Os idosos têm diminuição progressiva da função renal e os hipertensos e diabéticos apresentam maior risco de lesão renal. Essas doenças crônicas são comuns aos idosos favorecendo o comprometimento de lesão renal. Com base neste fato, o objetivo do estudo foi identificar o melhor método para avaliar precocemente a filtração glomerular (FG) em indivíduos idosos. Comparando-se as fórmulas baseadas na creatinina sérica, bem como o Clearance de Creatinina de 24h com a fórmula baseada nos níveis séricos de Cistatina C, eleita como padrão ouro. Foi realizado um estudo observacional, analítico, de delineamento transversal sobre a filtração glomerular e o desenvolvimento da doença renal, com base nos resultados obtidos na avaliação clínica e nos exames laboratoriais de bioquímica e urinálise. Participaram do estudo 180 idosos de ambos os sexos, com idade igual ou superior a 60 anos, do Centro de Atenção Integrada da Melhor Idade (CAIMI), da cidade de Manaus-AM. Foram construídos gráficos de dispersão, calculado o coeficiente de correlação, bem como traçados diagramas de Bland Altman e curvas ROC. A média de idade dos 180 idosos foi de 67 anos - 68,8% do sexo feminino, e 31,1% do sexo masculino. Hipertensos representaram 43,5% do total. Renais crônicos representaram 19%. Portadores de diabetes mellitus chegaram a 38,3%. Ao observar a equação de regressão, quando o CKD-epiCys for zero, o Clearance de Creatinina (ClCr) valerá 62,07 ml/min/1,73m2, o que caracteriza uma superestimação do valor real da FG. A média avaliada pelo ClCr e CKD-epiCys foi de 28,8 ml/min/1,73m2. Este valor é bem superior à zero, que seria o ideal. Isto mostra que o ClCr superestima a FG avaliada pelo CKD-epiCys. The elderly have progressive decrease of renal function, and those with hypertension and diabetes are at increased risk of kidney damage. These chronic diseases are common to the elderly and promote renal injury. This study aimed to identify the best method to assess early glomerular filtration (GF) in elderly subjects. Formulas based on serum creatinine and creatinine clearance of 24 hours were compared with the formula based on serum cystatin C chosen as gold standard. We conducted an observational, analytical, cross-sectional design of the glomerular filtration rate and the development of kidney disease, through results obtained in clinical evaluation, and biochemistry and urinalysis laboratory tests. Participants were 180 patients of both sexes, aged over 60 years, from the Centro de Atenção Integrada da Melhor Idade [Center for Integrated Management of the Elderly], in the city of Manaus, State of Amazonas, Brazil. Scatter plots were constructed by calculating the correlation coefficient, as well as Bland Altman plotted diagrams and ROC curves. The average age of the elderly participants was 67 years; 68.8% were female and 31.1% male; 43.5% had hypertension; 19%, chronic renal failure; and 38.83%, diabetes mellitus. By observing the regression equation, when the CKD-epiCys was zero, creatinine clearance (CrCl) was 62.07 ml/min/1.73m2, which means overestimation of the real FG rate. The average assessed by CrCl. and CKD-epiCys was 28.8 ml/min/1,73m2, a value above zero, which would be ideal. This shows that CrCl. overestimates FR assessed by CKD-epiCys. The ROC curve for CrCl to discriminate the presence of FG <60 ml / min measured by the standard was 0.65, with 95% confidence interval from 0.56 to 0.76 (p = 0.006). The Potential of Coastal Marine Filtration As a Feedstock Source for BiodieselJanuary 2011 (has links)
abstract: Second-generation biofuel feedstocks are currently grown in land-based systems that use valuable resources like water, electricity and fertilizer. This study investigates the potential of near-shore marine (ocean) seawater filtration as a source of planktonic biomass for biofuel production. Mixed marine organisms in the size range of 20µm to 500µm were isolated from the University of California, Santa Barbara (UCSB) seawater filtration system during weekly backwash events between the months of April and August, 2011. The quantity of organic material produced was determined by sample combustion and calculation of ash-free dry weights. Qualitative investigation required density gradient separation with the heavy liquid sodium metatungstate followed by direct transesterification and gas chromatography with mass spectrometry (GC-MS) of the fatty acid methyl esters (FAME) produced. A maximum of 0.083g/L