Introdução- O conceito de biodiversidade para alimentação e agricultura inclui um conjunto de componentes, como variedade de alimentos, nível de recursos genéticos e gestão dos sistemas de produção dos diversos cultivos. Segundo a FAO (Food and Agriculture Organization of the United Nations), estudar e entender a biodiversidade é essencial para garantir a segurança alimentar e o desenvolvimento sustentável. Objetivos- Caracterizar a diversidade e disponibilidade de frutas e hortaliças frutosas para a população do município de São Paulo e verificar a disponibilidade de informação nutricional dos diferentes grupos de mercado. Métodos- Foram selecionadas as cinco frutas e hortaliças frutosas mais adquiridas (kg per capita/ano) segundo a POF (Pesquisa de Orçamentos Familiares) 2008-2009 que apresentam ao menos três grupos de mercado comercializados na CEAGESP (Companhia de Entrepostos e Armazéns Gerais de São Paulo): Banana (Musa spp.), Laranja (C. sinensis L. Osbeck), Maçã (M. domestica Borkh.), Mamão (C. papaya L.), Abacaxi (A. comosus L.), Tomate (L. esculentum Mill.), Abóbora (Cucurbita spp.), Pimentão (C. annuum L.), Pepino (C. sativus L.), Berinjela (S. melongena L.). A presença dos grupos de mercado de cada espécie foi avaliada em estabelecimentos de comercialização de alimentos localizados em 18 distritos do município de São Paulo classificados por tercis de IDH. Foram avaliados um total de 73 estabelecimentos (18 feiras livres e 55 mercados, supermercados e hipermercados) em duas épocas distintas (julho-setembro de 2014 e fevereiro-março de 2015). A busca de dados de composição nutricional foi realizada nas principais bases de dados (Scielo, Lilacs, Bireme) e em dados publicados por organizações nacionais e internacionais (EMBRAPA, FAO, INFOODS), além das tabelas nacionais TACO, TBCAUSP e Fontes Brasileiras de Carotenoides. As informações nutricionais de macro e micronutrientes foram compiladas em uma única tabela. Resultados- Estabelecimentos localizados em distritos de alto Índice de Desenvolvimento Humano (IDH) apresentaram maior diversidade para as espécies banana, mamão, maçã, tomate, pepino e pimentão em comparação aos distritos de médio IDH (p<0,05) em 2014. Em contrapartida, os distritos de alto e baixo IDH ofertaram quantidades semelhantes de grupos de mercado para as espécies estudadas, exceto o mamão e tomate que estiveram mais presentes no alto IDH. Em relação às frutas, a Banana Nanica, Banana Prata, Laranja Pera, Maçã Gala e Abacaxi Pérola estiveram presentes em quase 100 por cento dos estabelecimentos, nos três IDHs. Já em relação às hortaliças frutosas, o Pimentão Verde e Berinjela Comum estiveram presentes em quase 100 por cento dos estabelecimentos avaliados em 2014. Conclusões- Observaram-se diferenças de disponibilidade de grupos de mercado das espécies estudadas, conforme classificação do IDH do distrito. Verificou-se que as feiras livres mostraram ser melhores locais de escolha de compra pelos consumidores, já que de maneira geral, apresentaram maior diversidade, a preços inferiores aos praticados nos supermercados. Apesar das escassas informações nutricionais disponíveis na literatura, foi possível evidenciar as diferenças de concentração de certos nutrientes para diferentes grupos de mercado estudados. Dessa forma, acredita-se que a disseminação dessas informações pode ser benéfica para os consumidores realizarem escolhas de consumo mais inteligentes, aumentando a diversidade de nutrientes na dieta. / Introduction- The concept of biodiversity for food and agriculture includes a set of components such as varieties of food, level of genetic resources and management systems used in culturally diverse populations. Understanding local food biodiversity is essential to ensure food security and sustainable development. Objective- To characterize the diversity and availability of fruits and vegetables in the Sao Paulo municipality and verify the availability of nutritional information of different market groups. Methods- the market-groups targeted in this study belong to the five most commonly purchased fruits and vegetables in São Paulo, according to the Brazilian Household Budget Survey (2008-2009): banana (Musa spp.), orange (C. sinensis L. Osbeck), apple (M. domestica Borkh.), papaya (C. papaya L.), pineapple (A. comosus L.), tomato (L. esculentum Mill.), pumpkin (Cucurbita spp.) , bellpepper (C. annuum L.), cucumber (C. sativus L.), eggplant (S. melongena