A fruta possui vida de prateleira curta após a colheita, sendo o consumo restrito a algumas estações do ano e regiões. A casca da jabuticaba tem propriedades nutricionais interessantes, mas não é comumente consumida devido a características sensoriais como adstringência e amargor, além de sua curta vida de prateleira. Uma bebida em pó preparada com a casca de jabuticaba pode ajudar a incorporar este ingrediente na dieta e aumentar a sua distribuição e disponibilidade. Alegações podem fornecer informações relevantes para a escolha de alimentos que, de outra forma, não poderiam ser identificadas nos produtos. Esse trabalho teve por objetivo avançar na forma de entender como consumidores interpretam certas alegações e seus efeitos na percepção de um produto. As respostas encontradas podem ter implicações importantes tanto para a manutenção e criação de políticas públicas que autorizem o uso dessas alegações, bem como para a indústria que utiliza alegações como ferramentas de marketing. Seis alegações e seus impactos quanto a aceitação global, percepção de intensidade de sabor, dulçor e saudabilidade foram analisados: ¿ Bebida de jabuticaba. ¿ Bebida de jabuticaba rica em antioxidantes. ¿ Bebida de jabuticaba rica em antioxidantes. Essa bebida contem casca de jabuticaba que é rica em antioxidantes. ¿ Bebida de jabuticaba com baixo teor de açúcares ¿ Bebida de jabuticaba com baixo teor de açúcares e rica em antioxidantes ¿ Bebida de jabuticaba com baixo teor de açúcares e rica em antioxidantes. Essa bebida contem casca de jabuticaba que é rica em antioxidantes. Sentimentos, crenças e opiniões a respeito dos termos em específico : bebida rica em antioxidantes, bebida com baixo teor de açúcares e bebida com casca de jabuticaba foram avaliados . Além disso, objetivou-se caracterizar os macronutrientes, compostos fenólicos, antocianinas e potencial antioxidante tanto da casca quanto da bebida preparada em pó. De acordo com a composição centesimal, tanto a casca quanto sua bebida em pó são ricas em carboidratos, incluindo alto teor de fibras solúveis e insolúveis no caso da casca de jabuticaba pó. Cada porção da bebida preparada (200mL) possui, aproximadamente, o equivalente a 7,5 unidades da fruta fresca e também pode ser considerada um alimento com baixo teor de açúcares. O teor de compostos fenólicos, antocianinas e atividade antioxidante (DPPH e FRAP) indicaram tanto a bebida, quanto somente a casca, como ingredientes com potencial antioxidante promissor. De forma geral, a bebida produzida com casca de jabuticaba obteve boa aceitação, independentemente da alegação utilizada. As alegações rica em antioxidantes e baixo teor de açúcares obtiveram associações positivas, relacionadas, principalmente, à saúde. Baixo teor de açúcares foi erroneamente interpretado por parte dos participantes e associado a produtos com baixo teor de calorias e sem adição de açúcares. Casca de jabuticaba foi uma alegação vista como uma novidade e evocou expectativas quanto ao sabor antes da experimentação. As alegações testadas alteraram a aceitação global, percepção de doçura e intensidade de sabor para parte dos participantes (clusters 2 e 3). Essa influência variou de acordo as características individuais, incluindo aspectos sócio demográficos e como a informação foi comunicada. A interação da alegação de baixo teor de açúcares e informações sobre antioxidantes foram os fatores mais importante de impacto nos atributos medidos. Por outro lado, para alguns participantes com altos níveis de satisfação ou insatisfação com o produto, as alegações não tiveram nenhuma influência sobre as medidas de avaliação geral, percepção de doçura e intensidade de sabor. Saudabilidade não foi afetada por nenhuma das alegações testadas para nenhum grupo de participantes / Abstract: Jaboticaba (Myrciaria spp) is a brazilian fruit which is found from north to the south of the country. The fruit has short shelf life after harvesting, being the consumption restricted to some seasons and regions. Jaboticaba peel has interesting nutritional properties but is not commonly consumed because of its astringency, bitterness and short-shelf life. A powdered beverage