of dried organic material was produced in a single backwash event and a study average of 0.036g/L was calculated. This equates to an average weekly value of 7,674.75g of dried organic material produced from the filtration of approximately 24,417,792 liters of seawater. Temporal variations were limited. Organic quantities decreased over the course of the study. Bio-fouling effects from mussel overgrowth inexplicably increased production values when compared to un-fouled seawater supply lines. FAMEs (biodiesel) averaged 0.004% of the dried organic material with 0.36ml of biodiesel produced per week, on average. C16:0 and C22:6n3 fatty acids comprised the majority of the fatty acids in the samples. Saturated fatty acids made up 30.71% to 44.09% and unsaturated forms comprised 55.90% to 66.32% of the total chemical composition. Both quantities and qualities of organics and FAMEs were unrealistic for use as biodiesel but sample size limitations, system design, geographic and temporal factors may have impacted study results. / Dissertation/Thesis / M.S.Tech Technology 2011

Supply of water can be reinforced through recycling and reuse; and secondary treatment of municipal wastewater effluent with a membrane bioreactor (MBR) followed by a reverse osmosis (RO) process, has emerged as a crucial treatment process for water reuse. However, fouling of RO membranes in such process is unavoidable. This leads to poor performance, increase in operational cost and degradation of the membrane material, which reduces the membrane life span. Various researches have been conducted to provide an understanding of the mechanism of fouling, and methods have been developed to minimize it. In this research, the effect of surface modification to minimise fouling on a thin film composite polyamide RO membrane was investigated. This study was divided into three parts, namely: membrane modification, biofouling and filtration using RO. Two modifying agents, PVA and DMAEMA, were used as grafting solutions. Escherichia coli (E. coli) were used as the biofoulant to study the ant-biofouling properties of the membranes. A make-up synthetic MBR secondary effluent feed was used in a bench scale RO process. During the membrane modification process, the membrane was treated using two different approaches. Firstly, the covalent attachment of polyvinyl alcohol (PVA) through Glutaraldehyde (GA) onto the surface and secondly the redox initiated grafting of dimethyl amino ethyl methacrylate (DMAEMA PVA and DMAEMA grafting solutions were applied at four different concentrations).
The PVA and DMAEMA modifying agents were successfully grafted onto the membrane top layers and were confirmed by the functional groups, present, using the Attenuated Total Reflectance–Fourier Transform Infrared spectroscopy (ATR-FTIR) spectra. The morphology of the membrane surfaces was investigated using Scanning Electron Microscopy (SEM), before and after treatment. SEM analysis showed better membrane structures with PVA grafting compared to DMAEMA.

Development and Characterization of Novel Nanofibrous Metal–Organic Framework Adsorption Membranes for Water TreatmentEfome, Johnson Effoe 05 October 2018 (has links)
Membrane technology has become a predominant process in providing one of the key components of life (water), either through water and wastewater treatment for water quality purposes or desalination as seen in Ultra-filtration, Nano-filtration, Reverse osmosis, Membrane distillation, Pervaporation, among others. With the ever-increasing demand for portable water due to population increase, constant research has focused on the improvements of the performances of the different water treatment systems including enhancing the performance of the membrane. Among all the different membrane performance enhancement techniques exploited, incorporation of filler has gained much grounds in the last decades. Traditional fillers like silica gel, activated carbon, metal oxides and zeolites are now being challenged by the recent class of mesoporous materials known as Metal Organic Frameworks (MOFs), which are built of metal ions or metal ion clusters linked together by organic ligands giving these materials tunable pore geometries and pore volume, greatly improved surface area with extraordinary adsorptive properties. The membrane incorporating MOFs demonstrate enhance performances more than the other fillers due to the good coordination of the organic moiety and polymers.
