Conselho Nacional de Desenvolvimento Científico e Tecnológico / The objectives of this work was to estimate the potential of flesh browning development in Gala , Royal Gala , Fuji e Braeburn apples after controlled atmosphere storage (CA). This study was realized through correlation of predictive methods and fruit quality and ripening parameters with the flesh browning occurrence after CA storage. Experiments were carried out with fruits from different orchards and years. In 2004, a first experiment was carried out with Fuji apples from three orchards. In 2005, Gala , Royal Gala , Fuji and Braeburn apples were evaluated from 11 orchards using two picking dates. Theses experiments were carried out at the Núcleo de Pesquisa em Pós-colheita of Federal University of Santa Maria, Santa Maria, Brazil with fruits from Vacaria, RS, Brazil. In 2006 to 2007 experiments were carried out in Germany using Braeburn apples from seven orchards. These methods the disorder occurrence after six months CA storage was correlated with the predictive methods, and with quality and ripening parameters. The predictive methods evaluated were: Mg infiltration, maturity acceleration with ethephon, and stress induction with high CO2. It was also evaluated the capacity of chlorophyll-fluorescence to detect possible stress occurrence on fruits exposed to high CO2 concentrations. Results show that in Fuji fruit juice percentage were able to predict flesh browning, but only in high CO2 (2.0 kPa) CA condition, while TSS level has been able to predict the occurrence of this disorder in fruits stored in low CO2 (<0.5 kPa). The chlorophyll fluorescence was capable of detect stress in fruits caused by exposure to high CO2 at harvest, and with this method it could be predicted the occurrence of physiological disorders in early harvested and with delay CA storage. By nutritional analysis of fruits, the level of K show high correlation with the occurrence of flesh browning after the CA storage of Braeburn apple. Some predictive methods and quality parameters evaluated at harvest were able to predict flesh browning occurrence in apple stored, in certain storage conditions, but in other storage conditions there wasn t significant correlation between flesh browning and this predictive methods and quality parameters. These predictive methods and quality parameters do not show high correlation with flesh browning in all situations. / O objetivo deste trabalho foi correlacionar à degenerescência da polpa das maçãs Gala , Royal Gala , Fuji e Braeburn após o armazenamento em atmosfera controlada (AC). O estudo foi realizado através da correlação com métodos preditivos e com atributos de qualidade e maturação dos frutos com a incidência real de degenerescência da polpa após o armazenamento em AC. Foram realizados experimentos com frutos de diferentes pomares, sendo executado em 2004 o primeiro experimento com a cultivar Fuji. Em 2005, os experimentos foram realizados com as cvs. Gala, Royal Gala, Fuji e Braeburn, avaliando frutos de 11 pomares em duas épocas de colheita. Os experimentos destes dois primeiros anos foram realizados no Núcleo de Pesquisa em Pós-colheitas da UFSM com frutos provenientes de pomares de Vacaria, RS. No período de 2006 e 2007 foram desenvolvidos experimentos em Ravensburg, na Alemanha, com a cv. Braeburn de sete pomares. Para isso, foram correlacionados a ocorrência de degenerescência da polpa após o armazenamento de seis meses em AC, com os testes preditivos e com atributos físico-químicos dos frutos analisados em duas épocas de colheita. Os testes preditivos avaliados foram: infiltração de Mg, aceleração da maturação com Ethephon e indução de estresse pelo alto CO2. Avaliou-se no experimento de 2006/2007 a possibilidade de detectar o estresse no fruto causado por diferentes concentrações de CO2 através da fluorescência de clorofila. Conforme os resultados, no ano de 2004 com a cv. Fuji, a percentagem de suco dos frutos foi capaz de prever a degenerescência da polpa, porém somente na condição de armazenamento de 2,0kPa CO2, enquanto que os SST previu a ocorrência dessa desordem somente em frutos armazenados com baixo CO2 (<0,5kPa). A fluorescência de clorofila foi capaz de detectar após colheita o estresse causado por pressões parciais de CO2 nos frutos armazenados. Com essa metodologia foi possível prever a ocorrência de degenerescência, somente quando se realizou a colheita precocemente e com atraso na instalação da AC. A análise nutricional dos frutos, destacando o nível de K, foi o atributo que melhor previu a ocorrência de degenerescência da polpa durante o armazenamento em AC na cv. Braeburn. Alguns métodos preditivos e atributos avaliados na colheita foram capazes de prever a incidência de degenerescência da polpa nos frutos armazenados numa determinada condição de AC, porém em outra condição de armazenamento não se confirmou essa correlação. Isso significa que estes testes e atributos de qualidade não apresentam alta correlação com a ocorrência da degenerescência em maçãs armazenadas em qualquer situação.