prepared with jaboticaba peel could help to incorporate this ingredient to the diet and might increase its distribution and availability. Claims can provide relevant information for food choice that otherwise would be hidden in the product. This research aimed to progress in understanding the way claims are interpreted and their impact on product perception. These results might have important implications in developing public policies avoiding misleading claims and for processed food manufacturers who use claims as marketing tools. Six claims and its impact on overall liking, flavour intensity, sweetness and healthfulness perception were accessed: ¿ Jaboticaba beverage. ¿ Jaboticaba beverage rich in antioxidants. ¿ Jaboticaba beverage rich in antioxidants .This beverage has jaboticaba peel which has high antioxidant content ¿ Low sugar jaboticaba beverage ¿ Low sugar and rich in antioxidant jaboticaba beverage, ¿ Low sugar and rich in antioxidant jaboticaba beverage. This beverage has jaboticaba peel which has high antioxidant content. Feelings, beliefs and opinion related to the terms: rich in antioxidant beverage, low sugar beverage and beverage with jaboticaba peel were evaluated. Besides, macronutrients characterization, phenolic compounds, antocyanins and antioxidant potential were carried out for both the jaboticaba peel beverage and the jaboticaba peel powder. According to the approximate composition, both the jaboticaba peel and the powdered beverage are rich in carbohydrates, including high content of soluble and insoluble fibers in the case of jaboticaba peel powder. Each portion of jaboticaba peel beverage (200mL) contained approximately the equivalent of 7.5 fresh fruits units and could be also considered a low sugar food. Phenolic compounds, anthocyanins, DPPH and FRAP anti-radical activity were representative for both the jaboticaba peel powder and the jaboticaba beverage, indicating them as with promising antioxidant activity . Jaboticaba peel beverage showed overall good acceptability regardless the claim. Rich in antioxidants and low sugar claims had positive associations mainly related to health. Low sugar message was misinterpreted by part of participants as a product with low calories and no sugar. Jaboticaba peel was considered a novelty and evoked both pleasant and unpleasant expectations about how the flavour will be prior to experimentation. The claims used influenced overall liking, sweetness and overall flavor intensity perception of the product for some participants (clusters 2 and 3). Therefore, the influence effect could vary depending on the individual characteristics of participants including socio-demographics, attitude, product acceptability level and how the information was communicated. Interaction of low sugar and antioxidant information was the most important factor that could affect the measured attributes. Conversely, for some participants with high levels of satisfaction or dissatisfaction with the product, claims had no significant influence in overall liking, sweetness and overall flavor intensity perception. This sonata by Alban Berg is a product of Arnold Schoenberg's teachings and is, indeed, a musical reflection of the Schoenberg of 1907-1908. At this time the musical thought of Schoenberg himself was in a state of metamorphosis, developing from the chromaticism of the late Romantic composers toward the twelve-tone technique which he was to formulate a few years later. The sonata, as a whole and above all, reflects the growth of an important composer, one who is perhaps the most important link between the traditional Classical and Romantic schools and the modern schools. His growth was based on a thorough knowledge of traditional styles and techniques, vestiges of which are seen in the formal design, chromaticism, and evasive harmony of the work. His advance is seen in his peculiar use of polyphony and motivic variation. Compared with many other works for piano, Berg's sonata is perhaps not among the most celebrated. But as indication of the attitude of a great composer who wished to build upon rather than break with his heritage, it is a most significant work.

