Determining a sensory model for predicting successful and unsuccessful products: a case study of flavors for a snack category

Doctor of Philosophy / Department of Human Nutrition / Edgar Chambers IV / Companies introduce new products with the goal of achieving success. However, many products fail. The overall objective of this research was to design processes for determining sensory and market characteristics of food products that could predict success. The first sub-objective was to determine if success could be predicted using information known before launch. The second sub-objective was to describe a process for determining specific sensory characteristics that promote success. Most methods chosen for this research are commonly used. However, previous research has identified a relationship between consumers liking and salivation, without defining a method. Thus, three salivation methods were selected for initial testing: spit, cotton rolls and sensory scale. These were tested on foods with different textures. Although all methods gave similar results, the spit method was chosen for further testing of flavor differences. Differences in salivation measurements were found for snacks where flavors were different but texture was unchanged. Next, flavored snack products from 15 countries were selected that were successful or had failed. Questionnaires were completed for each product and included questions related to authenticity, familiarity, current trends, packaging and marketplace issues such as product competition and pricing, all of which would be known before launch. A discriminant function was developed that correctly identified 75.8% of the successful flavored snack products as successful and 66.7% of the unsuccessful products as unsuccessful. Stepwise comparisons were used to determine that four variables are necessary to correctly categorize these products. The products then were clustered into three groups to select 34 products from 11 countries for further sensory testing. Information from extensive sensory descriptive methods were evaluated individually and in various combinations through stepwise regression and discriminant analysis. The final sensory model correctly predicted all successful and unsuccessful products, had an R-square of 0.84 and included nine regression factors: seven flavor attributes and two flavor attribute ratios. Many of the attributes were base flavor notes necessary for this flavored snack category. A process for selecting key attributes for success was described. For this snack category, creating products with flavors that interact well with base flavor notes can lead to a successful product.