Aspects of mango magnifera indica L. fruit rind morpgology and chemistry and their implication for postharvest quality

As the second most popular fruit world-wide, cultivation of mangoes in South Africa is of strategic economic importance. Competitive export markets require horticultural practices that meet international regulations concerning cultivation, pest control and maintenance of fruit physiology during export. The implementation of such practices, however, cannot be cost effective and successful without detailed and scientific-based knowledge of the commodity concerned. This study of the epicuticular surface of mango fruit has described the ontogeny, morphology and some chemical aspects thereof. Contributions from this study include the following findings: -- Ontogeny and morphology of mango fruit wax: This study found that the highly intricate wax crystalloid structures were not strictly cultivar dependant. A complex series of events constitutes epicuticular wax development. The development of epicuticular crystalloids is accompanied by considerable changes in cutin and epidermal cell morphology. -- Morphology of mango lenticels: An unusual morphology with some cultivar dependent lenticel characteristics was described. Exhaustive past attempts at management of the manifestation of the economically important lenticel discolouration were placed in perspective by establishing the cosmetic nature of the condition. It was found that the density and distribution of epicuticular wax contribute to morphological characteristics of lenticels of individual cultivars. -- Chemical characterisation of mango fruit wax: The chemical complexity of the dual layered epicuticular wax of mango fruit was established by this study, and the validity of interchanging Raman spectroscopy and Fourier transform infrared spectroscopy as investigative techniques established. -- Chemical profiles of discolouring lenticels: The development of lenticel discolouration as a stress-related self-defence mechanism was shown through use of combined chemical and visualisation techniques. This study confirmed the superficial nature and self-defence role of discoloured lenticels. -- Impact of some pre- and postharvest practices on mango fruit wax: Not only postharvest, but also preharvest management of mango fruit must consider the epicuticular membrane as part of the fruit-atmosphere interface. Maintaining a balance between them depends on a better understanding of the interdependence of management and fructosphere dynamics. Both a preharvest and a postharvest practice were studied: ----- Preharvest treatment of mangoes with uncalcined kaolin. Sunburn is an economically important problem in all fruit and vegetable crops. This study has showed that solutions to contain the problem can, however, not be transferred between crops without scientific knowledge of the physiological impacts and long term repercussions thereof. ----- Effect of mechanical handling on the packline and commercial wax coating. Physical and chemical impacts from the packline bring about progressive, irreversible changes to the fruit epicuticular wax. Comparative studies of Dothiorella on avocado

A market survey was conducted to determine the incidence of stem-end rot (SE) on avocado fruit obtained from the Pretoria Fresh Produce Market representing the Tzaneen production area. Dothiorella aromatica isolates collected from this survey were compared in terms of physiological characteristics i.e. growth and temperature, carbon and nitrogen utilization and pH response as well as genetic relatedness using random amplified polymorphic DNA (RAPD's). The incidence of SE was found to be as high as 31% and anthracnose 18%. Symptom development was more apparent when fruit was evaluated at the overripe than eating ripe stage. Of the 12 identified fungi isolated from SE lesions, D. aromatica was by far the most frequently isolated fungus. All D. aromatica isolates tested were found to be pathogenic using the fruit inoculation technique. Based on lesion size, isolates were separated into two groups of virulent and less virulent. Most isolates grouped within the one cluster, with only one isolate falling in the second group being less virulent. Although similar groupings were found between physiological tests, a lack of consistency as to which isolate belonged to which group was found. The optimum temperature for growth was 25°C and an initial pH of 6. The mean colony growth rate was 5 mm day-1. Isolates grew at a minimum of eight to a maximum of 27 mm within 24 hours. Isolates grew best on pectin and poorly on sorbitol when used as a carbon source. Urea supported growth best and poor growth was found on casein-amended sources. At a molecular level, the RAPD technique could be used successfully to seperate isolates into three groups based on cluster analyses. OPC02 was the most discrimatory primer and was therefore used in this study. Isolates produced DNA fragments ranging from 1500 bp to 450 bp. The results obtained from RAPDs could not be correlated with the pathogenicity and physiological tests. Postharvest quality retention and decay control of South African litchi in modified atmosphere packaging