The overall objective of this project is to develop and study a membrane incorporated MOFs nanofiber system vis-à-vis their applications in heavy metal contaminated water treatment, stability in aqueous media and the advantages and drawbacks of these composite membranes with regards to the quality of the water produced. The developed materials were characterized by SEM, FTIR, TEM, XPS, DSC, and TGA. The heavy metals earmarked for this study include; Lead, Mercury, Cadmium, and Zinc and were studied using flame atomic absorption spectrometry (FAAS). Upon successful fabrication of the nanofiber membranes, detailed adsorption studies were conducted (pristine MOF, pristine nanofibers, enmeshed MOFs) to establish adsorption kinetics and isotherm, which were used further to select the best performing membranes for filtration application. Two different MOFs were used, MOF808; made of Zirconium and Benzene Tricarboxylate) and MOF F300; made of Iron and Benzene Tricarboxylate) The adsorption capacities of the MOFs for the different heavy metal analyzed were; MOF 808 (Pb-170.74 mg g-1, Zn-287 mg g-1, Cd-225.05 mg g-1, Hg-276.96 mg g-1) and MOF F300 (Pb-148.13 mg g-1, Hg-229.66 mg g-1), while the membrane adsorption capacities were; PA808 (MOF 808 embedded within polyacrylonitrile (PA) nanofibers, (Pb-23.98 mg g-1, Hg-50.88 mg g-1), PA300, MOF F300 embedded within polyacrylonitrile nanofibers, (Pb-30.19 mg g-1, Hg-53.09 mg g-1). Upon activation of MOF 808 by water (hydractivation), the removal efficiency of MOF 808 was improved by 10% while the MOF membrane efficiency was increased by 30%. Filtration experiments could produce 577.5 L of treated water with a single layer of PAN/ MOF808 membrane at 0.1 bar using a 50 ppb Pb ion feed solution.

Orientador: Priscylla Tatiana Chalfun Guimarães-Okamoto / Resumo: A dimetilarginina simétrica (SDMA) é um aminoácido formado da metilação da arginina, liberada na corrente sanguínea durante a degradação proteica e excretada principalmente pela urina. Este aminoácido foi descoberto há 45 anos, presente na urina humana e estudado como possível biomarcador pela sua aparente estrita excreção renal e por suas concentrações serem altamente correlacionadas com a da taxa de filtração glomerular (TFG) em animais e seres humanos. Recentemente, este biomarcador foi validado e inserido na Medicina Veterinária pelo seu rico valor no diagnóstico precoce da doença renal crônica (DRC), assim como na sua monitoração ao longo da doença e também como um biomarcador alternativo na avaliação da TFG. Este trabalho visou avaliar o comportamento da SDMA em pacientes com DRC classificados no estádio 4 submetidos à terapia de hemodiálise intermitente e no grupo controle, bem como comparar e correlacionar seus valores com a creatinina sérica (sCr) em ambos os grupos. Foram avaliados 24 animais, todos previamente diagnosticados e classificados no estádio 4. SDMA e sCr foram avaliados antes e após os protocolos terapêuticos. Os resultados obtidos foram a diminuição da concentração sérica de SDMA e sCr após o tratamento dialítico. Já no grupo fluído houve a diminuição dos valores de sCr e inversamente, o aumento das concentrações séricas de SDMA. (Resumo completo, clicar acesso eletrônico abaixo) / Abstract: Symmetrical dimethylarginine (SDMA) is an amino acid formed from the methylation of arginine, released into the bloodstream during protein degradation and excreted primarily by urine. This amino acid was discovered 45 years ago in human urine and studied as a possible biomarker due to be strictly eliminated by renal excretion and its concentrations highly correlates with glomerular filtration rate (GFR) in animals and humans. Recently, this biomarker was validated and inserted in Veterinary Medicine for its rich value in the early diagnosis of chronic kidney disease (CKD) as well as its monitoring throughout the disease and as an alternative biomarker in the evaluation of GFR. This study aimed to evaluate the behavior of SDMA in