Sialoendoscopia na melhora do fluxo salivar em pacientes com síndrome de Sjögren

Objetivo: Comparar os resultados obtidos com a sialoendoscopia na melhora do fluxo salivar aferido através cintilografia em pacientes com síndrome de Sjögren primária. Material e método: Pacientes provenientes do Ambulatório de Reumatologia do HCPA com diagnóstico de Síndrome de Sjögren Primária foram submetidos a cintilografia de parótidas previamente ao procedimento de sialoendoscopia. Durante o procedimento de sialoendoscopia, uma das glândulas parótida foi lavada com solução fisiológica e a outra com solução de corticóide, escolha esta predeterminado por randomização. Após completo um mês do procedimento, um novo exame de cintilografia de glândulas parótidas foi realizado visando observar o fluxo salivar para comparação. Resultados: Participaram e completaram a pesquisa 13 pacientes, todas do sexo feminino, com idade média de 53,38 anos (27 - 76 anos). Houve melhora dos resultados de excreção salivar com radiofármaco no exame de cintilografia, após a realização da sialoendoscopia, em 10 pacientes, perfazendo 76,92% da amostra. Analisando cada glândula tratada separadamente (26 glândulas), houve melhora após a sialoendoscopia em 18 glândulas (69,23%), 8 destas utilizaram dexametasona e 10 utilizaram solução fisiológica na lavagem. Não houve melhora em 8 glândulas (30,77%). Conclusão: Este estudo mostra a sialoendoscopia como importante ferramenta na melhora do fluxo salivar aferido por cintilografia em pacientes com Síndrome de Sjögren Primária, aumentando a excreção salivar através da dilatação e consequente desobstrução dos ductos. Eventos estressantes, desordens psicológicas, sintomatologia depressiva ou o próprio lugar onde se vive são fatores que podem influenciar, direta ou indiretamente, a saúde bucal do indivíduo. O fenômeno do envelhecimento leva a redução na higiene bucal e ao aumento de doenças bucais em idosos, especialmente em idosos institucionalizados, que muitas vezes apresentam um estilo de vida solitário. Historicamente o Brasil carece de políticas públicas voltadas para a saúde bucal do idoso e conta com poucas informações sobre o número de idosos que vivem em instituições asilares e sobre as reais condições em que eles vivem. Portanto, o objetivo deste estudo foi comparar as condições de saúde bucal entre idosos institucionalizados e não institucionalizados na cidade de Maringá - PR, e analisar como as variáveis clínicas e/ou subjetivas se correlacionam. As condições subjetivas de saúde bucal foram avaliadas por meio do índice General Oral Health Assessment Index (GOHAI). A condição psicológica foi avaliada pela Escala de Depressão Geriátrica (GDS-15) e a autopercepção de situações estressantes pela Escala de Estresse Percebido (PSS). A avaliação clínica da saúde bucal foi feita por meio do índice de dentes cariados, perdidos, obturados (CPO-D) e por meio da análise de uso e necessidade de próteses removíveis. O fluxo de saliva e o nível de cortisol salivar foram medidos. Os resultados mostraram que o grupo institucionalizado apresentou mais sintomas depressivos, menor fluxo salivar, maior número de dentes perdidos e cariados, e apresentou também maior freqüência de uso e necessidade de próteses dentárias em comparação com o grupo não institucionalizado. Idosos não institucionalizados apresentaram maior quantidade de dentes restaurados. Foram observadas correlações entre fluxo salivar e necessidade de próteses, e entre fluxo salivar e dentes cariados. GOHAI, PSS e níveis de cortisol salivar não diferiram entre os grupos. Este estudo revelou uma precária condição de saúde bucal e sintomas depressivos nos indivíduos institucionalizados em relação aos não institucionalizados, sugerindo a necessidade de mais estudos para investigar a saúde bucal de idosos institucionalizados para fornecer-lhes cuidados mais adequados de higiene bucal através de programas educacionais, preventivos e curativos. / Abstract: Aging results in physiological changes which might affect oral homeostasis. Stressful events, psychological disorders, depressive symptoms or dwellings are factors that might have a direct or indirect influence on the individual's oral health. The aging phenomenon leads to a reduction in oral hygiene and an increase in dental diseases in the elderly, especially the institutionalized ones who, in most cases, have quite a dependent and/or lonely lifestyle. Historically, Brazilian policies concerning public oral health for the elderly are poor and little information about the number of institutionalized elderlies and their lifestyle is provided. Therefore, the aim of this study was to compare the oral health status between institutionalized and non-institutionalized elderlies living in Maringá, PR, Brazil and to assess how clinical and subjective variables are correlated. Subjective oral health conditions based on the General Health Assessment Index (GOHAI) were analyzed. The Geriatric Depression Scale (GDS-15) and Perceived Stress Scale (PSS) were used to evaluate the psychological conditions and the stress self-perception of all individuals, respectively. The dental status of the subjects was evaluated using the decayed, missing, filled teeth index (DMFT) considering their use or need for removable dental prostheses. The salivary flow and salivary cortisol levels were measured. Results showed that the institutionalized subjects had more depressive symptoms, lower salivary flow and a larger number of missing and decayed teeth when compared to the non-institutionalized individuals, having a larger number of filled teeth. The use and need for prosthesis were more prevalent in the institutionalized group. Correlation was found between salivary flow and need for prosthesis, and between salivary flow and missing teeth. No statistically significant difference was found among GOHAI, PSS and salivary cortisol levels. This study revealed a poorer oral health status and depressive symptoms for the institutionalized individuals, suggesting that further studies are needed to investigate oral health in institutionalized elderly providing them with adequate dental care and information on oral hygiene through educational, preventive and curative programs. / Doutorado / Fisiologia Oral / Doutor em Odontologia

Salivary glands and oral lesions in diabetes mellitus : an experimental and clinical study with special reference to the influence of metabolic control and duration of the disease

