Dentro del sector no tradicional agrícola, el mango fresco es la quinta fruta peruana más exportada, con un crecimiento promedio anual de 12.92 por ciento desde el 2002 al 2019. Estados Unidos es el segundo destino de las exportaciones peruanas de mango, abarcando un promedio del 24% por ciento de las ventas totales en el 2019. Ante ello, la presente investigación busca determinar los factores que influyeron en la exportación de mango fresco del Perú hacia Estados Unidos durante el periodo 2002 – 2019.
El estudio tuvo un enfoque mixto, con un alcance descriptivo, correlacional y causal; con un diseño no experimental longitudinal, donde se analizaron las variables Producción, Precio FOB, Tipo de Cambio, Demanda EE.UU y PBI de EE.UU. Además, de carácter descriptivo se analizaron las variables Gestión empresarial, Apoyo del Estado y Clima. Para el análisis cuantitativo se obtuvo información de fuentes secundarias como Adex Data Trade, BCRP, Banco Mundial, MINAGRI y Bureau of Economic donde se procesaron los datos a través de un modelo de regresión lineal múltiple. Mientras que, para el análisis cualitativo, se usó la técnica de entrevistas semi estructuradas en el cual se entrevistaron a trece actores clave pertenecientes a entidades del sector privado, sector público y gremios relacionados donde se procesó la información a través de la herramienta Atlas Ti.
Sobre los resultados de la investigación se concluyeron que las variables producción nacional y demanda de Estados Unidos influyeron en la exportación de mango fresco peruano hacia Estados Unidos. / Within the non-traditional agricultural sector, fresh mango is the fifth most exported Peruvian fruit, with an average annual growth of 12.92 percent from 2002 to 2019. The United States is the second destination for Peruvian mango exports, covering an average of 24% percent of total sales in 2019. Given this, this research seeks to determine the factors that influenced the export of fresh mango from Peru to the United States during the period 2002 - 2019.
The study had a mixed approach, with a descriptive, correlational and causal scope; With a non-experimental longitudinal design, where the variables Production, FOB Price, Exchange Rate, US Demand and US GDP were analyzed. In addition, of a descriptive nature, the variables Business Management, State Support and Climate were analyzed. For the quantitative analysis, information was obtained from secondary sources such as Adex Data Trade, BCRP, World Bank, MINAGRI and Bureau of Economic, where the data was processed through a multiple linear regression model. While, for the qualitative analysis, the semi-structured interview technique was used in which thirteen key actors belonging to entities of the private sector, public sector and related unions were interviewed where the information was processed through the Atlas Ti tool.
Regarding the results of the investigation, it was concluded that the variables national production and demand from the United States influenced the export of fresh Peruvian mango to the United States. / Tesis

El presente trabajo de investigación tiene como finalidad analizar los factores determinantes en las exportaciones peruanas de mango al mercado de Estados Unidos durante el periodo 2009-2019.
En el capítulo uno, se abordan los antecedentes y la realidad problemática de la investigación, estudios que se llevaron a cabo; información sobre el producto, información acerca del segundo mercado potencial de destino, entre otros.
En el capítulo dos, se proponen los objetivos del estudio; que conducirán al desarrollo del trabajo de investigación. Las variables consideradas fueron el precio doméstico, el precio al por mayor en Estados Unidos, el PBI de Estados Unidos y el tipo de cambio.
En el capítulo tres, se desarrolla la metodología de la investigación cuantitativa y se muestra el desarrollo de una variable, adicional en el modelo obtenido inicialmente, sugerida por expertos.
En el capítulo cuatro, se muestran las entrevistas realizadas a expertos en el estudio de la tesis, quienes brindaron información; además de sugerir una nueva variable, con la finalidad de validar el modelo de la investigación.
En el capítulo cinco, se contempla la observación de los resultados obtenidos y la metodología aplicada al estudio cuantitativo, para la validación de variables que tienen mayor significancia dentro de las determinantes de mango fresco para su proceso de exportación.
Finalmente, es importante mencionar que, los resultados fueron que las variables precio doméstico y el precio al por mayor en Estados Unidos poseen una influencia significativa en las exportaciones peruanas de mango al mercado americano durante el periodo 2009-2019. / The purpose of this research is to analyze the determining factors in Peruvian mango exports to the United States market during the 2009-2019 period.
In chapter one, the antecedents and the problematic reality of the research are addressed, studies that were carried out; information about the product, information about the second potential target market, among others.
In chapter two, the objectives of the study are proposed; that will lead to the development of the research work. The variables considered were the domestic price, the wholesale price in the United States, the GDP of the United States, and the exchange rate.
