The aim of this thesis was to document the various stages of restoration Návežný Pond ? ?Návesný? in the cadastral Branišov. The revitalization was used Operating Environment Programme, Priority Axis 6.4. - Optimization of the landscape. The hydrological parameters were monitored pond dredging, restoration of security overflow and bypass sewer. The revitalization was to increase the retention capacity of the pond using pond sediment extraction and subsequently by increased flood protection. Another important part of the revitalization is to restore the old defunct sewer bypass construction and safety overflow for the flood. Dredging is important to perform due to animal hygiene pond environment, biodiversity ecosystem pond, retention pond production capability and protection against floods. Due to the long-term return on investment is appropriate to use financial aid as grants. For the evaluation of most subsidies have been compared three grant degrees.

Foi realizada a mensuração do pH, temperatura, cor e valor R nos tempos de zero, 4 e 24 horas post-mortem. As amostras foram encaminhadas ao laboratório da FMVZ/UNESP, campus de Botucatu e após 24 horas post-mortem procedeu-se as demais análises de qualidade de carne em que foram avaliadas as características de perda por exsudação, capacidade de retenção (CRA) e absorção de água, perdas de peso por cozimento (PPC) e força de cisalhamento. Para o Ensaio 2, foram coletados 40 filés pálidos e normais de abatedouro comercial, e após 24 horas post-mortem procedeu-se a avaliação das características sensoriais. Para os filés de peitos de frangos de coloração pálida, a glicólise teve inicio com o valor de pH 6,86 e atingiu pH final 5,73 às 24 horas post-mortem enquanto que os filés de peitos de coloração normal apresentaram pH inicial de 6,80 e pH 24 horas post-mortem de 5,85. Houve diferença significativa (p 0,05) entre os filés pálidos e normal para os parâmetros de pH, valor L*, teor de vermelho, CRA, PPC e desnaturação protéica.

For assay 1, it was collected 52 pale and normal fillets from a slaughtering line, based on fillet colouration. It was measured pH, temperature, colour and R value on different times post mortem (0, four, 24 hours). Samples were send to the laboratory of FMVZ/UNESP, Botucatu campus, and after 24 hours post mortem it was evaluated the remaining meat quality parameters (drip loss, retention and absorption water capacity, denaturation protein, cocking loss and texture. For assay 2, it was collected 40 each pale and normal fillets from a commercial slaughtering and after 24 hours post mortem it was realized the evaluation of sensorial characteristics. For breast fillets of broilers with pale colouration, glycolysis had started with 6,86 pH value and reached to final pH of 5,73 at 24 hours post mortem while normal colouration ones presented initial pH of 6,80 and final pH, after 24 hours post mortem of 5,85. It was observed difference (p 0,05) between pale and normal fillets for pH, L * value, redness, CRA, PPC and protein denaturation. / Resumo: Foram realizados dois ensaios, sendo que o Ensaio 1 teve por objetivo avaliar as características de qualidade da carne de frangos de corte de coloração pálida e comparar com a de coloração normal e, o Ensaio 2, avaliar as diferenças sensoriais destes tipos de carnes. Para o Ensaio 1, foram coletados 52 filés pálidos e normais selecionados na linha de abate baseado pela sua coloração. Tesis por compendio / [EN] Sustainability is nowadays an investment for the future of any economic activity. The current situation of crisis has had an adverse impact in most industries, including the agri-food sector. However, this industry has been relatively the least affected when compared with other industrial sectors. This is mainly attributed to the fact that food products continue to be basic for consumers despite the economic downturn. Therefore, the agri-food sector is a key element in the European economy and can play a crucial role in the achievement of the objectives set in the EU's strategy for 2020: ensuring a sustainable framework of growth of a more competitive economy. The European agri-food industry has focused on energy efficiency and on reducing greenhouse gases emissions, along with better management of their resources as a way to improve its industrial competitiveness. In this sense, the search for solutions to transform the by-products generated in high value-added ingredients, is a priority. In this context, the juice industry, as fundamental sub-sector within the food sector, and large waste generator, must exploit the opportunity to transform their by-products into useful and profitable products for society. This transformation presents some difficulties which impede the profitability of the process. These difficulties are associated with the by-product, such as its compositional variability and its seasonality, and current techniques of transformation as the high energy cost in dehydration