It is a mushroom that has the ability to thrive in a multitude of lignocellulosic wastes, since they produce lignocellulolytic enzymes, specialized to degrade this type of raw material. The G. lucidum species has several distinct lineages, and also nutritional requirements that vary in relation to the collection site and the type of substrate. Therefore, it is necessary to know the substrates, and the situation of the most suitable growing to the different strains of G. lucidum. The aim of this study was to evaluate the production of two strains of Ganoderma lucidum on agricultural waste as well as to perform chemical analyzes of basidiomata obtained in cultivation. The experiment was conducted at the premises of the module Mushrooms FCA / UNESP-Botucatu, SP, in which two strains were used: GLM-09/01 GLM and 10/02 both grown in waste, oat straw, bean straw, straw brachiaria grass Tifton straw and sawdust in two situations: with (20%) and without supplementation (0%) of wheat bran. All the waste came from dumps of agricultural activity resulting from Botucatu-SP. Both treatments were performed in 10 replications, totaling 200 packages. The cultivation of mushrooms totaled 95 days, later we assessed the biological efficiency of the treatments and it was performed and their chemical analysis of initial and residual substrates and basidiomata obtained. EB values (%) ranging from 0.0% to 6.7%. In the chemical analysis of the mushrooms, in the parameters, total protein, ether extract, crude fiber and ash, the results ranged from 8.7% to 13.7%, from 2.0% to 6.7%, 0.83% 1.79% to 38.8% and 54.5% respectively. Thus, it is concluded that from the substrates analyzed, those with the highest income were the base of straw brachiaria 20% in both strains tested (GLM 10/02 and GLM 09/01 and bean straw to 20% GLM on 10/02 line. The mushrooms showed high levels of ether extract, ash and fiber and low protein content. / Ganoderma lucidum trata-se de um fungo que desperta bastante interesse mundial devido suas inúmeras propriedades medicinais, são relatados principalmente pelo seu poder medicinal, podendo ser utilizados na prevenção e tratamento de diversas doenças incluindo o câncer e AIDS. É um cogumelo que apresenta a capacidade de desenvolver-se em diversos resíduos lignocelulósicos, pelo fato de produzirem enzimas lignocelulolíticas, especializadas em degradar esse tipo de matéria-prima. A espécie G. lucidum, apresenta diversas linhagens distintas, cujas exigências nutricionais que variam em relação ao local de coleta e ao tipo de substrato. Assim, torna-se necessário conhecer os substratos e a situação de cultivo mais adequados as diferentes linhagens de G. lucidum. O objetivo deste estudo foi avaliar a produção de duas linhagens de Ganoderma lucidum em resíduos agrícolas, bem como realizar a caracterização físico-química dos basidiomas obtidos no cultivo. O experimento foi conduzido nas instalações do Módulo de Cogumelos da FCA/UNESP-Botucatu, SP. As linhagens utilizadas foram GLM-09/01 e GLM 10/02. Os resíduos utilizados na cultura foram palha de aveia, palha de feijão, palha de capim braquiária, palha de capim tifton e serragem de eucalipto, todos em duas situações: com (20%) e sem suplementação (0%) de farelo de trigo. Todos os resíduos foram provenientes de despejos da atividade agrícola decorrente do município de Botucatu-SP. Os tratamentos foram realizados em 10 repetições, totalizando 200 pacotes. O cultivo totalizou 95 dias. Avaliou-se a eficiência biológica dos tratamentos e realizou-se a caracterização físico-química dos substratos inicial e residual e também dos basidiomas obtidos. Os valores de EB (%) variaram de 0,0% a 6,7%. Nas analises da composição centesimal dos cogumelos, os parâmetros, proteína bruta, extrato etéreo, cinzas e fibra bruta, os resultados variaram de 8,7% a 13,7%, de 2,0% a 6,7%, de 0,83% a 1,79% e de 38,8% a 54,5% respectivamente. Dos substratos analisados, os que apresentaram maior rendimento foram os formulados à base de palha de braquiária (20%) em ambas as linhagens testadas (GLM-09/01 e GLM 10/02) e palha de feijão (20%) na linhagem GLM 10/02. Os cogumelos apresentaram teores elevados de lipídios, fibras e cinzas e baixo teor de proteínas.