In chapter three, the methodology of quantitative research is developed and the development of an additional variable in the initially obtained model, suggested by experts, is shown.
In chapter four, interviews with experts in the study of the thesis are shown, who provided information; in addition to suggesting a new variable, in order to validate the research model.
In chapter five, the observation of the results obtained, and the methodology applied to the quantitative study are contemplated, for the validation of variables that have greater significance within the determinants of fresh mango for its export process.
Finally, it is important to mention that the results were that the variables domestic price and the wholesale price in the United States have a significant influence on Peruvian mango exports to the American market during the 2009-2019 period. / Tesis

El principal objetivo de esta investigación es determinar los factores que impactaron en el dinamismo de las exportaciones de mangos frescos peruanos en el marco del Acuerdo de Libre Comercio (ALC) de Perú hacia Corea del Sur en un periodo durante 2015 y 2020. El mango se ha convertido en uno de los principales productos de exportación del sector agroexportador, sin embargo, se ha evidenciado que ciertos factores, algunos reflejados en las medidas no arancelarias, obstaculizaron el intercambio comercial de este bien entre ambos estados. Por ende, el principal objetivo de la presente investigación es definir los factores que afectaron el comportamiento de dichas exportaciones al mercado asiático.
Se utilizó una metodología tipo mixto a fin de conocer el comportamiento de las variables estudiadas. Esta metodología tiene dos enfoques, un enfoque cualitativo y un enfoque cuantitativo. Para el cualitativo, se emplearon entrevistas a profundidad, las cuales fueron aplicadas a instituciones y empresas exportadoras con amplio conocimiento en el sector. Para el análisis cuantitativo, se usó el modelo de regresión múltiple cuyos datos fueron obtenidos del ADEX DATA TRADE, VERITRADE y OMC.
Entre los resultados, se obtuvo que la calidad, las Medidas sanitarias y fitosanitarias y el precio de exportación fueron los factores que más impactaron en el dinamismo de las exportaciones de mangos frescos a Corea del Sur. / The main objective of this research is determine the factors that affected the dynamism of Peruvian fresh mango exports within the framework of Peru's Free Trade Agreement (FTA) to South Korea in a period during 2015 and 2020. Mango has become In one of the main export products of the agro-export sector, however, it has been shown that certain factors, some reflected in the non-tariff measures, hindered the commercial exchange of this good between both states. Therefore, the main objective of this research is to define the factors that affected the behavior of said exports to the Asian market.
A mixed type methodology was used in order to know the behavior of the variables studied. This methodology has two approaches, a qualitative approach and a quantitative approach. For the qualitative, in-depth interviews were used, which were applied to institutions and exporting companies with extensive knowledge in the sector. For the quantitative analysis, the multiple regression model was used whose data were obtained from ADEX DATA TRADE, VERITRADE and OMC.
Among the results, it was obtained that quality, sanitary and phytosanitary measures and export price were the factors that had the most impact on the dynamism of fresh mango exports to South Korea. / Tesis

El objetivo del presente trabajo es proponer un proceso logístico basado en un modelo SCOR usando las herramientas de gestión por procesos con la finalidad de incrementar la productividad de las Mypes del sector manguero en la provincia de Casma en el departamento de Ancash, Perú. Por ello, se delimitó una muestra en base a los agricultores de mango para realizar entrevistas a profundidad y obtener información relevante para el estudio. La información obtenida sirvió para determinar la problemática actual que existe en este sector. Los resultados evidenciaron las deficiencias en las Mypes de Mango en Casma, como la deficiencia en la planificación, calidad, control de recursos, proceso productivo y proceso de apoyo en toda la cadena de abastecimiento; además, no llevan registros ni la documentación adecuada. Como parte de la propuesta, se relacionó los resultados con el proceso logístico utilizando la metodología SCOR para establecer los procesos básicos en logística; y la herramienta de gestión por procesos para la caracterización correspondiente. Se evidenciaron 3 subprocesos críticos asociados a la gestión logística, de los cuales se enfatizó el desarrollo de la presente tesis: Aprovisionamiento, Almacenamiento y Distribución. / The fundamental purpose of this project is to propose a logistics process based on a SCOR model using process management tools to increase the productivity of Mango MSEs in the province of Casma.
Therefore, a sample was delimited based on mango farmers to conduct in-depth interviews and obtain relevant information for the study. The information obtained served to determine the current problems in this sector.