processes. This thesis represents an innovative and sustainable solution for overcoming the disadvantages associated with the high costs of stabilization, turning this by-products into high value-added ingredients, from both, nutritional and technological, points of view. The aim is to develop a microwave coupled with hot air drying technique allowing maximizing profits by using the following strategy: reducing time and operational costs, producing a new ingredient rich in dietary fiber, with interesting technological properties for the development of healthy foods, studying the proposed comprehensive process and analyzing the new generated by-products. The methodological approach of the thesis been focused, on the one hand, on studying phenomena that govern the internal transport of water and energy through the orange peel during its dehydration applying thermodynamics. On the other hand, the energy consumption of the drying process, the technological and sensory properties of the fiber obtained and its potential use as a fat substitute have been compared with the conventional hot air drying method. Finally, the integrated process, including both the combined drying technique and the pretreatments needed for colour and bitter compounds extraction, is proposed as a new route of valorization, in which the new by-products obtained, polyphenols and carotenoid rich extracts, are analysed. This study has analyzed the microwave coupled with hot air process, developing tools that allow the adequate upscaling of the drying operation by adapting it to the best standards of quality of the final product. A monitoring system that ensures these standards has been designed. The quality and the energy consumption of the dietary fiber production process has been improved. The properties associated with its inclusion in food matrices have been optimized. An innovative and sustainable process for the stabilization of industrial by-products and for their further conversion into dietary fiber and other bioactive compounds, applying microwave coupled with hot air drying, has been developed. / [ES] La sostenibilidad es una de las apuestas de futuro en cualquier actividad económica. La situación de crisis ha tenido un impacto adverso en la mayoría de las industrias, incluyendo las de ámbito agroalimentario. Sin embargo, ésta ha sido relativamente la menos afectada cuando se compara con otros sectores industriales. Esto se atribuye al hecho de que los productos alimenticios continúan siendo básicos para los consumidores a pesar de la desaceleración económica. Por lo tanto, esta industria es un pilar fundamental en la economía europea y puede jugar un papel crucial en la consecución de los objetivos marcados en la Estrategia de la UE para 2020: asegurar un marco sostenible de crecimiento de una economía más competitiva. La industria agroalimentaria europea ha apostado por la eficiencia energética y la reducción de emisiones de gases invernadero, junto con una mejor gestión de sus recursos como vía para la mejora de su competitividad industrial. La búsqueda de soluciones para transformar los subproductos generados en ingredientes de alto valor añadido, es una de las prioridades. En este contexto, la industria productora de zumos, como subsector fundamental dentro del sector alimentario, y gran generador de residuos, tiene la oportunidad de transformar sus subproductos en productos útiles y rentables para la sociedad. Esta transformación presenta algunas dificultades que impiden la rentabilidad del proceso. Estas dificultades están asociadas al subproducto, como su variabilidad composicional o su estacionalidad, y a las técnicas actuales de transformación como el elevado coste energético en procesos de deshidratación. Esta tesis se plantea como una solución innovadora y sostenible para, más allá de superar los inconvenientes asociados a los altos costes de estabilización, transformar este subproducto en un ingrediente de alto valor añadido, tanto nutricional como tecnológico. Para ello se propone desarrollar una técnica de secado combinado por aire caliente y microondas que permita maximizar beneficios mediante la siguiente estrategia: reducir el tiempo y el coste energético de la operación, produciendo un nuevo ingrediente rico en fibra dietética con propiedades tecnológicas de interés para el desarrollo de alimentos más saludables, estudiando el proceso integral propuesto y analizando los nuevos subproductos generados. El enfoque metodológico de la tesis ha estado dirigido, por una parte, a estudiar los fenómenos que gobiernan el transporte interno de agua y energía a través de la piel de naranja durante su deshidratación, aplicando termodinámica. Por otra parte, el consumo energético del proceso de secado, las propiedades tecnológicas y sensoriales de la fibra obtenida y su potencial uso como ingrediente sustituto de grasa, se han comparado con el método de secado convencional por aire caliente. Finalmente, el proceso integrado, incluyendo