Consumer response to computerised nutritional information at the point-of-purchase in catering establishments

Increased scientific understanding of the links between nutrition and health has led to a demand for more nutrition information to be made available to consumers. Nutrition information is widely available on supermarket products but is rarely found in catering establishments. This research involved the provision of nutrition information in canteens and restaurants and studied the effect on consumer meal choices. A study was designed to find the optimum visual method of displaying nutrition information. Eight nutritional formats were systematically tested on customers in a shopping centre food court. Graphical formats displaying nutrition information in relation to current dietary advice relayed the nutrition information significantly quicker than, and as accurately as, tabular displays. A database system was developed to provide nutrition information on menu items making up a selected meal. A program suite was designed to enable the creation of recipes and menus. The nutritional breakdown of a selected meal was displayed to the customer who was then given the opportunity to change their meal before that meal was acquired. All initial choices and subsequent changes were recorded for analysis. Surveys carried out in two canteen locations (n=694) revealed that a significant percentage of customers (16%) did make changes to their meal after viewing the nutritional information on their first choice. Those who did not change were, on average, making "healthy" choices of meal. Those who did change made second choices which were, on average, significantly lower in energy, saturated fatty acids and non-milk extrinsic sugars than their first selections. Overall "healthier" choices were made with the second selection which did not differ significantly from the nutritional content of the meals chosen by those respondents who had not wished to change. Further research is necessary to determine whether the intention to change a selected meal as demonstrated by this research would be carried through by the respondents to the actual food selection.

A recente evolução das doenças crônicas não transmissíveis (DCNT), possivelmente associadas às mudanças de hábitos alimentares, tem sido um desafio para a promoção da alimentação saudável em vários países, inclusive no Brasil, onde o sódio tem sido o foco de atenção, pela possibilidade da redução da sua elevada ingestão ser uma das medidas com melhor custo benefício para saúde pública. É necessário conhecer o conteúdo de sódio e de componentes específicos, relacionados às DCNT nos alimentos comercializados no país, para orientar o consumidor na seleção adequada dos alimentos e mesmo para modificar sua composição; no entanto, nas bases de dados, o conteúdo desse mineral está presente em um número reduzido de alimentos. O objetivo da presente pesquisa foi a elaboração de uma base de dados de alimentos processados com componentes específicos associados às DCNT, dando ênfase ao sódio, e avaliar o uso dessa base de dados para estimar a sua ingestão. Informações nutricionais de rótulos e de websites de indústrias de alimentos foram coletadas para inclusão na base de dados, elaborada de acordo com as diretrizes do International collaborative project to compare and monitor the nutritional composition of processed foods, coordenado pelo The George Institute for Global Health (Austrália). A avaliação da variação do conteúdo de sódio foi realizada para alguns alimentos processados presentes na base de dados, considerando os de maior consumo nacional. O conteúdo de sódio em refeições de restaurantes populares de São Paulo foi analisado por espectrofotometria de absorção atômica de chama e estimado pela base de dados elaborada para comparação. Na base de dados estão incluídas informações de 2.319 alimentos distribuídos em 14 grupos. Foi observada grande variação no conteúdo de sódio entre diferentes tipos de pães de forma industrializados, de salsichas, de linguiças, de queijos e iogurtes. O conteúdo de sódio analisado nas refeições (base integral) variou de 215,9 mg a 427,9 mg por 100 kcal, enquanto que o conteúdo de sódio estimado variou de 204,2 mg a 486,8 mg por 100 kcal (418 kJ). A análise do coeficiente de correlação entre valores analíticos e estimados do conteúdo de sódio em refeições mostrou forte correlação entre esses dados para dois restaurantes (r=0,703 e 0,897) e moderada correlação para outros dois (r=0,513 e 0,622) dos cinco restaurantes estudados, indicando que através da base de dados elaborada é possível obter uma estimativa da ingestão de sódio. A importância de se conhecer o conteúdo de sódio de refeições e/ou alimentos está na possibilidade de uso dessas informações para orientar a redução do sal empregado no preparo da refeição, e ampliar para o consumidor informações que permitam identificar alternativas para redução do consumo de sal. / The recent evolution of non transmissible chronic diseases (NTCD), possibly associated to changes in eating habits, has been a great challenge against the promotion of health around the world, including Brazil, where sodium has been the focus of attention, and reducing its intake is one of the best cost-benefit actions for public health. Nutritional information from product labels and food industry websites were collected to be included in the database, which was developed according to the guidelines of the \"International collaborative project to compare and monitor the nutritional composition of processed foods\", coordinated by The George Institute for Global Health (Australia). The evaluation of the sodium content variation was done in some processed foods existing in the database, considering the ones that are more frequently consumed by the Brazilian population. The sodium content of meals served in popular restaurants in Sao Paulo was analyzed by flame atomic absorption spectrophotometry and estimated by the database, for comparison. The database contains information on 2,319 foods, distributed in 14 groups. Great variation in sodium content was observed among different kinds of industrialized bread, hot dogs, sausages, cheese and yoghurt. The sodium content analyzed in the meals varied between 215.9 mg and 427.9 mg/100 kcal (418kJ), whereas the sodium content estimated varied between 204.2 mg and 486.8 mg/100 kcal (418kJ). The analysis of the correlation coefficient between analytical and estimated values of sodium content in meals demonstrated strong correlation (r=0,703 and 0,897) for two restaurants, and moderate correlation (r=0,513 and 0,622) for two others out of the five restaurants in the research, indicating that, through the elaborated database, it is possible to obtain an estimated sodium intake. It is very important to know the sodium content in meals and/or foods, once this information may be used to advise on sodium reduction when preparing the meals, and also to inform consumers on how to identify alternatives for reducing salt consumption.