The results showed the deficiencies in the Mango MSEs in Casma, such as the deficiency in planning, quality, control of resources, production process and support process throughout the supply chain; furthermore, they do not keep records or adequate documentation . As part of the proposal, the results were related to the logistics process using the SCOR methodology to establish the basic processes in logistics; and the process management tool for the corresponding characterization. La firma de Tratados de Libre Comercio (TLC) ha sido considerada como una herramienta de acceso a mercados, sin embargo, para el caso de los productos agrícolas frescos, el acceso real y efectivo a mercado internacionales se da gracias a las medidas fitosanitarias (Valverde, 2015). En el caso de la exportación de mangos frescos peruanos a Corea del Sur, recién fue posible luego de la entrada en vigor de las medidas fitosanitarias consensuadas entre las ONPF’s de ambos países en el 2015, a pesar de contar con un TLC con dicho país desde el 2011.
En ese sentido, el objetivo de esta investigación es conocer las consecuencias de la implementación de las medidas fitosanitarias consensuadas entre ambos países para la exportación de mango fresco a Corea del Sur durante el periodo 2015-2020. Se utilizó un enfoque cualitativo con teoría fundamentada. Para ello, se realizaron entrevistas semiestructuradas a ocho profesionales de las principales empresas agroexportadoras de mango fresco a Corea del Sur, diez productores de la lista de huertos certificados para la exportación de mango fresco a Corea del Sur y a representantes del gremio agroexportador y del sector público.
Como resultado, se validó que la implementación de las medidas fitosanitarias consensuadas de manera bilateral generó un costo significativo por el proceso del tratamiento hidrotérmico exigido para la exportación de mango fresco a Corea del Sur. Al no estar permitido el uso de un método de enfriamiento rápido, dicho tratamiento puede dañar la calidad de la fruta, acelerar su maduración y reducir el tiempo de vida útil Finalmente, en el presente trabajo se encontró que aún existe cierta informalidad en los productores y acopiadores de mango, y que las medidas fitosanitarias ayudan en la diversificación del mercado, pero que aún se requiere de una mayor promoción comercial en el país asiático. / The signing of Free Trade Agreements (FTA) has been considered as a market access tool, however, in the case of fresh agricultural products, real and effective access to international markets is due to phytosanitary measures (Valverde, 2015). In the case of the export of fresh Peruvian mangoes to South Korea, it was only possible after the entry into force of the phytosanitary measures agreed between the NPPOs of both countries in 2015, despite having an FTA with that country since 2011.
In this sense, the objective of this research is to know the consequences of the implementation of phytosanitary measures agreed between both countries for the export of fresh mango to South Korea during the period 2015-2020. A qualitative approach with grounded theory was used. For this, semi-structured interviews were conducted with eight professionals from the main agro-export companies of fresh mango to South Korea, ten producers from the list of certified orchards for the export of fresh mango to South Korea, and representatives of the agro-export union and the public sector.
As a result, it was validated that the implementation of bilaterally agreed phytosanitary measures generated a significant cost for the hot-water treatment process required for the export of fresh mango to South Korea. As the use of a rapid cooling method is not allowed, such treatment can damage the quality of the fruit, accelerate its ripening and reduce its shelf life. Finally, in the present paper, it was found that there is still some informality in the producers and mango collectors, and that phytosanitary measures help in the market diversification, but that greater commercial promotion is still required in the Asian country. / Tesis

Garras con sensores táctiles intrínsecos para manipular alimentos con robotsBlanes Campos, Carlos 01 September 2016 (has links)
[EN] The primary handling of food with robots calls for the development of new manipulation devices, especially when products are easily damaged and have a wide range of shapes and textures. These difficulties are even greater in the agricultural industry because the quality of the products is also checked during the manual handling process. This PhD dissertation provides solutions to these issues and helps to further introduce robotics into the handling of food.
Several methods for handling food are included and analyzed, and specific solutions are proposed and then validated with prototypes. The research focuses on devices capable of adapting themselves to the shapes of the products without increasing the complexity of the mechanism. After analyzing several different solutions, the method chosen involves the use of under-actuated mechanisms, compliant mechanisms and fingers with pads filled with granular fluids. These fluids can behave as quasi-liquids or quasi-solids due to the jamming transition, which provides a soft initial grasp and can support high stresses during fast movements performed by the robot.
The additive manufacturing process provides an opportunity to develop robot grippers that are lighter, simpler, more flexible and cheaper. By using this process elastic mechanisms are manufactured in a single part, which are equivalent to mechanisms with several rigid parts connected by joints. Laser sintering is employed to produce pneumatic actuators, with different types of motions, based on the elastic properties of the materials used in this manufacturing process. As a result, the systems can be simplified to achieve grippers, with several fingers, that are produced as a single part.