Para tanto, foram utilizados seis resíduos agrícolas: palha de arroz (PA), palha de feijão (PF), palha de trigo (PT), palha de sorgo (PS), folha de bananeira (FB) e sabugo de milho (SM). Estes resíduos, coletados na Fazenda de Ensino, Pesquisa e Extensão da UNESP, Campus de Ilha Solteira, foram analisados quanto aos teores de macro (N, P, K, Ca, Mg) e micronutrientes (Fe, Mn e Zn), lignina, celulose, hemicelulose, cinzas e relação C/N. Foram avaliados: o tempo necessário para a colonização do substrato (corrida micelial), o início da formação de primórdios, o tempo total de cultivo, o número de cogumelos, a produção e a eficiência biológica utilizando a fórmula: EB = (peso fresco dos cogumelos/peso seco do substrato inicial) x 100. Além disso, os cogumelos foram avaliados quanto aos teores de macro (N, P, K, Ca e Mg) e micronutrientes (Fe, Mn e Zn) e o teor de proteínas. O substrato PF apresentou resultados semelhantes para produção (189,8 g/kg-1), EB (89,2%) e número de cogumelos (12) à PA, substrato utilizado tradicionalmente no cultivo de Pleurotus em escala comercial. Não foi possível atribuir apenas a um fator químico as altas produções e EB observadas em PA e PF e muito menos para a baixa produção em PS (77,8 g/kg-1) e SM (53,2 g/kg-1). No geral, substratos com conteúdo de N ao redor de 1,0%, relação C/N em torno de 45%, baixo teor lignina, alto conteúdo de cinzas e maiores teores de P, K e Ca foram os melhores para o cultivo de P. florida. <p>Tri soja gljive bukovače, P. ostreatus NS 77, P. ostreatus NS 355 i P. ostreatus 244,<br />gajena su na supstratima četiri biljne vrste, p&scaron;enica, kukuruz, soja i suncokret, kao<br />samostalni supstrati i u kombinaciji sa p&scaron;eničnom slamom. Nakon plodono&scaron;enja<br />vr&scaron;ena su ispitivanja odgajivačkih, morfolo&scaron;kih, hemijskih, svojstva gljiva, kao i<br />hemijske i mikrobiolo&scaron;ke&nbsp;&nbsp;&nbsp; sirovim supstratima u odnosu na sadržaj celuloze u<br />supstratima nakon plodono&scaron;enja sojeva, dok je kod sadržaja pepela obrnuto, u sirovim<br />supstratima je niži u odnosu na supstrate nakon plodono&scaron;enja. Koncentracija ukupnog<br />broja mikroorganizama, brojnost amonifikatora i brojnost saprofitnih gljiva na<br />nesterilisanim supstratima je niža nego na iskori&scaron;tenim supstratima. Dehidrogenazna<br />aktivnost&nbsp; je najvi&scaron;a na supstratima nakon plodono&scaron;enja soja NS 244, dok kod<br />enzimskog kompleksa celulaza varira u zavisnosti od soja i supstrata Kod sva tri soja<br />maksimalni prinosi su bili na supstratu Soja (S5), a minimlni na supstratu P&scaron;enica<br />(S1). Na osnovu morfolo&scaron;kih osobine konstatovana je velika varijabilnist između<br />sojeva. Supstrat Kukuruz (S6) se pokazao kao najbolji, sa aspekta vodnog režima, dok<br />se Suncokret (S7) pokazao kao najlo&scaron;iji. Na supstratu Kukuruz (S6) je najvi&scaron;i, a na<br />supstratu P&scaron;enica (S1) je najniži sadržaj pepela. Sadržaj natrijuma u nožici je veći od<br />sadržaja u &scaron;e&scaron;iru, &scaron;to je obrnuto u odnosu na druge mikroelemente i makroelemente.<br />Sadržaj celuloze je vi&scaron;i u svim&nbsp; sirovim supstratima, dok&nbsp; je kod sadržaja pepela<br />obrnuto. Brojnost svih mikroorgnaizma na nesterilisanim supstratima je niža nego na<br />iskori&scaron;tenim supstratima.&nbsp; Dehidrogenazna&nbsp; je najvi&scaron;a na supstratima nakon<br />plodono&scaron;enja soja NS 244, dok kod enzimskog kompleksa celulaza varira u zavisnosti<br />od soja i supstrata.