Em 2009, foi promulgada a Lei nº 11.947 do Programa Nacional de Alimentação Escolar (PNAE), que estipula o mínimo de 30 por cento de compra de gêneros alimentícios seja proveniente da agricultura familiar (AF), fazendo necessário conhecer seu efeito sobre a qualidade da alimentação escolar. O objetivo do estudo foi avaliar o efeito da implementação da Lei Federal 11.947/09 sob a qualidade nutricional dos cardápios propostos pelo PNAE do estado de São Paulo. O estudo teve o objetivo de avaliar o efeito da implentação da Lei Federal 11.947/09 na qualidade nutricional dos cardápios propostos pelo PNAE em municípios do estado de São Paulo. Trata-se de um estudo observacional analítico de cunho avaliativo baseado na tríade Estrutura Processo Resultado, com elaboração de matriz avaliativa. Foi realizado em 2013 com 38 municípios do estado de São Paulo divididos em 2 grupos: os que adquirem gêneros da AF e os que ainda não o fizeram. A coleta de dados primários foi através de questionário estruturado aplicado com nutricionistas e cardápios das escolas. Os alimentos dos cardápios foram analisados segundo a NOVA. Foram calculadas frequência absoluta, média e o teste exato de Fischer foi utilizado para a análise de associação. Um total de 25 municípios adquiriam algum gênero alimentício da AF e 18 não implementaram as compras. Os municípios que adquirem gêneros alimentícios da AF têm prevalência de 76 por cento para cozinheiros escolares em número suficiente e de 60 por cento para realização de ações de apoio aos agricultores familiares da região (p >0,05). Quase todas as cidades atentem a legislação quanto a oferta mínima de 3 porções de frutas ou hortaliças e máximo de 2 porções doces. Evidenciou-se que 77,8 por cento dos municípios que adquirem gêneros da AF, atendem a exigência mínima da lei de 70 por cento de alimentos básicos nos cardápios e, 83,3 por cento deste grupo de cidades estão em acordo limite de 30 por cento de alimentos restritos. Houve maior participação média dos alimentos ultraprocessados no lanche em relação à refeição em ambos os grupos de municípios. Os achados permitem refletir que a aquisição de alimentos da AF não foi suficiente para promover cardápios de melhor qualidade nutricional, sugerindo que o marco legal apresenta lacunas quanto a definição dos alimentos que devem compor os cardápios, sendo permissivo quanto ao uso de alimentos ultraprocessados / The Brazilian Federal Law no. 11.947 of the National School Feeding Program (PNAE) was published in 2009 sets a minimum of 30 per cent of purchase of food comes from the family farming (AF) and its effect on food quality of the school must be known. Management of the school nutrition programme at primary schools in Tembisa

The purpose of this study was to explore the extent to which principals and school nutrition programme coordinators (nutrition coordinators) manage the responsibility of ensuring that the nutrition programme is implemented at their schools without interfering with the process of teaching and learning. The study includes a literature review and an empirical investigation. The specific knowledge gained from this research may add to the body of knowledge in the field of Education Management and should inform educators, principals, policy makers and individuals concerned with the management of school nutrition programmes on strategies that could be applied in managing the primary school nutrition programme. The data was collected by administering semi-structured interviews and observations. Five public primary school principals and five coordinators from Tembisa on the eastern outskirts of Johannesburg (Gauteng, South Africa) were interviewed. The results showed that the majority of principals and coordinators admitted that the programme enhanced learners’ performance at school, but felt that there were specific challenges in managing the programme. Some of the principals and coordinators experienced the programme as an additional burden to the educators who were already overloaded with curriculum lessons. Most of the schools indicated that feeding time sometimes overlapped with the learners’ class time, due to the large number of learners being served by one food handler. This study recommends that the SGB should reconsider the installation of food preparation facilities at schools. Other mechanisms should be sought to relieve the already overburdened educators from running the programme. Measuring scales should be available at all schools to ensure that the weight of delivered food items agree with the kilograms stated on the delivery invoice. The Department of Education should involve experts when planning the menu to warrant better nutritional value and effective delivery of the school nutrition programme. The Effect Of Nutrition Knowledge On Food Choices And Body Mass Index Percentile Rankings Of Elementary School Children: Result