In order to estimate the freshness and quality of agricultural products while they are being grasped, accelerometers are added to the fingers of several grippers. Accelerometers are economical and act as intrinsic tactile sensors. They can be easily embedded, thereby reducing the risk of getting damaged due to contact with the product, and allow each of the grasping phases to be identified. To achieve good performance of the accelerometers, a specific process is defined for the robot gripper, which touches the products a few times. In addition, several gripper prototypes are manufactured with diverse under-actuated mechanisms, jamming systems, and a new program that processes the signals from the accelerometers using different procedures in order to obtain parameters that can be used to estimate the quality of products. These parameters are correlated with data from destructive tests that are commonly used as a reference. The best performance of the accelerometers is achieved when the finger employs a granular fluid, a correlation coefficient of 0.937 being accomplished for the ripeness of mangoes and 0.872 for the firmness of eggplants. / [ES] La manipulación primaria de alimentos con robots precisa del desarrollo de nuevos sistemas de manipulación especialmente cuando los productos son sensibles al daño y presentan una amplia variabilidad de formas y texturas. En el sector agroalimentario las dificultades son aún mayores ya que la manipulación manual sirve además para inspeccionar los productos durante el proceso. Está tesis aporta soluciones a estos problemas facilitando la incorporación de la robótica.
En la tesis se recopilan y analizan diversas soluciones para poder manipular alimentos proponiendo soluciones concretas que luego son validadas con prototipos. La investigación se centra en aquellos sistemas que son capaces de auto adaptarse a las formas de los productos sin incrementar la complejidad del mecanismo. Tras analizar diversas técnicas se propone el uso de mecanismos infra-actuados, mecanismos flexibles y dedos con fluidos granulares que, al estar encerrados dentro de una membrana, se comportan como cuasi-líquidos o cuasi-sólidos gracias a la transición jamming, permitiendo un agarre inicial suave y la posibilidad de transmitir esfuerzos elevados durante los movimientos del robot.
En la búsqueda de garras más ligeras, sencillas, flexibles y económicas se aprovecha la oportunidad que brinda la tecnología de fabricación aditiva de material. Gracias a este proceso se fabrican mecanismos flexibles realizados en una única pieza y que equivalen a mecanismos de garras realizados con varias piezas rígidas unidos por articulaciones. Mediante el sinterizado por láser, se fabrican actuadores neumáticos, con diversos tipos de movimiento, basados en la flexibilidad del material empleado en su fabricación. En conjunto se simplifican los sistemas llegando a realizar garras flexibles de varios dedos fabricadas en una única pieza.
Para evaluar la calidad y frescura de los productos agroalimentarios durante el agarre se emplean acelerómetros localizados en los dedos de varias garras. Los acelerómetros son económicos y se comportan como sensores táctiles intrínsecos, están fuera del contacto directo con el producto evitando desgastes por contacto y permiten identificar las distintas fases de agarre. Para lograr esto se desarrolla un proceso específico del robot con la garra, que palpa varias veces el producto. Se fabrican diversos tipos de garra con distintas tecnologías de mecanismos infra-actuados y sistemas jamming y se programa un algoritmo original de procesado de señal que con diversas técnicas es capaz de extraer parámetros de los acelerómetros que sirven para evaluar la calidad de los productos. Estos parámetros son correlacionados con los datos de ensayos destructivos que son habitualmente empleados como referencia. Las mejores capacidades se consiguen empleando garras con jamming lográndose coeficientes de correlación de 0.937 en índices de madurez con mangos y 0.872 en firmeza de berenjenas. / [CA] La manipulació primària d'aliments amb robots precisa del desenvolupament de nous sistemes de manipulació especialment quan els productes són sensibles al dany i presenten una àmplia variabilitat de formes i textures. En el sector agroalimentari les dificultats són encara més grans ja que la manipulació manual serveix a més per a inspeccionar els productes durant el procés. Aquesta tesi aporta solucions a aquests problemes facilitant la incorporació de la robòtica.
En la tesi es recopilen i analitzen diverses solucions per a poder manipular aliments proposant solucions concretes que després són validades amb prototips. La investigació es centra en aquells sistemes que són capaços d'auto adaptar-se a la forma dels productes sense incrementar la complexitat del mecanisme. Després d'analitzar diverses tècniques es proposa l'ús de mecanismes infra-actuats, mecanismes flexibles i dits amb fluids granulars que, tancats dins d'una membrana, es comporten com quasi-líquids o quasi-sòlids gràcies a la transició jamming, permetent una prensió inicial suau i la possibilitat de transmetre esforços elevats durant els moviments del robot.
