A case study of the strategic leadership displayed by Kevin Hedderwick at Famous Brands between 2004-2009

Research studies and the review of academic literature has found that strategic leadership had a direct impact on organisational climate, and that climate in turn accounted for nearly one third of the financial results of organisations (Goleman, 2000). The conclusion from research conducted across 13 industries established that over a 20 year period, leadership accounted for more variations in performance than any other variable (Northouse, 2006). This thesis confines its research to a case study on Famous Brands. Famous Brands is currently one of Africa’s leading Quick Service Restaurant and Casual Dining franchisors and is also represented in the United Kingdom. The Group also has a manufacturing arm and supplies its franchisees, the retail trade and the broader hospitality industry with a wide range of meat, sauce, bakery, ice cream, fruit juice and mineral water products. At the time when the company’s name changed from Steers Holdings to Famous Brand in 2004, Kevin Hedderwick was appointed as Chief Operating Officer. The research examines how Kevin Hedderwick has exercised strategic leadership and thereby influenced Famous Brands’ performance. Hedderwick displays qualities, attributes and behaviours that are characterized by the phenomenon of “strategic leadership”. A quantitative analysis of Famous Brands financial performance (between 2005 and 2009) was undertaken. Further qualitative descriptions were used to further give meaning to the financial results. The success experienced by Famous Brands since Hedderwick’s appointment, seem to suggest that strategic choices and initiatives have been met with great success. The research is presented in the form of a case study that can be developed into a teaching case to be used in the classroom to illustrate the exercise of strategic leadership. The researcher explored a qualitative research framework by collecting and assimilating data from available documentation, and from a formal interview that was conducted with Mr Hedderwick. Information was also obtained from interviews that were conducted with other senior executives and influential personnel. This research concludes that the success of organisations is dependent on the interventions of a strategic leader who displays a specialist set of skills and behaviours. These strategic leaders have the ability to successfully influence their employees, thereby creating an enabling environment for the implementation of their strategic choices.

Is the Emperor naked? : rethinking approaches to responsible food marketing policy and research

The thesis aims to present a case for a rethinking of the paradigmatic frames underpinning food marketing control policy and research. In support of its contention, it reports on the methodological strategies, evidence outcomes and knowledge translation contributions of a series of research projects. The projects were commissioned by national and international policy makers during the period 2009-2015 in support of responsible food marketing policy development. They were conceptualised, developed and interpreted through participatory and iterative research planning processes. The research drew on theories and constructs from multiple disciplines. Public health, marketing and policy science contributed most, but information economics and management theories also informed research design and analysis and interpretation of findings. Its key generalizable findings can be summarised as follows: • The identification of a fragmented but convergent pool of evidence indicating contemporary food and beverage marketing is an interactive, dynamic phenomenon. • The identification of a fragmented but convergent pool of evidence demonstrating it significantly impacts sociocultural determinants of food behaviours. • The generation of evidence demonstrating a gap between the strategic aims of responsible marketing policy regimes and the inherent capacity of implemented interventions to constrain marketing’s food environment impacts. • The generation of evidence demonstrating that critical re-appraisal of food marketing policy research assumptions and preconceptions is a strategy supportive of policy innovation. • The generation of evidence that research intended to support real world multi-stakeholder policy development processes requires additional skills to those established and recognised as central to high quality research. These include the ability to engage with dynamic and politicised policy processes and their public communications challenges. • The generation of evidence that can inform future independent benchmark standard for responsible marketing development initiatives. • The generation of evidence that can inform future research on designing and developing policy that is ‘future proof’ and targets marketing’s sociocultural food environment impacts. Its most significant knowledge translation contributions have been: • Support for the WHO Set of Recommendations on the Marketing of Foods and Non-alcoholic Beverages to Children (subsequently endorsed at the 2010 World Health Assembly and the 2011 United Nations General Assembly). • Participatory research contributions to the Scottish Government’s responsible marketing standard development initiative (PAS2500). • Supporting the planning and development of the Scottish Government’s Supporting Healthy Choices Policy initiative. • Knowledge exchange with policy makers and stakeholders engaged in a scoping and prioritisation initiative commissioned by the United Kingdom’s Department of Health (An analysis of the regulatory and voluntary landscape concerning the marketing and promotion of food and drink to children). • Supporting responsible marketing policy agendas targeted to the engagement of a broad mix of stakeholders in innovative policy development processes. • Supporting policy makers’ efforts to increase popular support for stronger, more effective responsible marketing policy controls. The thesis therefore aims to present evidence that the programme of research presented here has made useful and original contributions to evidence and knowledge on contemporary food marketing and its impacts on food behaviours and the food environment. It aims to build on this by demonstrating how this evidence informed and supported policy development. Through this the thesis aims to support its case that a rethinking of food marketing policy research assumptions and conceptions can expand and enrich the evidence base as well as real world policy innovation.