dogs with CKD in stage 4 submitted to intermittent hemodialysis therapy and in the control group, as well as to compare and correlate their values with serum creatinine (sCr) in both groups. We evaluated 24 animals, all previously diagnosed and classified in stage IV. SDMA and sCr were evaluated before and after the therapeutic protocol. The results obtained were lower serum concentrations of SDMA and sCr after the dialytic treatment. However, in the fluid therapy group, inversely sCr levels lowered while SDMA serum concentrations increased . Previous issue date: 2017-03-08 / CNPq / Neste trabalho são avaliados dois polímeros à base de óleo de soja como redutores de filtrado em fluidos de perfuração sintéticos à base N-parafina, visando sua utilização na perfuração de poço de petróleo e gás. Realizou-se o estudo em duas etapas: primeiramente, a caracterização dos polímeros ( POS1A e POS2A) por meio das análises de espectroscopia no infravermelho por transformada de Fourier (FTIR), microscopia óptica (MO), termogravimétrica (TGA), térmica diferencial (DTA) e ensaio de toxicidade; na segunda etapa, a avaliação dos polímeros como redutores de filtrado por meio das propriedades reológicas (viscosidade aparente (VA), viscosidade plástica (VP), limite de escoamento (LE)), da estabilidade elétrica (EE) e do volume de filtrado HPHT (VF) de acordo com as normas da API. Ainda nesta etapa, como critério de balizamento, foram avaliados fluidos sem redutores e com redutor de filtrado padrão, utilizado pela indústria. Os resultados indicam que o polímero POS2A possui maior diâmetro médio de partículas e melhor distribuição dos grãos que POS1A. Os espectros de FTIR dos polímeros indicam a existência de funções carboniladas, ácido carboxílico e éster. A termogravimetria indicou que os polímeros possuem boa estabilidade térmica. O polímero POS2A apresentou baixíssima toxicidade e o POS1A nenhuma toxicidade. Os fluidos apresentaram curvas de fluxos de plásticos de Bingham. Os polímeros não apresentaram influências significativas sobre as propriedades de VA, VP, LE e EE. A presença de polímeros no sistema reduziu os volumes de filtrado HPHT dos fluidos e foram competitivos com o redutor utilizado pela indústria, entretanto, superaram os resultados apenas para os fluidos com concentração de 2g de POS2A, na razão óleo/água 60/40. / In this work we evaluated two soybean oil-based polymers as filtrate reducers in synthetic N-paraffin-based drilling fluids, aiming their use in oil and gas well drilling. This study was conducted in two stages: First, the characterization of the polymers (POS1A and POS2A) by analysing through the Fourier spectroscopy analysis in transformed infrared (FTIR), optical microscopy (OM), thermogravimetric (TGA), differential thermal ((DTA) and toxicity test; In the second stage, the evaluation of the polymers as filtration reducers by means of the rheological properties (apparent viscosity (AV), plastic viscosity (PV), flow limit (FL)), electrical stability (ES) and HPHT filtrate volume (FV) in accordance with API standards. Still in this stage, as a beacon criterion, we evaluate fluids with no reducers and with standard filter reducer, used by the industry. The results indicate that the POS2A polymer has a higher mean particle diameter and better grain distribution than POS1A. The FTIR spectra of the polymers indicate the existence of carbonylated functions, carboxylic acid and ester. Thermogravimetry indicated that the polymers have good thermal stability. The POS2A polymer presented a very low toxicity and POS1A had no toxicity at all. The fluids showed Bingham plastic flow curves. The polymers had no significant influence on the properties of AV, PV, FL and ES. The presence of polymers in the system reduced the volumes of HPHT filtrates from the fluids and were competitive with the reducer used by the industry, however, they exceeded the results only for fluids with a concentration of 2g of POS2A in the 60/40 oil / water ratio.