</p> / <p>Three strains of oyster mushroom (P. ostreatus NS 77, NS 355, and 244) were grown on substrates made from four crops (wheat, maize, soybean, and sunflower), as individual substrates or in combination with wheat straw. After fruit maturity,&nbsp; mushroom growing, morphological, and chemical properties were analysed, as well as chemical and microbiological analyses of fresh and used substrates. All three strains showed maximum yields on soybean substrate (S5), and minimum yields on wheat substrate (S1). A large variability among the strains was observed based on the morphological properties. The strain NS 77 has caps of the smallest weight,&nbsp; width and length, the largest number of fruiting bodies, and the longest stalks. The&nbsp; strain NS 244 have caps of the largest weight, width and length, the lowest number of fruiting bodies and stalk length, but the largest width of the stalks. Regarding water regime, maize substrate (S6) was the best, while sunflower (S7) was the poorest. Ash content was the highest in maize substrate (S6) and the lowest in wheat&nbsp; substrate (S1). Potassium content in the stalk was higher than in the cap, which is opposite from other micro- and macro elements. Cellulose content was higher in all fresh substrates than in the used substrates after the strains have fruited, while ash content was higher in the used substrates. Concentration of total number of microorganisms, abundance of ammonifiers and saprophytic fungi in the unsterilized substrates were lower than in the used ones. Dehydrogenase activity was the highest in substrates after fruiting of NS 244, while cellulose enzyme complex varied regarding the strain and substrate.</p>

Enriquecimento e biodisponibilidade de selênio no cogumelo de Pleurotus ostreatus / Enrichment and bioavailability of selenium of Pleurotus ostreatus mushrooms

In areas where the soil present low Se concentration, such as the Brazilian soils, the agricultural products also presents low concentrations of this element and this deficiency causes serious risks for the human health. Besides the plants, mushrooms have the capacity to accumulate great quantities of Se, and, this characteristic associated to the elevated nutritional value, being a source of proteins, carbohydrates vitamin B1, B2 and B3, calcium and iron, makes of mushrooms aliments that alleviate various nutritional deficiencies. The bioavailability is defined as the proportion of ingested nutrient that is used for normal physiological functions or stored, so, it must be considered in the nutritional food evaluation. The objective of this work was to enrich and determine the bioavailability of Se in Pleurotus ostreatus mushroom. The mushrooms were produced in coffee rusk as substrate base enriched with different concentration of Se 3,2; 6,4; 12,8; 25,4; 51; 76,4; 102 mg kg-1), using sodium setenite. Biological efficiency (BE) and Se, Ca, Cd, Cu, Fe, K, Mg, Mn, Na, N, P, Pb and Zn concentration were evaluated, in three consecutive flushing, in the same substrate. For Se bioavailability, 64 rats (Wistar) were fed using P. ostreatus mushrooms enriched or not with Se, and as positive control sodium selenite was used. BE of the mushrooms was affected by both flushing number and Se concentration in the substrate. The highest value of BE among 13,06 to 37,56% were observed at the first flushing, white BE among 2,47 to 11,09% were obtained at third flushing which period varied from 43 to 79 days after inoculation. Mushrooms groduced in the substrate with 3.2 mg kg -1 present about 55 &#956;g g-1 of Se in the dry matter. The maximum Se concentration absorbed by the fungus was when it was growth in the substrate with 0.64 mmol kg-1 of Se, although the best use of added Se occurred with 12,8 mg kg-1 where 34% of added Se was present in the mushroom. Biological assay showed that Se present in the mushroom was able to cross the intestinal barrier reaching the blood circulation of the animals. The rats using mushroom Se enriched mushroom presents 700 &#956;g L- 1 of Se in the blood plasma, while ones receiving the same quantity of Se as sodium selenite present about 500 &#956;g L-1 (P<0,05). The plasma GPx enzyme activity was about 2000 nmol min-1 mL-1 in rats fed with all diets (P>0,05). The blood plasma protein showed no difference among diet in relation to chromatographic profiles. The peptide in high concentration was detected at 24 min presenting molecular weight estimated to 7,7 kDa. However, Se concentration in this peptide was 2.76, 6. 