Large-scale bread bakeries generally exist as ‘Islands of Control’ - a long line of processes interrelated, but not interconnected in terms of their control systems. To successfully implement a control system that encompasses the entire bakery, much information must be gathered and processed in such a form that process and control engineers can deduce control algorithms. This project involved the instrumentation of an entire bakery with a view to providing production reports that merge the processes. New methods of tracking products through the entire process were investigated and tested. Methods were also proposed and tested to log temperature/humidities of various bakery processes and align with products passing through to produce a loaf/time/temperature profile.

The landscape, industrial machine and human endeavour needs to be reconciled in Cullinan. The newly proposed group framework aims to do this by focussing on four nodes along a circular route which follows the circumference of the scar in the landscape. It is suggested that the once the mine (currently the only livelihood of the town) closes
that a multi scalar network of craft industries, educational facilities, tourist attractions and
agriculture would continue to support the town. This network doesn’t just rely on one method on one scale, as the mine did, ensuring a more resilient support system Ernstson, van der Leeuw, Redman, Meffert, Davis, Alfsen & Elmqvist 2010). In this scheme, located at the soon to be closed No.1 shaft and headgear, it is proposed that if a resilient
connection between town, users and landscape needs to be established by diversity of program, it might be necessary to also investigate a diverse generation of building form which reinforces this idea. Gelernter (1995) identified five core theories on the generation of form. It is argued that the influences on form within these theories are either generated
by the object (nature) or the subject (the mind). The generators of form found within the extant fabric of the study area was found to be mainly generated by influences from the physical world, thus if a diversity of form generation needs to be established, a form that was generated by intuition and links the emotions and mind of the user needs to be investigated within the design. Following this, Romantic theories relating to the backlash to pure rationality is tapped into together with an understanding of the influence of the
sublime on the mind of the user, and the emotional link it creates between the subject and object is used in the design and process. These theories have influence on the creation of spaces, form, and the relation to extant fabric in the new building. The concept uses and adapts sublime elements in the landscape and in the industrial machine to establish this emotional link. Although program is not the main design generator of this project, it cannot be ignored and a bakery and baking school, and mill is proposed, as presents us with aspects that can be tapped into to enhance the experience of spaces as well as linking into all of the proposed networks of resilience as mentioned before. The concept is drawn through into the technical exploration of the building, where the form is seen as a threshold between rationality and the sublime. Rational construction is decayed from the extant fabric into the landscape where natural materials are used more in the construction, and the structure is not as evident as before. Denna stora, stenladuliknande byggnad står i mitten av ett vetefält. Man anländer via en grusväg som leder genom fälten där man möts av en siluett som påminner om de engelska Country House och ramas in av det som ska bli mjölet som kommer bakas till bröd inuti. Det här projektet utforskar flera olika punkter men centralt för arbetet med gestaltningen var en frågeställning kring vilken effekt en medveten blandning av gamla och nya arkitekturella formspråk skulle producera. Detta ledde till en intressant blandning av olika uttryck. Även om dessa uttryck inte anses ge några fasta slutsatser har processen lagt grund för vidare, liknande undersökningar. Kärnan av uppgiften var att integrera ett komplext program. Projektet tolkar det ena delen av programmet, folketshus, som en öppen, symbolisk samlingsplats och den andra, bageriet, som en professionell produktion av bakade produkter. Viljan har varit att väva in produktionens centrala delar, de vedeldade ugnarna, i rumsligheterna så att de aktivt och uppenbart formar upplevelsen av byggnaden. / This large, barn-like structure stands in the middle of a field wheat. You approach the building on a gravel road leading through the fields and are met by a silhouette reminiscent of and English country house, closely flanked by the produce that will become the flour for the bread baked inside. This project has several focal points. It sets out to find common ground between old and new forms of architectural expression and explore what the effect of this blending would produce. This produced a curious blend of architectural vernaculars with somewhat inconclusive results, though laying good groundwork for similar future enquiries. The core of the assignment is to mix and integrate a complex programme. The project interprets the two seemingly disparate parts of the program as, firstly, the communal and symbolic centre for the public, and secondly, the professional production of baked goods. The project aims to integrate these by putting the production on display and weaving the centrepieces of the bakery, namely the woodfire ovens, into the communal spaces so that their presence is felt in most parts of the building.