Estimativa da taxa de filtração glomerular com equações baseadas na creatinina e cistatina C séricas em pacientes com diabete melito tipo 2Camargo, Eduardo Guimarães January 2011 (has links)
As diretrizes nacionais e internacionais de nefrologia e diabetologia recomendam que, em pacientes com diabete melito (DM), além da aferição anual da excreção urinária de albumina, seja realizada a estimativa da TFG por meio de equações que incluam a creatinina sérica. As equações mais empregadas e analisadas têm sido as dos estudos MDRD (Modification of Diet in Renal Disease) e CKD-EPI (Chronic kidney Disease Epidemiology Collaboration). No entanto, algumas evidências demonstram um pior desempenho dessas equações em indivíduos com DM, com acentuada subestimativa da TFG. Este desempenho limitado parece estar relacionado a peculiaridades do paciente com DM, como a presença de hiperglicemia e hiperfiltração glomerular, mas também a limitações da própria creatinina como marcador pouco sensível e específico da TFG. O uso de novos marcadores endógenos com perfil mais próximo do ideal, como é o caso da cistatina C, tem se mostrado promissor, mas a sua acurácia ainda não foi adequadamente demonstrada no DM. O objetivo desse artigo foi analisar criticamente os métodos disponíveis de medida e de estimativa da TFG em pacientes com DM, enfatizando aspectos peculiares e possíveis interferentes. / The current guidelines of Nephrology and Diabetology recommend that in patients with diabetes mellitus (DM), along with the annual measure of urinary albumin excretion, the glomerular filtration rate (GFR) should be estimated using creatinine-based equations. The most frequently recommended equations were developed by the MDRD (Modification of Diet in Renal Disease) and CKDEPI (Chronic Kidney Disease Epidemiology Collaboration) studies. However, recent evidences show a worse performance of these equations in diabetic patients, with a significant underestimation of GFR. This limited performance seems to be related to the peculiarities of the patient with DM, such as the presence of hyperglycemia and glomerular hyperfiltration, but also due to the limitations in the sensitivity and specificity of serum creatinine as GFR marker. The use of new markers with closer–to-the ideal endogenous profile, like cystatin C, has shown promise, but its accuracy has not been yet adequately demonstrated in DM. The purpose of this article was to critically analyze the current available methods of measurement and estimation of GFR in patients with DM, emphasizing its peculiarities and possible interferences.

Doença periodontal como possível preditor da condição renal em pacientes pré-dialíticos : um estudo transversalSchütz, Jasper da Silva January 2016 (has links)
Objetivo: O objetivo do presente estudo foi avaliar o impacto da doença periodontal sobre a função renal em pacientes pré–dialíticos nos estágios 3, 4 e 5 da doença renal crônica (DRC). Metodologia: Dados demográficos, socioeconômicos e de história médica de 139 pacientes do Serviço Nefrologia do Hospital de Clínicas de Porto Alegre (HCPA) foram obtidos por meio de entrevista e análise de prontuário. Exames clínicos periodontais completos foram realizados por examinadores treinados e calibrados. Foram realizadas associações entre a condição periodontal e os diferentes estágios da DRC e com a taxa de filtração glomerular (TFG). Resultados: Ter periodontite grave aumentou em, aproximadamente, 2,8 e 3,4 vezes a chance de estar nos estágios 4 e 5 da DRC quando comparado a estar no estágio 3 (referência), respectivamente (p<0,05). Além disso, ter dois ou mais dentes com perda de inserção maior ou igual a 6mm aumentou em 3,9 vezes a chance de estar no estágio 5 da DRC (p<0,05). Com relação à TFG, tanto o fato de ter periodontite grave quanto o de apresentar dois ou mais dentes com perda de inserção maior ou igual a 6mm estiveram significativamente associados a uma menor taxa de filtração glomerular (p=0,02 e p=0,01, respectivamente). Conclusão: A doença periodontal aumenta a chance de piores desfechos renais em pacientes com DRC pré-dialiticos, mesmo quando ajustado para importantes confundidores. / Aims: The aim of the present study was to evaluate the impact of periodontal disease on renal function in pre-dialytic patients in stages 3, 4 and 5 of chronic kidney disease (CKD). Materials and Methods: Demographic, socioeconomic and medical history data of 139 patients from the Nephrology Service at the Hospital de Clínicas de Porto Alegre (HCPA) were obtained through interview and clinical records. Complete periodontal clinical examinations were performed by trained and calibrated examiners. Associations between the periodontal condition and different stages of CKD, as well as with the glomerular filtration rate (GFR) were evaluated. Results: Severe periodontitis increased by 2.8 and 3.4 times the chance of being in stages 4 and 5 of CKD when compared to the reference (stage 3), respectively (p <0.05). In addition, having two or more teeth with clinical attachment loss ≥6mm increased by 3.9 times the probability of being in stage 5 of the CKD (p <0.05). Regarding GFR, severe periodontitis and having two or more teeth with clinical attachment loss ≥6mm were significantly associated with a lower glomerular filtration rate (p = 0.02 and p = 0.01, respectively). Conclusion: Periodontal disease increases the chance of worse renal outcomes in patients with pre-dialytic CKD, even when adjusted for major confounders.