90 and 5.27 &#956;g L-1 in animals fed, respectively, without Se, Se enriched mushroom and sodium selenite. Based on these results, it can be concluded that: mushroom production was stimulated by low concentration of Se added to the substrate; BE in the first flushing is higher than second and third; concentration of 12,8 mg kg-1 of Se in the substrate resulted in the best use of added Se; Se in the mushroom was better absorbed bay the animals than when as sodium selenate. Selenium present in the mushroom shows high bioavailability, since Se was detected not only in the blood plasma but also into the seric peptides; Over all, P. ostreatus shows an excellent food source of Se. / O selênio (Se) é um nutriente essencial envolvido em diversas funções fisiológicas que incluem atividade no centro catalítico de proteínas, aumento de funções do sistema imune e redução do risco de câncer, além de ser o componente essencial da enzima antioxidativa glutationa peroxidase (GPx). Em áreas onde os solos têm baixa disponibilidade de Se, como os solos brasileiros, os produtos agrícolas também apresentam baixas concentrações desse elemento e essa deficiência causa graves riscos para a saúde humana. Além das plantas, os cogumelos têm a capacidade de acumular grandes quantidades de Se, e, essa característica associada ao elevado valor nutricional, por ser fonte de proteínas carboidratos vitaminas B1, B2 e B3, cálcio e ferro, faz dos cogumelos alimentos para suprir carências nutricionais diversas. A biodisponibilidade, definida como a proporção de nutrientes ingeridos que é utilizada para funções fisiológicas normais ou armazenados, deve ser considerada na avaliação nutricional de um alimento. O objetivo deste trabalho foi enriquecer e determinar a biodisponibilidade de Se nos cogumelos Pleurotus ostreatus. Os cogumelos foram produzidos em substrato à base de casca de café enriquecido com diferentes concentrações de Se (0; 3,2; 6,4; 12,8; 25.4; 51; 76,4; 102 mg kg-1), na forma de selenito de sódio. Determinou-se a eficiência biológica (EB), as concentrações de Se e também de Ca. Cd, Cu, Fe, K, Mg, Mn, Na, N, P, Pb, Zn, em três colheitas consecutivas do cogumelo em um mesmo substrato Para avaliar a biodisponibilidade do Se 64 ratos da linhagem Wistar, receberam dietas contendo cogumelos P. ostreatus enriquecidos ou não com Se. A EB de P. ostreatus foi afetada tanto pelo número de colheitas quanto pelas doses de Se adicionadas ao substrato. Os maiores valores de EB, situados entre 13,06 e 37,56 foram constatados na primeira colheita. Valores de EB entre 2,47 e 11,09 foram obtidos na terceira colheita, após um período que variou de 43 a 79 dias. Na concentração de 3,2 mg kg-1 de Se os cogumelos apresentaram cerca de 55 ug g-1 de Se na massa seca. A quantidade de Se máxima absorvida pelo fungo ocorreu quando foi adicionada ao substrato 51 mg kg-1 de Se, embora, o melhor aproveitamento do Se tenha ocorrido na concentração de 0,16 mmol kg-1 com absorção de 34 % do Se adicionado. O ensaio biológico mostrou que o Se presente nos cogumelos foi capaz de atravessar a barreira intestinal e atingir a circulação dos animais. Os ratos alimentados com dietas contendo cogumelos enriquecidos com Se apresentaram cerca de 700 ug L-1 de Se no plasma sangüíneo, enquanto os alimentados com a mesma quantidade de Se na forma de selenito de sódio apresentaram cerca de 500 ug L-1 (P<0,05). A atividade da enzima Gpx plasmática foi de cerca de 2000 nmol mm-1 mL-1 nos animais que se alimentaram de dietas contendo ou não