The impact of innovative marketing on the performance of Ghanaian food processing small and medium enterprises (SMEs)

Abstracts in English and Zulu / The main objective of this study was to investigate the impact of innovative marketing on the performance of Ghanaian food processing SMEs. The research study was carried out in response to the scholarly and managerial interest in the construct of innovative marketing as a novel competitive tool and its effect on performance in food processing SME organisations. This research study examined the effect of the six components of innovative marketing (i.e. marketing mix variables (MV), marketing modification (MM), integrated marketing (IM), customer focus (CF), market focus (MF) and value proposition (VP) on the four components of food processing SME performance i.e. financial performance (FP), customer performance (CP), internal business process performance (IBPP) and learning & growth performance (LGP). The research study was carried out on 225 food processing SMEs on the registered list of the National Board for Small Scale Industry (NBSSI) in the Eastern Region of Ghana. The study was quantitative in nature with the use of questionnaires distributed to 225 owners/managers of food processing SMEs in the Eastern Region of Ghana. Through an extensive literature review, a conceptual framework and empirical result from 225 food processing SMEs in Ghana, the research study employed exploratory factor analysis along with structural equation modelling – path analysis to evaluate the proposed model for understanding the relationships among the constructs. The collected data was analysed through descriptive statistics and multiple regression analysis using the Statistical Package for the Social Science (SPSS) version 23 and STATA version 15.1. The reliability of innovative marketing and food processing performance factors were determined using Composite Reliability and Cronbach’s alpha and the validity of the factors of innovative marketing and food processing SMEs were also ascertained using convergent and discriminant validity methods. The research study established that SMEs in the food processing sector in Ghana exhibit high levels of five innovative marketing factors (i.e. market focus, value proposition, customer focus, integrated marketing and marketing mix variables) which impact on all four factors of food processing SME performance (i.e. financial performance, customer performance, internal business process performance and learning and growth performance) whereas marketing modification, a factor of innovative marketing, indicated insignificant association with food processing SME performance. The recommendation of the conducted research study made a clear statement that food processing SMEs in Ghana should maintain a positive attitude towards innovative marketing, and also negate the effect of innovative marketing challenges to achieve high performance. The conclusions that were drawn from the conducted research study indicated that the main research objective had been achieved. This is the food paradox: despite a global surplus production of food, millions of people experience malnutrition and hunger all over the world, but especially in the developing countries. South Africa is no exception and despite self-sufficiency in food, the food equation is not balanced. An extreme gap exists between the production and consumption of food. Consequently, the problem researched in this study is the lack of food security in a world context with surplus food and how this is reflected in South Africa. Against this background a study was undertaken of the causes of food insecurity and the theories and explanations of famine. The focus of this research study is threefold. Firstly it focuses on a conceptual enquiry intohunger, poverty, food security and famine in Africa. Secondly there is an enquiry into the causes of the lack of food security in Africa. Thirdly it focuses on South Africa and an enquiry is done into the incidence of hunger, malnutrition and poverty, and into the national context of food security with the aim of identifying relevant problems in food security. It was found that food security is determined by the availability of food (supply) and the capability of people to obtain it (demand). It appears that the development process, government policy, ecological environment and technology, science and research directly affect the food security of people, and that South Africa does not differ from other African countries in this regard. Although South Africa has achieved food self-sufficiency, millions of people experience hunger because of poverty and the lack of entitlements. The study was developed from the perspective of two theoretical axles. The first was an analysis of Market Value contributions as a useful indicator for determining the fair market value created for shareholders and, therefore, constitute a solid basis for measurement of companies performance. The second was the efficient market hypothesis which considers the information s efficiency or the impact of certain information on pricing assets. The results produced by the model ratified some of the hypotheses in this research, both in individual significance as on some independent variable sign. No Place for Middlemen: Civic Culture, Downtown Environment, and the Carroll Public Market during the Modernization of Portland, Oregon

Following the Civil War, the American government greatly expanded the opportunities available for private businessmen and investors in an effort to rapidly colonize the West. This expansion of private commerce led to the second industrial revolution in which railroads and the corporation became the symbols and tools of a rapidly modernizing nation. It was also during this period that the responsibility of food distribution was released from municipal accountability and institutions like public markets began to fade from the American urbanscape. While the proliferation of private grocers greatly aided many metropolises' rapid growth, they did little to secure a sustainable and desirable form of food distribution. During the decades before and after the turn of the century, public market campaigns began to develop in response to the widespread abandonment of municipal food distribution. Like many western cities, Portland, Oregon matured during the second half of the nineteenth century and lacked the historical and social precedent for the construction of a public market. Between 1851 and 1914, residents of Portland and its agricultural hinterland fought for the construction of a municipally-owned public market rallying against the perceived harmful and growing influences of middlemen. As a result of their efforts, the Carroll Public Market was founded on the curbsides of Yamhill Street in downtown Portland. While success encouraged multiple expansions and an increasingly supportive consumer base, a growing commitment to modernist planning among city officials and the spread of automobile ownership determined the market to be incompatible with the commercial future of Portland. In an effort to acknowledge and capitalize on the Carroll Public Market's community, a group of investors, incorporated as the Portland Market Company, worked with city officials between 1926 and 1934 to create the largest public market in the United States, the Portland Public Market. As the first building of the newly constructed waterfront development, many believed the massive institution would reinvigorate nearby businesses and ultimately influence the potential of the downtown business district. The Portland Public Market was decidedly distinct from the market along Yamhill and the promoters cast it as such. By utilizing the most modern technologies and promises of convenience there was little that the two organizations shared in common. In the end, the potential of the waterfront market was never fulfilled and amidst legal scandals, an ongoing struggle to meet operating costs, and the success of a rebellious Farmers Cooperative, it shut down after nine years. This thesis discusses these two public markets during a period of changing consumer interests and the rise of modernist planning in Portland, Oregon. Ultimately, the Carroll Public Market was torn down for reasons beyond its own control despite the comfortable profit it enjoyed each year. Many city officials refused to support the institution as they increasingly supported the values of modernism and urban planning. The Portland Public Market fit perfectly with many city planners' and private investors' intents for the future. This essay seeks to offer a unique glimpse of how commercial communities form and how commercial environments evolve through the politics of food distribution, consumerism, and producer-to-consumer relationships.

