Analisou-se qualitativamente a integridade das células em soluções aquosas com diferentes concentrações de sacarose e para diferentes tempos de exposição, utilizando-se técnicas de microscopia ótica, o que possibilitou constatar que, mesmo para altas concentrações de solução osmótica (até 50%, p/p) o tecido manteve boa parte de sua estrutura intacta. A cinética da desidratação osmótica de fatias de maçãs (4 mm) em soluções de 40, 50 e 60% de sacarose (p/p), a 27 °C, foi modelada. Posteriormente, fatias desidratadas nas mesmas soluções de sacarose, por um período de 2 horas, foram secadas com ar aquecido (50, 60, 70 e 80°C) até atingirem umidades próximas do equilíbrio. Na Desidratação Osmótica (DO), valores experimentais de concentração média de água e de sacarose foram ajustados a um modelo matemático que considera o fluxo global em um tecido que sofre encolhimento e coeficientes de difusão dependentes da concentração. O modelo integra simultaneamente duas equações diferenciais, para água e sacarose. Os coeficientes efetivos binários determinados para as duas espécies são muito inferiores a coeficientes para soluções puras, sendo que os coeficientes são maiores para a solução osmótica menos concentrada (40%). Os coeficientes de água mostram dependência não usual com a concentração. Perfis de concentração simulados indicam que a sacarose difunde profundamente no tecido quando a solução osmótica é mais diluída. Na secagem, os valores experimentais de concentração média de água foram ajustados a um modelo matemático, que considera o encolhimento e o perfil de umidade inicial desenvolvido na DO, além do coeficiente de difusão dependente da concentração... / In this work the effect of the osmotic treatments on the subsequent drying of apple Fuji was studied. The integrity of the cells after different times of exposition in various sucrose solution concentrations was analyzed qualitatively, using light microscopy. Even for high concentrations (up to 50%, w/w), part of the cell structure remained intact. The kinetic of the osmotic dehydration of apple slices (4mm) in solutions of 40, 50 and 60% of sucrose, 27°C, was determined. Slices dehydrated for 2 hours were air-dried (50, 60, 70 and 80°C) until moisture content equilibrium. In the Osmotic Dehydration (OD), experimental data of water and sucrose average concentration were adjusted to a mathematical model that take into account the bulk flow in a shrinking tissue and diffusion coefficients with concentration dependence. The model integrates two differentials equations simultaneously, for water and sucrose. Binary effective coefficient for the water and sucrose are lower than the coefficients for pure solutions. The highest values were the ones determined for the 40% osmotic solution. The water coefficients show unusual dependence with the solution concentration. Concentration profiles indicate that for more diluted osmotic solutions, the sucrose reaches deeper layers of the tissue. In the drying, the experimental values of average water concentration were adjusted to a mathematical model, that considers shrinking, initial moisture content profile from OD and diffusion coefficients with dependence concentration. Treated tissues presented lower diffusion effective coefficients when compared to fresh tissue. In addition, the concentration dependence of the coefficients was inverse to fresh sample. A final analyses of the effect of the osmotic pre-treatment on the drying kinetics and on the quality of final products leads to the following conclusion: the greater the sucrose intake, the lower the drying efficiency and the higher the product porosity.

The results demonstrated the significant influence of all independent variables on all dependent, emphasizing that the concentration of osmotic solution temperature and had a greater influence on the PU and PP. The tests selected were 6 and 14. The test had14 more notes attribute the overall quality and compliance with the microbiological standards, thus providing a good alternative to preserve the iamb and diversify its supply. / Para reduzir as perdas pós- colheita e diversificar o aproveitamento industrial, do jambo-vermelho (Syzygium malaccense) foi utilizado o processo de desidratação osmótica através de um planejamento experimental fatorial 2³ completo, tendo como variáveis independentes: temperatura (20º a 70ºC), concentração da sacarose (16º Brix a 84º Brix) e tempo de imersão (1,3 a 4,7h), e dependentes: perda de umidade (PU) e de peso (PP), ganho de sólido (GS) e o índice de eficiência da desidratação (DEI). Os resultados demonstraram a influência significativa de todas as variáveis independentes sobre todas as dependentes, salientando que a concentração da solução osmótica e temperatura tiveram maior influencia sobre a PU e PP. Osensaios selecionados foram 6 e 14. O ensaio 14 apresentou maiores notas no atributo qualidade global e conformidade com os padrões microbiológicos,constituindo assim uma boa alternativa para conservar o jambo e diversificar a sua oferta.