L.). The representation of each market group was evaluated by checking the retail trades from 18 districts classified by tertiles (HDI). A total of 73 retailers were evaluated (18 street markets and 55 markets and supermarkets) in two different seasons (July-September 2014 and February-March 2015). To perform data collection of micro and macronutrients, terms were used, including the nutritional composition, biodiversity, variety, cultivar, in various combinations, with emphasis on recently published data in databases composition of conventional foods, scientific articles, data published by national and international organizations and agencies related. Nutritional information were compiled into a single table. Results- Retailers located in high districts Human Development Index (HDI) showed greater diversity for species banana, papaya, apple, tomato, cucumber and bellpeppers compared to the average HDI districts (p <0.05) in 2014. However, high and low HDI districts offered similar amounts of market groups for the species studied, except papaya and tomatoes that were more frequently found in high HDI. For fruit, Banana Nanica, Banana Prata, Orange Pera, Apple Gala and Pineapple Pérola were present in almost 100 per cent of the establishments in the three tertile. In relation to fruit vegetables, the Bellpepper Verde and Eggplant Comum were present in almost 100 per cent of retailers evaluated in 2014. Conclusions- Differences in the availability of market groups from the species studied were observed, according to the district HDI ranking. It was found that streets markets have proven to be better places in choice of purchase by consumers, since in general, had higher diversity at lower prices than in supermarkets. Despite the meager nutritional information available in the literature, differences in concentration of certain nutrients to different market groups studied were observed. Thus, it is believed that the dissemination of such information can be beneficial for consumers make more intelligent consumer choices, increasing the diversity of nutrients in the diet.

Využitie odpadovej vody z RAS pre produkciu mikrobiálneho proteínu. / Usage of wastewater from RAS for microbial protein production.

The aim of this diploma thesis was to analyse waste water quality from RAS, verification of its possible cleaning in a model of wastewater treatment plant using heterotrophic bacteria, experimentally compare the influence of used carbon source in the initial phase of bacteria cultivation and evaluation of biofloc usage in fish feed. Analysed water was obtained from rearing tanks, sewage water from mechanical filtration and tap water for filling the system. Wastewater treatment plant (built according to AS VARIOcomp K model) was divided into 3 parts (primary settling, activated part, secondary settling) and then filled with water from running BFT system. For carbon source comparing experiment 4 groups were used: flour, glucose, acetate and glycerol, each in 3 replications. Cultivation took 28 days and at the end the nutritional composition of each BFT system was evaluated. Water analyses showed that sewage water from mechanical filtration is nutrient rich and contain big amount of undissolved solids. This water is not suitable for purification in conventional system without pre-treatment. The model of water treatment plant purified approximately 50 l of water from vortex per day which was pumped back into RAS. Probably it would be capable of purifying bigger volume. Bacteria cultivation using different carbon sources is very similar to start-up of nitrifying bacteria in biofilter at the beginning. It was proved that biofloc is also capable of removing nitrates from water. The biggest measured concentration among groups was 1695 +- 438 mg.l-1 NO3- and in 6 days it decreased to 493 +- 409 mg.l-1. The average FVI for flour, glucose, acetate and glycerol were 102 +- 57; 267 +- 59; 219 +- 26 and 293 +- 9 ml.l-1 at the end of cultivation. Experiment comparing carbon sources also proved that nutritional composition of biofloc is similar to composition of commercial feed. Heterotrophic bacteria are also capable to cumulate heavy metals and mineral matter over time. Experiment with added biofloc to feed in amount 0 %, 25 % and 50 % did not show any statistically significant differences (p < 0,05) on survival rate, FCR and SGR between the groups of juvenile grass carp (Ctenopharyngodon idella).