Food safety knowledge and attitudes of food handlers in hospitals in the Capricorn District Municipality in Limpopo Province, South Africa

The purpose of this research was to investigate the level of food safety knowledge, attitudes and food handling practices of employees in hospitals in the Capricorn District Municipality (CDM), Limpopo Province, South Africa. Purposeful sampling was followed to sample 210 respondents from nine hospitals in CDM. Respondents were individuals who are 18 years or more, employed in these hospitals and are involved in the food handling duties. Data collection was done by means of questionnaires and interviews. The results showed that 99% and 70% of the food handlers are black females and are health care staffs. Up to 71% have not attended any food safety-training course. Many food handlers are not knowledgeable about HACCP and the correct temperature and duration for receiving and storing temperature controlled for safety (TCS) foods respectively. The vast majority of food handlers are not knowledgeable on minimum internal cooking temperature for poultry, seafood, egg and the best way of thawing of frozen meat. The majority of food handlers do not know that Salmonella is the main foodborne bacteria pathogen mostly associated with poultry products and that food borne bacteria will grow quickly in food at a temperature of 37 ˚C. The majority of food handlers possess adequate food safety knowledge regarding the safe food handling practices and the prevention of contamination. Respondents with higher academic qualifications do not possess more food safety knowledge than those with lower academic qualifications. Food handlers who are health care staff have less food safety knowledge when compared to food service managers, food service supervisors and chefs. / Business Management / M.A. (Consumer Science)

Atualmente, na América Latina, os pobres representam 40% da população e 11% são subnutridos de acordo com a Comissão Econômica para a América Latina e Caribe (CEPAL). A urgência de medidas corretivas é inegável. É indispensável que a movimentação de recursos para a agricultura, setor fundamental para a segurança alimentar nos países em desenvolvimento, avance em direção às mudanças desejadas. Este trabalho gera indicativos para aperfeiçoamento de modelos de produção e fornece subsídios para orientar ações de políticas públicas, sobretudo, analisando diversos aspectos da agricultura latino-americana e as relações existentes entre esta e a segurança alimentar da população envolvida. Os dados (1999, 2000, 2001) utilizados foram provenientes do banco de dados estatísticos da Organização das Nações Unidas para Alimentação e Agricultura (FAOSTAT). Aliados ao trabalho aprofundado de revisão bibliográfica, foram utilizados os métodos de análise fatorial em componentes principais e análise hierárquica. O ¿software¿ STAT-ITCF , do ¿Institut Technique de Céréales et des Fourrages¿(França) e o ¿Statistical Packet for Social Sciences¿ ¿ SPSS (EUA) foram utilizados para processar as técnicas de análises multivariadas. De maneira geral, este trabalho pôde revelar disparidades existentes e conduzir o exame das dificuldades que determinados países possuem, para orientar as suas respectivas diretrizes no sentido de viabilizar seus padrões agroalimentares compatíveis com um estado nutricional mais adequado e, sob os pontos de vista sociais, econômicos, culturais e ambientais, mais compatíveis com os conceitos recentes de sustentabilidade / Abstract: Prevailing patterns of food production and consumption are spreading throughout the world, while 800 million people in the world are malnourished, representing 13% of the world population, according to 1996 FAO data. Currently in Latin America, 40% of the population is poor and 11% undernourished, according to the Economic Commission for Latin America and the Caribbean.The urgent need for corrective measures is undeniable. The mobilization of resources for agriculture, which is fundamental for food security in developing countries, must advance in the direction of desired changes. This study, which analyzes various aspects of the relationship between Latin American agriculture and the food security of the populations involved, it generates indicative for improvement of production models and it supplies subsidies to guide actions of public politics. The data utilized (1999, 2000, 2001) were from the FAO statistical data base (FAOSTAT). Beans, beef and veal, cassava, eggs, fish (seafood), fruit, maize, milk, rice, pigmeat, potatoes, poultry meat, vegetables, vegetables oil, sugar and wheat were choosen to compose this analysis. We used factor analysis and hierarchical cluster analysis as the fundamental methodology.