Alban Berg as Liedkomponist: An Analytical Study of his Two Settings of "Schliesse mir die Augen beide," 1907 and 1925

Alan Berg's two musical settings of Theodor Storm's poem"Schliesse mir die Augen beide" have received little in the way of scholarly analytical attention. The three major chapters of this thesis deal with the two settings on three different levels. Chapter II surveys the political and cultural milieu in which Berg functioned as a young composer of Lieder in the years 1900-1910. Chapter III examines the special quality of lyricism which is often attributed to Berg and his works. Chapter IV provides more definitive and complete musical analyses of the two settings than have heretofore been available. The question of what role songwriting played in the development of Berg's compositional process is addressed in the conclusion.

As doenças cardiovasculares (DCV) são responsáveis pela maioria das mortes ocorridas em todo o mundo. Os riscos para o desenvolvimento destas patologias podem ser amenizados, em parte, por meio de uma dieta rica em alimentos de origem vegetal. Neste sentido, os frutos nativos brasileiros, como os pertencentes à família Myrtaceae, podem contribuir para melhorar a qualidade da alimentação, pois apresentam altos teores de compostos bioativos, entre eles, os fenólicos (CBF). Pouco se sabe sobre os efeitos dos polifenóis destes frutos para redução do risco de desenvolvimento das DCV. Sendo assim, este trabalho buscou avaliar a bioacessibilidade dos CBF presentes em polpas de cambuci e jabuticaba e seus efeitos in vitro sobre mecanismos de ação relacionados às DCV. Para tanto, extratos ricos em polifenóis foram obtidos a partir de extrações em fase sólida (C18 e PA) das polpas de ambos os frutos, submetidas ou não à simulação da digestão gastrointestinal. Estes extratos tiveram seus efeitos inibitórios sobre a atividade da Enzima Conversora de Angiotensina I (ECA) e a agregação plaquetária induzida por adenosina difosfato avaliados in vitro. De acordo com os resultados obtidos, a digestão in vitro foi capaz de liberar os CBF da matriz alimentar. Tal bioacessibilidade parece ter sido importante apenas para a inibição da agregação plaquetária, uma vez que a capacidade inibitória destes compostos sobre a atividade da ECA não melhorou depois da digestão in vitro. Quanto aos resultados obtidos pelos extratos provenientes das colunas PA e C18, observa-se que as maiores concentrações de taninos nestes últimos não foram suficientes para melhorar a capacidade antiagregante, mas foram importantes para aumentar a inibição da atividade da ECA. Comparando-se as respostas apresentadas pelos dois frutos, os CBF presentes no cambuci exibiram, predominantemente, potenciais anti-hipertensivo e antiagregantedo maiores do que os da jabuticaba. Neste contexto, o consumo de cambuci e jabuticaba, bem como a utilização de seus polifenóis purificados, podem ser adjuvantes para a redução dos riscos relacionados ao desenvolvimento das DCV. / The cardiovascular diseases (CVD) are the leading cause of death worldwide. The risk of development of these disorders can be reduced, partially, by a vegetal-based diet. In this way, the Brazilian native fruits from Myrtaceae family may contribute to improve the diet quality, once they have high quantity of bioactive compounds, such as the phenolic (PC). The knowledge about the cardioprotective effects of consuming these fruit polyphenols is limited, so this study aimed to evaluate the bioaccessibility of the cambuci and jaboticaba PC and their in vitro potential on CVD-related mechanisms. First, gastrointestinal digestion simulation of each fruit pulp was done, and then the polyphenols rich extracts were obtained by solid phase extractions, before and after the pulps digestion. The polyphenols rich extracts had their phenolic concentrations determined and were used to evaluate the capacity of PC in inhibit the Angiotensin Converting Enzyme (ACE) activity and the platelet aggregation induced by ADP. The results were expressed as IC50, considering the total phenolic content per milliliter of reaction. According to the results, the in vitro digestion process was able to release the polyphenols from the food matrix. Therefore, the bioaccessibility had no significant effect on ACE activity, but decreased the IC50 values of platelet aggregation. In relation to the extracts from PA and C18 columns, the higher tannin concentration In comparison to the IC50 values presented by PA extracts, the higher concentrations of tannins in the last one were not enough to improve the antiaggregant effect, but were important to increase the inhibition of ACE activity. Cambuci polyphenols presented higher antihypertensive and antiaggregant potentials than the jaboticaba compounds. In this respect, the ingestion of cambuci and jaboticaba and the use of their purified polyphenols can be of particular importance in reducing the risk for the CVD development.

REMAKING THE ICONIC LULU: TRANSFORMATIONS OF CHARACTER, CONTEXT, AND MUSIC

Using Alban Berg’s opera Lulu as a case study, this dissertation explores the fluid nature of cultural artifacts as they are reborn within new socio-cultural contexts. By examining several Lulu productions, this inquiry seeks to understand the changes of meaning that have occurred through the transformation of canonic works in the twentieth- and twenty-first centuries. Central to this project is the shifting nature of the character of Lulu, not only in Berg’s opera, but also in various artistic genres that preceded and affected his own conceptions, as well as her appearances in selected productions. This study contrasts modern Lulu productions with the composer’s intentions for the opera, using Berg’s operatic text as a basis for comparison. These assessments will be made through a semiotic analysis of various staging elements, musical and textual analysis of archival materials, and consideration of past Lulu scholarship. Relevant features of the political, cultural, and social climate of each production are also be investigated. Two Werktreue productions are examined: the Austrian première of Lulu at the Theatre an der Wien (1962) and the Metropolitan Opera staging by John Dexter (1977). Several Regietheater productions are also studied, including the three-act 1979 première at the Paris Opera—complete with Friedrich Cerha’s third act—as well as stagings at the Glyndebourne Festival, Opernhaus Zürich, the Royal Opera House, the Theater Basel, and the Gran Teatre del Liceu. Although much scholarship has been written on Lulu, directors have implemented some of the most radical changes to the opera. Building on Lydia Goehr’s definition of the work-concept in The Imaginary Museum of Historical Works, this project examines the role of these radically altered stagings as challenges to the work-concept of Lulu. In order to assess the portrayal of Lulu in the above-listed productions, this dissertation investigates the origins of her character, tracing the genesis of Lulu and the numerous artists who molded her, including Félicien Champsaur, Frank Wedekind, Leopold Jessner, and G. W. Pabst. Finally, this dissertation considers a work that goes beyond modifications of orchestration, setting, and staging in Regietheater productions. Olga Neuwirth’s opera, American Lulu, represents the ultimate authorial challenge, functioning as both an adaptation of Berg’s text and as a newly composed work. This inquiry explores the transformed mise en scène and re-imagined characters of American Lulu, investigating Neuwirth’s politicized changes and the effect that these alterations have on the story of Lulu. In addition to analyzing her score and libretto, this study examines the performance and depiction of race and sexuality in two American Lulu productions, at the Komische Oper Berlin and the Young Vic in London. Several Lulu performances discussed in this study explore an area which, even as recently as the publication of Roger Parker’s Remaking the Song, was called “untouched”: the alteration of the operatic text itself. Whether these updated works and radical stagings are considered a passing trend or true innovations, the effect of staging on operagoers is undeniable. Like the shifting interpretations of the iconic character herself, the complex history of Lulu reflects the development of canonic works over time, as they are altered, transformed, and reborn in new environments.