<p>Ispitivan je uticaj vrednosti procesnih parametara: na tehnolo&scaron;ku efikasnost procesa osmotske dehidratacije pilećeg mesa u vodenom rastvoru NaCl i saharoze i melasi; na nivo redukcije odabranih mikroorganizama (Escherichia coli, Salmonella spp., Listeria monocytogenes) u osmotskim rastvorima; na mikroorganizme prisutne na dehidrirajućem pilećem mesu; istraživana je podobnost osmotski dehidriranog pilećeg mesa za rast i razmnožavanje odabranih mikroorganizama tokom perioda skladi&scaron;tenja, uz definisanje zdravstveno bezbednog roka skladi&scaron;tenja na osnovu mikrobiolo&scaron;kih i hemijskih analiza.<br />Rezultati ispitivanja pokazuju da povećanje vrednosti procesnih parametara temperature, vremena trajanja procesa i koncentracije osmotskih rastvora dovodi do intenziviranja prenosa mase između dehidrirajućeg materijala i rastvora i povećanja efikasnosti procesa. Izlaganjem odabranih mikroorganizma osmotskim rastvorima postignuti su visoki nivoi njihove redukcije. U melasi postignuti su vi&scaron;i nivou redukcije mikroorganizama u poređenju sa vodenim rastvorom. Ostvareni nivoi redukcije odabranih mikroorganizama na pilećem mesu tokom procesa niži su u poređenju sa rezultatima redukcionih odnosa istih mikroorganizama direkno inokulisanih u istim osmotskim rastvorima. Sa protokom vremena skladi&scaron;tenja ve&scaron;tački kontaminiranog i osmotski dehidriranog pilećeg mesa, u oba osmotska rastvora, do&scaron;lo je do smanjenja broja svih ispitivanih mikroorganizama. Proteolitički mikroorganizami nisu bili prisutni u dehidranom pilećem mesu, dok sadržaj histamina je pokazao da, tokom vremena skladi&scaron;tenja, nije dolazilo do degradacije proteina u mesu. Nakon 10 dana skladi&scaron;tenja meso nije bilo užeglo, a vrednosti malondialdehida su ukazale na pojavu užegnuća nakon 14 dana skladi&scaron;tenja.<br />Na osnovu dobijenih rezultata razvijeni su modeli zavisnosti odziva procesa osmotske dehidratacije, nivoa redukcije ispitivanih mikroorganizama u osmotskim rastvorima, nivoa redukcije ispitivanih mikroorganizama na dehidriranom pilećem mesu i mikrobiolo&scaron;kih i hemijskih odziva dehidriranog pilećeg mesa tokom skladi&scaron;tenja u zavisnosti od variranih vrednosti parametara procesa.<br />Na osnovu dobijenih rezultata, kao optimalni parametri, mogu da se defini&scaron;u: trajanje procesa od 5 časova, temperatura od 32&deg;C u melasi, kao osmotskom rastvoru, maksimalne koncentracije. Svi postignuti nivoi redukcije mikroorganizama ukazuju na dobru osnovu za proizvodnju zdravstveno bezbednih proizvoda od pilećeg mesa. Analiza održivosti je pokazala da je osmotski dehidriranom pileće meso mikrobiolo&scaron;ki i hemijski stabilno tokom skladi&scaron;tenja na temperaturi od 22 &deg;C u trajanju od najmanje 10 dana.</p> / <p>The effect of process parameters values on: technological efficiency of chicken meat osmotic dehydration process in water solution of NaCl and succrose and molasses; selected microorganisms (Escherichia coli, Salmonella spp., Listeria monocytogenes) in osmotic solutions reduction levels; selected microorganisms on dehydrating chicken meat reduction levels, is investigated. The osmodehydrated chicken meat suitability for selected microorganisms&rsquo; growth and multiplication during storage period is also investigated, together with defining health safe storage period, on the basis of microbiological and chemical analysis.<br />Results shows that increase of process parameters of temperature, duration and osmotic solutions&rsquo; concentrations leads to mass transfer increase between dehydrating material and osmotic solutions and process efficiency increase. Exposure of selected microorganisms to osmotic solution has led to high levels of reductions of their numbers. Processes in molasses had higher levels of microorganisms&rsquo; reductions in comparison to the water solution. Achieved levels of the selected microorganisms&rsquo; on chicken meat reductions were lower in comparison to the results of reduction of the same