No Little Havana: recreating Cubanness in Sydney Australia

Research Doctorate - Doctor of Philosophy (PhD) / This thesis explores the ways in which Cuban identity is expressed, understood, maintained and recreated by Cuban migrants in Sydney and the wider Australian society. Initially, the analysis focuses on some of the most visible ethnic markers used by people outside the Cuban community to recreate Cubanness: politics, through the promotion of Cuba as a ‘socialist paradise’ by leftist Australian organizations and solidarity groups with Cuba; and music and dance, taking as an example the salsa boom in Sydney, and the advertising of Cuba as an exotic tourist destination in Australia. Throughout the work an argument is developed that the very different demographic configuration of Cubans in Australia has fostered a singular praxis of maintaining their identity. In doing so the study examines why politics does not play a primary role in the recreation of Cubanness in Australia, in contrast to numerically larger and higher profile Cuban settlements. Rather, Cubanness in Sydney has centred more in preserving eating habits, memories of Cuba as a place, listening and dancing to Cuban music, and other practices kept in the domestic space. This is achieved through the Cuban migrants’ strategic borrowings from other migrant communities, from food products to people and institutions, such as the Catholic Church being used to maintain the traditional worship of the Virgin of Charity. Finally, the study explores how migrants and outsiders understand the identity of Cubanness in Sydney, and considers the contribution of some major theories of ethnicity and identity to understanding this phenomenon.

Apiáceas e alternarioses: tratamento de sementes, qualidade fisiológica e sanitária no armazenamento / Apiáceas and alternarioses: seeds treatment, physiological and health quality in storage

Conselho Nacional de Desenvolvimento Científico e Tecnológico / Carrots, cilantro and parsley are vegetable, Apiaceae family, important in agriculture and Brazilian culinary. In recent years, the increasing production of these species led to the emergence of pest problems, especially diseases caused by fungi. In order to minimize the harmful effect of these fungi, the present study was to evaluate the effect of chemical and biological treatment, with or without polymer, in carrot coriander and parsley seeds, contaminated with A. alternata and A. radicina during storage. Were used seeds of carrot, coriander and parsley from producers in Rio Grande do Sul, without any chemical treatment, produced in 2009/2010. After receipt, the seeds were submitted to the initial assessment of water content, germination and health. According with the results of sanity test, in which was detected the presence of Alternaria alternata and A. radicina associated with seeds, were selected seeds of each species, according to the highest percentage of pathogens incidence. After, the seeds were submitted to treatment, according to manufacturers' recommendations, with fungicide Captan® (in dose of 0,002 g.kg-1) or with the biological product based on of Trichoderma spp., Agrotrich plus® (in dose of 25g.ha-1), both added or not polymer Collorseed - Rigran® (in dose of 50 mL. kg-1). Thus, the treatments were: control, seeds + Captan®, seed + Captan® + polymer, seeds + Agrotrich plus®, seeds + Agrotrich plus® + polymer. Quality assessments were performed every three months, the course of a year of storage. Physiological quality was evaluated by germination test, first count germination, cold test, seedling length, emergence and emergence rate index and the health quality through the Blotter test. The seeds treatment of carrot, coriander and parsley, contaminated with A. alternata and A. radicina with the fungicide Captan® + polymer favored the physiological and sanitary quality during storage. The Agrotrich plus®, polymer or not, did not show effectiveness in the treatment of the seed during storage. Additionally, the incidence of A. alternata and A. radicina reduced over twelve months of storage, regardless of the treatment applied to the apiaceas seed. / Cenoura, coentro e salsa são hortaliças, da família Apiaceae, importantes na agricultura e na culinária brasileira. Nos últimos anos, a crescente produção de sementes dessas espécies ocasionou o surgimento de problemas fitossanitários, principalmente doenças causadas por fungos. No intuito de minimizar o efeito nocivo desses fungos, a presente pesquisa teve como objetivo avaliar o efeito do tratamento químico e biológico, associados ou não a polímero, em sementes de cenoura, coentro e salsa, contaminadas com A. alternata e A. radicina durante o armazenamento. Foram utilizadas sementes de cenoura, coentro e salsa provenientes de empresas produtoras do Rio Grande do Sul, sem qualquer tipo de tratamento químico, produzidas na safra 2009/2010. Após o recebimento, as sementes foram submetidas à avaliação inicial do teor de água, germinação e sanidade. De acordo com os resultados do teste de sanidade, no qual foi detectada a presença de Alternaria alternata e A. radicina associados às sementes, foram selecionadas sementes de cada espécie, de acordo com a maior incidência dos patógenos. A partir disso, as sementes foram submetidas ao tratamento, de acordo com recomendações dos fabricantes, com fungicida Captan® (na dose de 0,002 g.kg-1) ou com o produto biológico à base de Trichoderma spp., Agrotrich plus® (na dose de 25 g.ha-1), ambos acrescidos ou não de polímero Collorseed - Rigran® (na dose 50 mL. kg-1). Assim, os tratamentos consistiram em: testemunha, semente + fungicida Captan®, semente + fungicida Captan® + polímero, semente + Agrotrich plus®, semente + Agrotrich plus® + polímero. Avaliações de qualidade foram realizadas a cada três meses, ao decorrer de um ano de armazenamento. A qualidade fisiológica foi avaliada através dos testes de germinação, primeira contagem de germinação, teste de frio, comprimento de plântula, emergência e índice de velocidade de emergência e, a qualidade sanitária através do método do papel filtro. O tratamento de sementes de cenoura, coentro e salsa, contaminadas com A. alternata e com A. radicina, com o fungicida Captan® + polímero, favoreceu a qualidade fisiológica e sanitária durante o armazenamento. O Agrotrich plus®, acrescido ou não de polímero, não mostrou eficiência no tratamento dessas sementes durante o armazenamento. Além disso, a incidência de A. alternata e de A. radicina reduziu ao longo de doze meses de armazenamento, independentemente do tratamento aplicado nas sementes de apiáceas.

