El siguiente proyecto de hamburguesas hechas a base de ingredientes orgánicos y naturales como la quinua, lentejas y Cushuro muestra su viabilidad en base a una investigación realizada a jóvenes y adultos entre los 18 a 55 años de los niveles socioeconómicos A y B. De este modo, la investigación ha permitido identificar a un grupo de consumidores que tienen dificultades para conseguir productos saludables que cumplan con los requerimientos fundamentales para ser considerados como orgánicos, y también se busca fortalecer el consumo de un producto peruano que contiene gran variedad de nutrientes que requieren las personas diariamente. De igual forma, se determinó que hay una disponibilidad alta de compra por adquirir este tipo de productos que ayuden a ahorrar tiempo y permitan variar sus comidas diarias. Por último, el público objetivo ha mostrado interés por los ingredientes de las hamburguesas, dado esto esta situación el interés de compra y la disponibilidad de recibirlo en casa ha incrementado. De acuerdo con lo señalado anteriormente, se ha optado por desarrollar el proyecto utilizando métodos de investigación de mercados donde se ha analizado la industria, al consumidor, competidores y proveedores. Para lograr un buen desarrollo empresarial se han planteado objetivos estratégicos que serán guiados a partir de planes estratégicos. Finalmente, se han obtenido resultados como: las utilidades netas serán de S/. 36,628,39 para el primer año, de S/. 30,423,92 para el segundo año y de S/. 119,812,28 para el tercer año. / The following hamburger project based on organic and natural ingredients such as quinoa, lentils and Cushuro shows its viability based on research carried out on young people and adults between 18 and 55 years of socioeconomic levels A and B. Thus, the research has allowed to identify a group of consumers who have difficulties in obtaining healthy products that meet the fundamental requirements to be considered organic, and also seeks to strengthen the consumption of a Peruvian product that contains a variety of nutrients that require people daily. Likewise, it was determined that there is a high availability of purchase by acquiring these types of products that help save time and allow you to vary your daily meals. Nuestro trabajo y emprendimiento trata sobre una alternativa naturista al mercado peruano de energizantes bajo el nombre de Drop Shock es una empresa que nace con la necesidad de poder encontrar una bebida energética portátil y natural. Nuestro actual mercado se encuentra lleno de empresas como Monster Energy Drink, Burn , V02 entre otras cuya capacidad de mantener a jóvenes estudiantes durante periodos de estudios masivos es directamente proporcional a su nocividad para la salud. Al haber experimentado en diversas ocasiones molestias luego de haber tomado una bebida que , supuestamente, nos daría energía nos dimos a la tarea de crear una alternativa sana y naturista que de los mismos resultados con ningún ingrediente plástico o nocivo. Drop Shock llegó para instaurarse y proporcionar una opción más sana pero llena de energía e viable para inversores a un mediano plazo como veremos a continuación.

El presente proyecto de negocio es una salchicha saludable a base de pota, la cual está dirigido a jóvenes deportistas que busquen cuidar su alimentación. Se evidenció que las características que presenta el producto, tales como la practicidad y su alto valor proteico es uno de los aspectos que influyen en la adquisición. Asimismo, se identificó que nuestro público objetivo trabaja o estudia, por lo cual al contar con un producto listo para comer y con vitaminas se identificó que es una de las principales razones por la cual adquirió nuestro producto. Para realizar este proyecto se efectuó un análisis de la industria de embutidos, en la cual se identificó que las salchichas son un producto altamente demandado por los clientes. Además de ello, se efectuó un análisis de los nuestros principales competidores, posibles consumidores y proveedores. Cabe añadir que también se desarrolló los diversos planes, tales como: Plan de Marketing, Plan de Operaciones, Plan Estratégico, Plan de Recursos Humanos, Plan Financiero y Plan de Responsabilidad Social con la finalidad de identificar los gastos y costos a incurrir para el desarrollo de este proyecto. Como consecuencia de ello, se obtuvo que al efectuar una inversión inicial de S/.18 560, en el primer año se obtiene S/. -11 222.17 de pérdida neta. Para el segundo año se obtiene una ganancia neta de S/. 12 496.03 y para el tercer año S/. 46 516.83. Es por ello, que se puede concluir que el proyecto es atractivo para los inversionistas y es rentable. / The present business is a healthy sausage made of pota, which is aimed at young athletes looking to take care of their diet. The characteristics of the product, stories such as practice and its high protective value are evidenced as one of the aspects that influence the purchase decision. Likewise, it was identified that our target audience works or studies, so by having a product ready to eat and with vitamins it was identified that it is one of the main reasons for which it acquired our product. To carry out this project, and analysis of the sausage industry was carried out, in which sausages were identified as a product highly demanded by customers. In addition, an analysis of the main competitors, potential consumers and suppliers was carried out. It should be added that there are also the various plans, such as: Marketing Plan, Operations Plan, Strategic Plan, Human Resources Plan, Financial Plan and Social Responsibility Plan with the determination to identify the expenses and costs incurred for development from this project. As a result, it was obtained that when requesting an initial investment of S/.18 560 in the first year you get S/. -11 222.17 of the nest loss. For the second year, a net profit of S/. 12 496.03 and the third year S/. 46 516.82. Según el análisis del macro y microentorno, existe mayor preocupación por el cuidado nutricional infantil. A nivel del Estado, existen políticas informativas como la “Ley de la Alimentación Saludable para el niño, niña y adolescente”; y a nivel familiar, el incremento de opciones saludables para los niños, verificado en nuestro estudio de mercado. Consumption of fruits and vegetables in the Mississippi Delta and the role of the food environment