The selection of lactic acid bacteria to be used as starter cultures for Ting production

Most of the traditional foods in Africa are fermented before consumption. Fermentation is an old technology; however, during this process, especially in traditional fermented cereal based products with special emphasis on Ting, there is very little control involved during the processes. Fermentation is thus left to chance inoculation from the environment. Ting is a sorghum based product that is a result of LAB fermentation and has 0.6-0.7% lactic acid with a final pH of 3.5-4.0. However, there is presently no adequate information on the employment of starter cultures for most South African traditional fermented foods. The aims of this research were therefore to evaluate the use of different isolates of LAB that had been previously isolated from Ting as potential starter cultures for Ting production, to evaluate whether these would result in a product with sensory characteristics similar to those of the naturally fermented Ting and also to determine the nutritional composition of Ting. Six isolates LAB isolates (Lactobacillus collinoides 1.42, Lactobacillus cellobiosus 3.42, Leuconostoc mesenteroides 2.35, Lactobacillus cellobiosus 4.35, Lactobacillus cellobiosus 3.30 and Lactobacillus curvatus 5.30) previously isolated from Ting were used in this study. When inoculated into sorghum mash to initiate Ting fermentation, the LAB starter cultures reduced the pH from 6.5-6.8 to levels below 4.5 within a reduced fermentation time of 12 h instead of 48-72 h as is the case with the naturally fermented Ting. The same starters increased the amount of lactic acid present in the samples from 0.02 to 0.3% within 12 h, reaching up to 0.5% after 72 h of fermentation. The nutritional composition of all the products was similar. The minerals calcium, phosphorous, magnesium and iron were analysed and phosphorous was the highest followed by magnesium; with calcium and iron being the lowest. Among all the amino acids analysed, glutamic acid was the highest in all the samples, followed by proline and leucine with cystine and lysine being the least. Generally, Ting was found to be high in protein and energy although with a low fat content. Based on the results of the consumer acceptability study, of all of the six LAB isolates; the LAB isolate L. cellobiosus 4.35 could be the best option when considering a starter culture for Ting production since the sample had the highest consumer acceptability results similar to the naturally fermented Ting sample. / Dissertation (MSc)--University of Pretoria, 2008. / Microbiology and Plant Pathology / unrestricted

Características físico-químicas e sensoriais da carne ovina submetida a diferentes métodos de cocção /

Orientador: Rafael Silvio Bonilha Pinheiro / Resumo: A carne é submetida a tratamentos térmicos antes de ser consumida em muitos momentos, acentuando os atributos sensorias e inativando microrganismos, além de alterar as características nutricionais da carne. No entanto, não há estudos científicos suficientes sobre os efeitos dos métodos de cocção utilizados nas práticas culinárias pelos consumidores, quanto à qualidade da carne ovina. Dessa forma, o objetivo do estudo foi avaliar a influência dos métodos de cocção (assado, frito e banho maria) sobre parâmetros físico-químicos (composição centesimal, perda de peso por cozimento e percentual de encolhimento) e atributos sensorias (aroma, cor, sabor e maciez) da carne de cordeiro. Todos os métodos de cocção aumentaram significativamente o teor de proteína e extrato etéreo da carne em relação à carne in natura, devido as perdas de umidade que ocorreram durante a cocção. Entre os processos térmicos, o método frito em óleo apresentou maior concentração no teor de extrato etéreo, devido a incorporação da gordura do óleo utilizado nesse método de preparo da carne. O método de fritura teve maior perda de peso por cozimento (P>0,001) em relação aos demais métodos de cocção da carne. As características sensorias (aroma, cor e sabor) foram influenciados pelos métodos de cocção frito e assado, atribuindo maiores notas de aceitabilidade em relação ao método de cocção em banho maria. (Resumo completo, clicar acesso eletrônico abaixo) / Abstract: The meat is subjected to thermal treatments before being consumed in many moments, improving the sensory attributes and reducing microorganisms, besides altering the nutritional characteristics of the meat. However, there are not enough scientific studies on the effects of cooking methods used in culinary practices by consumers, regarding the quality of sheep meat. Thus, the objective of the study was to evaluate the influence of cooking methods (roast, fried and water bath) on physical-chemical parameters (proximate composition, weight loss by cooking and shrinkage percentage) and sensory attributes (aroma, color, flavor and tenderness) of lamb. All cooking methods significantly increased the protein and ether extract content of meat compared to fresh meat, due to the moisture losses that occurred during cooking. Among the thermal processes, the oil-fried method showed a higher concentration in the ether extract content, due to the incorporation of the oil fat used in this meat preparation method. The frying method had greater weight loss by cooking (P> 0.001) compared to the other methods of cooking the meat. The sensory characteristics (aroma, color and flavor) were influenced by the fried and roasted cooking methods, attributing higher acceptability scores in relation to the cooking method in a water bath. Biodiversidade e composição de alimentos: dados nutricionais de frutas nativas subutilizadas da flora brasileira / Biodiversity and food composition: nutritional data of Brazilian native fruits underused from Brazilian Flora