Litchi (Litchi chinensis Sonn.) is a commercially valued fruit mainly for its attractively red pericarp and exotic taste. However, the market value of the fruit is affected by pericarp browning, desiccation and postharvest decay. Current control measures include sulphur dioxide (SO2) fumigation, low temperature storage and high relative humidity (RH). Sulphur residues on fruit, moisture loss, altered taste and decay caused by Penicillium spp., limit the use of SO2 fumigation. Technology that can provide a potential alternative method to retain the quality of fruit is modified atmosphere packaging (MAP). In this study (Chapter 3), the effect of active and passive modified atmospheres on quality retention of litchi cultivars ‘Mauritius’ and ‘McLean’s Red’ was investigated. Results indicated that ‘McLean’s Red’ is more suitable for MAP technology than ‘Mauritius’. Lidding film–4 holes significantly reduced activity of oxidation enzymes, polyphenol oxidase (PPO) and peroxidase (POD), and retained higher pericarp colour. Lidding film–10 holes retained soluble solids concentration to titratable acidity ratio (SSC/TA) (~65), thereby preventing the loss of taste and litchi fruit flavour. In order to enhance the MAP technology further (Chapter 4), chitosan coating of fruit was also assessed. Chitosan (1.0 g L-1) combined with MAP effectively prevented decay, browning and pericarp colour loss in ‘McLean’s Red’. Chitosan (1.0 g L-1) integrated with MAP reduced PPO and POD activity, retained membrane integrity, anthocyanin content and pericarp colour. ‘McLean’s Red’ was found to be more suitable for the chitosan (1.0 g L-1) and MAP integrated treatment than ‘Mauritius’ in retaining overall quality. In addition, the effect of 1-methylcyclopropene (1-MCP) in combination with MAP was determined for both cultivars (Chapter 5). In this case 1-MCP (300 nL L-1) was most effective in preventing browning and retaining colour in both cultivars after 14 and 21 days of cold storage. The effect of 1-MCP (300 nL L-1) showed more potential on ‘McLean’s Red’ than ‘Mauritius’. At higher concentrations (500 and 1000 nL L-1), 1-MCP showed negative effects on membrane integrity, pericarp browning, PPO and POD activity in both cultivars. The effect of integrated postharvest treatments i.e. modified atmosphere packaging combined with chitosan and integrated MAP and 1-MCP as well as MAP and chitosan coating on foodborne bacterial pathogens (Escherichia coli O157:H7 and Staphylococcus aureus) spike-inoculated on litchi fruit surfaces, and Penicillium spp. decay were also investigated (Chapter 6). Results showed integrated MAP and chitosan (0.1 g L-1 and 1.0 g L-1) treatments significantly reduced high and low inoculums load of E. coli O157:H7 and S. aureus on litchi fruit after 21 days of cold storage. Integrated MAP and 1000 nL L-1 1-MCP resulted in higher disease severity. Integrated MAP and chitosan (0.1 g L-1 and 1.0 g L-1) treatments showed very good decay control. The total microbial population of the litchi fruit surface was also determined. An investigation of the collaboration-postharvest food loss relationship and the effect of the environmental turbulence factors

The increasing need for food supply chain sustainability and food security has considerably strengthened the importance of reducing Postharvest Food Losses (PHFL). Recent studies suggested that collaboration among upstream Agricultural Supply Chain (ASC) partners will impact and possibly reduce PHFL levels; a possible direct relationship between collaboration and PHFL was indicated. Hence, collaboration could be a possible solution to PHFL. Research done in the area of PHFL reduction has not considered the producers unit of analysis. Moreover, there have been many changes in the EU ASC s environment and those changes cause turbulence in the latter environment and impact both collaboration among upstream partners and PHFL. Thus, this research investigates the relationship between collaboration and PHFL as well as the possible moderating effects of the different environmental turbulence factors in the aforementioned relationship in the EU ASCs from the producers perspective.

