de cette thèse visent la connaissance et la compréhension de l'articulation temporelle des mobilités individuelles (quotidiennes, de weekend et de longue distance) en France selon les localisations résidentielles, par taille d'aire urbaine et position par rapport au centre du bassin, via l'élaboration d'un diagnostic annuel en termes d'émission de CO2 afin d'éclairer la question du réchauffement climatique. A la description méthodologique de l'outil, s'appuyant sur les données de l'Enquête Nationale Transports et Déplacements 2007- 2008, succède la présentation de certains résultats marquants, déclinant la répartition de ces émissions selon les lieux d'habitat: Au delà des premières analyses descriptives, une caractérisation typologique des comportements de mobilité a abouti à quatre profils-types selon les budgets d'émissions de CO2 sur ces trois segments temporels de la mobilité. Chacun de ces comportements-types n'est pas uniquement repérable (ni uniforme) dans un seul type d'espace. Un certain « effet barbecue » est visible mais il n'est sans doute pas suffisamment fort pour pouvoir confirmer que les habitants des (grands) centres villes ruinent nécessairement durant le weekend leurs comportements plutôt vertueux en semaine grâce à l'utilisation de modes moins polluants. Les études de cas selon le genre, les grands voyageurs (grands pendulaires ou transcontinentaux), et certains motifs de déplacements (achat, loisirs), sont des coups de projecteurs qui ont apporté des résultats complémentaires. Enfin, l'analyse des taux d'occupation sur l'exemple de l'automobile pour des déplacements locaux a montré qu'un meilleur remplissage des véhicules est un facteur important de l'efficacité énergétique (et donc du CO2) des déplacements. / My thesis concern is about knowledge and in depth-understanding of the annual distribution of individual mobility in France (distinguishing daily, weekend and long distance trips) according to the residential locations (by category of urban areas) via the development of an annual CO2 emissions assessment, to address the issue of climate change. After a brief methodological description of the tool, using the dataset of the most recent French National Transport Survey (2007-2008), the paper presents some typical results, declining the distribution of CO2 emissions due to this mobility according to the zone of residence: beyond the initial descriptive analyses, a cluster analysis of mobility behavior results in four profiles of mobility according to the CO2-emissions budgets on these three time segments of mobility. It shows that each type of mobility behavior is not available (nor uniform) in only one type of space. A "cocooning effect" can be detected but it is probably not strong enough to confirm that the citizens of (large) city centers during the weekend necessarily ruin their rather virtuous behavior on week days through the use of less polluting modes. Case studies by gender, frequent travelers (pendulous or transcontinental), and some travel purposes (e.g. shopping, leisure) provide additional results. Finally, the analysis of occupancy rates of the car for local travel shows, that more passengers in a vehicle is an important factor for its energy efficiency (and therefore CO2) due to mobility.