En la recerca d'urpes més lleugeres, senzilles, flexibles i econòmiques s'aprofita l'oportunitat que brinda la tecnologia de fabricació additiva de material. Gràcies a aquest procés es fabriquen mecanismes flexibles realitzats en una única peça i que equivalen a mecanismes d'urpes realitzats amb diverses peces rígides unides per articulacions. Mitjançant el sinteritzat per làser, es fabriquen actuadors pneumàtics, amb diversos tipus de moviment, basats en la flexibilitat del material emprat en la seva fabricació. En conjunt es simplifiquen els sistemes arribant a realitzar urpes flexibles de diversos dits fabricades en una única peça.
Per a avaluar la qualitat i frescor dels productes agroalimentaris durant la manipulació s'empren acceleròmetres localitzats en els dits de diverses urpes. Els acceleròmetres són econòmics i es comporten com a sensors tàctils intrínsecs, sense estar en contacte directe amb el producte evitant desgastos per aquest motiu, i permeten identificar les diferents fases d'prensió. Per aconseguir això es desenvolupa un procés específic del robot amb l'urpa, que palpa diverses vegades el producte. Es fabriquen diversos tipus d'urpa amb diferents tecnologies de mecanismes infra-actuats i sistemes jamming i es programa un algoritme original de processat de senyal que, amb diverses tècniques, és capaç d'extreure paràmetres dels acceleròmetres que serveixen per a avaluar la qualitat dels productes. Aquests paràmetres són correlacionats amb les dades d'assajos destructius que són habitualment emprats com a referència. Les millors capacitats s'aconsegueixen emprant urpes amb jamming assolint-se coeficients de correlació de 0,937 en índexs de maduresa amb mangos i 0,872 en fermesa d'albergínies. / Blanes Campos, C. MANGO - Generating 2D-Magnetic Field Maps From Normal-Conducting Magnets Of Experimental Areas / MANGO - Generering av 2D-magnetfältskartor för elektromagneter i CERNs experimentområdenVisive, Ambre January 2023 (has links)
This thesis discusses the development of MANGO, a tool created to model normal-conducting magnets which were installed in the 1970s in the experimental areas at CERN, and store their analysis. MANGO formulates an answer to two problems faced by the physicists of the Beam Department when they model a beam line: first, how to produce new magnetic field maps and, second, how to easily access existing ones? It contains a multi-use package that offers an automated process to produce magnetic field maps from finite-element models of magnets. In addition, the package can visualise the field density or the flux lines of a magnet, and can benchmark a model and automatically store the solutions in a database, while tailoring its content to the level of expertise in electromagnetism and finite-elements modelling of the users. To development of the tool starts by modelling the different types of the normal-conducting magnets using two-dimensional finite element modelling (Opera-2D). After the successful development of one finite element model, it is benchmarked to justify its use in the creation of magnetic field maps. To address the second challenge and avoid any duplication of work, MANGO integrates a Git repository with submodules, where the finite-element models, the magnetic field maps and the documentation are stored. / I detta examensarbete diskuteras utvecklingen av MANGO, ett verktyg som skapats för att modellera normalkonduktiva elektromagneter, som installerades på 1970-talet i CERN:s experimentområden, och lagra deras analys. Mer specifikt formulerar MANGO ett svar på två problem som fysiker vid Beam Department står inför när de modellerar en partikelstrållinje. Hur skapar man nya magnetfältskartor och, hur får man enkelt tillgång till nuvarande magnetfältskartor? Det innehåller ett programbibliotek med flera användningsområden, som skapar nya magnetfältskartor från nuvarande magnetmodeller, som skapas av programbibliotek självt. För att utveckla MANGO börjar författaren med att modellera de olika typerna av normalkonduktiva elektromagneter med hjälp av tvådimensionell finit elementmodellering (Opera-2D). Efter den framgångsrika utvecklingen av en finit elementmodell, fortsätter författaren med benchmarking av modell för att motivera dess användning inom skapandet av magnetfältskartor. För att besvara det andra problemet integrerar MANGO ett Git-databas där finita elementmodellerna, magnetfältskartorna och dokumentationen lagras, för att undvika dubbelarbete. Git databas har undermoduler för att kunna skapa olika åtkomster per användarnivå.