For this purpose, the following data were collected during 2005 and 2006 in a typical small scale catchment located near the town of Riebeeck-Wes: weather data, hydrological and water quality measurements, soil water contents and chemistry, and vegetation growth. Möbelhistorien är full av parenteser, det vill säga möbler som figurerat i korta perioder, aldrig slagit igenom, glömts bort eller rent av försvunnit. Vi var övertygade om att det bland alla dessa mer eller mindre bortglömda möbler fanns exemplar som var värda att lyfta fram och undersöka. Genom att undersöka dessa möbler har vi förstått deras historia och sammanhang, tagit reda på och reflekterat kring varför de blivit just en parentes i möbelhistorien samt förstått för vilket syfte de var skapade och hur de har använts. Ambitionen med undersökningen har varit att genom att skapa en känsla och förståelse för möblerna hitta de exemplar som lämpar sig väl att stå som förebilder för nya koncept och produkter. Genom att beskriva möblernas ursprungliga syfte, användning, funktioner och kontext såg vi möjligheter för produktuppdateringar och funktionsförskjutningar. Vi har gjort ett urval baserat på en historia om ett fiktivt företag, ett litet företag som skall lansera en liten sammanhållande kollektion beståendes av exklusiva möbler av hög kvalitet. Kollektionens syfte är att inspirera till användning och att skapa stiliga, rogivande platser i hemmet. Konceptet för den tänkta kollektionen styrde de kriterier och diskussioner som låg som grund för det urval vi gjorde när vissa möbler lyftes upp och inspirerade till nya koncept. Syftet med vårt arbete är att visa på ett sätt att arbeta där vi som möbelsnickare, genom en undersökning av historiska möbler, skapar en sammanhållen kollektion baserad på historiska förebilder. Arbetet har resulterat i en kollektion bestående av fyra möbler som formgivits i samarbete med externa formgivare och arkitekter. / The history of furniture is full of parentheses, furniture that appeared for short periods of time, was never a big hit, was forgotten or even disappeared. We were convinced that amongst all these more or less forgotten pieces of furniture there were examples worthy of rediscovery and renaissance. By examining these pieces of furniture, we have understood their history and context, found out and reflected upon why they where never more than a parenthesis in the history of furniture, and, last but not least, we have gained an understanding of the purpose of their creation and how they were used. Our ambition with this research - by creating a feeling and an understanding of the furniture - has been to find the pieces that are well suited to act as models for new concepts and products. By describing the furniture’s original purpose, functions and context, we saw opportunities for product updates and rearrangement of form and function. We have made a selection based on a story of a fictitious company, a small company planning to put on the market a coherent collection of exclusive furniture of high quality. The purpose of the collection is to inspire to use and to create stylish, restful places in your home. The concept of the collection guided the criteria and discussions that were the basis of the choices we made when particular pieces of furniture were selected to generate new concepts. The purpose of our work was to show a process of working where we, as cabinet-makers, by means of examining historic furniture, create a coherent collection based on historic models. Our work has resulted in a collection of four pieces of furniture that have been modeled in co-operation with external designers and architects.

En känslomässig berg- och dalbana : En kvalitativ studie om vägen ut ur drogmissbruk

Denna studie syftar till att få en fördjupad förståelse i individers upplevelser om vägen ut ur drogmissbruk. Detta gjordes genom en hermeneutisk ansats och kvalitativa intervjuer genomfördes med tio personer där fem var kvinnor och fem var män. Kriterierna i urvalet var att de skulle ha erfarenhet av ett eget missbruk, varierande ålder, kön samt livssituation. Det var svårt att hitta forskning som berörde individers upplevelser om vägen ut ur drogmissbruk, dock så fanns relevant forskning om att ta sig ut ur drogmissbruk. I den här studien ställs individers upplevelser i fokus för att få en djupare kunskap och förståelse om fenomenet. Resultatet visade på hur vägen ut ur drogmissbruk kan komma att se ut och upplevas som en känslomässig berg- och dalbana för individen. Motivationen till att ta sig ur drogmissbruket såg olika ut för intervjupersonerna. Det kunde bland annat vara barn, familj, NA och "rätt" sorts vänner som ledde till motivationen. Vidare visade resultatet att deras liv idag fungerar bra då de är drogfria, de flesta har arbete och egna bostäder samt att de har bra kontakt med sina familjer.
