Manufacture of a Dairy Dessert from Ultra-High Temperature Milk ConcentrateSmith, Mark H. 01 May 1994 (has links)
The purpose of this project was to initiate development of a nonrefrigerated dairy dessert product. Milk was concentrated by pressure-driven filtration and then sterilized using ultra-high temperature (UHT) processing. Following sterilization, samples were aseptically inoculated with rennet to coagulate the milk, which was then stored at room temperature. These processing steps produced a dairy dessert that did not require refrigeration. I investigated the influence of total solids, milk fat, rennet dosage, storage temperature, and storage time on curd firmness and syneresis. I investigated the effect on curd firmness and syneresis of giving the concentrate a heat treatment prior to UHT processing. Chocolate and vanilla dairy desserts were prepared, and a taste panel was conducted to compare the dairy dessert with a ready-to- eat starch-based pudding.
Milk concentrate obtained by reverse osmosis did not form a gel, whereas concentrate obtained by ultrafiltration did gel. Increasing the solids content of the milk concentrate increased curd firmness, but increasing the fat content of the concentrate decreased curd firmness. Curd firmness and syneresis increased as the concentration of rennet was increased. Products stored at 21°C yielded firmer gels with more syneresis than products stored at 4°C. Moreover, products stored for longer periods of time produced firmer gels and greater amounts of syneresis. Concentrate that received a batch heat treatment prior to sterilization reduced syneresis. The addition of cocoa to the concentrate inhibited coagulation. Taste panelists preferred the commercial pudding over the dairy

Background: Women prefer to eat plant-based food more frequently than men. Previous studies show that there is a difference in what we eat depending on which gender we belong to. The experience of food can be influenced by various aspects such as colour, shape, serving, and food information. Objectives: The purpose of the study was to investigate if there were any differences between men and women's attitudes towards vegan desserts. Moreover, four vegan desserts were developed using creative design and molecular gastronomy, to investigate how the colour and shape of vegan desserts affects the experience of taste, flavour and texture. Material and methods: To answer the research question, two focus group interviews were conducted. Moreover, a creative design containing an online cross-sectional survey was performed to develop four vegan desserts using molecular gastronomy. The desserts had the same ingredients in equal quantities, but they differed in colour and shape.These desserts were subsequently tested in a sensory evaluation. Results: The results show that there is a difference between men and women regarding attitudes towards a vegan dessert. Women are more positive and curious, while men are more sceptical whether a vegan dessert tastesgood. There was sometimes a significant difference in taste, but never in flavour and texture. Conclusions: There are differences in men and women's attitudes towards vegan desserts, where women are more positive than men. Shape may affect the experience of taste, but not of flavour and texture in this study.

El presente proyecto fue diseñado a partir de la existencia de una saturación del mercado peruano de productos con alto porcentaje en azúcar y bajo aporte nutricional, el cual genera, en niños y adolescentes, desnutrición; y, por ende, la anemia. Una enfermedad frecuente en niños de 2 a 12 años. Al realizar un estudio de mercado en Lima Metropolitana, en la cual se ubicó al mercado meta, se determinó desarrollar la idea de negocio Miski Gelatoz, una gelatina fortificada con hierro henimico y no henimico, permitiendo complementar la alimentación del menor con un postre saludable. Para llevar a cabo el proyecto, se han desarrollado lo siguientes planes: Estratégico, Operativo, Marketing, Recursos Humanos, Responsabilidad Social Empresarial, Financiero y Financiamiento. Respecto a la proyección de ventas y análisis de costos, se han empleado datos reales y actualizados. Asimismo, se implementó el desarrollo del concierge de ventas con el fin de establecer una proyección real en el crecimiento de las ventas en el inicio del negocio. Dicho emprendimiento cuenta con una inversión inicial de S/23,927.78, se obtendrá una pérdida neta de S/ 9,432.84 para el primer año; sin embargo, para finales del segundo año las ganancias se elevan exponencialmente, obteniendo ganancias de S/ 56,186.5 y el tercer año S/ 58,101.51. / This project was designed based on the existence of a saturation in the peruvian market by products with a high percentage of sugar and low nutritional contribution, which generates malnutrition in children and adolescents; and therefore, anemia. Sensory and chemical/nutritional characteristics of concept foods made from underutilized sweet potato roots and greensKim, Shinyoung 09 August 2019 (has links)
Frozen desserts and a smoothie were developed from underutilized sweet potato roots and from greens, respectively. Frozen desserts were formulated with mashed sweet potato, coconut oil, and dairy, almond, or soy milk. Sweet potato greens were blanched and frozen before being made into a smoothie. Increased mash in the frozen desserts resulted in better (p≤0.05) color, overall intensity of flavor, and sweet potato flavor. Descriptive and consumer panelists found no differences (p>0.05) in frozen desserts with difference base milk products. Almond milk frozen dessert was lower in total solids, protein and Brix (p≤0.05), compared to dairy and soy milk. Greens blanched for 30s showed complete peroxidase inhibition and acceptable texture. Blanching decreased carbohydrates and soluble minerals of greens mainly due to water. The results showed that consumers liked lactoseree sweet potato-based frozen desserts and showed that properly blanched greens could be used in valueded products like smoothies.