microorganisms directly inoculated in the same osmotic solutions. With the increase of the inocualted, osmotically dehydrated chicken meat storage time in both osmotic solutions, decrease of all tested microorganisms occured. Proteolytic microorganisms were not detected in dehydrated chiken meat, while histamin content showed that, during storage, there was no meat protein degradation. After 10 days of storage, meat was not rancid, while malondialdehid values showed that lipid oxidation occured after 14 days of storage. On the basis of obtained results, mathematical models of dependance of: osmotic dehydration process responces; selected micororganisms in osmotic solutions reduction levels; selected microorganisms on osmodehydrated chicken meat reduction levels; and osmodehydrated chicken meat during storage microbiological and chemical responces; from varied process parameters, were developed.<br />Based on obtained results, as optimal process parameters it can be defined: 5-hour process, at 32 &deg;C, in molasses of maximal concentration, as osmotic solution. All achived microorganisms&rsquo; reduction levels can indicate on good basis of health safe chicken meat production. Analysis of storage duration has shown that osmotdehydrated chicken meat is microbilogicaly and chemicaly stabile during sotrage at 22 &deg;C in period of at least 10 days.</p>

Contribution à létude de la conservation des graines de grenade (Punica granatum L.) par déshydratation osmotique/Contribution to pomegranate seeds conservation by osmotic dehydration

Résumé : Lobjectif des travaux entrepris au cours de cette thèse visait à mettre en place un procédé global de conservation des graines de grenade (Punica granatum L.). Ce procédé se base essentiellement sur une déshydratation osmotique (DO), associée à un pré-traitement de congélation et un post-traitement de séchage par entrainement. Dans ce contexte, plusieurs paramètres d'optimisation du transfert de masse ont été étudiés, tels que la nature de la solution dimmersion (saccharose, glucose, glucose/saccharose et jus de datte « sous-produit » enrichi en saccharose), la température (30, 40, et 50°C) et létat du fruit (frais, congelé). En outre, nous avons mis en relation ces conditions avec certaines propriétés des graines : leur texture, leur structure, et leur couleur. Létude des paramètres de déshydratation (perte en eau (WL), gain en solides (SG), et réduction en poids (WR)) a montré quen utilisant des graines congelées et indépendamment de la température et de la solution utilisée, la majorité du transfert de masse seffectue pendant les vingt premières minutes de traitement. A lissue de cette période, la perte en eau est estimée à 46%, 41%, 39%, et 37% respectivement dans les solutions de saccharose, glucose/saccharose, de jus de datte et du glucose. La DO des graines fraîches est caractérisée par une cinétique plus lente, mais une perte finale en eau plus importante. Comme le montrent les analyses en microscopie électronique, cela sexplique par une déstructuration cellulaire survenant à la suite de la congélation des graines, ce qui vient conforter les résultats des observations microscopiques. Les mêmes techniques ont également indiqué une modification de texture/structure induite par le processus de DO. Dautre part, lutilisation dune solution de saccharose (55°Brix) et dune température de 50°C favorise un meilleur transfert de masse. La détermination des différentes fractions deau dans la graine par calorimétrie différentielle (DSC) a montré une augmentation dun facteur ~2,5 fois de la fraction deau non congelable (eau liée) et une réduction de ~3,5 fois de la fraction deau congelable (eau libre) favorisant ainsi une meilleure conservation du fruit. Le suivi de la qualité intrinsèque des graines au cours de la DO a montré une perte dune quantité non négligeable de certains composés (protéines, cendres) de la graine vers la solution, ce qui pourrait avoir une influence majeure sur la qualité organoleptique et nutritionnelle