O objetivo principal deste estudo foi o desenvolvimento e validação de metodologia de análise de multiresíduos para quantificação de resíduos de pesticidas em manga. Foram analisados 32 pesticidas, sendo dos seguintes grupos: 9 Organofosforados, 17 Organoclorados e 6 triazois sendo que neste mesmo método foi analisado novamente o Organofosforado fention. Os organofosforados foram analisados em cromatógrafo a gás (CG) acoplado ao detector fotométrico de chamas e os organoclorados foram analisados em cromatógrafo a gás (CG) acoplado ao detector de captura de elétrons (ECD). Os triazois foram analisados em cromatógrafo a gás acoplado a espectrômetro de massa (CG/MS). A curva de linearidade para todos os padrões analíticos, foi realizada em triplicata e com 6 diferentes concentrações. As fortificações das amostras foram realizadas em dois níveis de concentração, no limite do método e 10 vezes o limite do método, sendo que a concentração do limite de quantificação do método (LOQ) foi realizada com sete repetições (N= 7) e a concentração de 10 vezes o LOQ foi realizada com N= 5, usando-se mangas tratadas no sistema orgânico (livres de pesticidas). Os métodos desenvolvidos e validados neste estudo apresentaram-se: a) Linear na faixa de: 0,1 - 4,0 µg/mL para o triclorfon e malation; 0,05 2,0 µg/mL para os demais organofosforados; 0,05 1,6 µg/mL para os organoclorados; 0,1 1,0 µg/mL para o paclobutrazol; 0,25 - 2,5 µg/mL para o fention e bromuconazol; 0,5 5,0 µg/mL para o tetraconazol e tebuconazol e 1,0 10 µg/mL para o procloraz e difenoconazol respectivamente, uma vez que o coeficiente de determinação foi maior que 0,99 para todos os ativos. b) Específicos, pois o nível de contaminação e/ou interferente na análise do branco dos reagentes e da amostra testemunha, foram inferiores a 30% do limite de quantificação. c) Exato, Preciso e Repetitivo, pois todos os ativos apresentaram recuperação dentro do intervalo de aceitabilidade de 70 a 120%, com coeficiente de variação porcentual (CV%) inferior a 15% em relação à média global de todos os níveis de fortificação. Foram também analisados os mesmos pesticidas em 15 amostras de mangas compradas nos supermercados de Piracicaba, procedentes do Nordeste do Brasil. Em nenhuma das amostras foram encontrados resíduos acima do limite estabelecido por lei ou acima do limite de quantificação deste método, no caso dos pesticidas não autorizados. / The principal objective of this study was the development and validation of a multiresidue analytical methodology for the quantification of pesticide residues in mangos. Quantitative analyses were made for 32 pesticides, from the following classes: organophosphorus (9), organochlorine (17) and triazole (6). The results from the method include the first analysis for the organophosphorus pesticide fenthion. The organophosphorus pesticides were analyzed by a gas chromatograph (GC) coupled to a flame photometric detector, while the organochlorine pesticides were analyzed using a gas chromatograph (GC) coupled to an electron capture detector (ECD). The triazoles were analyzed with a gas chromatograph coupled to a mass spectrometer (GC/MS). For each of the analytes, calibration curves were constructed in triplicate using solutions with six different concentrations, prepared from the analytical standards. Recovery experiments were performed at two levels of fortification, the limit of quantification of the method (LOQ) and 10 times this limit. Seven repetitions (N = 7) were performed at the limit of quantification, and five (N = 5) at the 10 times higher level of fortification. Mangos raised by organic farming methods (free from pesticides) were used for the recovery experiments. The methods developed and validated in this study have the following characteristics: a) linear range: 0.1 4.0 µg/mL for trichlorfon and malathion; 0.05 2.0 µg/mL for the other organophosphorus pesticides; 0.05 1.6 µg/mL for the organochloro pesticides; 0.1 1.0 µg/mL for paclobutrazol; 0.25 2.5 µg/mL for fenthion and bromuconazole; 0.5 5.0 µg/mL for tetraconazole and tebuconazole; and 1.0 10.0 µg/mL for prochloraz and difenoconazole, in each case the coefficient of determination was greater than 0.99. b) Specific: thus the level of contamination and/or intereference in analysis from the reagent blank and the control sample amounted to less than 30% of the limit of quantification. c) Exact, Precise and Repeatable, for each of the analytes the recovery was found to be within the acceptable interval of 70 to 120%, and with a coefficient of variation, expressed as a percentage, of less than 15% in relation to the global average of the results obtained at the two levels of fortification. Analyses were made for the same pesticides in 15 samples of mangos bought from supermarkets in Piracicaba, which were raised in the Northeast of Brazil. None of these samples contained residue concentrations above the limit established by law or, in the case of non-authorized pesticides, above the limit of the quantification of the current methodology.