tanto el secado combinado como las etapas previas de extracción de color y compuestos amargos, se propone como una nueva ruta de valorización, en la que se analizan posibles subproductos de interés tales como extractos ricos en polifenoles y carotenoides. En este estudio se ha analizado el proceso combinado de secado con aire caliente y microondas, desarrollando herramientas que permiten dimensionar adecuadamente la operación de secado adaptándola a los estándares óptimos de calidad del producto final. Se ha diseñado un sistema de monitorización que asegure dichos estándares. Se ha mejorado el proceso de obtención de fibra alimentaria respecto a su calidad y a su gasto energético. Se han optimizado las propiedades asociadas a su inclusión en matrices alimentarias. D'altra banda, el consum energètic del procés de d'assecat, les propietats tecnològiques i sensorials de la fibra obtinguda i el seu potencial ús com a ingredient substitut de greix, s'han comparat amb el mètode d'assecat convencional per aire calent. Finalment, el procés integrat, incloent tant l'assecat combinat com les etapes prèvies d'extracció de color i compostos amargs, es proposa com una nova ruta de valoració, en la que s'analitzen possibles subproductes d'interés com ara extractes rics en polifenoles i carotenoides. En este estudi s'ha analitzat el procés combinat d'assecat amb aire calent i microones, desenvolupant ferramentes que permeten dimensionar adequadament l'operació d'assecat adaptant-la als estàndards òptims de qualitat del producte final. The thesis was intended to fill the information gap in the ecohydrology of the Pinus rotundata dominated peatbogs in the Třeboň Basin Biosphere Reserve, Czech Republic by studying various aspects of their water régime (i.e., transpiration of the dominant tree species, soil water chemistry, retention ability). The study is based on regular monitoring of the water table, water discharge, soil water chemistry and precipitation (during 1995-2000, study sites Červené blato and Žofinka peatbogs). Additionally, the transpiration of adult Pinus rotundata trees was measured in the field during 1999-2000 at the experimental plot in the Červené blato peatbog (330 ha, 465-475 m a.s.l.). Nowadays, the Pinus rotundata-dominated peatbogs represent almost natural (peaty) forests inside of otherwise human-made forest plantations. Long-term vegetation changes after natural disturbances such as windstorms, insect infestation and fire are only occasionally reported for the central European natural forests. Therefore the evaluation of vegetation changes after disturbances, typical of boreal forests, and their impact on peatbog hydrology has also been included in this thesis (study site Žofinka peatbog, 130 ha, 470-475 m a.s.l.). A primeira foi conduzida com o objetivo de avaliar as caracter?sticas de qualidade da carne de bovinos cruzados Wagyu ? Angus (Red). A segunda foi conduzida com o objetivo de verificar os efeitos da matura??o de maminha de alcatra de Nelore em diferentes temperaturas (0?C e 4?C) e tempos (0 = carne fresca com 24 horas, 7, 14, 21 e 28 dias). Na primeira pesquisa foi analisada a carne dos m?sculos Longissimus thoracis, Semitendinosus e Triceps brachii obtidas do abate de machos castrados e de f?meas, aos 24 meses de idade. Na desossa foram mensurados no m?sculo Longissimus thoracis a espessura de gordura subcut?nea, cor da gordura (L*a*b*, C, H?), a ?rea de olho de lombo e escore para o grau de marmoriza??o. Foram analisados o pH final, a capacidade de reten??o de ?gua, a perda de peso por cozimento, a for?a de cisalhamento, cor (L*a*b*, C, H?) e os teores de umidade, massa seca, res?duo mineral fixo, prote?na e gordura. Por??es de carne do m?sculo Longissimus thoracis foram coletadas avaliar o efeito dos tempos de sete e 14 dias de matura??o no pH final, na capacidade de reten??o de ?gua, na perda de peso por cozimento, na for?a de cisalhamento, na cor da carne (L*a*b*, C, H?) e na cor da gordura (L*a*b*, C, H?). Para a carne de todos os m?sculos n?o houve efeito de sexo no pH final, na capacidade de reten??o de ?gua, na perda de peso por cozimento e no teor de prote?na. O Longissimus thoracis de f?meas recebeu os melhores escore para marmoreio, apresentou maior teor de gordura e menor for?a de cisalhamento e no Longissimus thoracis de machos apresentou maior ?rea de olho de lombo. A matura??o da carne do Longissimus thoracis proporcionou redu??o na for?a de cisalhamento e aumento do pH final. Na segunda pesquisa, por??es de carne (? 