cogumelos enriquecidos com Se (P>0,05). A análise protéica do plasma sangüíneo por cromatografia mostrou não haver diferença no perfil cromatográfico das amostras. O peptídeo em maior concentração foi detectado aos 24 min de corrida cromatográfica e foi estimado o peso molecular de, aproximadamente, 7,7 kDa. Entretanto, a concentração de Se nesse peptídeo foi 2,76, 6,90 e 5,27 ug L-1, respectivamente nos ratos alimentados sem Se, com cogumelos enriquecidos com Se e com selenito de sódio. Com base nestes resultados pode-se concluir que o selenito de sódio adicionado ao substrato em concentrações de 3,2 a 12,8 mg kg-1 estimulou a produção de cogumelos que foram capazes de acumular Se quando cultivados na presença desse elemento, a EB foi maior na primeira colheita do cogumelo; as concentrações de 3,2 e 12,8 mg kg-1 resultaram em 34% de aproveitamento do Se adicionado ao substrato; o Se presente no cogumelo foi mais absorvido pelos animais do que o Se na forma de selenato de sódio; o Se presente no cogumelo está não só no plasma sangüíneo como também è metabolizado e inserido nos peptídeos séricos; o cogumelo P. ostreatus pode ser uma excelente fonte alimentar de Se.

These mushrooms show nutricional proprieties with higher proteins, essencial aminoacids, unsaturated fat acids, vitamins and mineral contents, however are becoming as an important food resource. The substrata identification are the mainly stage in the productivity increase studies in the fungiculture. The in vitro and in vivo cultures aim to elucidate the optimal conditions of fungi growing related to a culture media that allow the fast development and increase the productivity. For Pleurotus spp. the currently strains available, were selected by the use of different ways of culture, aimed to increase the productivity. Therefore, these works aim to study the in vitro micelial growth and colonization of substratum and the productivity of three mushrooms strains in different agricultural wastes. Three experiments were carried out to reach the objectives, using rice straw, castor bean seed husks and peanut shells as substrata. In the first experiment, the strains was repicated to a petri dishes, with a solid medium prepared with the selected substrata, and incubated at 25°C. The mycelial growing was daily mensured with ruler and at the end of experiment the mycelial biomass was quantified. In the second experiment was evaluated the colonization capacity under in vitro conditions. The strains were repicated to the tubes with pasteurized susbtrata and incubated at 28°C. Were measured, in intervals of 24 hours, the distance of mycelia from the colonization origin for each tube. In the third experiment were evaluated the productivity, biological efficiency, the fresh and dry mass and the centesimal composition of the basidiomata produced in the selected substrata, beyond the carbon/nitrogen ratio in each substrata before and after the 66 days of cultive. The medium formulated with peanut shells extract propritiated the higher vegetative growing of Lentinus sajor-caju (PSC01/06) mycelia. The strain POR01/06 of Pleurotus ostreatoroseus, demonstrate the higher mycelial growing in the castor bean seed husks extract medium. The wild strain of Pleurotus pulmonarius grows indifferently in both tested media, moreover shows the highest mycelial growing that P. ostreatoroseus. The results of second experiment concludes that the rice straw provides faster colonization of Lentinus sajor-caju when it compares with the others substrata. The castor bean seed husks and the peanut shells substrata provides a slowly linear colonization for P. ostreatoroseus. The results of the third experiment allow to conclude that Lentinus sajor-caju as revealed such the most promising for the fungiculture, showing 81,13% of biological efficiency. The rice straw substrata provides