Aspectos qualitativos da manga \'Palmer\' comercializada na CEAGESP / \'Palmer\' mango\'s quality attributes at CEAGESP\'s Sao Paulo Terminal Market

A manga (Mangifera indica L.) fruta tropical climatérica, apresenta grande diferenciação de valor por qualidade, no mercado atacadista do Entreposto Terminal de São Paulo da CEAGESP, no mesmo dia de comercialização, entre lotes da mesma variedade e tamanho. Este estudo buscou compreender as causas da diferenciação de valor, levantando e integrando a percepção do atacadista comerciante de manga, com os resultados de análises físicas e químicas em laboratório e com a análise sensorial. Uma caixa do lote de maior e uma do lote de menor valor de manga \'Palmer\' do tipo 12, o tamanho mais valorizado, foram coletadas a cada semana, durante sete meses, e submetidas a avaliações físicas e químicas. Os maiores atacadistas comerciantes de manga Palmer avaliaram diferentes caixas de manga, conferindo notas aos seus atributos, através de uma escala de notas do gabarito de avaliação de qualidade para manga desenvolvido pelos técnicos do Centro de Qualidade, Pesquisa e Desenvolvimento da CEAGESP. Frutas dos lotes de maior e menor valor foram submetidas à avaliação sensorial, depois de descascadas e separadas por coloração da polpa: amarelo-alaranjado e amarelo-esverdeado. A avaliação por atributo, entre os diferentes atacadistas, foi mais uniforme e com menor coeficiente de variação. A avaliação dos atributos externos, realizada pelos atacadistas de manga, mostrou como atributos mais importantes na diferenciação de valor a maior homogeneidade de coloração na caixa e a maior proporção de cobertura da coloração avermelhada na casca. As avaliações físicas e químicas mostraram diferença significativa dos resultados entre os lotes de maior e menor valor. As diferenças médias de preço entre os lotes avaliados de maior e no valor, no mesmo dia, foi de 23%, variando de 0% a 67%. Os lotes mais valorizados apresentaram maior cobertura de coloração avermelhada, coloração de fundo mais amarela, polpa mais colorida, maior teor de sólidos solúveis, menor acidez titulável, maior pH, menor teor de ácido ascórbico, maior teor de matéria seca, maior densidade, menor firmeza, menor conteúdo de amido, menor ocorrência da presença de cal na casca, maior ocorrência de colapso interno e mesma ocorrência de mancha por látex e desenvolvimento de cera na casca. Os lotes mais valorizados foram predominantemente caracterizados como de manga colhida madura e transportada com refrigeração. Não houve diferença significativa na avaliação sensorial dos atributos: aparência, aroma, coloração da polpa, sabor e textura, entre mangas de mesma coloração de polpa, entre os lotes de maior e menor valor. Houve diferença significativa na avaliação sensorial entre os frutos de polpa amarelo-alaranjado e amarelo-esverdeado. Os mesmos frutos, que não apresentaram diferença na avaliação sensorial, quando submetidos a análises físicas e químicas mostraram maior teor de sólidos solúveis, menor acidez titulável, maior ratio, maior ocorrência de colapso interno e estádio mais avançado de maturação da polpa, na mesma coloração e polpa, na comparação entre lotes de maior e menor valor. As diferenças detectadas pelas análises físicas e químicas, entre polpas de mesma coloração, de lotes de maior e menor valor, não foram percebidas na avaliação sensorial. / Mango (Mangifera indica L.) a climacteric tropical fruit, presents a great value differentiation by quality at the wholesale market of the Terminal Warehouse of São Paulo of CEAGESP, on the same day, same variety and size. This study has searched for the attributes responsible for this value differentiation, integrating mango wholesaler quality perception, mango physical and chemical analyzes and mango sensorial analysis. One box from the most valued \'Palmer\' mango batches and one from the less valued, size and submitted to physical and chemical analyses. Different valued mango