400 gramas) foram embaladas, a v?cuo, e estocadas em c?mara frigor?fica nas temperaturas (0?C e 4?C). Foram mantidas nestas temperaturas por 7, 14, 21 e 28 dias. Foram analisados o pH, capacidade de reten??o de ?gua, perda de peso por cozimento, for?a de cisalhamento, cor (L*, a*, b*, C, H?). N?o houve varia??o no pH em fun??o da temperatura utilizada. Entretanto, o pH aumentou com o decorrer do tempo de matura??o. Foi observada varia??o na luminosidade da carne em fun??o da temperatura, sendo menor a luminosidade na carne maturada a 0?C. O teor de vermelho desta carne aumentou linearmente em fun??o do tempo de matura??o e tamb?m foi influenciada pelas temperaturas de matura??o, sendo maior quando maturada a 0?C. A perda de peso por cozimento tamb?m apresentou aumento linear ao longo do tempo de matura??o. A capacidade de reten??o de ?gua e a for?a de cisalhamento apresentaram redu??o linear ao longo do tempo de matura??o. The second was conducted in order to verify the effects of maturation titty rump Nellore at different temperatures (0 ? C and 4 ? C) and time (0 = fresh meat with 24 hours, 7, 14, 21 and 28 days ). In the first study we analyzed the meat of Longissimus thoracis, Semitendinosus and Triceps brachii obtained from the slaughter of castrated males and females, at 24 months old. The bones were measured in the Longissimus thoracis muscle to fat thickness, color of fat (L * a * b *, C, H?), rib eye area and score to the degree of marbling. The final pH were analyzed, water retention capacity, weight loss by cooking, shear strength, color (L * a * b *, C, H?), and the moisture content, dry matter, mineral residue fixed, protein and fat. Meat portions of Longissimus thoracis muscle were collected to evaluate the effect of seven days and 14 days of aging at the end pH, water retention capacity, weight loss by cooking, the shear force on the meat color (L * a * b *, C, H?) and fat color (L * a * b *, C, H?). For the meat of all muscles of no gender effect on the ultimate pH, water retention capacity, by cooking weight loss and protein content. The Longissimus thoracis females received the best score for marbling, showed higher fat content and lower shear strength and Longissimus thoracis males showed greater loin eye area. The maturation of the meat of Longissimus thoracis provided a reduction in shear force and increase in final pH. In the second study, cam portions (400 ? grams) were packed, vacuum, and stored in the cold room temperatures (0 ?C and 4 ?C). They were maintained at these temperatures for 7, 14, 21 and 28 days. They analyzed the pH, water holding capacity, cooking weight loss, shearing force, color (L *, a *, b *, C, M ?). There was no variation in pH as a function of temperature used. However, the pH increase during maturation time. It was observed variation in brightness of the flesh a function of temperature being lower in brightness aged meat at 0 ?C. The content of this red meat increased linearly as a function of aging time and was also influenced by the temperature of ripeness, being higher when aged at 0 ?C. The cooking weight loss also showed a linear increase over time of aging. The water retention capacity and shear strength showed a linear decrease over time of aging. Maturation for 28 days decreased the shear force of titty rump. It is recommended to mature titty rump for 28 days in temperature

Farmland is being handled by various the tillage of soil especially for the correct course of soil processes, plant growth and development and of course profit. There are two types of the tillage of soil are their conventional (classical) which involves plowing and minimization tillage, where is excluded plowing. The last few decades, the development the tillage of soil focuses on minimization tillage. This includes loosing up small depth, soil conservation tillage and direct seeding. This thesis is aimed at impact of minimization tillage on selected physical and hydraulic properties of the soil. Sampling undisturbed soil samples was performed on the experimental plot Kozlany by Kopecky rollers (V = 100 cm3) from depth of 0 - 10 cm, during the year 2016. On this plot was used minimization tillage in the form loosing up small depth and direct seeding.

Diploma thesis evaluates quality and healthiness of the soil health located close to Bohate Malkovice focusing on changes in both physical and chemical characteristics of the soil in time. The theoretical part describes physical, chemical, and biological parameters of the soil. Selected physical parameters are structure, texture, determination of measured weight, bulk density of the soil, porosity, actual volumetric water content of the soil, aeration, saturated and unsaturated hydraulic conductivity, infiltration, and colour. Chosen chemical parameters are pH, carbonates, soil electrical conductivity, and humus content. Picked biological parameters are microbial biomass, respiration, nitrogen content, and weed infestation. The practical part analyses selected indicators of quality of the soil from the location of the experiment close to Bohate Malkovice. The area under evaluation has been treated using reduced tillage for long term. The practical part is based on the laboratory examination of disturbed and undisturbed soil samples taken between years 2016 and 2018. Based on outcome results we can evaluate the quality of the soil considering plants growth, development, and soil fertility.