Introdução: O Brasil é um país de grande diversidade biológica, apresentando 15 a 20 por cento de todas as espécies do planeta. Visando mapear essa rica biodiversidade que é subutilizada, o Ministério do Meio Ambiente lançou ao longo de 2004 e 2005 a iniciativa \"Plantas para o Futuro\", cujo principal objetivo foi identificar as espécies nativas da flora brasileira de valor econômico atual e potencial. O projeto elencou 674 espécies nativas de diferentes regiões do Brasil com diferentes aplicações: alimentos, frutas, medicamentos, ornamentais e outros fins. As espécies frutíferas elencadas são, em sua maioria, subutilizadas e um dos motivos é a falta de dados nutricionais Objetivos: Este trabalho visou compilar dados de composição nutricional de espécies de frutas nativas elencadas pela iniciativa Plantas para o Futuro de modo a disponibilizar dados de macro e micronutrientes que possam ser inseridos em tabelas de composição de alimentos e, ao mesmo tempo, avaliar a qualidade dos dados nutricionais em publicações científicas que subsidiam a compilação dos dados de composição. Metodologias: Para a compilação dos dados foi utilizada a metodologia preconizada pela FAO/INFOODS (FOOD AND AGRICULTURE ORGANIZATION/The International Network of Food Data Systems), com o emprego da ferramenta Compilation tool. Realizou-se levantamento bibliográfico em periódicos nacionais e internacionais e em bases de dados de teses e dissertações. Os critérios considerados essenciais para a compilação foram: nome cientifico conhecido do alimento, metodologia indicada e unidade de expressão conhecida. Avaliou-se a qualidade dos dados publicados e utilizados neste trabalho por meio de indicadores como: número de amostras, plano de amostragem, tratamento dado à amostra, método analítico e controle de qualidade analítica. Resultados: Obtiveram-se dados nutricionais de 26 espécies frutíferas das cinco regiões geopolíticas do país. As espécies frutíferas que se destacam por teor elevado de fibra alimentar são: jatobá (45,7 g/100 g), murici (9,72 g/100 g), pequi (9,7 g/100 g) e tucumã-açu (6,2 g/ 100 g). Em relação ao cálcio destacam as espécies frutíferas: mamãozinho (89,5 mg/ 100 g), tucumã-açu (87,4 mg/ 100 g) e já o magnésio, o mamãozinho (87,6 mg/ 100 g) e maracujá-do-cerrado (69 mg/ 100 g) são as compiladas com maiores teores. A vitamina C destacam camu-camu com pele (1888,2 mg/100 g), mangaba (332 mg/100 g) e caju-do-cerrado (294 mg/ 100 g). A análise das publicações levantadas revelou lacunas nas informações metodológicas necessárias para avaliar a qualidade dos dados nutricionais. Conclusão: Dados de composição nutricional de espécies frutíferas subutilizadas, quando existentes, referem-se principalmente aos macronutrientes. Há necessidade de alertar os pesquisadores da necessidade de, ao publicarem seus artigos, inserirem as informações necessárias para o trabalho de compilação. As espécies frutíferas analisadas neste trabalho devem ser consideradas para a alimentação do brasileiro quando comparadas com as frutas contemporâneas mais adquiridas no Brasil. A disponibilização desses dados nutricionais nas tabelas de alimentos contribuirá para o uso e conservação das espécies frutíferas nativas, ajudando no bem-estar humano e melhoria da nutrição. / Background: Brazil is a country with a vast biological diversity, containing 15-20 per cent of all species on the planet. In order to map this rich biodiversity that is underutilized, the Ministry of Environment released, throughout the year of 2004 and 2005, the initiative \"Plants for the Future\" whose main goal was to identify the native species of Brazilian flora that have current economic value and potential. The project listed 674 native species from different regions of Brazil with different applications: food, fruits, medicine, ornamental, and other purposes. Methodology: For the compilation of the data it was used the methodology recommended by FAO/INFOODS (FOOD AND AGRICULTURE ORGANIZATION/The International Network of Food Data Systems) with the use of the Compilation tool. The bibliographical research was conducted in national and international journals and theses and dissertations databases. The criteria considered essential for the compilation were known scientific name of the food, indicated methodology and known expression unit. The quality of the published data used in this study was assessed using indicators such as number of samples, sampling plan, treatment of the sample, analytical method and analytical quality control. Results: Nutritional data were obtained for 26 fruit species in the five geopolitical regions. The fruit species that stand out for high content of dietary fiber are: jatoba (45.7 g / 100 g), murici (9.72 g / 100 g), pequi (9.7 g / 100 g) and tucuma-açu (6.2 g / 100 g). Regarding to quantity of calcium, these fruit species contain higher concentrations: mamãozinho (89.5 mg / 100 g), tucumã-açu (87.4 mg / 100 g) and these other are rich in magnesium: mamãozinho (87.6 mg / 100 g) and maracujá-do-cerrado (69 mg / 100 g). The concentration of Vitamin C is seen highly in the camu-camu with skin (1888.2 mg / 100 g), mangaba (332 mg / 100 g) and in the caju-do-cerrado (294 mg / 100 g). The analysis of the collected publications revealed gaps in methodological information necessary to evaluate the quality of nutritional data. Conclusion: Nutritional composition data for underutilized fruit species, if any, relate primarily to macronutrients. There is a need to alert researchers on the importance of, in publishing their articles, remembering to enter the required information to the build work. The fruit species analyzed in this work should be considered for the Brazilian diet compared to other contemporary and more consumed fruits in Brazil. The availability of these nutritional data on food tables will contribute to the use and conservation of native fruit species, improving human wellbeing and nutrition.

