Production Of Cacao Micro And Nano Fibers And Utilization In Cakes

The main objective of this study was to investigate micro and nano cacao fibers and their effects on quality, texture and staling of cakes. In the first part of the study, rheological properties of cake batter with different concentrations (0 %, 3 %, 6 %, 9 %, 12 %) cacao micro and nano fiber, and cacao powder were determined. Cake batter was found to show shear thinning and time independent behavior for all formulations and fit the Power Law model. The viscosity increased as the percentage of fiber increased. Both G&rsquo / and G&rsquo / &rsquo / values increased with oscillatory frequency and percentage of fiber. In the second part of the study, physical properties (specific volume, texture, color and weight loss), sensory properties of cakes and textural changes during storage were determined. Addition of micro and nano cacao fibers to the cake formulation decreased specific volume, weight loss and L* values. It increased hardness, springiness, chewiness, resilience and elastic recovery values and minimized textural changes during storage. Fiber addition also improved the cake acceptability of the cakes in terms of odor, taste and color.

Ce travail de thèse repose sur l'étude d’un objet original : des particules solides poreuses imprégnées de liquide non volatil. L'objectif principal de cette thèse est de démontrer le potentiel d’un tel système pour des applications innovantes dans le domaine du traitement de gaz en lit fixe en particulier. Le premier axe de recherche de notre travail concerne l’étude détaillée des processus d’imprégnation de particules de silice par un liquide. Une partie importante du travail est dédiée à la caractérisation des particules imprégnées par une méthode innovante basée sur la rhéologie des poudres très sensible aux changements de surface qui permet de décrire de façon précise l’état d’une particule imprégnée et de comprendre la dynamique du processus d'imprégnation. Une évolution en trois étapes est proposée : adsorption du polymère, infiltration dans les pores et enrobage de la particule. Une seconde partie concerne une étude des propriétés thermodynamiques de plusieurs systèmes liquide – gaz pour identifier le type d’application et le type de composés pour lesquels ce système pourrait s'avérer intéressant. Le système N2-CO2 avec une amine polymère a été choisi pour l’étude expérimentale. Dans la dernière partie, un modèle du procédé est présenté pour simuler les performances de nos particules imprégnées en lit fixe. Ce modèle est validé avec nos résultats expérimentaux. The aim of this work is to show the potential of such a system for applications in the area of gas treatment on fixed beds. The first part of our work is dedicated to the impregnation process and the characterization of such particles by an innovative technique based on powder rheology. This technique is very sensitive to changes on the surface of the particles and helps to understand the impregnation process. Three stages of impregnation are proposed: adsorption of the polymer, filling of the pores and coating of the outer surface. The second part is focused on a thermodynamic study of the properties of some gas-absorbent systems in order to identify the systems for which the retention capacity would be important. The absorbents are compared to activated carbon. A system N2-CO2 with a polymer amine was selected to impregnate the particles and carry out the experimental tests. A model of the process is presented in order to simulate and anticipate the performance of the particles for different operating conditions. The goal of this simulation is to identify the optimal conditions for the absorption-desorption cycles in which the values of recuperation and concentration of CO2 would be maximal

Powder Rheology within AM production : Evaluating Compressibility, Permability, & Aeration for 316L Powders Within SLM Processes / Pulver Reologi Inom AM Production : Utvärdering av Kompressibilitet, Permeabilitet, och Luftning för 316L pulver inom SLM processer

Additive manufacturing with the use of metals have been a steadily increasing field, being able to create products with a higher degree of complexity than traditional processing techniques. SLM is a popular AM process that uses metal powder as feedstock, and one of the key components of this process is the powder rheology. In recent years the use of a powder rheometer has been shown to be a good way of evaluating powder rheology of metal powders used within AM processes, but there is a clear lack of standardised tests and methods. In this study the Compressibility, Permeability, and Aeration test for 316L powders used within SLM processes was evaluated with a FT4 powder rheometer. 15 powders that had undergone printing in SLM processes were studied. This showed that the compressibility test had the best results in differentiating the bad preforming powders, thereafter the Aeration test. The Permeability test wasn’t able to differentiate the bad preforming powders with the settings used. This study demonstrates that some tests with a powder rheometer can evaluate the powder performance in SLM processes, but further research to evaluate the tests and standardise the settings are needed for clearer test results. / Additiv tillverkning med metall är ett område som stadigt ökat i intresse, främst på grund av möjligheten att producera produkter med en mycket högre grad av komplexitet i jämförelse med traditionella processmetoder. SLM är en populär AM process som använder metallpulver som råmaterial, och en av huvudkomponenterna för processen är pulvrets reologi. Under senare år har användningen av en pulver-reometer visat sig ett bra sätt att utvärdera pulver-reologi för metallpulver som används inom AM, men det finns en klar avsaknad av standardiserade test och metoder. I denna studie utvärderas Kompressabilitet, Permeabilitet, och Aerabilitet testen för 316L pulver producerade för SLM processer med en FT4 pulver-reometer. 15 pulver som genomgått SLM printing studerades. Studien visar att kompressabilitets testets utfall bäst överensstämde med det som setts under SLM processen, och bäst urskilde pulvren som fungerat dåligt att printa med, därefter Aerations testet. Permeabilitets testet kunde inte urskilja de sämre pulvren med de inställningarna som användes. Studien demonstrerar att vissa test och index samlade med ett pulver reometer är mer tillförlitliga än andra när det gäller för att utvärdera pulvrets prestanda inom SLM processer, men vidare forskning och studier krävs för att utvärdera testen och standardisera inställningar baserat på pulvret som testas.