boxes were submitted to \'Palmer\' mango largest wholesalers, for external attribute evaluation. A quality score was given to each attribute for each box, using the mango quality scale developed by CEAGESP\'s Quality, Research and Development Center. Fruits from the most and less valued batches were peeled and separated by pulp colour: yellow-orange and yellow-green and submitted to sensorial analysis. The whosaler quality perception has shown as the most important attributes for value differentiation color homogeneity and reddish skin. A reddish coloration higher proportion, a more yellowish background color, a more colored pulp, a higher soluble solids content, a lower titratable acidity, a higher pH, a lower ascorbic acid content, a higher dry matter content, a higher density, a lower firmness, a lower starch content, a lesser occurrence of skin white spots, a greater occurrence of internal collapse and similar occurrence of latex stain and development of wax in the peel were found in highest value batches, compared to lower valued batches, by physical and chemical evaluations. The medium price differentiation, between the most and less valued batches, at the same day, was 23 % and varying from 67% to 0 %. The most valued batches were predominantely picked mature and stored and transported cold. Appearance, aroma, pulp color, flavor and texture has shown sensory evaluation no significant difference comparing mangoes of same pulp color of the highest and lowest values. The sensorial analysis has shown significant difference when comparing different pulp colour. The same fruits submitted to sensorial analysis, of yellow orange pulp compared with yellow green pulp, has shown higher soluble solids content, less titratable acidity, higher ratio, more internal collapse and more advanced pulp maturation stage for the most valued batches yellow orange color and yellow green, when compared to less valued yellow green different color pulps. The difference perceived by the physical and chemical analyzes, between fruits of higher and lower value of the pulp color, was not detected by sensorial evaluation.

Análise diferencial do proteoma da polpa de manga (Mangifera indica L.) e identificação de proteínas com variação de abundância durante o amadurecimento pós-colheita / Differential proteomic analysis of mango fruit pulp (Mangifera indica L.) during postharvest ripening

A manga (Mangifera indica L.) é cultivada em áreas tropicais e subtropicais, principalmente em países em desenvolvimento. Os maiores produtores são a Índia, China, México, Indonésia, Tailândia, Paquistão e Brasil, mas, por ser uma fruta altamente perecível, suas exportações têm sido limitadas. Durante o amadurecimento, as frutas adquirem características que as tornam adequadas para o consumo como conseqüência de alterações metabólicas dependentes, em larga medida, da expressão de genes específicos. Uma vez que as proteínas são os elementos efetores da expressão gênica, a análise de proteomas pode auxiliar na identificação de pontos de controle do metabolismo determinantes para a qualidade desses alimentos. Assim, o objetivo do trabalho é identificar spots de proteínas diferentemente abundantes durante o amadurecimento a partir dos mapas 2D-DIGE das polpas de mangas (Mangifera indica L.) da cultivar Keitt nos estádios pré-climatérico e climatérico. Após extração das proteínas e separação por 2D-DIGE, as imagens dos géis obtidas foram analizadas com o software PDQuest, utilizando o teste T de Student para a análise estatística. Dentre os spots protéicos bem resolvidos e considerados na análise, os 47 que apresentaram-se diferentemente abundantes entre os estádios estudados foram removidos dos géis, suas proteínas digeridas e, enfim, sequenciadas por espectrometria de massas. Foram obtidas as identidades prováveis de 58 proteínas diferentes a partir da comparação das sequencias obtidas com banco de dados NCBI2010, utilizando o software Mascot. / Mango fruit (Mangifera indica L.) is cultivated in tropical and subtropical areas, mainly in developing countries. India, China, Mexico, Indonesia, Thailand, Pakistan and Brazil are the major producers, but its trade has been limited due the highly perishable nature of the fruit. During ripening, the fruits acquire characteristics that make them appropriate for consumption as a consequence of metabolic changes dependent on the expression of specific genes. As proteins are the effector elements of gene expression, proteome analysis can help the identification of metabolism keypoints that could influence the fruit quality. Thus, the aim of this study was to compare the protein maps of mango pulp (Mangifera indica L. cv. Keitt) in pre-climacteric and climacteric stages, in order to identify protein spots that differ in abundance in these two stages. After protein extraction and separation by 2D-DIGE technique, the gel images obtained were analyzed with PDQuest software, using the Student´s T-test for statistical analysis. We obtained 47 spots differently abundant between the stages studied, that were excised from the gels and its proteins digested with trypsin and sequenced by mass spectrometry. We obtained the identities of 58 distinct proteins from the search of the peptide sequences against NCBI2010 database using the software Mascot.

O mamão (Carica papaya L.) é um fruto nativo de clima tropical e comercializado em todo o mundo. O Brasil é um dos grandes produtores e consumidores destes frutos, porém, anualmente, são perdidas aproximadamente 10 toneladas dos frutos devido ao escasso controle de qualidade e, principalmente, às doenças pós-colheita, como a antracnose, ocasionada pelo fungo Colletotrichum gloeosporioides. O objetivo do presente estudo foi avaliar a associação de óleo essencial e película de carboximetilcelulose a fim de controlar a antracnose em mamão e monitorar os efeitos deste tratamento nas características físico-químicas e de aparência dos frutos. A pesquisa foi realizada em duas etapas: a primeira com caráter fitopatológico, e a segunda, quanto à qualidade físico-química e de aparência dos frutos tratados. Na primeira etapa foram realizados os seguintes testes: eficiência in vitro da Concentração Inibitória Mínima (CIM) dos óleos de Eucaliptus staigeriana, Lippia sidoides e Pimenta pseudocaryophyllus e suas misturas sobre o fungo C. gloeosporioides pelos métodos de diluição em ágar e modelo matemático de Gompertz; avaliação do óleo selecionado (o que apresentou a menor CIM), em relação à composição química; Concentração Mínima Fungicida (CMF) e eficiência in vivo (determinação da incidência e severidade). Na segunda etapa, foram avaliadas as qualidades físico-químicas (cor, perda de massa, firmeza, taxa respiratória, acidez titulável, teor de sólidos solúveis e ratio) e de aparência (presença de murchamento e podridão) nos frutos após a aplicação do óleo essencial associado à película. Na primeira etapa, os óleos essenciais de L. sidoides, E. staigeriana, P. pseudocaryophyllus e suas misturas apresentaram ação inibitória nos experimentos in vitro contra C. gloeosporioides. O melhor desempenho foi do óleo de L. sidoides, que apresentou concentração inibitória mínima de 125 ppm no método de diluição em ágar, e 75,3 ppm pelo modelo matemático de Gompertz. A concentração fungicida mínima encontrada foi 62 ppm pelo método de caldo. Quanto à composição de L. sidoides, o timol, que possui ação antifúngica reconhecida, foi encontrado como composto majoritário. Os resultados da avaliação in vivo mostraram que os menores valores de severidade ocasionada por C. gloesporiodes foram observadas no tratamento envolvendo a associação da película de carboximetilcelulose com o óleo essencial de L. sidoides, quando aplicados preventivamente, porém não inibiu a incidência da doença. Na segunda etapa do estudo, os resultados demonstraram que a utilização da película de carboximetilcelulose em associação com o óleo essencial de