Os objetivos da pesquisa foram traçar o perfil nutricional dos infectados pelo HIV e hospitalizados num município de médio porte do interior do estado de São Paulo. Comparar o desempenho de diferentes métodos de avaliação do estado nutricional, com vistas a subsidiar a adoção de protocolo de avaliação nutricional adequado. Os métodos de avaliação nutricional empregados foram a Avaliação Nutricional Subjetiva Global (ANSG), o Índice de Massa Corporal (IMC), a classificação Papini-Berto (PB), a análise dos componentes primários da impedância bioelétrica e dados laboratoriais - linfócitos totais e albumina. Foram descritos e comparados os dados dos indivíduos estratificados em grupos segundo contagem de linfócito T CD4+ (>200cell/mm³, ≤200cell/mm³ e ausência deste exame) e em relação ao tipo de tratamento (uso da TARV, sem TARV prescrita e não adesão à TARV). Além das categorias originais de cada método, os indivíduos foram classificados também de forma dicotômica em subnutridos e não subnutridos, para a análise de concordância entre ANSG, PB e IMC. Foram calculados: sensibilidade, especificidade, valor preditivo positivo e negativo, adotando-se o IMC como "padrão ouro" em relação à ANSG e Papini-Berto e a ANSG como "padrão ouro" em relação à Papini-Berto. (Resumo completo, clicar acesso eletrônico abaixo) / Abstract: The clinical effects of malnutrition make the HIV infected patient more susceptible to opportunistic infections and reduce the effectiveness and tolerance to drugs, justifying the nutritional assessment of all individuals infected by HIV, particularly in hospital care. The purpose of this study was to analyze the nutritional profile of HIV infected individuals hospitalized in a medium-sized city in São Paulo state and compare the performance of different methods used to evaluate nutritional status, in order to support the adoption of an adequate protocol for nutritional evaluation. The nutritional evaluation methods used were the Subjective Global Nutritional Assessment (ANSG), the Body Mass Index (BMI), the Papini-Berto classification (PB), analysis of the primary components of bioelectric impedance and laboratory tests - albumin and total lymphocyte. The data of the individuals were described and compared in groups stratified according to count of T CD4+ lymphocyte (>200cell/mm³, ≤ 200cell/mm³ and absence of this test) and also to the type of treatment (using ART, without ART prescribed and without adherence to ART therapy). In addition to the original categories of each method, patients were also classified, in a dichotomic way, in malnourished and not malnourished, for the analysis of the correlation between ANSG, PB and BMI. Obtenção de produto farináceo a partir de beterrabas submetidas à secagem estacionária / Flour Product obtained from stationary beet drying

The search is proposed to develop a beet flour using simple technology and procedures available for the majority of small producers. It was compared different types of longitudinal and transverse cuts of beet (long 2mm; long 4.5mm; long 9mm, and, trans 2mm; trans 4.5mm; trans 9mm) as the time for air-drying, drying rate, time in the grounding process, income in flour product and its size. The conditions for the material drying, the cooked slices (2 mm) of beet, were similar, so it was recommended among the treatments the use of 100° C for 2 hours and 70° C to the end, for this condition finishes the process of air-drying in temperature more lenient. The treatments showed no significant difference in income for the full production of flours and brans, but the flours were significantly different as to size. Minors were drying times of the treatment of cuts 2 mm (7.3 h = longitudinal, 7.3 h = transverse) and sticks 4.5 mm (7.3 h = longitudinal, 7.7 h = transverse). The treatments in sticks 9mm remained, longitudinal = 9.7 h and transverse = 9.3 h, in the air-dryer. The beet flour showed percentage posted for nutrients, carbohydrate (50.32 to 5.39%), dietary fiber (23.30 to 26.90%), protein (11.32 to 13.40%) and total of minerals (4.70 to 6.82%). Already, the