Foram avaliados nove clones BGH (4560, 5741, 5744, 5746, 5747, 6414, 6513, 6525 e 7609) e a cultivar Amarela de Senador Amaral, os quais foram cultivados na Fazenda Experimental São Manuel- SP, safra de 2009. O delineamento experimental utilizado no plantio foi de blocos casualizados com três repetições. Foram avaliados o crescimento vegetativo durante o cultivo, produção total, comercial, por classe e calibre das raízes e as características físico-químicas das raízes: umidade, amido, cinzas, proteína bruta, matéria-graxa, açúcares, fibra bruta, pH, acidez e cor e caracterização do amido quanto ao teor de amilose, propriedades térmicas e de pasta. Os materiais que destacaram foram BGH 6414, maior crescimento vegetativo; ‘Amarela de Senador Amaral’ e BGH 5741, menores quantidades de raízes por planta; e BGH 6414, menor produção total, comercial, nas classes e calibres. Na caracterização da coloração das raízes, BGH 6513 e BGH 4560 apresentaram menores valores de luminosidade, BGH 6414 e BGH 5744 maiores valores para croma a* e BGH 5746, BGH 6513 e BGH 5744 os menores valores para o croma b*. A cultivar Amarela de Senador Amaral apresentou pH mais alto e a maior quantidade de acidez foi observada no clone BGH 6525. Os clones que apresentaram maiores teores de umidade foram BGH 7609 e BGH 6414. Os clones BGH 5744, BGH 7609, BGH 6414 e BGH 5741 apresentaram menores teores de cinzas e na avaliação de matéria graxa BGH 6525, BGH 5741 e BGH 5744 apresentaram os maiores teores. O clone BGH 7609 apresentou maior teor de fibras, açúcares totais, menor teor de amido, maiores temperaturas de gelatinização e menor temperatura de pico nos amidos retrogradados, além de apresentar a maior porcentagem de amidos retrogradados... / The objective was to evaluate the growth, yield and physico-chemical composition of starches from roots and peruvian carrot and its capabilities. We evaluated nine clones BGH (4560, 5741, 5744, 5746, 5747, 6414, 6513, 6525 and 7609) and cultivar Amarela de Senador Amaral, which were cultivated at the Experimental Farm São Manuel-SP, the 2009 harvest. The experiment was planted in a randomized block design with three replications. We evaluated the vegetative growth during cultivation, total production, trade, by class and size of roots and the physicochemical characteristics of the roots for moisture, starch, ash, protein, raw grease, sugar, crude fiber, pH, acidity and color and characterization of starch and amylose content, thermal properties and paste. The materials that were highlighted BGH 6414, increased vegetative growth, 'Amarela de Senador Amaral' and BGH 5741, lower amounts of roots per plant, and BGH 6414, lower overall production, commercial classes and sizes. In characterizing the coloration of the roots, BGH 6513 and BGH 4560 had lower levels of brightness, BGH 6414 and BGH 5744 higher values for chroma and a* BGH 5746, BGH 6513 and BGH 5744 the lowest values in the chrome b*. The cultivar Amarela de Senador Amaral presented higher pH and higher amount of acidity was observed in clones BGH 6525. The clones that showed higher levels of humidity were BGH 7609 and BGH 6414. Clones BGH 5744, BGH 7609, BGH 6414 and BGH 5741 had lower levels of ash and fatty matter in the evaluation of BGH 6525, BGH 5741 and BGH 5744 showed the highest levels. BGH Clone 7609 showed a higher fiber content, total sugar, less starch, higher temperatures and lower gelatinization peak temperature in starch downgraded, besides presenting the highest percentage of retrograded starch. El presente proyecto de negocios de salsa de cocona con ají charapita de nombre “Pishipira” muestra su viabilidad de ejecución, en sustento al estudio realizado en Lima Metropolitana a los sectores de nivel socioeconómico “A”, “B” y “C”, de acuerdo a la evidencia de que no hay una presencia consistente en el mercado actual de salsas a base de productos originarios de la selva. Las personas que desean probar nuevos sabores para complementar sus snacks y/o comidas no encuentran mayor diversidad de salsas. Así mismo, existe una falta de abastecimiento en mercados, restaurantes, puntos de venta o proveedores directos que ofrecen este tipo de productos de consumo masivo. Por ende, la carencia presencial de salsas amazónicas en el mercado limeño produce una notable insatisfacción en los consumidores. Para la realización de este proyecto se desarrollaron entrevistas y encuestas al segmento objetivo a un aproximado de 20 personas pertenecientes al rango etario de 25 a 55 años de edad, cuyo 60% estuvo conformado por varones y el 40% por mujeres. Además, se analizó a profundidad la industria alimentaria para considerar los recursos necesarios para poner en marcha el proyecto. Finalmente, con dicho proceso se logró conocer que la inversión inicial del negocio es de 34,043.63 soles y la utilidad neta a generar en el primera año es de -23,234.46 soles, -178,494.58 soles en el segundo año y para el tercer año ascendería a 303,913.43 soles. / The present project of business of cocona sauce with aji charapita by the name of "Pishipira" shows its feasibility of execution, in support of the study carried out in Metropolitan Lima to the sectors of socioeconomic level “A”, “B” and “C”, according to the evidence that there is no consistent presence in the current market of sauces based on products originating from the jungle. People who want to try new flavors to complement their snacks and/or meals do not find greater diversity of sauces. There is also a lack of supply in markets, restaurants, points of sale or direct suppliers that offer this type of mass consumption products. Therefore, the lack of Amazonian sauces in the Lima market produces a notable dissatisfaction among consumers. In order to carry out this project, interviews and surveys were carried out on the target segment of approximately 20 persons in the age group 25-55 years, of whom 60 per cent were men and 40 per cent were women. In addition, the food industry was analysed in depth to consider the resources needed to implement the project. Finally, with this process it was possible to know that the initial investment of the business is of 34,043.63 soles and the net profit has to generate in the first year is of -23,234.46 soles, -178,494.58 soles in the second year and for the third year would ascend to 303,913.43 soles. / Trabajo de investigación