the higher productivity and biological efficiency for all tested strains. The nutricional quality of mushroons varies as the used substratum. P. ostreatoroseus and P. pulmonarius demonstrated an lower fat content and its basidiomata acumulate more minerals when it grows in castor bean seed husks. Finally, it is observed that the most productivity was obtained at the first flow of production for all tested strains. / As espécies de Pleurotus, popularmente conhecidas por cogumelos ostra, são decompositoras primárias de madeira e outros resíduos vegetais biodegradáveis. Estes fungos apresentam propriedades nutricionais com elevados teores de proteínas aminoácidos essenciais, ácidos graxos insaturados, vitaminas e minerais, por isso estão tornando-se cada vez mais importantes como um recurso alimentar. A identificação de substratos que permitam o rápido desenvolvimento do micélio fúngico é uma das principais etapas nos estudos que visam melhorar a produtividade no cultivo de cogumelos. O cultivo in vitro e in vivo busca elucidar as condições ótimas de crescimento do fungo visando a seleção de meios de cultura e substratos que permitam o rápido desenvolvimento e produtividade. Deve-se considerar que no cultivo de Pleurotus spp. as linhagens atualmente disponíveis, foram selecionadas pelo uso de diferentes meios de cultura, visando aumento na produtividade. Portanto, este trabalho teve como objetivo comparar três isolados de cogumelos em diferentes substratos, avaliando-se a velocidade de crescimento micelial, a biomassa de micélio, a colonização do substrato in vitro e a produtividade. Para tanto, três experimentos foram realizados, utilizando-se os substratos palha de arroz, casca da semente da mamona e a casca de amendoim. No experimento um os isolados foram repicados para meio sólido, em placas de Petri, preparado à partir de extratos dos três substratos. A incubação ocorreu em estufa a 25°C. O crescimento miceliano foi medido diariamente com régua e ao final do experimento, recolheu-se e quantificou-se a biomassa miceliana. No experimento dois foi avaliada a capacidade de colonização in vitro das linhagens fúngicas, os isolados foram repicados para os substratos pasteurizados e acondicionados em tubos de ensaio de 2,5 x 20cm, incubados a 28°C em estufa. Foram medidos a cada 24h em cada tubo de ensaio a distância de alcance do micélio a partir da origem de colonização. No experimento três avaliou-se a produtividade, eficiência biológica, massa fresca e seca e a composição centesimal dos cogumelos produzidos além da relação carbono/nitrogênio inicial e final do substrato. Neste os substratos de cultivo foram pasteurizados, inoculados e incubados durante 66 dias. O meio de cultura formulado com extrato de casca de amendoim propiciou a maior velocidade de crescimento vegetativo de Lentinus sajor-caju (PSC01/06). A linhagem POR01/06 de Pleurotus ostreatoroseus apresentou maior velocidade de crescimento em meio contendo extrato da casca da semente de mamona e a linhagem nativa de Pleurotus pulmonarius cresceu indiferentemente nos meios testados. Os resultados do experimento dois demonstraram que o substrato de cultivo palha de arroz proporcionou a colonização de Lentinus sajor-caju, mais rapidamente que os demais substratos. Os resultados do experimento três permitem concluir que a espécie Lentinus sajor-caju mostrou-se a mais promissora, apresentando eficiência biológica de 81,13%. Independentemente da espécie, o substrato palha de arroz proporcionou maior produtividade e eficiência biológica. A qualidade nutricional dos cogumelos variou conforme o substrato utilizado. P. ostreatoroseus e P. pulmonarius apresentaram baixo teor de gordura e acumularam mais minerais em seus basidiomas quando cultivados em casca da semente de mamona. Por último, a maior produtividade foi obtida no primeiro fluxo de produção.