Introdução - A informação nutricional do rótulo de embalagem de alimentos tem sido uma estratégia importante para oferecer ao consumidor informações para escolhas mais apropriadas. Partindo desse princípio, os restaurantes administrados pela Coordenadoria de Assistência Social, no ano de 2001, passaram a disponibilizar a informação de valor energético das preparações culinárias oferecidas nos restaurantes de forma a orientar e auxiliar o cliente em sua escolha. Objetivo Avaliar o comportamento de funcionários e alunos que utilizam os restaurantes universitários em relação à informação nutricional e, em especial, referente ao valor energético das preparações culinárias oferecidas nestes. Métodos - Foi utilizada amostra sistemática. Os domínios de estudo foram constituídos por dois estratos de 600 indivíduos cada. O método de investigação foi a entrevista estruturada. As variáveis de estudo foram analisadas de forma descritiva e utilizou-se o teste Qui-quadrado para analisar associações. Resultados. Houve semelhanças entre os estratos de alunos e funcionários com maior tempo de educação formal. Não houve associação entre ler as informações nutricionais do rótulo de embalagem de alimentos e o valor energético das preparações culinárias oferecidas pelos restaurantes. A utilização da informação nutricional esteve associada a, anos de educação formal, excesso de peso, prática de atividade física esportiva, tipos de fontes de informação sobre alimentação e nutrição. Conclusão. Observou-se ser esta pesquisa de importante natureza, uma vez que não foram encontrados trabalhos específicos que avaliassem o comportamento da população universitária sobre a informação nutricional. De modo geral, as mulheres utilizam as duas Resumo informações nutricionais mais que os homens. No caso dos alunos, observouse pouco interesse em relação às duas informações. On this basis, the restaurants managed by the Coordenadoria de Assistência Social began, in 2001, to make available to their clients information regarding the energy value of the food prepared so as to guide and help them in their choices. Objective. To assess the behavior of the staff members and students who make use of university restaurants in their response to the nutritional information provided, especially as regards the energy value of the food prepared and provided in these restaurants. Methods. Systematic sampling was used. The universe of study consisted of two strata of 600 individuals each. The structured interview was used as the method of investigation. The study variables were analyzed descriptively and the chi-squared test was used to analyze the associations. Results. There were similarities between the strata of students and staff with higher levels of education. There was no association between the reading of the labels on the packaging of foodstuffs and the energy value of the food prepared and offered by the restaurant. The use made of the nutritional information provided was associated with the level of education, over-weight, practice of physical sporting activity and kinds of sources of information on feeding habits and nutrition. Conclusion. It is clear that this research is important, as no specific studies which attempt to assess behavior related to nutritional information in a university population are available. Generally speaking, women use both kinds of Abstract information more than men. As regards the students, little interest was show in either kind of information. Among the staff of low level of education a greater interest was found in energy value information regarding the food served in the university restaurant than among the staff of higher levels of education who read the information on the packaging of foodstuffs more frequently

The effect of price and health information in shifting young children [sic] preference towards healthier food

Young children have becoming an important target by marketers. Marketers have used many strategies to influence their food choices including advertising and free gifts. According to literature, young children, are cognitively vulnerable and may make unhealthy decisions about their food choices that could lead to serious problems associated with being overweight and obese. This thesis examines whether price and health claim information can shift young childrens' choices towards healthier foods. Most of the previous published research literature has focused on adults. Those findings, using surveys and experiments, suggest that adults' food preferences and choices can be influenced by setting price and by providing health information. These findings suggest that these strategies may have a potential effect in young children decision making. The literature on Children Socialization and Information Processing Theory in consumer behaviour suggests that most young children under 8 are not cognitively skilled to use price and health claim information for their decision making. Nonetheless, most 5 to 8 year olds are making purchases of food at their school canteen several times a week. In order to test for the effects of price and nutrition information, several experiments that used discrete choice modelling were conducted to determine their choices, the reliability of their choices and the between their experimental choice behaviour and their choice in the market place. More than one hundred young children, aged from five to eight years old, completed the discrete choice experiments conducted in two primary schools in the suburbs of Perth. The choice experiments on subjects that had previous experience with the food items, but did not know their relative nutritional value, showed a strong positive effect of price. In other words, higher priced options were often in more demand. Although this may appear a poor response to price by an observer, children have little knowledge of food costs, so they may use price as a surrogate for quality. Price level was also a main effect in reducing the share of unhealthy choices. The results of the analyses also show that young children can provide reliable choice decisions within 5 months of experiment. However, their experimental choices were not associated with their later choices in the canteen. These findings provide evidence of the effectiveness of price and health claim information in changing young childrens' preference toward healthy choices, and the potential usefulness of using discrete choice techniques to shift children to more healthy food options.