du fruit. La DO seule ne pourrait pas maintenir une stabilité du produit au cours de la conservation. En effet, lactivité deau du produit fini après DO est proche de 0,90. Ainsi, dans un but plus appliqué, un traitement complémentaire de séchage par entrainement (2 m/s durant 4 heures) a été mis en place, à différentes températures (40, 50, et 60°C), afin de réduire lactivité deau à une valeur inférieure à 0,65. Afin doptimiser le traitement de séchage, nous avons étudié en premier lieu leffet de la température sur lévolution de la matière sèche, de lactivité deau et du pourcentage de séchage des graines. Dautre part, plusieurs paramètres de qualité des graines de grenade (lactivité antioxydante, la teneur en composés phénoliques, les anthocyanines, la couleur, et la texture) ont été étudiés à différentes températures. Ce travail est une contribution à létude des propriétés physico-chimiques des graines de grenade (Punica granatum L.) au cours des procédés de congélation, de déshydratation et de séchage. Les caractéristiques du produit fini peuvent justifier de nouvelles voies de transformation et dexploitation des graines de grenade. Abstract: The aim of this work was to create a complete conservation process of pomegranate seeds (Punica granatum L.). This process is essentially based on osmotic dehydration (OD), which was associated to freezing and air-drying process. Several parameters were studied to optimize the process such as osmotic solution (sucrose, glucose, and sucrose/glucose and date juice with sucrose added), temperature (30, 40, and 50°C) and state of the fruit (fresh and frozen). All these conditions were linked to seed proprieties (texture, structure, and colour). The study of osmotic dehydration parameters (water loss (WL), solids gain (SG) and weight reduction (WR)) showed that most significant changes of mass transfer took place during the first 20 min of dewatering using frozen seeds, independently of temperature and sugar type. During this period, seeds water loss was estimated at 46% in sucrose, 41% in sucrose/glucose mix, 39% in date juice, and 37% in glucose. Mass transfer was slower starting from fresh fruit but led to a higher rate of WL at the end of the process. This fact can be explained by scanning electron microscopy, which showed damage of seed cell structure after freezing. This has practical consequences in terms of the modification of seeds texture. The same process also revealed a modification of seed texture and cell structure after osmotic dehydration. Using a sucrose solution and a temperature of 50°C favoured the best mass transfer. The determination of different water fractions of seed by differential scanning calorimetry (DSC) showed that the % of frozen water decreased 3.5 times contrary the % of unfreezable water that increased 2.5 times. This favours a better seeds conservation. During osmotic dehydration, there was a non negligible leaching of natural solutes from seeds into the solution, which might have an important impact on the sensorial and nutritional value of seeds. Using only osmotic dehydration could not maintain the stability of seeds during conservation. In fact, after the osmotic process, water activity of seeds was found to be higher than 0.9, allowing to the development of microorganisms and some undesirable reactions. As a consequence, a drying of the pomegranate seeds (during four hours) was investigated at three different temperatures (40, 50, and 60 °C) with air flow rate of 2 ms-1. Prior to the drying process, seeds were osmodehydrated in a sucrose solution (55°Brix) during 20 min at 50°C. The drying kinetics and the effects of OD and air-drying temperature on antioxidant capacity, total phenolic, colour, and texture were determined. This work is a contribution to the study of physico-chemical properties of pomegranate seeds (Punica granatum L.) during freezing, osmotic dehydration and drying. After the global process, the pomegranate seed characteristics lead to new industrial developments.