Characterization and application of fruit byproducts in the development of beef burger and corn extruded product / Caracterização e aplicação de subprodutos de frutas no desenvolvimento de hambúrguer bovino e extrusado de milhoSelani, Miriam Mabel 17 September 2015 (has links)
This study aimed to characterize pineapple, passion fruit and mango byproducts and select the material with the greatest potential as food ingredient to be applied in two food products: beef burger and corn extruded product. Fiber was the major component present in pineapple and passion fruit byproducts (>50%), and, due to this, they showed considerable water holding capacity. The fruit byproducts had considerable phenolic content and antioxidant activity, especially the mango byproduct. The results of the microbial counts and the content of pesticides residues of the byproducts were within the limits established by the Brazilian law and were safe for food application. Due to the high fiber amount and the functional properties presented, the byproducts were explored considering this potential. Thus, the sample with the best results was selected and evaluated as partial fat replacer in beef burger and as source of fiber in a corn extruded product. The first step of the beef burger application evaluated each byproduct in four concentrations (1.0, 1.5, 2.0, and 2.5%), along with canola oil, as partial fat replacers. All byproducts improved the cooking properties of the burgers, especially the pineapple. Sensory analysis showed that color, odor and overall acceptance were not affected by the treatments. Based on the results, pineapple byproduct, at the concentration of 1.5%, was selected for further studies. Pineapple byproduct (1.5%) and canola oil (5%) were evaluated as partial animal fat replacers in low-fat beef burger. Five treatments were performed: conventional (20% fat) and four formulations with 10% of fat: control, with pineapple byproduct, with canola oil, and with pineapple byproduct and canola oil. Pineapple byproduct incorporation improved the cooking properties and the texture (shear force) and canola oil addition improved the lipid profile, without reducing the shelf life of the burgers. The quantitative descriptive analysis indicated that the use of the two fat replacers together can be an alternative choice to minimize the sensory alterations of the fat reduction. As the final step of this study, the potential application of pineapple byproduct in a corn extruded product for fiber enhancement was evaluated. During extrusion, byproduct (0, 10.5, and 21%), moisture (14, 15, and 16%) and temperature (140 and 160 °C) were evaluated. Pineapple byproduct addition decreased expansion and luminosity, while increasing redness of the extrudates compared to the control (0% byproduct/14% moisture/140 °C). When hardness, yellowness, water absorption, and bulk density were compared to the control, there was no effect of 10.5% addition on the extrudates, indicating that, at this level, pineapple byproduct could be added without promoting significant alterations in the properties of the final extruded product. The results of this study highlight the potential of pineapple byproduct in the development of new products, bringing the opportunity to convert them into value-added food ingredients. / Este estudo objetivou caracterizar subprodutos de abacaxi, maracujá e manga e selecionar aquele com maior potencial como ingrediente alimentício para ser aplicado em dois produtos: hambúrguer bovino e extrusado de milho. A fibra foi o maior componente presente nos subprodutos de abacaxi e maracujá (>50%) e, devido a isto, eles mostraram considerável capacidade de retenção de água. Os subprodutos de frutas apresentaram teor de compostos fenólicos e atividade antioxidante considerável, especialmente o de manga. Os resultados das contagens microbianas e dos teores de resíduos de agrotóxicos dos subprodutos apresentaram-se dentro dos limites estabelecidos pela legislação brasileira, estando seguros para aplicação em alimentos. Devido ao alto teor de fibra e às propriedades funcionais apresentadas, os subprodutos foram explorados considerando-se este potencial. Dessa forma, a amostra com melhores resultados foi selecionada e avaliada como substituto parcial de gordura em hambúrguer bovino e como fonte de fibras em extrusado de milho. A primeira etapa da aplicação em hambúrguer bovino avaliou cada subproduto em quatro concentrações (1,0, 1,5, 2,0 e 2,5%), juntamente com o óleo de canola, como substitutos parciais de gordura. Todos os subprodutos melhoraram as propriedades de cozimento dos hambúrgueres, especialmente o de abacaxi. A análise sensorial mostrou que cor, odor e aceitação global não foram afetados pelos tratamentos. Através dos resultados, o subproduto de abacaxi, na concentração de 1,5%, foi selecionado para