Diabetes mellitus is associated with several clinically significant abnormalities in the oral cavity and salivary glands, the most common being periodontitis, salivary gland enlargement and a sensation of dry mouth. The pre­valence of dental caries in diabetics is mostly reported to be decreased or unaffected. Since there is a shortage of information concerning the influence of metabolic control and duration of diabetes on these abnormalities, the present studies were performed. Three-month-old rats were made alloxan-diabetic and investigated after one and twelve months’ duration of dia­betes for oral lesions and feeding behavior. They had free access to a standard pellet diet and tap water. Strepto­coccus mutans and lactobacilli were naturally occurring. In diabetic rats the proportion of the oral flora which was lactobacilli was positively correlated to the blood glucose level. Untreated long-term alloxan-diabetic rats de­veloped advanced periodontal disease and root surface caries in the molars at sites of interdental impaction of foreign material. The degree of alveolar bone loss was positively correlated to the blood glucose level. Diabetic rats were hyperphagic and had a longer total eating time, including day-time eating, mainly by having longer meals but no significant increase of meal frequency, as compared with non-diabetic animals. The untreated al­loxan-diabetic rats developed reduced salivary gland weight which was of the same degree in short- and long­term diabetic animals. Short- and long-term untreated alloxan-diabetic rats showed a similar degree of morpho- metrically estimated lipid accumulation in the acinar cells of the submandibular glands, and the degree was posi­tively correlated to the blood glucose level. However, lipid inclusion occurred only in rats with a morning non­fasting blood glucose level exceeding 15 mmol/L. The capillaries in the submandibular glands of the untreated long-term alloxan-diabetic rats had a significantly increased thickness of the basement membranes as compared with the observations in short-term diabetic and non-diabetic rats. Untreated alloxan-diabetic rats were also shown to have a decreased salivary flow rate compared with non-diabetic rats, and the decreased flow was negatively correlated to the blood glucose concentration. Salivary flow rate increased with the duration of the disease. The diabetic rats had increased salivary glucose levels, which were positively correlated to blood glucose values when the latter were above 15 mmol/L, suggesting a threshold mechanism for salivary glucose excretion. Insulin therapy reversed salivary flow rate and salivary glucose concentrations toward normal. Salivary investigations were performed in eleven diabetic patients on two occasions with different metabolic con­trol. Salivary flow rate showed marked interindividual differences but was not significantly changed by improv­ed metabolic control although several of the patients initially had severely deranged glucose metabolism. A posi­tive correlation between the glucose concentration in blood and saliva was seen in the parotid saliva during secre­tory stimulation. The study was a control-case type and the data collection was accomplished by carrying a questionnaire, oral examination and a non-stimulated and stimulated sialometry. The cases were identified by values of salivary flow rate <0,1mL/min and stimulated &#8804; 0,5 mL/min, and the controls were by observing the values of sialometry that were bigger than the previously defined parameters. Age and gender were used as pairing variables. The data were analyzed using X2 (&#945; = 0,05) and odds ratio. The sample was composed of 98,1% female and 1,9% male, with mean age 68. There was not association between hyposalivation and the following studied variables: income, schooling, profession, dwelling conditions, domiciliary density, illness, number of teeth and use of prothesis. However, a link was found between hyposalivation and smoking frequency in the passet (OR=5,14), indicating that, referring to elderly people, the tabagism frequency habit was a risk factor to the studied condition. Therefore, refering to non-institutionalized independently elderly people, economic-social-demographic conditions, general and bucal health, diet and habits such as alcoholism have been not risk factors to hyposalivation. However, people that have been smoking have more risk to have the studied conditions / O objetivo deste estudo foi investigar os fatores de risco relacionados ? hipossaliva??o em idosos funcionalmente independentes e n?o institucionalizados da cidade do Natal-RN, Brasil. Participaram do estudo 106 idosos de ambos os sexos, com 60 anos e mais, selecionados de grupos de idosos da cidade do Natal-RN, Brasil. O estudo foi do tipo caso-controle, e a coleta de dados foi realizada atrav?s de um question?rio, exame f?sico e sialometria n?o estimulada e estimulada. Os casos foram identificados pelos valores de taxas de fluxo salivar n?o estimulado < 0,1mL/min e estimulado &#8804; 0,5mL/min, e os controles a partir dos valores de sialometrias superiores aos par?metros estabelecidos para os casos. Idade e sexo foram utilizados como vari?veis de emparelhamento. Os dados foram analisados utilizando-se o X2 (&#945; = 0,05) e a raz?o de chances (OR). A amostra foi composta de 98,1% do sexo feminino e 1,9% do sexo masculino, com m?dia de idade de 68 anos. N?o houve associa??o da hipossaliva??o com as seguintes vari?veis estudadas: renda, escolaridade, profiss?o, estado civil, moradia, densidade domiciliar, doen?as, medica??o, restri??o alimentar, etilismo, n?mero de dentes e uso de pr?tese. Cue reactivity, habituation, and eating in the absence of hunger in children with loss of control eating and attention-deficit/hyperactivity disorder