Desidratação osmótica e fritura de palitos de inhame em óleos de coco e de soja

Para obtenção do óleo de coco, foi realizada uma prensagem a frio, após estudo de secagem das tiras de coco em estufa a 60 e 70°C, que foram ajustadas as equações matemáticas de Cavalcanti Mata, Handerson & Pabis, Page, Verma e modelo difusional de Fick 4 termos. A caracterização dos óleos utilizados, avaliados antes e após as frituras quanto ao teor de água, índices de acidez, peróxido, refração, iodo, saponificação e calorimetria diferencial de varredura (DSC). Os palitos de inhame foram pré tratados em soluçõ es osmóticas salinas, contendo 5, 10 e 15% de sal (NaCl), onde realizou-se a cinética de desidratação osmotica, que pode-se calcular as perdas de massa e ganho de sólidos das amostras, em seguida foram fritos em óleo de coco e de soja, nas temperaturas de 150, 170 e 190°C, em que foram avaliados as características químicas e físico-químicas dos palitos de inhame In natura, após DO e frituras, quanto aos parâmetros: acidez, pH, atividade de água, teor de água, lipídeos, teor de sódio, teor de amido, absorção de gordura, remoção de água, razão de absorção de gordura. Para a cor (L, a e b) e textura instrumental os parâmetros: firmeza, coesividade, elasticidade e mastigabilidade . Para verificar a aceitação do produto, as amostras foram fritas a 190°C em seguida submetidas a análise sensorial. Concluiu-se que: A equação matemática de secagem proposta Cavalcanti Mata é, dentre aqueles testados, o que apresenta melhor ajuste sendo o selecionado para a representação da cinética dos palitos de coco; As características de identidades do óleo de soja analisado, apresentaram-se dentro dos padrões exigidos para os índices de acidez, peróxido, iodo, refração e saponificação; As caraterísticas de identidade do óleo de coco, apresentou-se dentro dos padrões estabelecidos para os índices de acidez, peróxido e refração; O DSC permitiu verificar o seu desempenho térmico de oxidação com evento exotérmico em pico a 238,3 e 237,8°C, para o óleo de coco e de soja respectivamente; O índice de peróxido dos óleos utilizados nas frituras de 150°C ocorre um aumento do índice avaliado, com o aumento do número de frituras, o óleo de soja apresenta valores superiores a 8,494 (meq/1000 de óleo) quanto aos observados no óleo de coco valores menores que 4,244 (meq/1000 de óleo), que o torna indesejado para o consumo, quando se compara a legislação brasileira; O aumento da concentração de sal nas soluções favoreceu para uma maior perda de peso e ganho de sólidos dos palitos de inhame; Para a razão de absorção de gordura (RAG) amostras fritas com óleo de coco apresentaram menores valores de RAG. O aumento das temperaturas de fritura das amostras, tenderam apresentar menores valores de RAG; A textura instrumental dos palitos de inhame fritos, obtiveram influencias direta do tratamentos osmóticos, óleo e temperatura utilizados na fritura; Com base no perfil de atitude dos consumidores, pode-se concluir que as amostras que apresentaram maior aceitação foram: os palitos de inhame fritos em óleo de coco pré tratados com desidrat ação osmótica a 15% de solução salina, para os palitos de inhame fritos em óleo de soja, foram as amostras tratadas com desidratação osmótica a 10 e 15% de solução salina. Considerando os resultados obtidos na pesquisa para a produção de palitos de inhame frito, conclui-se que a união de matérias primas permitiu originar um produto com quam lidade sensorial e acessibilidade para o mercado consumidor. / Carried out this search in order to produce fried yams sticks coconut and soy oils, establishing comparative parameters of nutritional and sensory quality. To obtain coconut oil a cold pressing was performed after drying study of coconut strips in a greenhouse at 60 to 70 ° C, which were adjusted mathematical equations Cavalcanti Woods, Handerson & Pabis, Page Verma and model diffusive Fick 4 terms. The characterization of the oils used, evaluated before and after frying as the water content, acidity index, peroxide, refraction, iodine, saponification and differential scanning calorimetry (DSC). Yam sticks were pretreated with saline osmotic solutions containing 5, 10 and 15% salt (NaCl), which was he ld osmotic dehydration kinetics, which can calculate the mass loss and solid gain of sample