The objective of this work was to adapt a synbiotic aerated diet dessert, produced with the addition of a probiotic culture of Lactobacillus acidophilus La-5 and prebiotic ingredients (fructooligosaccharides and inulin), from the previously developed sucrose-containing formulation, and to evaluate the effects of its ingestion on adult volunteers with metabolic syndrome (MetS) during a period of 8 weeks of intervention. In addition, to improve the resistance of the probiotic to simulated gastrointestinal conditions, a microencapsulation process was optimized. For the development of the product, the formulations were produced in triplicates, in which probiotic culture survival, instrumental texture and sensory acceptability were evaluated up to 112 days of storage under freezing (-18 °C). Subsequently, a randomized, double-blind, placebo-controlled trial was carried out in which the product developed was administered to forty-five volunteers with MetS assigned into two groups, each receiving 40 g/day of: synbiotic diet mousse (SDM) (n=23) and placebo diet mousse (PDM) without pro- and prebiotics (n=22). Fasting blood samples were collected at the beginning and after 8 weeks of daily consumption of both mousses to determine the anthropometric, biochemical, haematological, inflammatory, and immunological parameters. Afterward, with the goal of improving the survival of L. acidophilus La-5 to in vitro simulated gastrointestinal conditions, the microencapsulation process conditions of the probiotic strain via spray drying were optimized using inulin as the encapsulating agent. The viability of L. acidophilus La-5 incorporated into SDM was above 7.8 log CFU/g and remained stable throughout storage. PDM showed lower acceptability (5.77-6.50) after storage than SDM (6.67-7.03). The texture was the most appreciated attribute and hardness of the SDM increased during storage, but remained stable for PDM. The clinical trial revealed significant reductions of total cholesterol and HDL-cholesterol, as well as of immunoglobulins (A and M), and interleukin-1β in both groups during the intervention period. However, regarding intergroup changes, there were not any significant differences for all parameters evaluated (p>0.05). After the optimization of the microencapsulation process of the probiotic culture (80 mL/min, 82% and 10%, respectively for feed flow, aspiration rate, and inulin concentration), the microencapsulated probiotic strain incorporated in the SDM mousse showed the highest in vitro gastrointestinal survival (p<0.05) in the different stages of the assay, as follows: after the gastric phase: 5.68 log CFU/g (83.3%), the enteral phase I: 5.61 log CFU/g (82.3%), the enteral phase II: 5.56 log CFU/g (81.4%). Parmi les desserts à base d’ovoproduits, l’île flottante est reconnue comme particulièrement sensible d’un point de vue microbiologique car sa commercialisation souffre de la survenue intempestive d’altérations que les industriels souhaitent maîtriser. Les travaux réalisés au cours de cette thèse avaient pour objectif de mieux appréhender ces phénomènes afin de mieux les contrôler. Nous avons montré que l’altération de l’île flottante concernait principalement la crème anglaise et qu’elle s’accompagnait d’un développement bactérien conséquent, d’une fréquente diminution du pH et de modifications sensorielles liées à l’aspect et à l’odeur. Les principales bactéries détectées ont été identifiées comme appartenant au groupe Bacillus cereus et aux genres Staphylococcus et Enterococcus. Le blanc d’œuf pasteurisé, utilisé pour la fabrication des œufs en neige, s’est avéré être une source de contamination possible.Cependant, l’implication de bactéries installées sous forme de biofilms dans l’environnement de production ou véhiculées par d’autres ingrédients a aussi été fortement envisagée. La ré-inoculation, en culture pure, d’une collection bactérienne représentative dans de la crème anglaise stérile a montré que différents types de modifications sensorielles et