L. sidoides (375 ppm) conservou por 9 dias as características físico-químicas e de aparência dos mamões, enquanto que no controle e no tratamento somente com a película, 5 e 7 dias, respectivamente. Com base nos dados obtidos, concluiu-se que os óleos essenciais de Lippia sidoides, Eucaliptus staigeriana e Pimenta pseudocaryophyllus e suas misturas binárias 1:1 possuíram ação antifúngica contra C. gloeosporioides. Lippia sidoides demonstrou ser altamente eficaz em menor dose, e que a associação deste óleo (375 ppm) com a película de carboximetilcelulose (0,25%) contribuiu efetivamente para o aumento da vida útil dos mamões armazenados a 22°C, conservando suas características físico-químicas e de aparência por 9 dias. / The papaya (Carica papaya L.) is a tropical fruit and it is commercialized around the world. Brazil is one of the major producers and consumers of these fruits, but approximately 10 tons of fruits are lost annually due to poor quality control and especially postharvest diseases such as anthracnose, caused by Colletotrichum gloeosporioides fungus. The objective of the present study was to evaluate the association of essential oil and carboxymethylcellulose film in order to control the anthracnose in papaya and to monitor the effects of this treatment on its physicochemical and appearance characteristics. The research had two stages: the first one had phytopathological character and the second one regarding the physicochemical quality and appearance of treated fruits. In the first stage, the following tests were carried out: Determination in vitro of Minimum Inhibitory Concentration (MIC) for the Eucalyptus staigeriana, Lippia sidoides and Pimenta pseudocaryophyllus oils and their mixtures on C. gloeosporioides fungus by agar dilution and Gompertz mathematical model; Evaluation for the selected oil (the oil presenting the lowest MIC), of its chemical composition; Minimum Fungicidal Concentration (MFC) and in vivo efficiency (by incidence and severity determination). In the second stage it was evaluate the physicochemical qualities (color, weight loss, firmness, respiratory rate, titratable acidity, soluble solids content and ratio) and appearance (presence of shriveling and rot) of fruits after oil application associated with film. In the first stage, the essential oils of L. sidoides, E. staigeriana, P. pseudocaryophyllus and their mixtures showed inhibitory action in the in vitro experiments on C. gloeosporioides. The best oil was L. sidoides, it had a minimum inhibitory concentration of 125 ppm by agar dilution method and of 75.3 ppm by Gompertz mathematical model. The minimum fungicide concentration found was 62 ppm by the both method. About the composition of the L. sidoides oil, thymol, which has been reported as presenting antifungal activity, was found as its major compound. The results of in vivo evaluation showed that the lowest values of disease severity caused by C. gloesporiodes were present in the treatment involving the association of carboxymethylcellulose film with L. sidoides, when it was applied preventively, but it did not inhibit disease incidence. In the second stage of the study the results showed that the use of carboxymethylcellulose film in association with L. sidoides (375 ppm) preserved the physicochemical and appearance characteristics of papaya fruits for 9 days, whereas in the control and treatment with the film sole, it preserved for 5 and 7 days, respectively. Based on the obtained data, it was concluded that the essential oils of Lippia sidoides, Eucalyptus staigeriana and Pimenta pseudocaryophyllus and their 1:1 binary mixtures had antifungal action on C. gloeosporioides. Lippia sidoides, which proved to be highly effective, was more prominent, and the association of this oil (375 ppm) with the carboxymethylcellulose film (0,25%) effectively contributed to increased lifespan of stored papayas at 22°C, preserving its physicochemical and appearance characteristics for 9 days.
