Determining the Relationship Between Weight Dissatisfaction and Attention to Calories

Laws which require the display of calorie information on menus are becoming more prominent throughout the United States and the world, but the efficacy of this information has not yet been studied on an individual level. An Eyetracker and two menus (which were identical save for the inclusion or exclusion of caloric information) were utilized to determine how much time college-aged women spent looking at calories. We also gathered their personal measure of weight dissatisfaction using a body image scale and participants’ self-reported weight dissatisfaction. Using random assignment, 22 participants were placed in the experimental group and 25 participants were placed in the control group. Analysis of the Eyetracker data showed that calories on the menu did have an effect on both the amount of time that participants spent looking at calories, and on the number of fixations they made on the calories. There were significant negative correlations between the participants' time spent viewing and their appetizer and entree choices on the experimental menu, indicating that participants select lower calorie menu items when they spend more time looking at calories. The data will be further explored in future analysis; the results also indicate that additional research into multiple different directions could be beneficial.

The Effects of Playing Exergames on Energy Expenditure

The purpose of this study was to assess the performance, ratings of perceived exertion, metabolic responses, and energy expenditure as individuals participated in interactive video game play. There were 14 participants that participated in the study, whose age was 20.1 ± 1.64 years of age. Participants completed a maximal aerobic test to exhaustion (VO2max test), and then 30 minute testing session on both the Kinect Adventures (K) and Wii Fit Plus game. Data were analyzed using a dependent t-test and one-way ANOVA. Significance was accepted at P ≤ 0.05. Energy expenditure and RPE were significant in both exergames interactive game play P=0.044 and P < 0.05, respectively. In addition, heart rate (P=0.001) and performance during exergame play P=0.00015 were of significance in the Xbox Kinect and Wii Fit Plus. In conclusion, we found that individuals participating on the exergame Xbox Kinect expends more calories and work at a higher intensity than the Wii Fit Plus, thus justifying an alternative way to participate in physical activity via exergames. As an alternative way to exercise, individuals can meet the daily requirements of energy expenditure of moderate intensity, which is 150-400 kcals.

L'étude des mécanismes comportementaux et cérébraux sous-tendant la modulation hédonique de la prise alimentaire chez le porc juvénile présente d'importants enjeux en termes d'applications en production porcine et en recherche biomédicale. L'objectif de cette thèse était de décrire ces déterminants par le biais du développement d'un modèle porcin des préférences et aversions alimentaires conditionnées, en utilisant des méthodes comportementales et des techniques d'imagerie cérébrale fonctionnelle. Sur le plan comportemental, nous avons validé un modèle porcin de l'aversion alimentaire conditionnée, obtenue via des injections duodénales de chlorure de lithium et caractérisée par une modification drastique des choix alimentaires. Nos résultats suggèrent également que les préférences alimentaires sont plus difficiles à induire que les aversions, et qu'un renforcement calorique et sucré, comme le saccharose, représente un stimulus efficace pour l'induction d'une préférence chez le porc. Sur le plan neurobiologique, l'exposition à des flaveurs alimentaires aux valeurs hédoniques contrastées et la perception combinée de saccharose aux niveaux oral et viscéral ont engendré des différences d'activation dans les circuits neuronaux impliqués chez l'Homme et les rongeurs, dans l'évaluation hédonique des stimuli sensoriels, la motivation, le traitement de la récompense (amygdale, cortex préfrontal, noyaux de la base) et la mémoire (hippocampe, cortex parahippocampique). Des études complémentaires sont nécessaires pour déterminer dans quelle mesure des facteurs de variation liés à l'animal ou aux paradigmes expérimentaux ont pu influencer l'expression des conditionnements.

Basal Metabolic Rate (BMR) estimation using Probabilistic Graphical Models

Obesity is a growing problem globally. Currently 2.3 billion adults are overweight, and this number is rising. The most common method for weight loss is calorie counting, in which to lose weight a person should be in a calorie deficit. Basal Metabolic Rate accounts for the majority of calories a person burns in a day and it is therefore a major contributor to accurate calorie counting. This paper uses a Dynamic Bayesian Network to estimate Basal Metabolic Rate (BMR) for a sample of 219 individuals from all Body Mass Index (BMI) categories. The data was collected through the Lifesum app. A comparison of the estimated BMR values was made with the commonly used Harris Benedict equation, finding that food journaling is a sufficient method to estimate BMR. Next day weight prediction was also computed based on the estimated BMR. The results stated that the Harris Benedict equation produced more accurate predictions than the metabolic model proposed, therefore more work is necessary to find a model that accurately estimates BMR.

Nutritionally Focused Drive-thru Menus And The Impact On Consumer Preferences: A Study Of The Restaurant Industry

More than one-third of the U.S. citizens (over 70 million people) and 16% of children are classified as obese and are at risk of many diseases including heart disease. Research indicates that 65% of Americans over the age of twenty years old are considered overweight. To address this public health issue, the U.S. Food & Drug Administration has proposed new nutritional guidelines for restaurant menus. Thus, the current study investigated the preferences of quick service restaurant (QSR) industry consumers with reference to the newly proposed U.S. Food and Drug Administration regulations. This study includes development and redesigning of drive thru menus to comply with the FDA guidelines. A 3x2 factorial design experiment was conducted using real drive thru menus from three major national restaurant chains. The control group consisted of normal drive thru menus obtained from national restaurant chains, and the experimental group was comprised of two sets of pre-tested experimental menus complying with the FDA guidelines. The first set of experimental menus includes presentation of calorie information for all menu items offered. The second set of experimental menus includes color coded calorie specific menu categories (low, regular and high). A set of research hypotheses were developed and data was collected from heavy users of QSR units using Qualtrics software. The collected data were analyzed using SPSS. The obtained results indicated that the QSR menus designed to comply with the FDA’s guidelines do not result in loss of revenues as commonly feared by the restaurant industry. But interestingly the second set of experiment menus with color coded nutritional categories (low, regular, high) have led to increased consumer patronage and consumers’ willingness to pay. In iv addition, color coded nutritional menus were preferred over FDA suggested menus designs. The results from the current study are of significant importance to the QSR industry as they strive to comply with the new nutrition guidelines of FDA for drive thru menus

How Poor is The Poverty Line? : A matter of dietary norms and perceptions

Millennium Development Goal 1 (MDG 1) on halving extreme poverty is measured with the international poverty line. The purpose of the study is to evaluate the measurement of MDG 1 by reviewing the robustness of the international poverty line and some of its national sub-reports. There are at least two problems in assessing a reliable poverty line, namely what constitutes extreme poverty and what kind of life situation this refers to. Through a qualitative content analysis, the study shows that the selected national reports lack a reliable reference for human dietary energy requirements pivotal for estimating a fair threshold for food needs. In the case that a reliable source was used, the activity level was prone to a wide range of interpretations and lacked procedural consistency.  The FAO (2011) has presented minimum dietary energy requirements that are below the references used in the national reports, which could shift the poverty line. The study also shows that the concept of “extreme poverty” has been used inconsistently. MDG 1 identifies extreme poverty as the inability to meet basic food- and non-food needs. The international poverty line is based on a myriad of national poverty lines ranging from minimum- to generous needs, where extreme poverty is defined as people barely having enough for the food component alone. These two variables create obstacles in setting a reliable international poverty line. A small shift in the international poverty line changes the poverty rates substantially, making it difficult for poverty programs and MDG 1 in truly identifying the people in most need of help.