The right sized cow for emerging and commercial beef farmers in semi-arid South Africa : connecting biological and economic effeciency

Text in English / Cow size influences biological efficiency of individual animals, which influences herd composition and stock flow. This in turn influences the economic efficiency of the herd. This research followed the thread from animal size, to biological efficiency, to economic efficiency for beef cattle production under a typical production system in semi-arid South Africa. Cattle were grouped into three groups namely small, medium and large cattle, with mature weights of 300kg, 450kg and 600kg respectively. The net energy requirements of individual cattle were calculated for maintenance, growth, lactation and foetal production, for each of the three sizes. Growth rates, milk yield, reproduction rates, and management practices were assumed from existing research. Next the stock flow for a herd of small, medium and large cattle were calculated from the above. Income and expenses as commonly used in the research area were calculated from the stock flow. Gross profit above allocated costs were subsequently calculated for the three herds under the above-mentioned conditions. When assuming similar reproduction and growth rates for small, medium and large mature cattle, the following results were obtained: more heads of small cattle could be held on a set resource base, but the total live weight of a herd of large cattle that could be held on the same resource base was greater. This was mostly due to proportionately lower maintenance energy requirements in the herd of large cattle. In the simulation in this study, maintenance energy requirements for the herd of large cattle was 71.2%, compared to 72.0% for the herd of medium cattle and 73.1% for the herd of small cattle. Income from the herd of small cattle was the lowest, as less kilograms of beef were available to sell. Allocated costs for the herd of small cattle were the highest, due to a large number of expenses being charged per head of cattle. As a result, the herd of large cattle were more economically efficient than their smaller counterparts. Income above allocated costs for the herds of large, medium and small cattle were R1,182,865, R1,085,116 and R946,012 respectively. Larger cattle generally have a lower reproduction rate under similar conditions. No equation exists that directly links size to reproduction rates, especially considering the vast number of variables that influences reproduction rates. However, in the form of scenarios, it could be calculated that, given a reproduction rate of 80% for mature small cattle, when reproduction rates of large cattle were 24.7% lower than that of small cattle and the reproduction rates of medium cattle were 15.4% lower than that of small cattle, the large and medium herds became less profitable than the small herd. Smaller cattle mature faster than larger cattle which provides the opportunity for early breeding. When small cattle were bred early, at 15 months, at a calving rate of only 44.5% it was more profitable than when the same cows were bred at 24 months. When medium cattle were bred at 15 months, a calving rate of 37.0% was needed to be more profitable than when they were bred at 24 months. Even when the herd of small cattle were bred at 15 months with a reproduction rate of 100%, it could still not match the profitability of the herd of large cattle bred at 24 months given the reproduction rates of all other classes of animals were similar. When the herd of medium cattle were bred at 15 months, at a calving rate of 53.7%, it matched the profit of the herd of large cattle that were bred at 24 months, when the reproduction rates of other classes were equal. Scenarios were considered were feed intake was limited. When feed was limited to a specific amount, smaller cattle were more biologically efficient and cattle with potential for small mature sizes would grow to a larger size than cattle with potential for medium and large mature sizes. When feed was limited by a factor of the calculated energy requirements of small, medium and large cattle, large cattle were more effective. This is because large cattle use proportionately less energy for maintenance, which allows more energy to be allocated to growth, lactation and foetal production. When energy was limited to an amount per unit of metabolic weight, small cattle were more efficient than medium and larger cattle in the growth and production phases. Small, medium and large cattle were equally efficient (or inefficient) in the maintenance and lactation phases. Energy requirements of cattle in South Africa are commonly calculated using the Large Stock Unit (LSU). The LSU typically overestimates energy requirements for cattle, except in the lactation phase. When using the LSU to match small, medium or large cattle to a resource base, the LSU overestimates energy requirements of large cattle proportionately more than that of small and medium cattle. This is excluding the lactation phase, where energy requirements for all three sizes are underestimated and that of large cattle underestimated proportionately more. There are more considerations when matching cow size to managerial practices. A smaller body size is a natural adaptation to a semi-arid environment and this adaptation can be expressed in different ways. The number of animals on a resource base has implications on management practices. Having more heads of cattle on a resource base increases genetic variation of the herd, allowing for genetic progress to be made faster than in herd of fewer cattle. / Agriculture and  Animal Health / M.Sc.