physico-chimiques s’exprimaient d’un genre bactérien à l’autre et qu’ils étaient notamment corrélés à la capacité des bactéries à consommer les sucres et les protéines de la crème anglaise et à produire des métabolites dont des composés volatils odorants. Ces résultats à l’appui, différents tests ont pu être proposés, p / Among the chilled egg products-based desserts, the French dessert “île flottante” is recognized as particularly sensitive from a microbiological point of view, because marketing is suffering from untimely spoilage occurrence that manufacturers wish to control. The work done in this thesis aimed to better understand these phenomena in order to better control them. We have shown that the dessert spoilage mainly concerned the custard cream and it was characterized by high bacterial count, frequent pH decreasing and sensory changes of appearance and smell. The main bacteria detected were identified as belonging to the Bacillus cereus group and Staphylococcus and Enterococcus genera. The possible involvement of bacteria from the pasteurized egg white, used for the egg white foaming, in the dessert spoilage issue was established.However, the involvement of bacteria from biofilms installed in the production environment or provided by other ingredients was also strongly suspected. The spoilage potential assessment of pure culture of a representative bacterial collection in sterile custard cream has shown that different types of sensory and physicochemical changes were expressed according to bacterial genus and that these changes were particularly correlated with the ability of bacteria to consume sugars and proteins of custard and to produce various volatile compounds with specific odorous. Asimismo, muchas personas tienen antojos de postres que cumplan con alimentación consciente, sin embargo, encuentran dificultad en hallar postres saludables a precios accesible. Por lo que, el presente proyecto consiste en la elaboración de productos de repostería saludables a base de productos orgánicos y naturales, tales como aceite de coco, leche de soya, yogurt griego, cacao orgánico, galletas integrales que estén endulzados con panela, stevia y miel. Por consiguiente, Dolce Creato podrá solucionar ese problema ofreciendo tres unidades de productos saludables, los cuales estarán divididos en dos categoría denominadas Pocket Saludable y Snacks Fit, priorizando la calidad y sabor a precios accesibles.
Finalmente, el presente proyecto muestra experimentos realizados a lo largo de la planificación del proyecto con el objetivo de mejorar y validar la idea del negocio para su ejecución en el mercado local. Asimismo, se desarrolla el modelo negocio en un sector de crecimiento constante, con escalabilidad nacional e internacional. / Currently, the confectionery industry is highly competitive, due to the confectionery trend regarding the consumption of healthy confectionery products at different prices. This trend can be observed in people who have cravings for desserts and need to follow a healthy diet.
Therefore, throughout the research it will be possible to appreciate how the diet of many Peruvians follow a healthy lifestyle. In addition, many people have cravings for desserts that fulfill with food requirements. However, they have difficulty in finding healthy desserts at affordable prices. For this reason, the project consists of the production of healthy confectionery products based on organic and natural supplies, such as coconut oil, soy milk, Greek yogurt, organic cacao, whole-grain cookies that are sweetened with panela, stevia and honey. In this way, Dolce Creato will be able to fulfill their demand by offering three healthy products, which will be divided into two categories called Pocket Healthy and Snacks Fit, prioritizing quality and flavor at affordable prices.
Furthermore, this project presents experiments carried out throughout the planning of the project with the aim of improving and validating the business idea for its execution in the local market.