The prevalence of overweight and obese children has increased dramatically in the United States over the past 20 years and is a symptom of multiple systemic and cultural changes that have significantly influenced alterations in energy intake, energy expenditures, and the energy balance of children across the nation. School-based obesity prevention programs addressing nutrition and healthy eating behaviors within the school environment and cultural context provide a unique opportunity to educate and engage students in healthy food consumption practices. This study evaluated the effectiveness of a three-year elementary school nutrition education program for students in grades kindergarten through fifth using a longitudinal analysis of two separate data sets, a nutrition skills behavior assessment survey of self-reported eating behaviors, and body mass index (BMI) scores derived from height and weight measurements of program participants. Nutrition survey results indicated that students reported making healthier food choices from August 2001 to November 2004, with a significant decrease in reported consumption of fats/oils/sweets and significant increases in reported consumption of milk, meat, vegetables, fruit and grains. BMI results indicated a 7.8% decline in the percentage of students in the "overweight" and "at-risk for overweight" categories between August 2001 and October 2004. The combined results of both measures indicate that the nutrition education program appeared to positively affect eating behaviors and body mass index percentages. Implications of the study and strategies for further research are proposed.

CoordenaÃÃo de AperfeiÃoamento de Pessoal de NÃvel Superior / A pesquisa tem como objeto de estudo o Programa Nacional de AlimentaÃÃo â PNAE. O programa tem garantido a participaÃÃo dos estados e municÃpios na gestÃo e controle dos recursos destinados à alimentaÃÃo escolar. PorÃm, a burocracia ainda marca alguns procedimentos, sobretudo para os pequenos produtores rurais, como a dificuldade de cadastro nos programas de governo por parte dos trabalhadores devido à intensa burocracia. Levando-se em conta este panorama, esta pesquisa teve como objetivo geral analisar o PNAE sob a Ãtica de fortalecimento e de desenvolvimento da agricultura familiar e comunitÃria e de seguranÃa alimentar e nutricional. Como objetivos especÃficos, pretendeu-se identificar no universo da produÃÃo agrÃcola familiar do municÃpio de CanindÃ, os alimentos que podem integrar os cardÃpios da alimentaÃÃo escolar; explicitar formas de inclusÃo dos pequenos produtores rurais como fornecedores do PNAE no municÃpio de Quixadà e discutir o conceito de SeguranÃa Alimentar e Nutricional - SAN e o Direito Humano à AlimentaÃÃo adequada - DHAA no SertÃo Cearense. Foram entrevistados os representantes das entidades pÃblicas diretamente envolvidas com a agricultura familiar de QuixadÃ, alÃm do gestor da merenda em uma escola do municÃpio e a merendeira responsÃvel. Foi escolhido como procedimento metodolÃgico o Estudo de Caso, ancorado nos pressupostos de Nisbett e Watt (1978), que define a metodologia do estudo de caso de forma eclÃtica, incluindo, via de regra, observaÃÃo, entrevistas, fotografias, gravaÃÃes, anÃlise de documentos e anotaÃÃes de campo. Com este estudo, conclui-se que o Programa Nacional de AlimentaÃÃo Escolar tem fortalecido a agricultura familiar na regiÃo, por propiciar maior renda e estÃmulo ao plantio. Dessa maneira, fortalecendo a SAN e resgatando a possibilidade de novas reflexÃes acerca da alimentaÃÃo mais adequada. Por fim, o Biodiesel trouxe um cenÃrio diversificado à agricultura familiar, jà que o cultivo de oleoginosas estÃ, cada vez mais, fazendo parte da dinÃmica das pequenas e grandes propriedades rurais, levantando o debate sobre atà que ponto o programa irà fortalecer a longo prazo à sustentabilidade das terras e da produÃÃo alimentar.