Separação mediante ultrafiltração e microencapsulamento por atomização de compostos fenólicos da casca de uva bordô (Vitis labrusca)Gómez, Luz Angela Carmona January 2016 (has links)
O consumo da uva e seus derivados está associado com a proteção contra doenças degenerativas devido a seu conteúdo de compostos fenólicos. A casca de uva é um subproduto da produção de suco de uva e vinho, que possui um alto conteúdo de compostos fenólicos, os quais se extraídos e protegidos por encapsulamento, agregariam valor a esse produto. O objetivo deste trabalho foi separar os compostos fenólicos do extrato aquoso acidificado com ácido cítrico 2% (p/v) da casca de uva a través de ultrafiltração (UF) utilizando membranas de poliestersulfona com massas molares de corte 10 e 30 kDa e posterior microencapsulação dos permeados recolhidos do processo de separação, usando como agentes encapsulantes goma arábica 15% e polidextrose 15%. Inicialmente, estudou-se o desempenho das membranas a diferentes pressões transmembrana de 1,0 a 3,5 bar e temperaturas de 25, 35 e 45°C, com o intuito de definir as melhores condições de separação. Para isso, foram usadas uvas variedade bordô (vitis labrusca) do municipio de Cotiporã, Serra Gaúcha RS. As uvas foram previamente branqueadas em banho de água a 80°C por 5 minutos e posteriormente resfriadas em banho de gelo por 3 minutos. A seguir, as cascas foram separadas manualmente da polpa e colocadas numa solução acidificada com ácido cítrico 2% (p/v) na proporção 1:4 (m/v). Após 20 horas, o extrato acidificado, com pH menor que 2,8, foi filtrado com papel Whatman n° 1 e posteriormente colocado no equipamento de membranas para realizar os diferentes experimentos de UF. Os resultados indicaram que a melhor condição de separação na UF foi à temperatura de 25°C e 3,5 bar de pressão transmembrana. Os resultados mostraram que as permeabilidades hidráulicas para as membranas novas de 10 e 30 kDa foram 10,96 e 20,52 L.m-2.h-1.bar-1, respectivamente. Durante o processo de UF do extrato, os valores de fouling a 25°C foram de 85,9 e 89,6% para as membranas de 10 e 30 kDa, enquanto que a recuperação, após limpeza química, foi de 63,1 e 80,9%, respectivamente. Do estudo das resistências total ao fluxo, constituída pelas resistências da membrana, do fouling e da polarização por concentração, a maior foi a da polarização por concentração, com porcentagens com respeito à resistência total, de 80 a 90% e de 60 a 90% para as membrana de 10 kDa e de 30 kDa, enquanto que a do fouling foi a menor de 1 a 3% e de 2 e 15% nas membranas de 10 e de 30 kDa. As concentrações de polifenois totais na membrana de 10 kDa a 25°C foram de 7,84, 2,51 e 10,89 mg ácido gálico (GA)/g amostra seca, no retido, permeado e extrato, respectivamente. Com a membrana de 30 kDa os teores foram de 7,12, 1,62 e 10,66 mg ácido gálico (GA)/g amostra seca, no retido, permeado e extrato, respectivamente. Quanto aos flavonoides os teores obtidos com a membrana de 10 kDa foram 1,78, 0,63 e 2,51, enquanto que na membrana de 30 kDa foram de 1,60, 0,40 e 2,26 mg Catequinas/g amostra seca, no retido, permeado e extrato, respectivamente. O valor de capacidade antioxidante medido como ABTS para o extrato a 25°C foi de 127,80 equivalentes Trolox (TEAC) (μmol/g amostra seca), e no permeado de 9,10 e 16,41 μmol de trolox equivalente/g amostra seca para as membranas de 10kDa e 30kDa, respectivamente, evidenciando que foram separados poucos compostos com essa propriedade. O índice de correlação entre os teores dos compostos 9 fenólicos e de flavonoides com a capacidade antioxidante foram de 0,99 e de 0,98, respectivamente. A membrana que apresenta melhores condições para a ultrafiltração de casca de uva bordô é a membrana de 10 kDa. Para o estudo de encapsulamento foram usados os permeados de UF obtidos das membranas 10 e 30 kDa a 25°C, utilizando goma arábica 15% e polidextrose 15% como materiais encapsulantes, e posterior secagem por atomização a 140ºC. As micropartículas obtidas resultaram em teores de umidade e de atividade de água menores que 3,90% e 0,18%, respectivamente. Em relação à solubilidade, todas as amostras encapsuladas foram muito solúveis, com valores na faixa de 96,8 a 99,6%. A higroscopicidade dos