Objective: Childhood loss of control (LOC) eating and attention-deficit/hyperactivity disorder (ADHD) are highly comorbid conditions and present with disordered eating behaviors, such as overeating. This study sought to delineate shared and specific abnormalities in physiological, cognitive-motivational, and behavioral components of food-specific impulsivity in children with LOC eating and ADHD. Specifically, children’s reactivity and habituation to food and eating in the absence of hunger were examined. Methods: Within this community-based study, four groups of 8-13 year old children with LOC eating (n=24), ADHD (n=32), comorbid LOC eating/ADHD (n=9), and matched controls (n=34) received a standard laboratory test meal to establish satiety and were then exposed to their favorite snack food in a cue exposure/reactivity trial, while salivation and desire to eat were repeatedly assessed. Subsequently, they were offered a variety of snack foods ad libitum. Results: Children with LOC eating, ADHD, and LOC/ADHD did not differ from controls in salivary reactivity and habituation to food cues. Children with LOC eating and ADHD showed greater cue reactivity of the desire to eat than controls, but groups did not differ in its longer-term increments. At free access, only children with LOC/ADHD consumed significantly more energy than controls. Longer-term increments of desire to eat predicted greater energy intake beyond LOC/ADHD group status. Discussion: Desire to eat among children with comorbid LOC eating and ADHD was associated with overeating in the absence of hunger, which may contribute to excess weight gain. Delineation of the specific features of childhood LOC eating versus ADHD warrants further study.

Avaliação do fluxo salivar total não estimulado durante e após radioterapia, com o uso do lauril-dietileno-glicol-éter-sulfato de sódio associado ao hidróxido de cálcio

O objetivo deste trabalho foi avaliar quantitativamente o índice de fluxo salivar total não estimulado de pacientes portadores de câncer de cabeça e pescoço durante e após tratamento radioterápico exclusivo tratados com a associação de laurildietileno- glicol-éter-sulfato de sódio e hidróxido de cálcio (HcT20). Este estudo foi realizado no Hospital Dr. Hélio Angotti envolvendo trinta e um pacientes (n=31) divididos em dois grupos: o grupo I composto por dezessete pacientes (n=17) submetidos à telecobaltoterapia, na dose total de 7.000 cGy e receberam o HcT20 durante o tratamento. O grupo II composto por quatorze pacientes (n=14) iniciaram o uso do HcT20 após a conclusão da radioterapia. Foram realizadas e mensuradas coletas semanais do índice de fluxo salivar total não estimulado para os pacientes dos dois grupos. Os valores obtidos foram analisados estatisticamente através dos testes de aderência à curva normal, teste de Bartlett, teste de Friedman e teste de Wilcoxon, visando avaliar a eficácia do HcT20 tanto na prevenção da queda acentuada do fluxo salivar durante a radioterapia quanto na hipofunção salivar no período pós-radioterapia. Os pacientes do grupo I, ao término da radioterapia, mantiveram o índice de fluxo salivar total não estimulado em relação aos valores basais; os do grupo II, que utilizaram a associação medicamentosa após radioterapia, apresentaram melhora acentuada no índice de fluxo salivar total não estimulado em relação ao basal; e o uso do HcT20 apresentou melhor resultado quando utilizado durante a radioterapia. / The treatments used to prevent the xerostomy do not reach the efficiency expected by the patients, and it can have undesirable effects. The goal of this report was to make a quantifiable evaluation of the total non stimulated salivary flow index in patients with head and neck cancers during and after the exclusive radiotherapy with an association of lauryl-diethylene-glycol-ether sodium sulfate and calcium hydroxide (HcT20). This study was held at the hospital Dr. Hélio Angotti involving thirty one patients (n=31) divided into two groups: Group one had seventeen patients (n=17) submitted to fractioned radiation treatment in the head and neck region at the total dose of 7.000 cGy and had HcT20 during the treatment. Group two with fourteen patients (n=14) started with the use of HcT20 after the end of radiotherapy. A weekly and measured collection of the index of the total non stimulated saliva flow was done on the patients of both groups. The values that were obtained were analyzed statistically through the Bartlett test, the Friedman test and the Wilcoxon test, to seek an evaluation of the effectiveness of the medication on the prevention of the intense drop of the salivary flow during the radiotherapy and do avoid the xerostomy during the postradiotherapeutic period. The patients from group one at the end of the radiotherapy kept the base index of the total non stimulated salivary flow, the ones from group two that used the medication association after the radiotherapy had a great improvement of the total non stimulated salivary flow and the usage of HcT20 had a better result on the index of salivary flow during the radiotherapy.