Differences in the prevalence of obesity are generally associated with disparities in the food environment which partially determine diet quality. In this research, I examine the relationship between the local food environment and the consumption of fruit and vegetables among individuals living in the Mississippi Delta region using survey and store availability data for individuals living in seven counties with the highest obesity rates in the state. An ordered probit model with an endogenous covariate is used to assess the marginal effect of food environment variables on the frequency of fruit or vegetable consumption. I find that longer distance traveled to the nearest full-service grocery store is associated with lower frequency of vegetable consumption, while access to public transportation is generally associated with a higher frequency of consumption. Insights from this study could prove helpful for health officials and policymakers tasked with designing and implementing localized interventions that improve the food environment and increase healthy food access.

Healthy food access and policy: a study of rural and urban food environments in Riley County, Kansas

A broad range of factors influences one’s food security, including the accessibility and affordability of food retailers, travel time to shopping, availability of healthy foods, and food prices. The connections between planning and food systems have begun to emerge and be examined but planners face many barriers when tackling food system issues that range from turf problems, a lack of knowledge that any problem exists, to a lack of funds. The study purposes were to 1) identify areas with low access to healthy food sources; 2) discover barriers and perceptions of healthy food accessibility among community members; and 3) explore current planning policies and practices for increasing healthy food accessibility. The study area of this case is Riley County, Kansas, which has lower food accessibility especially to health foods in low income areas located in urban neighborhoods, even though rural areas are further away from a healthy food store. The research has the potential to inform the local food system framework and provide guidance for local policy makers and stakeholder groups. Surveys were collected from 150 households in order to identify challenges and barriers respondents face when obtaining healthy food. Food prices and low income were the largest barriers survey respondents faced when obtaining healthy food. Interviews conducted among 6 individuals from planning offices, market, and community stakeholder groups and both urban and rural issues were discussed. Currently, there is understanding of the importance of healthy food but little action that follows. There are opportunities for planners and policy makers to get involved with planning for the local food system. Partnerships must be established to share resources and technical skills among stakeholders in order to plan for healthy community food systems.

Food availability in the heartland: effects of neighborhood race and income composition

This thesis examines the relationships between 1) neighborhood race and class composition and 2) food availability. We explore the extent to which physical and social isolation affects healthy food availability to groups marginalized by race and class. Specifically, we examine the relationship between residential racial and income composition and the availability of healthy foods. We use census tract data from the 2010 U.S. census and 5-year estimates from the 2006-2010 American Community Survey for Topeka, Kansas. For data on food stores we use InfoUSA, a professionally maintained database that provides detailed information on a variety of businesses. We verify this data with various “on the ground” techniques. We conclude with a discussion of the relevance of this work to the knowledge base regarding food environments in the United States.

Fatores associados ao comportamento alimentar de frequentadores de academias de Taubaté - SP / Factors associated with eating behavior in users of fitness centers of Taubaté city SP