There is a sorrow here that weeping cannot symbolize. There is a failure here that topples all our success.” (Steinbeck, 2008) Learning from the skies above and ground beneath, I propose a horizon that binds the two in a closed loop system. As a baker combines earth, water, wind, and fire to transform dough into bread, the bakery is designed to knead these same elements together to create a harmonious relationship between man and nature.

The purpose of this research is to understand the current operations and marketing strategies of Chiu Chen Nan Orient Bakery through literature review and case studies, as well as to gain a consistent suggestion on marketing strategy through the professionals¡¦ opinions. The result reveals that the trends in the development of bakery market are as follows:
1. The amount of order is decreasing
Because of the change of social structure, families and personal relationships were not as close as before, which led to the trend that the single order of bride cake was decreasing in bakery industry. Moreover, most of the foreign brides do not have the custom of using bride cakes. The increasing percentage of those foreign brides through the years contributes to the drop of the order amount.
2. The new products are available faster than before.
Nowadays, there were more new products available in the market at a much faster speed. After analyzing the factors of old cost, competition in the industry, and ability of invention, these new products emphasized on innovation, variation, service, and the research ability in producing new products and packages.
3. Multi-sales channels, cross-industrial alliance and multi-angled business
The new products were packaged in a different way to enter the convenient stores and wholesales stores. Also, they allied with related industries, including wedding gifts, wedding photography, jewelry, hotels, and tourism in order to develop new customers beyond the way of selling in the past.
4. Discount and market segment
In one hand, many companies started to make discount in order to compete with each other and occupy the market. This discount war has made the profit of the industry decreasing tremendously. On the other hand, some companies began to develop high-priced, well-packaged, and multi-styled and multi-combinational products to segment and differentiate themselves from other competitors.
5. The number of retail stores of wedding bakery chains is decreasing.
Because of the bad economy, some wedding bakery chain stores started to experience deficits. Plus, the change of business districts in many areas deteriorated the loss of business. Therefore, some wedding bakeries started to close the retail stores suffering from bad profits.
6. Various combinations of bride cake gift box are available to satisfy the different customers.
In the traditional Taiwanese customs, there should be 6 or 12 gifts for wedding. The ¡§Six Gifts¡¨ is the traditional wedding custom and ¡§the Twelve Gifts¡¨ is the more daintier one, which include the big cake, also named the Han-styled bride cake. Because many customers still followed the old customs, many western bakeries started to enter the Chinese bride cake market.
The main results from the professionals¡¦ interviews are listed as below. Regarding the development of marketing strategy for Chiu Chen Nan Orient Bakery, their viewpoints are very consistent:
1. Product strategy
Use the current best-selling products to rebuild the store reputation and penetrate the market. Develop new markets with exclusive products or new products. This can be further incorporated with modern and cultural design elements to stimulate the five senses as a direction for new product development in the future. Moreover, related products, such as tea, can be developed to promote the sales of bakery. The company should run the business in a more multi-dimensional way by initiating new product lines and sales channel to increase its competitiveness in the market.
2. Price strategy
The severe price war of bakery industry will result in damaging the market price in the end. The middle high pricing can remain the profits and image of high-quality and delicacy. The consuming cultural differences will make the consumers question about the price recognition. The price difference can not solve the problem because it will make the consumers question about the quality of the product. Therefore, a higher pricing is a better strategy in segmenting the market.
3. Channel strategy
Although wholesales and convenient supermarkets have a lot of retail stores, the traditional bakery shop is not able to produce the amount which is demanded. In addition, these channels will lower the profits or even the price after the products being bought, which will further confuse the consumers by the different prices between retail stores and wholesales channels. On the other hand, the stable department stores and retailing stores are still the main resources of income. However, different contributes of consumers with varioius product lines should be considered. The channel of internet shopping will be a major trend in the future. To hire designated staffs, pay attention to the web safety, as well as to provide home deliver service and maintain the stability of the website are some important subjects needed to be taken care of.
4. Promotion Strategy
To make promotion activity more refined is more important than to have more promotions. The first step of a good promotion is to streamline the strategy and to set the promotional goal. Then, the effective promotion tactics should be selected. From the past experience of Chiu Chen Nan Orient Bakery, the most effective promotions included making discount and buy-one-get-one-free in anniversaries. Public relations activities had better outcome if they were cooperated with more well-known groups. About strategy of making alliance, the communication problems in cooperation should be solved in order to exchange the resources between each other and achieve the effect of cooperation.