pós apresentou diferença significativa entre os agentes encapsulantes sendo que a polidextrose foi a mais higroscópica. Para a cor, os parâmetos a* e b* indicaram que as amostras possuem cores entre vermelho e o azul, e de acordo com o Chroma os pós obtidos com polidextrose foram mais saturados do que os pós encapsulados com goma Arábica 15%. Quanto ao parâmetro Hue, os resultados também indicaram que as amostras se encontram no quarto quadrante do circulo cromático de cores (entre vermelho e o azul). / Consumption of grape and it’s components is associated with protection against degenerative diseases due to a high content of phenolic compounds. The grape skin is a rich source of phenolic compounds as are byproducts of grape such as grape juice and compounds found in wine made from grapes resulting in a less recognized added value to these products. Current research separates the phenolic compounds of an acidic aqueous extract with citric acid 2% (w / v) of grape skin and using ultra-filtration with poly(ether sulfone) membranes. This research material had a molecular weight cut-off of 10 and 30 kDa and subsequent micro-encapsulation of collected permeate from the separation process and used Arabic gum and polydextrose 15% as encapsulating agents. Additionally it was homogenized and the mixture maintained at room temperature for 20 hours. The acidified extract with a pH lower than 2.8 was filtered with Whatman No. 1 paper and placed on the membrane equipment to begin the different UF experiments. The results showed that better separation conditions in the UF was to 25°C and a trans-membrane pressure of 3.5 bar. Results showed that the hydraulic permeabilities for the new membranes of 10 and 30 kDa were 10,96 and 20,52 L.m-1.bar-2.h-1, respectively. It was studied total resistance (Rt) to flow constituted by the intrinsic membrane resistance (Rm), fouling resistance (Rf) and cake layer resistance (Rc). The maximum resistance was a cake layer resistance (Rc) with percentages compared with the total resistance of 80 to 90% and from 60 to 90% for membrane 10 kDa and 30 kDa. The fouling was a lowest 1 to 3% and 2 to 15% in membranes 10 and 30 kDa. The total polyphenol concentrations in the 10 kDa membrane at 25°C were 7,84, 2,51 and 10,89 mg (GA)gallic acid/g dry sample, in the retentate, permeate and extract, respectively. With the membrane of 30 kDa, contents were 7,12, 1,62 and 10,66 mg gallic acid (GA)/g dry sample, in the retentate, permeate and extract respectively. Flavonoid contents obtained with the 10 kDa membrane were 1,78, 0,63 and 2,51, and the membrane 30 kDa were 1,60, 0,40 and 2,26 Catechins mg / g sample dry, in the retentate, permeate and extract respectively. The amount of antioxidant capacity measured as ABTS to the extract at 25°C was 127,80 Trolox equivalent (TEAC) (μmol/g dry sample) and permeate of 9,10 and 16,41 Trolox equivalent (TEAC) (μmol/g dry sample) for 11 membranes of 10 and 30 kDa respectively, showing that a few compounds were separated with this property. The correlation index between levels of flavonoids and phenolic compounds with antioxidant capacity were 0,99 and 0,98, respectively. The membrane that presents the best conditions for the ultrafiltration of the grape skin extract is 10 kDa membrane. The encapsulation study used the UF permeates obtained from the membrane process of 10 and 30 kDa to 25°C, using Arabic gum and polydextrose 15% as encapsulating agent and subsequent spray drying process at 140°C. The micro-particles obtained resulted in moisture content and lower water activity to 3.90% and 0.18, respectively. With regard to solubility, all of the encapsulated samples were very soluble, with values ranging from 96.8 to 99.6%. Hygroscopicity of powders showed significant difference between agents encapsulants and the polydextrose was the most hygroscopic. For color, parameters a * and b * indicate that the samples have color between red and blue, in accordance with the Chroma. Powders obtained with polydextrose have been more saturated than powders encapsulated with Arabic gum 15%. As for Hue parameter, the results also indicated that the samples are in the fourth quadrant of the circle chromatic color (from red to blue).
