Esta pesquisa de mestrado teve por objetivo o estudo das obras em acervo no Museu de Arte Contemporânea da Universidade de São Paulo de autoria dos artistas do Gruppo degli Otto, adquiridas por Francisco Matarazzo Sobrinho, em 1952 e 1954, na XXVI e na XXVII Bienal de Veneza, para o acervo do antigo Museu de Arte Moderna de São Paulo. As obras permitem, um estudo sobre os artistas e a formação do Gruppo degli Otto, além de uma imersão na produção de Lionello Venturi (Modena, 1885 Roma, 1961), crítico e historiador da arte que se coloca a frente desses artistas. Levaram também a uma pesquisa a respeito do cenário artístico daquele momento, tanto da Itália, de onde as obras partem, quanto do Brasil, para onde as obras se destinam, e à construção de uma história a respeito da crítica de arte italiana no ambiente da Bienal de Veneza na Guerra Fria, além do estudo do papel da instituição veneziana na fundação da Bienal de São Paulo e os impactos e ramificações deste debate crítico no Brasil. / This master\'s research intended to study the works in the collection not Museum of Contemporary Art, University of São Paulo by the artists of the Gruppo degli Otto, that were acquired by Francisco Matarazzo Sobrinho, in 1952 and 1954, at the XXVI and XXVII Venice Biennale, to integrate the collection of the former Museum of Modern Art of São Paulo. Those paintings led to a study on the artists that composed the Gruppo degli Otto and its foundation. They also allowed an immersion in the production of Lionello Venturi (Modena, 1885 - Rome, 1961), critic and art historian, who took to himself the role of the critic ahead of the group. The works also lead to a research on the artistic scene of that moment, both in Italy, where the paintings are made, as well as in Brazil, the place to where those paintings would be destined to live, as well as the study of the history of Italian art criticism in the environment the Venice Biennale in the Cold War, and lastly the study of the role of the Venetian institution in the founding of the São Paulo Bienal and the impacts and changes of this critical debate in Brazil.

Les poètes jardiniers. L’Arcadie dans l’imaginaire des jardins du XVIIIe siècle / The Gardener Poets. Arcadia in the notional imagery of the eighteenth-century garden

Le thème de l’Arcadie figure dans un grand nombre du jardins au XVIIIe siècle. Le tableau de Poussin Les Bergers d’Arcadie et la formule Et in Arcadia Ego sont indissociables, de nos jours, à la vision du locus Arcadie. Cependant, il n’y a aucune preuve que notre réception actuelle du tableau corresponde aux intentions de Poussin, ni à la vision du locus au XVIIIe siècle. Une appréciation de la réception du thème de l’Et in Arcadia Ego et de ses variantes au XVIIIe siècle s’avère utile, afin de comprendre la reprise de ce thème par les jardiniers de l’époque. Nous proposons d’examiner en détail l’évolution dans le temps de ce thème, dans la peinture, dans la poésie et dans les jardins. Nous mènerons un recensement des membres étrangers de l’Accademia degli Arcadi de Rome et de leurs jardins. Cette académie, à ses origines, était une association de poètes qui se réunissaient dans les jardins ou en plein air à la campagne afin décomposer et de réciter leurs œuvres, souvent liées aux thèmes de la nature. Nous sommes partis de l’hypothèse que cette académie serait l’un des vecteurs possibles de la diffusion du thème arcadien en Europe aux XVIIIe siècle. Les jardins que nous examinerons, tous au thème de l’Et in Arcadia Ego,appartiennent ou furent conçus, en dehors de l’Italie, par un Pastor ou Pastorella d’Arcadia (un membre de l’Accademia degli Arcadi). / The arcadian theme is prevalent in a large number of eighteenth-century gardens. Poussin’s painting TheArcadian Shepherds and the enigmatic ‘Et in Arcadia Ego’ are now indissociable from our vision of thelocus Arcadia. Nevertheless, there is no proof that our actual reception of the image corresponds to Poussin’s intentions, or to the vision of this locus in the eighteenth-century. An appreciation of thereception of the theme of Et in Arcadia Ego and it’s eighteenth-century variants is useful, in order tounderstand the adoption of the theme by the gardeners of the period. We propose to examine in detail it’sevolution over time, in painting, poetry and landscape. We will conduct an identification and census of theforeign (non-Italian) members of the Accademia degli Arcadia of Rome and their gardens. This academy, atit’s origin, was an association of poets who met in gardens and in the surrounding countryside in order tocompose and recite their work, which dealt frequently with themes from nature. We are working under thehypothesis that this academy was a possible vector for the propagation of the arcadian theme in theeighteenth century garden. The gardens which we examine in detail each deal specifically with the theme ofEt in Arcadia Ego and apart from two exceptions are either created by, or in collaboration with, a foreignArcadian Pastor or Pastorella.(designation of a member of the Accademia degli Arcadi).