Nos enfocaremos en tres marcas en específico, ya que se encuentren de manera digital. Además, el contenido visual que manejan y la información nutricional que ofrecen a sus clientes para la captación y venta de sus productos. A lo largo de la investigación se darán detalles de diversas opiniones del público objetivo primarios, así como expertos de la categoría. De manera que se identificaran los principales hallazgos para que las marcas de planes nutricionales puedan reconocer y trabajar en ello en una mejor estrategia digital. / This research work aims to demonstrate the importance of the relationship of digital marketing strategies with respect to the purchase intention of nutritional aircraft in metropolitan Lima. We will focus on three specific brands, as they are found digitally. In addition, the visual content it handles and the nutritional information it offers to its customers for the acquisition and sale of its products. Throughout the investigation details will be given of various opinions of the primary target audience, as well as experts from the category. Foi realizado um estudo transversal com 56 adolescentes escolares (n=56), com idades compreendidas entre 15 e 17 anos, matriculados em uma escola particular de Porto Alegre/RS. Para a realização da pesquisa foi utilizado um questionário específico estruturado com nove perguntas fechadas dicotômicas e de múltipla escolha. Os resultados mostram que 41% dos adolescentes escolares costumam ler os rótulos antes da compra, 71% afirmam conhecer o significado de valor energético dos alimentos, 63% declaram compreender as informações escritas nos rótulos e 61% confiam nas informações escritas nas embalagens de alimentos. A maioria dos adolescentes compreende os componentes nutricionais presentes nos rótulos de alimentos brasileiros, e apenas 45% entendeu as informações nutricionais presentes no modelo de rótulo Traffic Light Labelling ou “Semáforo Nutricional”, evidenciando que a rotulagem utilizada no Brasil apresentou resultados mais positivos de compreensão. Os resultados do estudo indicam que um número relevante de adolescentes (63%) compreende os componentes nutricionais presentes nos rótulos de alimentos brasileiros e um número significativo de indivíduos compreendeu e identificou a informação nutricional mais saudável descritas nos rótulos; no entanto, sugere-se o desenvolvimento de programas de educação nutricional para potencializar a compreensão das informações nutricionais contidas nos rótulos para este perfil de consumidor. / This paper aims at evaluating the understanding of graphical representation of nutritional information on food labels by young adolescent students. Therefore, it was carried out a cross-sectional study with 56 young adolescent students (n = 56), aged between 15 and 17 years, enrolled in a private school in Porto Alegre / RS. A specific questionnaire containing nine dichotomous and multiple choice closed questions was used for data gathering. The results showed that 41% of young adolescent students usually read the labels before purchasing, 71% of them claim to know the meaning of the energetic value of food, 63% say they understand the information written on the labels, and 61 % trust the information written on food packages. Most adolescents understand the nutritional components present on the labels of Brazilian foods, and only 45% understood the nutrition information on the Traffic Light labelling system, showing that the labels used in Brazil are better understood. The results indicate that a meaningful number of adolescents (63%) understands the nutritional components on the labels of Brazilian food, and a meaningful number of individuals understood and identified the healthiest nutritional information given on labels; however, it is suggested the development of nutrition education programs to enhance the understanding of the nutritional information on the labels for this consumer profile.

Nutritional Labeling on Menus in Full-Service Restaurants: Consumer Attitudes and Intended Usage

Dining out has become an important part of the American lifestyle, greater frequencies as well as increased portion sizes have led to concern. The number of Americans that are classified as overweight or obese has also increased considerably, and the foodservice industry has become a target. Mandatory labeling of menu items has been avoided to this point, but the subject has moved to the forefront and continues to be debated. This study surveyed 502 patrons at a student-run restaurant in Texas. Respondents provided information concerning their health and dining habits as well as their attitudes toward and intended usage of nutritional information (NI) on menus in full-service restaurants. Gender, education levels, age, and household income affect the attitudes toward and intended usage of NI. Exercise frequency, the current use of nutritional information on packaged foods, and the practice of healthy eating habits are all related to the intended use of NI while dining out.