level of lipids, as expected, was less than 0.75%. Considering the ease of slices preparation, the dry time, the production of low size flour, and the flour income, the treatment that produced cooked slices of beet in sticks of 4.5 mm in thickness was recommended to the flour processing. / A produção de hortaliças desidratadas tem sofrido significativo aumento, devido ao maior tempo de conservação comparado a in natura, a praticidade de uso e a possibilidade de aproveitamento da produção excedente, reduzindo efeitos de sazonalidade. A pesquisa se propôs a desenvolver um produto farináceo de beterraba aplicando procedimentos tecnológicos simples e disponíveis para uma grande parte dos pequenos produtores. Foram comparados diferentes tipos de cortes longitudinais e transversais de beterraba (long 2mm; long 4,5mm; long 9mm; trans 2mm; trans 4,5mm; trans 9mm) quanto ao tempo de secagem, taxa de secagem, tempo no processo de trituração, rendimento em produto farináceo e sua granulometria. As condições de temperaturas testadas para a secagem das fatias de beterraba foram semelhantes, por isso foi recomendado o uso de 100° C por 2 horas seguido de 70º C, por esta condição terminar o processo de secagem em temperatura mais branda. Os tratamentos de fatias de beterraba não apresentaram diferença significativa para o rendimento na produção de farinhas e farelos, mas, as farinhas foram significativamente diferentes quanto à granulometria. Os menores tempos de secagem foram dos tratamentos de cortes laminares 2mm (long = 7,3 h; trans = 7,3 h) e em palitos 4,5mm (long = 7,3 h; trans = 7,7 h), sendo que os tratamentos em palitos 9mm permaneceram, long = 9,7 h e trans = 9,3 h, no secador. As farinhas de beterraba apresentaram valores porcentuais destacados para os nutrientes, carboidrato (50,32-55,39 %), fibra alimentar (23,30-26,90 %), proteína (11,32-13,40 %) e total de minerais (4,70- 6,82 %). Já, o teor de lipídeos, como esperado, foi mínimo, 0,75 %. Considerando a facilidade de preparo das fatias, o tempo de secagem, a produção de farinhas de baixa granulometria, bem como o rendimento apresentado, o tratamento que produziu fatias cozidas de beterraba em palito de 4,5mm de espessura foi o recomendado para o processo de obtenção de farinha de beterraba.

Therefore, the aim of this study was to evaluate the regrowth of millet in four residual height of cutting (RHC) associated with two light interception (LI) 80 and 90% and recommend how best RHC and LI in forage millet, from results of agronomic, morphological and qualitative conditions of Goiás. Variables the field experiment was conducted at the School of Agronomy and Food Engineering of UFG. The experimental period regarding fieldwork was conducted between December 2012 and April 2013. Four cutting heights with two light traps were evaluated. The experiment was performed with 4x2 factorial (cutting heights x light interception) in a randomized block design with eight treatments and four replicates totaling 32 experimental units. The cuts were made as the sward hunt 80 and 90% of radiation in their RHC's. Outcome variables related to agronomic evaluations were total dry matter production (TDMP) in kg ha-1; DM percentage of the whole plant and components (leaf blade, stem, panicle and senescent materials); heights of entry; count tillers and cutting intervals. The morphological variables were the proportion of morphological components, leaf/stem ratio (L/S), direct and indirect index of leaf area (DILA and IILA). From the material collected separately determined the following bromatological compositions of the whole plant and morphological components: dry matter (DM), mineral matter (MM), crude protein (CP), ether extract (EE), acid detergent fiber (ADF ), neutral detergent fiber (NDF), cellulose (CEL), hemicellulose (HEM), lignin (LIG), non-fiber carbohydrates (NFC) and total digestible nutrients (TDN). Was no difference in cumulative average production of millet regrowth between IL's 80 and 90%. The cumulative average production of LI regrowth of 80% was 2.44 T DM.ha-1 and LI 