En este proyecto se manifiesta una idea de negocio planteada por un grupo de estudiantes de la UPC. Los conocimientos aprendidos a lo largo de la carrera de cada uno han sido expuestos en el siguiente Trabajo. En primer lugar, hemos identificado el problema donde el usuario se ve en la necesidad de quedarse en casa tras el temor a la inseguridad ciudadana, en donde los altos índices de delincuencia han hecho que las personas opten por permanecer en casa o un lugar privado para pasar un buen momento. Por esta razón, creamos un producto para que las personas disfruten de un momento ameno sin exponerse. Siendo nuestro público objetivo personas de 18 a 60 años de edad de los NSE A - B de las zonas 7 y 8 de la ciudad limeña. Por esta razón, fundamos Tantay, una salsa de ají con finas hierbas 100% natural, elaborada con ingredientes de calidad de procedencia peruana y bajo un proceso artesanal, siendo una opción de acompañamiento para snacks u otros alimentos. Una combinación de sabores y texturas es lo que representa nuestra salsa, gracias a la amplia variedad de insumos nacionales que proporcionarán frescura y naturalidad al producto. Para lograr todo lo mencionado, hemos desarrollado un análisis donde se desarrollará planes estratégicos que abarquen Plan de Marketing, Plan operacional, Plan de Recursos Humanos, Plan de Responsabilidad Social y el Plan Financiero para poder evaluar la empresa y desarrollar el proyecto con éxito.

Lärares möjligheter att uppfylla det kompensatoriska uppdraget i skolan / Teachers' opportunities to fulfill the compensatory mission in school

Syftet med detta arbete har varit att undersöka vilka möjligheter och utmaningar som samhällskunskapslärare upplever i arbetet med det kompensatoriska uppdraget. Vi har tagit del av mycket forskning kring elevers olika förutsättningar i skolan, men en avsaknad av vad lärarna kan göra för att kompensera för detta. Därför valde vi just denna inriktning och intervjuade lärare på två skolor i olika sociala områden med ett utbildningssociologiskt perspektiv. Vi använde oss av semistrukturerade intervjuer som i sin tur bidragit med kunskaper kring de olika skillnaderna i arbetet med det kompensatoriska uppdraget på respektive skola. Resultatet visade på tydliga skillnader mellan de två skolorna som är belägna i olika socioekonomiska områden. Utmaningar som tidigare forskning har konstaterat, exempelvis elevers socioekonomiska bakgrund och dess betydelse för skolprestationer samt segregationens betydelse för homogena klasser, blev väldigt synliga. Skolan som låg i ett socialt utsatt område hade en överbelastning av elever som var i behov av kompensatoriskt stöd medan den andra skolan hade andra former av utmaningar som lärarna fick ta itu med. I vilket socialt område som skolan var belägen och vilken elevgruppens socioekonomiska bakgrund hade alltså betydelse för lärarens arbete med uppdraget. Trots detta visade undersökningen även att det finns många möjligheter att uppfylla det kompensatoriska uppdraget, exempelvis genom olika verktyg lärare kan använda sig av.