Il presente lavoro di ricerca si propone di indagare il tema degli intangibili, ed in particolare del capitale intellettuale, nell'industria bancaria. Decisamente poco numerosi sono i contributi sul tema che analizzano questo settore. Ciò non appare dovuto tanto alla mancanza di interesse, quanto probabilmente alle specificità che caratterizzano le attività delle banche e che le rendono meno adatte allo sviluppo di confronti con altri settori. In particolare, l'obiettivo dell'analisi è di inquadrare la comunicazione del fenomeno "intangibles" che si caratterizza per l'elevata componente di volontarietà, osservandone il livello di ampiezza e profondità all'interno del campione, anche in considerazione delle esigenze informative richieste dai diversi stakeholder aziendali. Ai fini dell'analisi vengono presi in considerazione i bilanci di esercizio, i bilanci consolidati, i bilanci sociali/ambientali pubblicati relativi al periodo 2003-2005. Il campione considerato fa riferimento a 21 gruppi bancari quotati sul listino italiano.

Interstitial Landscape as Interstitial Tissue: Parco degli Acquedotti al'Mandrione

This thesis emerged from a series of journeys / ‘percorsi’, conducted between 2007 and 2009 along the course of the aqueducts and railway lines in the south-east of Rome. During this time, my focus shifted from figure to background, from the archaeological fragments to the territorial and urban contexts encountered along their passage. This zone offers a unique cross sectional experience of the city, spanning for approximately seven kilometers - from the Aqueduct Park (Parco degli Acquedotti) at the outer edges of the city to the Aurelian Walls at Porta Maggiore – exposing a variety of conditions ranging from the openness of Roman Campagna to the dense agglomeration of Rome’s urban periphery. This is a place of contrasts, of industrial and archaeological, in a state of abandonment and in a constant state of flux. It is as difficult to grasp conceptually as it is to traverse physically, lacking territorial continuity, legibility and ease of access. It is physically fragmented and separated from the rest of the city by infrastructural arteries and property boundaries. This thesis proposes reversing the marginal aspect of this area by re-establishing its relationship with its urban context. It suggests a reading of this landscape as ‘interstitial tissue’ a connective element rather than an inert zone of separation. Using the biological connotation of the interstitial (“the fine connective tissue lying between the cells of other tissue”) - the thesis focuses on the relational potential of this in-between zone, its ability to connect rather than separate places and neighbourhoods along it. It proposes identifying spatial continuities as well as establishing temporal connections between the past, present, and future of this area. The thesis further proposes a design intervention along a site situated between the aqueducts and via del Mandrione, a historical road running in parallel to the railway lines. Although this site is currently enclosed and separated from its context by property boundaries, the thesis proposes reconfiguring this site as a threshold, a point of intensity between the city and its margins.

