Le processus de production des œuvres dans l'art culinaire contemporain français / The production process of works in French contemporary culinary art

Le degré d’excellence atteint tant au niveau esthétique que technique par la cuisine savante dès la seconde moitié du 17ème siècle, doublé d’une capacité à créer et/ou à interpréter des œuvres originales, permet de faire passer la cuisine du rang d’activité domestique et artisanale au rang de pratique professionnelle artistique. La question de la construction des œuvres dans l’art culinaire contemporain français est abordée sous l’angle du processus de production. Les lectures analytique et experte de l’offre alimentaire figurant dans les cartes des restaurants tri-étoilés au guide Michelin et les entretiens biographiques, montrent que le processus de production des œuvres culinaires varie en fonction de la socialisation professionnelle, de l’histoire de vie, et des interactions nouées avec le monde de l’art culinaire dans une arène gastronomique. La manière dont les chefs agrègent ces éléments caractérise leur production artistique (interprète vs créateur – localisé vs non localisé). De plus, le type culinaire des chefs (conservateur/avant-gardiste) semble être en lien avec leur type de signatures esthétiques. L’apport théorique de ce travail pourrait contribuer à définir un espace social qu’on pourrait appeler « espace social gastronomique ». Cet espace social gastronomique permettrait de dégager les dimensions de la signature des chefs qui seraient utiles aux scientifiques pour étudier l’art culinaire, aux professionnels pour se positionner « culinairement » et « scénographiquement », aux commentateurs pour disposer de nouvelles catégories d’analyse, et aux formateurs pour initier le public en formation. En cela, cette thèse contribue à thématiser l’art culinaire au sein de la sociologie de l’alimentation. / The level of technical and aesthetic excellence reached by learned cuisine in the second half of the 17th century and the capacity to create novel works and or reinterpret some have propelled domestic and artisanal cooking into the world of artistic professional practice. We have chosen to address the problem of work construction in French contemporary culinary art from the production process viewpoint. The analytical and expert reading of the food offer as evidenced in menus of three-starred restaurants and in chefs’ interviews clearly underlines that the production process differs between chefs since it depends on the professional socialization but also on the chefs’ life history and on their interactions with the world of culinary art in the gastronomic arena. The way chefs aggregate all these elements is the hallmark of their artistic production (interpreter vs creator – national dimension vs terroir-focused). The culinary type to which they belong (conservative/avant-garde) seems to be closely linked to the type of aesthetic signature which differentiates them. The theoretical contribution of this research work may help define some social space that could be referred to as « gastronomic social space ». Such an approach could help outline the contours of the chefs’ signature that might prove quite valuable to the researchers who intend to study culinary art, to the professionals who try to position themselves with regard to « culinary and scenic design », to the reviewers who need an analytical framework and to the trainers who plan to educate the general public. In this respect, this research work can be considered as an asset to incorporate culinary art to the domain of food sociology.

Fabricação digital : sistematização metodológica para o desenvolvimento de artefatos com ênfase em sustentabilidade ambiental

Esta pesquisa aborda os temas de fabricação digital e de sustentabilidade ambiental para propor uma sistematização metodológica do projeto e da produção de artefatos com base: (i) na estruturação de modelos conceituais, através das ferramentas de representação de projeto da orientação a objetos e (ii) na análise e na síntese de modelos precedentes. O objetivo é contribuir para o desenvolvimento de produtos e sistemas comprometidos com o meio ambiente. O levantamento bibliográfico sobre os temas selecionados e o levantamento técnico da tecnologia subtrativa de fabricação digital são os métodos adotados para propor a sistematização metodológica. Sua aplicação é feita em uma série de experimentos e o resultado obtido demonstra vantagens significativas para atender o objetivo estabelecido. / This research addresses digital fabrication and environmental sustainability to propose a systematic methodology for design and production of artifacts based on: (i) structuring of conceptual models using tools of object-oriented design and (ii) analysis and synthesis of previous models. The objective is to contribute to the development of products and systems committed with the environment. Literature on selected topics and technical research of a digital fabrication technology are the methods adopted to propose this systematic methodology. Its application is made in a series of experiments. The results show significant advantages to meet the stated objective.