Introdução - A relação da atividade física e da alimentação com a saúde é estudada há muitos anos e os resultados confirmam que a prática regular de exercício físico e uma alimentação equilibrada atuam diretamente na prevenção de doenças. Objetivo - Identificar os fatores associados ao comportamento alimentar dos frequentadores de academias de ginástica do município de Taubaté, SP, segundo idade, gênero e estado nutricional. Métodos - Estudo transversal, quantitativo e com uma amostra não probabilística, constituída por 160 frequentadores de academias do município de Taubaté-SP. Para a obtenção dos dados utilizou-se questionário padronizado de múltipla escolha com questões demográficas, socioeconômicas, comportamentais, nutricionais e sobre saúde; o teste Como está a sua alimentação? do Guia Alimentar de bolso do Ministério da Saúde; o Questionário Internacional de Atividade Física IPAQ; e para avaliação do estado nutricional, informações do peso e da altura para cálculo do IMC (índice de massa corporal) e aferição de dobras cutâneas para a estimativa do percentual de gordura corporal ( por cento GC). Empregou-se análise descritiva, teste do qui-quadrado de Pearson para avaliar associação e análise de cluster. Resultados - A idade média dos frequentadores é de 39,4 anos (DP = ±13,1 anos). Há uma predominância do gênero feminino, alto grau de escolaridade e elevada renda familiar. O IMC médio é de 25,5 kg/m², a maioria encontra-se eutrófico e apresenta por cento GC normal. Fazem uso de complementos nutricionais e os mais jovens consomem os proteicos e BCAA, enquanto os mais velhos as vitaminas e minerais. No teste Como está sua alimentação? 59,4 por cento apresentavam alimentação saudável. A alimentação não se apresentou equilibrada em todos os grupos, segundo recomendação do Guia Alimentar. A maioria relata se preocupar com a composição da alimentação e refere ter mudado algo na dieta nos últimos meses. E em relação à hidratação, 48,8 por cento relata ingerir 500 ml de água durante o período das atividades na academia. Os motivos citados para a realização de exercícios físicos são saúde, prazer e controle de peso. E para o nível de atividade física, segundo o IPAQ, os frequentadores foram classificados a partir irregularmente ativo A. Conclusão - O presente estudo permitiu identificar que a idade e o estado nutricional estão associados a pratica de atividade física (frequência, modalidade, motivação), e a fatores relacionados à dieta, como o uso de complemento, a hidratação e a qualidade da alimentação. Frequentar academias não assegurou o comportamento alimentar adequado desses indivíduos de Taubaté. / Introduction - The relationship between physical activity and food with health have been studied for many years and the results confirm that the regular practice of physical activity and a balanced diet influence directly in disease prevention. Objective - To identify the factors associated with eating behavior of users of fitness centers from Taubaté city, SP, according to age, gender and nutritional status. Methods - There was a cross-sectional study with a non-probabilistic sample involving 160 users of fitness centers from Taubaté city, SP. Data were collected using a questionnaire containing demographic, socioeconomic, behavioral, nutritionals and about health multiple choice questions. Furthermore, they were used the test Whats your diet like?, present in the pocket edition of the Brazilian Dietary Guideline from the Health Ministry, and the International Physical Activity Questionnaire IPAQ. For anthropometric assessment were used weight and height to calculate the BMI (Body Mass Index) and skinfolds thicknesses to estimate the percentage of body fat ( per cent BF). It was used the chi-square test to determine the association and cluster analysis. Results - The average age users of fitness centers was 39.4 years old (SD = 13.1). There was predominance of the feminine gender, high schooling and high family income. The averages of BMI was 25.5 kg/m2, the most of them were found eutrophic and presents normal per cent BF. They use nutritional complements and the younger users were the ones who most consume the protein complements and BCAA, meanwhile the vitamins a minerals are mainly consumed among the elders. According to the test classification Whats your diet like?, 59.4 per cent presented healthy eating . The food did not appear balanced in all groups, as recommended by the Food Guide. The majority related to worry about composition of food and refers that had changed something in the diet in the last months. Regarding to hydration, 48,8 per cent of the users mentioned to ingest 500 ml of water during the period of activities at the gym. The reasons to the realization of physical activities were health, enjoyment and weight control. And to the level of physical activity, according to IPAQ, the users of fitness center were classified as from irregular active A. Conclusion - The present research permits to identify that the age and the nutritional status were associated to physical activity (frequency, modality, motivation) and to factors related to the diet, as the use of complements, to hydration and the quality of food. Attend gyms did not ensure the adequate eating behavior of these individual from Taubaté city.

Zjištění výskytu obezity u dětí mladšího školního věku v Českých Budějovicích / Detect the presence of obesity of children 10-11 years old in České Budějovice by BMI method

The main aim of this diploma thesis is to determine the occurrence of obesity in schoolchildren attending primary schools in České Budějovice. The research focused on determining whether students of the 5 th grades aged 10 and 11 are obese based on their body mass index, age and sex BMI percentile graph. the findings were compared against the Parizkova and Lisa method (2007). It was discovered that 5,13 % of the responded girls and 6,67 % of the boys are obese. The results suggest that out of 195 participants, 11,5% of them suffer from obesity and that the occurrence of obesity is more frequent in boys.