estudos complementares. Subproduto de abacaxi (1,5%) e óleo de canola (5%) foram avaliados como substitutos parciais de gordura animal em hambúrguer bovino com teor reduzido de gordura. Cinco tratamentos foram realizados: convencional (20% gordura) e quatro formulações com 10% de gordura: controle, com subproduto de abacaxi, com óleo de canola, e com subproduto de abacaxi e óleo de canola. A incorporação do subproduto de abacaxi melhorou as propriedades de cozimento e a textura (força de cisalhamento) e a adição do óleo de canola melhorou o perfil lipídico, sem reduzir a vida útil dos hambúrgueres. A análise descritiva quantitativa indicou que o uso dos dois substitutos de gordura em conjunto pode ser uma alternativa adequada para minimizar alterações sensoriais da redução da gordura. Como fase final deste estudo, o potencial da aplicação de subproduto de abacaxi em extrusado de milho visando o aumento do teor de fibras foi avaliado. Durante a extrusão, subproduto (0, 10,5, 21%), umidade (14, 15, e 16%) e temperatura (140 e 160 °C) foram avaliados. A adição do subproduto de abacaxi diminuiu a expansão e a luminosidade, enquanto que aumentou a intensidade de cor vermelha dos extrusados comparados com o controle (0% subproduto/14% umidade/140 °C). Quando a dureza, intensidade de cor amarela, absorção de água e densidade foram comparadas com o controle, não houve efeito da adição de 10,5% sobre os extrusados, indicando que, neste nível, o subproduto de abacaxi pode ser adicionado, sem promover alterações significativas sobre as propriedades do produto final. Os resultados deste estudo destacam o potencial do subproduto de abacaxi no desenvolvimento de novos produtos, trazendo a oportunidade de convertê-los em ingredientes alimentícios com valor agregado.

A influência do efeito matriz na determinação dos pesticidas organoclorados e organofosforados em amostras de manga / Influence of matrix effect on the determination of organochlorine and organophosphorus pesticides in mango samplesVieira, Eliane 11 March 2003 (has links)
Devido à importância da agricultura para a economia do Brasil e para a dieta da população brasileira, um esforço contínuo tem sido feito para preservar a qualidade dos alimentos. Um dos mais importantes critérios de qualidade é a concentração correta dos pesticidas ou a não detecção destes nos alimentos. O objetivo deste trabalho é estudar o efeito matriz na analise de resíduos de pesticidas por cromatografia à gás em manga, a contaminação de mangas compradas na cidade de São Paulo por pesticidas e a otimização de um método multiresíduo neste tipo de matriz. O método empregado foi o utilizado pelo Governo Holandês adaptado de Lucke (1975), e constou da extração com acetona e partição em uma mistura diclorometano:hexano 1:1. O extrato foi concentrado e injetado em cromatógrafo à gás com detector de captura de elétrons e detector fotométrico de chama. Foram analisados 23 princípios ativos diferentes entre herbicidas, inseticidas, fungicidas e acaricidas; a metodologia empregada permitiu um limite de quantificação que variou de 0,01 mg/Kg a 0,30 mg/Kg. A recuperação de amostras fortificadas variou de 70 a 120%. Os resultados mostraram que a matriz apresenta uma grande influência na determinação dos princípios ativos Procloraz, Difenoconazol, Fosmete, Azoxistrobina e sulfato Endosulfam; o único princípio ativo encontrado nas amostras compradas no varejo foi o fungicida Procloraz com valores permitidos pela Legislação Brasileira. / Due to the importance of Agriculture for the economy of Brazil and for the diet of Brazilian population, a continuous effort is being made to preserve its high quality characteristics. One of the most important quality criteria is the right concentration or better not detectable pesticide residues. This work had the objective to study the matrix enhancement effect in gas chromatographic analysis of pesticide residue in mango fruit; the contamination of mango fruit by pesticide bought in Sao Paulo city and the optimization of the multiresidue method in this matrix. The employed method in the analysis was adapted from Lucke (1975), used by Netherlands Government; extraction with acetone and partition in a dichlorometane:hexane (1:1), and Gas Chromatographic determination with ECD and FPD. We studied about 23 active substances among herbicides, fungicides, insecticides and acaricides, the developed method allowed a quantification limit ranging from 0,01 mg/Kg to 0,30 mg/Kg. The recoveries of fortified samples ranged from 70 to 120%. The results showed that the matrix had a effect in the determination of the pesticides: prochoraz,difenoconazol, Fosmete, Azoxistrobina and Endosulfam Sulfate. It was found that the mango fruit were contaminated only by Procloraz; according to the Brazilian legislation, this pesticide can be present in mango.