90% was 4.51 T DM.ha-1. The cutting interval with IL showed a 90% average difference exceeding 11 days compared to 80% LI. In relation to morphological composition, the overall average and the average standard error of the IL's with 80 and 90% for the variable ratio L/S were respectively 0.90 ± 0.04 and 0.61 ± 0.03. Regarding the chemical composition, the average percentage of the whole plant in MS IL's 80 and 90 was 14.13% and 17% respectively. The component of the plant that has the highest average percentage of DM is the panicle. Reached 32% of DM in the ACR of 10 cm with 90% LI. Difference (p <0.05) for the percentage of CP between the mean LI's 80 and 90%, with 19.11% and 16.28% respectively. The entry height and recommended as a practical parameter management for the use of regrowth for grazing residue are 80 and 30 cm respectively, based on the RHC x LI factors. / O milheto forrageiro é utilizado durante determinada época do ano caracterizando-se como cultura anual de entre safra de fácil implantação e bom valor nutricional, portanto há necessidade de estudar a resposta da rebrota da cultura baseado em parâmetros de manejo mais refinados que possam nortear a tomada de decisões práticas em relação a alturas de entrada e saída. Objetivouse avaliar a rebrota do milheto em quatro alturas de corte residual (ACR) associadas a duas interceptações luminosas (IL) 80 e 90% e recomendar qual a melhor ACR e a IL em milheto forrageiro, a partir dos resultados de variáveis agronômicas, morfológicas e bromatológicas nas condições de Goiás. O experimento de campo foi conduzido na Escola de Agronomia e Engenharia de Alimentos da UFG. O período experimental referente a parte de campo foi realizado entre dezembro de 2012 à abril de 2013. Foram avaliadas quatro alturas de corte com duas interceptações luminosas. O experimento foi realizado com fatorial 4x2 (alturas de corte x interceptação luminosa) em blocos casualizados com oito tratamentos e quatro repetições totalizando 32 unidades experimentais. Os cortes foram realizados à medida que o dossel forrageiro interceptou 80 e 90% de radiação nas respectivas ACR’s. As variáveis respostas relacionadas às avaliações agronômicas foram: produção total de matéria seca (PTMS) em kg.ha- 1; percentual de massa seca - MS da planta inteira e dos componentes (lâmina foliar, colmo, material senescente e panícula); alturas de entrada; contagem de perfilhos e intervalos de corte. As variáveis morfológicas estudadas foram: proporção dos componentes morfológicos, relação folha/colmo (F/C), índice de área foliar direto e indireto (IAFD e IAFI). A partir do material coletado foram determinados separadamente os seguintes composições bromatológicas da planta inteira e dos componentes morfológicos: matéria seca (MS), matéria mineral (MM), proteína bruta (PB), extrato etéreo (EE), fibra em detergente ácido (FDA), fibra em detergente neutro (FDN), celulose (CEL), hemicelulose (HEM), lignina (LIG), carboidratos não fibrosos (CNF) e nutrientes digestíveis totais (NDT). Houve diferença na produção média acumulada da rebrota do milheto entre as IL’s 80 e 90%. A produção média acumulada da rebrota com IL de 80% foi de 2,44 T de MS.ha-1 e com a IL de 90% foi de 4,51 T de MS.ha-1. O intervalo de corte com IL de 90% apresentou diferença média superior de 11 dias em relação a IL de 80%. Em relação a composição morfológica, a média geral e o erro padrão médio das IL’s com 80 e 90%, para a variável relação F/C foram respectivamente de 0,90 ±0,04 e 0,61 ±0,03. Quanto à composição bromatológica, o percentual médio de MS da planta inteira nas IL’s de 80 e 90% foi de 14,13 e 17% respectivamente. O componente da planta que possui maior percentual médio de MS é a panícula. Chegou a 32% de MS na ACR de 10 cm com IL de 90%. Houve diferença (p<0,05) para o percentual de PB entre as médias das IL’s 80 e 90%, com 19,11% e 16,28%, respectivamente. A altura de entrada e resíduo recomendada como parâmetro prático de manejo para a utilização da rebrota para pastejo são de 80 e 30 cm respectivamente, tomando como base os fatores ACR x IL.