Go Slow Whoa Meal Patterns: Cafeteria Staff and Teacher Perceptions of Effectiveness in Winning With Wellness Schools

BACKGROUND School‐based interventions hold promise for child obesity prevention. Implemented as a part of the Winning With Wellness obesity prevention project, the “Go Slow Whoa” meal pattern (GSW) was designed to promote healthier foods in school cafeterias. This investigation determined perceived program effectiveness and impact on student's food purchases. METHODS A mixed method design was used, including focus groups with cafeteria staff (CS), quantitative analysis of CS and teacher surveys, and pre‐post analysis of cafeteria sales. A total of 37 CS and 131 teachers from 7 schools in northeast Tennessee participated. RESULTS CS recognized the important role of school nutrition services in influencing student choices, yet perceived lack of administrative support for cafeteria‐based interventions and minimal interaction with teachers were barriers. CS also believed that students choose less nutritious options due to family influence. Cafeteria sales indicated that changes were made in menu planning and production, yet students' choices improved minimally. Teachers expressed moderate levels of confidence in GSW as influential in children's dietary habits. CONCLUSIONS Successful implementation of school‐based nutrition programs requires supportive policies, administrators, and teachers. CS should be included in program implementation efforts and the role of school nutrition services should be maximized.

School nutrition and standard hygiene requirements in the Bushbuckridge Sub-District, Mpumalanga Province, South Africa

Thesis (MPH.) -- University of Limpopo, 2012 / Introduction: An observational study was undertaken to assess the level of compliance of school nutrition with standard hygiene requirements prescribed by Regulations R918 of 30 July 1999. Aim: To assess the level of compliance of Primary School Nutrition Programme with standard hygiene requirements prescribed by Regulations R918 of 30 July 1999 in Bushbuckridge area. Study: The study was conducted in primary schools located in Bushbuckridge sub-district with an estimated population of 611.048 and 212 primary schools. Method: Observational study was conducted in schools and information regarding food preparation area, food storage rooms, environmental hygiene, personal hygiene and food transportation was recorded. Sampling: A random sampling was conducted to select schools in each circuit. Thirty two percent was used to determine the sample size. Sixty eight primary schools of a population of 212 were select from the various circuits in Bushbuckridge sub-district. Data was gathered using observation method. An observation data gathering tool was developed to collect the data that was needed for the study. Results: The study revealed that 24.3% of the schools prepare their food in kitchens that meet the standards and the requirements prescribed by the health regulations. However, 75.7% of the schools prepare their food in structures that do not comply with the health regulations. The study on environmental hygiene revealed that 95.7% of the schools do not provide toiletries in their latrines most of which are not waterborne. The study further revealed that 87% of the schools do not provide soap for hand washing in their latrines. The study on personal hygiene revealed that 61.4% of the schools do not provide protective clothing to the food handlers who prepare food for learners. The study on food transportation revealed that 100% of the vehicles used to deliver food in schools do not comply with the standards and the hygiene requirements prescribed by the health regulations. Conclusion: It can thus be concluded that the level of compliance of the school nutrition programme to the standards and the requirements prescribed by Regulations R918 of 30 July 1999 is minimal. Measures of precautions to safeguard food contaminations that may result in outbreaks are not adequately followed. The level of environmental hygiene responsible for the spread of most of the diseases in children is poor. There is a high percentage of non-compliance to the standards and the requirements prescribed by Regulations R918 of 30 July 1999.

This qualitative research aims to analyze the process of commercialization of family agriculture products to the PNAE in EMEF Dr. Chateubriand; EMEF Gracita Melo and EMEF Almeida Barreto, with the specific objectives; check how is the process of acquiring the products to those schools; identify the main social actors involved in the management of PNAE and present what are the main marketing difficulties. This city was chosen to have their school lunch decentralized and educated way, unlike other municipalities. The National School Meal Program is presented through a literature review, displaying its objectives, principles, its history over the years and its operation, as well as its improvement in this historical process, and the actors involved in the "institutional market" of the County. The methodology used in qualitative research was semi structured interview and field observation made possible to analyze the implications in implementing the program. According to the data obtained in the research to Law No. 11.947 / 2009 is met in relation to the 30% intended for encouragement of family farming, however, a lot must be improved so that the objectives of PNAE advance. / O Programa Nacional de Alimentação Escolar (PNAE) desenvolvido no Brasil é um dos maiores da América Latina, atendendo milhões de estudantes por todo o Brasil. A metodologia utilizada na pesquisa qualitativa foi a entrevista semi estruturada e a observação de campo que possibilitou analisar as implicações na execução do programa. De acordo com os dados obtidos na pesquisa a Lei nº 11.947/2009 é atendida no que se refere aos 30% destinado para incentivo da Agricultura Familiar, porém, muito deve ser aperfeiçoado para que os objetivos do PNAE avancem.