then they were fried in coconut oil and soybean oil at temperatures of 150, 170 and 190°C, which evaluated the chemical and physicochemical characteristics of yam sticks in natura after DO and fried foods, as the parameters : acidity, pH, water activity, water content, lipids, sodium content, starch content, fat absorption, water removal rate of fat absorption. For color (L, a and b) and instrumental texture parameters: firmness, cohesiveness, springiness and chewiness. To verify acceptance of the product, samples were fried at 190°C and then subjected to sensory analysis. It was concluded that: The mathematical equation drying proposal Cavalcanti Mata is among thos e tested, which fits better being selected to represent the kinetics of coconut sticks; The characteristics of soybean oil identities analyzed were within the standards required for the acid values, peroxide, iodine, refraction and saponification The ident ity characteristics of coconut oil, was within the standards established for the acidity index, peroxide and refraction; The DSC has shown this thermal oxidation performance with peak exothermic event at 238.3 and 237.8 ° C for coconut oil and soybean oil, respectively; The peroxide value of the oils used in the frying of 150 ° C an increase of the estimated index, with increase of fried foods, soybean oil exhibited superior values 8.494 (meq / 1000 oil) as those observed in the oil coconut values less than 4,244 (mEq / 1000 oil) which makes it undesirable for consumption, when comparing the Brazilian legislation; Increasing the salt concentration in the solution favored for greater weight loss and gain the yams solid sticks; For the reason of fat absorption (RAG) chips with coconut oil samples showed lower values RAG. The increase in frying temperatures of the samples tended RAG have lower values; The instrumental texture of fried yam sticks, obtained direct influence of osmotic treatments, oil and temperature used for frying; Based on consumer attitude profile, it can be concluded that the samples had higher acceptance were fried yams sticks pre coconut oil treated with osmotic dehydration at 15% saline to fried yams sticks in soybean oil samples were treated with osmotic dehydration at 10 and 15% saline. Considering the results obtained in the research for the production of fried yam sticks, concluded that the union of raw materials allowed yield a product with sensory quality and affordability for the consumer market.

It is a cheap source of protein and important for nutrition of rural population contributing significantly in subsistence farming of the families from Brazil s northeast. It is consumed in entire region and together with the dry meat and other products composes the menu of typical restaurants, being characterized as an important product for economy of Northeast. The green bean is consumed freshly harvested and has short cycle, being characterized as a very perishable food, which hampers your market. The drying method is an alternative to increase the lifetime and provide a reduction volume of this product making easier your transportation and storage. However is necessary to search ways of drying which keep the product quality not only from the nutritional standpoint but also organoleptic. Some characteristics may change with the drying process such as the coloring, the rehydration capacity and the grains cooking time. The decrease of drying time or of exposure of the grains to high temperature minimizes the effects related with the product quality loss. Among the techniques used to reduce the drying time and improve some characteristics of the product, stands out the osmotic dehydration, widely used in combined processes such as the pretreatment in drying food. Currently the use of the microwaves has been considered an alternative for drying food. The microwave energy generates heat inside of materials processed and the heating is practically instantaneous, resulting in shorter processing times and product quality higher to that obtained by conventional methods. Considering the importance of the green beans for the Northeast region, the wastefulness of production due to seasonality of the crop and your high perishability, the proposal of this thesis is the study of drying grain by microwaves with and without osmotic pretreatment, focusing