So it is a growing demand for increasingly sophisticated innovations that meet the capitalist market. Technological innovation is a factor that facilitates the development of production activities in the sector in which they are involved, from activities directed to the agricultural sector, even the most developed sectors, such as industry sector. Greater emphasis is given to the agricultural sector in this work, as from the 90 Brazilian agriculture has modernized ensuring higher productivity and lower production costs. The reality diverges when considered agricultural production in consortium with the family farm, and, in general, a manufacturing few technological resources. Thus, this research analyzes the technological innovation process in called Polo Agreste of Pernambuco Biodiesel Production, between the period 2004 and 2014. The work specifically investigates the technological innovation indicators of process and product, and to identify the types of innovation that characterize the production activity in the region and the support of institutions for the promotion of innovation. For this, it is used a methodology adapted from the Innovation Survey Manual (PINTEC), prepared by the Brazilian Institute of Geography and Statistics (IBGE) following the Oslo Manual guidelines adjusted to the reality of the country. The results show that the action of the research and teaching institutions spurred innovations in Polo biodiesel Wasteland, providing increased product innovation and contribution processes. This is an open innovation where institutions are interrelated facilitating the development of production activity. / A busca pela inovação se tornou uma condição para que as organizações se mantenham no mercado. Por isso, é crescente a demanda por inovações cada vez mais sofisticadas capazes de atender o mercado capitalista. A inovação tecnológica é um fator que facilita o desenvolvimento das atividades de produção no setor em que estão envolvidas, desde as atividades direcionadas ao setor agrícola, até os setores de maior desenvolvimento, como o setor da indústria. Ênfase maior é dada ao setor da agricultura neste trabalho, visto que a partir da década de 90 a agricultura brasileira tem se modernizado, garantindo maior produtividade e redução dos custos de produção. A realidade diverge quando considerada uma produção agrícola em consórcio com a agricultura familiar, sendo, no geral, uma fabricação de poucos recursos tecnológicos. Assim, esta pesquisa analisa o processo de inovação tecnológica no chamado Polo Agreste de Produção de Biodiesel de Pernambuco, entre o período de 2004 e 2014. O trabalho investiga especificamente os indicadores de inovação tecnológica de processo e de produto, além de verificar as tipologias de inovação que caracterizam a atividade de produção na região e o apoio das instituições para a promoção da inovação. Para isso, utiliza-se como metodologia uma adaptação do Manual da Pesquisa de Inovação (PINTEC), elaborado pelo Instituto Brasileiro de Geografia e Estatística (IBGE) que segue as diretrizes do Manual de Oslo ajustado para a realidade do país. Os resultados mostram que a ação das instituições de pesquisas e de ensino impulsionaram as inovações no Polo Agreste de biodiesel, proporcionando aumento na contribuição de inovação de produtos e de processos. Trata-se de uma inovação aberta onde as instituições se inter-relacionam facilitando o desenvolvimento da atividade de produção.

Através da nova interpretação e compreensão dos aspectos em relação moda identidade, design social, e da maneira como se encontra o comportamento da sociedade consumista, tende-se a elevar a demanda do indivíduo contemporâneo, preocupado com o futuro ambiental. O surgimento de novos cenários e atores indica uma maior visibilidade à postura de responsabilidade socioambiental na área de moda e possibilita a consolidação da sociedade contemporânea. Devido a estas premissas, esta pesquisa teve como objetivo propor procedimentos, utilizando como referência a metodologia projetual de Löbach para desenvolvimento de produtos sustentáveis têxteis a partir de sobras dos materiais das micro e pequenas confecções. A Metodologia utilizada foi a pesquisa bibliográfica, que constitui o procedimento básico para os estudos monográficos, e a pesquisa exploratória, pois não requer a formulação de hipóteses para serem testadas. Ela se restringe por definir objetivos, buscar mais informações sobre determinado assunto de estudo e identificar qual o melhor método a ser utilizado. No caso deste projeto, a ideia foi adaptar a sintetização de Löbach no processo de design, relacionando-o com o processo de resolução de problemas e o processo criativo, em quatro iniciativas essenciais: definir claramente o problema (preparação); reunir informações sobre o problema, analisá-las e relacioná-las criativamente entre si (geração); criar alternativas de soluções para o problema, julgando-as segundo critérios estabelecidos (avaliação) e desenvolver a alternativa mais adequada, concretizando a (realização). Após a elaboração do projeto, comprovou-se que a metodologia utilizada se mostrou viável para o desenvolvimento de produtos sustentáveis, voltados para a sociedade e consumo / Through the new interpretation and understanding of the aspects about fashion-identity, social design, and how the behavior of the consumer society, tend to increase the demand of the contemporary individual, worried about the future. The emergence of new models and actors indicates a greater visibility to the posture of social and environmental responsibility in the area of fashion and enables consolidation of a contemporary society. Due to these premises, this research aimed to propose procedures, using as a reference the design methodology of Löbach for development of sustainable textile products from leftovers from materials of micro and small manufacturing. The methodology used was bibliographical research to which constitutes the basic procedure for the monographic studies and exploratory research because it does not require the formulation of hypotheses to be tested. She is restricted by set goals, get more information about a particular subject to study and identify the best method to be used, in the case of this project, the idea was to adapt the Löbach synthesis in the design process, linking it with the problem-solving process and the creative process, on four key initiatives to clearly define the problem (preparation); gather information about the problem, analyze them and relate them creatively with each other (generation); create alternative solutions to the problem, judging the second criteria (evaluation) and develop the most suitable alternative, establishing the (realization). After the elaboration of the project proved that the methodology used proved to be viable for the development of sustainable products, geared to society and consumption

The thesis provides a comprehensive overview of the FMEA method with its elements aimed at process improvements, identifications of production risks, their causes, levels of severity, occurrence and detection. It is divided into a theoretical and practical part. The thesis is based on foreign literature and findings from research internship carried out in Lindab s. r. o. during studies at University of Economics, Prague.