Innovative Nutritional Aspects of locally produced Italian cheeses

Il formaggio sta dimostrando possedere, oltre alle caratteristiche nutrizionali classiche, degli aspetti nutrizionali innovati derivanti dalle proprietà di peptidi bioattivi contenuti nella frazione proteica caseinica del formaggio e rilasciati in seguito a proteolisi, ed ancora dalle proprietà di acidi grassi insaturi, quale l’acido linoleico coniugato. L’obiettivo di tale studio di dottorato è stato indagare su questi aspetti nutrizionali innovativi in formaggi tipici italiani quali Grana Padano e TrentinGrana, che pur essendo due formaggi molto simili tra loro, differiscono per l’uso della molecola antibatterica lisozima solo per la produzione del Grana Padano. Simulazioni in vitro della digestione gastrointestinale, nei campioni dei due formaggi a diversi tempi di stagionatura, ha dimostrato che esiste una relazione positiva tra tempo di stagionatura e digeribilità del calcio nel Grana Padano ,quando vengono considerati nella correlazione i risultati dei campioni con stagionatura superiore ai 24 mesi. A tempi di stagionatura inferiori a 24 mesi, i risultati di digeribilità del calcio del Grana Padano sono dispersi come appare nei campioni di TrentinGrana analizzati. Inoltre l’analisi RP-HPLC della distribuzione molecolare degli oligopeptidi dei campioni dei due formaggi, dimostra che la frazione peptidica coinvolta nel legame del calcio e quindi nel suo assorbimento, è quella compresa tra 1000 e 1500 D, e che l’analisi Seldi ha rilevato essere quella dei peptidi attivi fosfocaseinici. Inoltre differenze tra i due formaggi con e senza lisozima, appaiono solo per campioni tra 15 e 20 mesi di stagionatura, in cui campioni di formaggio senza lisozima appaiono più idrolizzati di quelli che lo contengono. Quindi dai risultati ottenuti appare che le differenze del profilo peptidico apportate dal lisozima non modificano le proprietà dei fosfopeptidi di assorbimento del calcio, forse influenzate da altri fattori che intervengono nella produzione del formaggio. L’attività ACE-inibitoria di abbassamento della pressione arteriosa esercitata da peptidi bioattivi è stata testata nei due formaggi, dimostrando che né il tempo di stagionatura e il grado di proteolisi, né il lisozima sono correlati all’attività ACE-inibitoria. Ed infine per l’importante ruolo che ha il minerale calcio nella dieta, indici di digeribilità del minerale in diversi alimenti sono stati considerati, in modo da poter formulare in maniera corretta diete alimentari coprendo il fabbisogno giornaliero con l’adeguato apporto energetico. I formaggi hanno dimostrato possedere indici di digeribilità del calcio superiori ad altri alimenti vegetali o a base di soia. In particolare il valore di digeribilità del Calcio del Grana Padano calcolato in vitro ha confermato il valore ottenuto in vivo , pari a 80%. / This study aimed to investigate about the not common known nutritional aspects of cheeses, which derive from their chemical components. In fact, in addition to the supply of macronutrient, cheeses are gaining interest as a source of bioactive peptides, of conjugated linoleic acid or for the new insight in the metabolic role of calcium. In vitro simulation of human gastrointestinal digestion revealed that cheeses have an higher digestibility of calcium than other foods, because of their casein-derived bioactive phosphopetides (CPPs) content has the ability to carry calcium minerals and avoid calcium precipitation, making it available for intestinal absorption. The in vitro calcium digestibility was calculated for different foods- cheeses, soya based foods and vegetables- to correct cover calcium requirements with an equilibrate energy intake. Calcium digestibility was also assessed in different ripened time Italian locally produced, semi fat, hard cheeses, Grana Padano and TrentinGrana. The main difference between them is the use or not of lysozyme during manufacturing. In Grana Padano samples, produced using lysozyme, there is a positive relationship between aging and dCa (r2 = 0.27; P<0.05) when sample > 24 months aged are considered (Grana Padano dCa results of samples less 24 months aged are quite widespread) , while in TrentinGrana, produced without the use of lysozyme, no significant correlation has been detected. RP-HPLC distribution analysis of oligopeptides molecular weight of these cheese showed that the only difference between them is that cheeses without lyzozyme, aged between 15 and 20 months, are more hydrolyzed than the same ripened time Grana Padano samples. Moreover the fraction of oligopeptides involved in calcium binding ranges between 1000 and 1500 D. SELDI analysis confirmed CPPs presence in this range. Therefore changes in cheese peptidic profiles probably caused by the use of lysozyme do not influence calcium digestibility because according to this study there is not a connection between change in peptidic profile and calcium digestibility results. The difference in calcium digestibility in Grana Padano samples aged over 24 month results should be probably ascribed also to the influence of other factors occurring during cheese manufacturing. Moreover, ACE-inhibitory activity of bioactive peptides was tested on in vitro digested Grana Padano and TrentinGrana samples with different ripening times. Correlation was not found between ACE-inhibitory activity and proteolysis level in different ripened time samples nor the lysozyme influence in releasing ACE-inhibitory bioactive peptides.