on the search of conditions of processes which favor the rehydration of the product preserving your organoleptic characteristics. Based on the analysis of the results of osmotic dehydration and dielectric properties was defined the operating condition to be used in pretreatment of the green bean, with osmotic concentration in saline solution containing 12,5% of sodium chloride, at 40?C for 20 minutes. The drying of green bean by microwave was performed with and without osmotic pretreatment on the optimized condition. The osmotic predehydration favored the additional drying, reducing the process time. The rehydration of dehydrated green bean with and without osmotic pretreatment was accomplished in different temperature conditions and immersion time according to a factorial design 22, with 3 repetitions at the central point. According to results the better condition was obtained with the osmotically pretreated bean and rehydrated at a temperature of 60?C for 90 minutes. Sensory analysis was performed comparing the sample of the green bean in natura and rehydrated in optimized conditions, with and without osmotic pretreatment. All samples showed a good acceptance rate regarding the analyzed attributes (appearance, texture, color, odor and taste), with all values above 70%. A secagem desse produto se caracteriza como uma alternativa para o aumento da vida ?til deste alimento, al?m de proporcionar uma redu??o de volume facilitando seu manuseio no transporte e armazenagem. Todavia necess?rio se faz buscar formas de secagem que preservem a qualidade do produto n?o s? sobre o ponto de vista nutricional como organol?ptico. Dentre as caracter?sticas que se alteram com o processo de secagem, destacam-se a colora??o, a capacidade de reidrata??o e o tempo de cozimento dos gr?os. A diminui??o do tempo de secagem, ou de exposi??o dos gr?os a elevadas temperaturas minimizam os efeitos relacionados com a perda de qualidade do produto. .Dentre as t?cnicas empregadas para minimizar o tempo de secagem e melhorar algumas caracter?sticas do produto, destaca-se a desidrata??o osm?tica, muito utilizada em processos combinados como pr?-tratamento na secagem dos alimentos. Atualmente a utiliza??o do micro-ondas tem sido apontada como uma alternativa para a secagem de alimentos. A energia de micro-ondas gera calor no interior dos materiais processados e o aquecimento ? praticamente instant?neo, o que resulta em tempos de processamento mais curtos e qualidade do produto superior ? obtida pelos m?todos convencionais. Considerando a import?ncia do feij?o verde para a regi?o Nordeste, o desperd?cio da produ??o devido a sazonalidade da safra e sua alta perecibilidade, foi proposto nesta tese o estudo da secagem dos gr?os em micro-ondas com e sem pr?-tratamento osm?tico, tendo como foco principal a busca das condi??es de processo que favore?am a reidrata??o do produto, com preserva??o de suas caracter?sticas organol?pticas. A partir da an?lise dos resultados da desidrata??o osm?tica e propriedades diel?tricas foi definida a condi??o operacional a ser utilizada no pr?-tratamento do feij?o verde, com concentra??o osm?tica em solu??o salina contendo 12,5% de cloreto de s?dio, a 400C por 20 minutos. A secagem do feij?o verde por micro-ondas foi realizada sem e com pr?-tratamento osm?tico na condi??o otimizada. A pr?-desidrata??o osm?tica favoreceu a secagem complementar, reduzindo o tempo de processo. A reidrata??o do feij?o verde desidratado com e sem pr?-tratamento osm?tico foi realizada em diferentes condi??es de temperatura e tempo de imers?o de acordo com um planejamento fatorial 22, com 3 repeti??es no ponto central . De acordo com os resultados a melhor condi??o, foi obtida com o feij?o pr?-tratado osmoticamente e reidratado a uma temperatura de 600C por 90 minutos. Realizou-se a an?lise sensorial comparando-se as amostra de feij?o verde in natura e reidratado nas condi??es otimizadas, com e sem pr?-tratamento osm?tico. Todas as amostras apresentaram um bom ?ndice de aceita??o referente aos atributos analisados (apar?ncia, textura, cor, odor e sabor), estando todos os valores acima de 70%. Conclui-se que a secagem do feij?o verde por micro-ondas com pr?-tratamento osm?tico ? vi?vel, tanto em rela??o aos aspectos t?cnicos como aos ?ndices de reidrata??o e a qualidade sensorial do produto
