Sinnesmarknadsföringens betydelse för ökad konkurrenskraft och utveckling av caféers servicelandskap

Syfte och forskningsfrågor Studiens syfte är att undersöka hur servicelandskapet på traditionella caféer kan påverka de olika sinnena och kundens upplevelser. Syftet är också att kunna påvisa vad som kan anses vara unikt i servicelandskapet för traditionella caféer. Studien ska även undersöka vilka faktorer och värdegrunder som kan förstärka konkurrenskraften för traditionella caféer på marknaden. Forskningsfrågan som vi har valt formuleras följande: • Hur kan traditionella caféer utveckla sitt servicelandskap för ökad konkurrenskraft, med stöd av sinnesorienterad marknadsföring? Metod Studien är utformad utifrån en kvalitativ studie som har en kombination av deduktiv och induktiv ansats, som också benämns abduktiv ansats. Det empiriska materialet är insamlat på ett strategiskt sätt och innefattas av sex semistrukturerade intervjuer. Slutsatser Studiens resultat har påvisat att sinnesmarknadsföringen har en stor betydelse för servicelandskapet. Om sinnena tillsammans med servicelandskapets stil och tema överensstämmer med varandra kan det leda till en starkare upplevelse och kvalité för kunden. Studien har vidare visat att flexibiliteten och tillgängligheten av servicelandskapet kan appliceras i serviceprocessen för att stärka konkurrenskraften på marknaden. / Purpose and research question The purpose of this thesis is to investigate how the servicescape in traditional cafés can affect the different senses and the customers experience. The purpose is also to demonstrate what could be unique in the servicescape of traditional cafés. The thesis will also examine various factors and value bases which can strengthen the competitiveness for traditional cafés on the market. The research question we have chosen to examine is following: • How can traditional cafés develop their servicescape to strengthen their competitiveness, with support of multisensory marketing? Method This research is developed from a qualitative study which has a combination by deductive and abductive approach. The empirical material is collected on a strategic way and contains six semi structured interviews. Conclusions The result of the research has proven that multisensory marketing is by considerable importance to the service scape. If the senses together with the servicescapes style and theme is consistent with each other, it can lead to a stronger experience and quality for the costumer. The research has also shown that the flexibility and availability of the servicescape can be applied in the service process to strengthen the competitiveness on the market.

Cette recherche se concentre sur les centres commerciaux et sur les expériences de magasinage produites et vécues au sein de ces espaces de vente dans différentes villes et régions du monde (Angleterre, Argentine, Brésil, France). Bien qu’il existe de nombreuses recherches sur ce sujet dans les économies développées, il en existe peu consacrées aux économies émergentes (Amérique Latine, notamment) et encore moins à des comparaisons inter-zones. Ce travail à caractère inductif et interculturel s'appuie, pour la discussion théorique des observations menées, sur les apports de la “Consumer Culture Theory”, en particulier sur les recherches sur l’expérience de magasinage transposées aux centres commerciaux, et tente de dégager des implications marketing. / This research focuses on shopping centers and on the shopping and consuming experiences produced and undergone within these retail spaces in different cities and in different regions of the world. Although significant work has been done on this topic in developed economies, significantly less has been devoted to emerging economies and even less has been done in comparative terms. This work builds on the existing Consumer Culture Theory related literature and it attempts to address current gaps in this body of work, as well as to provide managerial recommendations based on research findings. It differentiates itself from previous research on shopping centers on four main aspects: (1) By studying the phenomenon of shopping centers in Latin America, a largely unexplored domain; (2) By adding a multicultural perspective to the body of research on consumer and shopping experiences at shopping centers through the study of cases in five different cities; (3) By establishing a process of case selection to provide a priori variability of cases; (4) By comparing on ¨continuum¨ (Carù & Cova, 2007; Roederer, 2008) the full array of shopping experiences: produced, undergone and co-driven (Csaba and Askegaard, 1999; Tsai, 2010) and assessing whether these experiences vary across locations as well as the possible causes of variation.

The literature review conducted to give theorical support to the investigation was based on services marketing and, more specificaly, on servicescapes. The field research was conducted in Casa da Matriz, a night club located in the neighborhood of Botafogo in the south side of the city of Rio de Janeiro. In depht interviews and participant observation were used to identify the approach used to design and to manage the servicescape of Casa da Matriz and the appropriation practices used by its customers in order to build theis cultural identidy. / O trabalho tem como objetivo central compreender como determinados ambientes físicos de serviços são apropriados pelos diferentes grupos de indivíduos que os utilizam para construir sua identidade cultural, modificando a finalidade econômica original para que foram projetados por seus gestores. O referencial teórico utilizado para dar suporte à investigação foi baseado na literatura sobre marketing de serviços e, mais especificamente, sobre ambientes físicos de serviços. A pesquisa de campo foi realizada na Casa da Matriz, uma casa noturna localizada no bairro de Botafogo, na zona sul da cidade do Rio de Janeiro. Por meio de entrevistas semi-estruturadas em profundidade e observação participante foi possível identificar as abordagens utilizadas para projetar e gerenciar tal ambiente físico, bem como as práticas de apropriação adotadas pelas tribos urbanas que o freqüentam para construir sua identidade cultural.
