Studium antimikrobiálního efektu hroznových semen

This paper is dedicated to gathering information about utilization of Vitis vinifera L. extracts, mainly grape seed extract (GSE), production of GSE in two variants (aqueous or methanol GSE) and description of its characteristics. Extract was rich in polyphenols (13462 mg/l GAE), measured by Folin-Ciocaltel method. Also 3615 mg/l GAE of flavonols was present in GSE. Antioxidant activity measured by DPPH method was high, 7978 mg/l GAE. Disc diffusion method was used for antimicrobial activity analysis. GSE's effect was tested on five common microorganisms. Results of the experiment show that GSE strongly inhibits growth of Bacillus cereus, Candida tropicalis and Enterococcus faecalis. However, it was not effective against Escherichia coli and Pseudomonas aeruginosa.

The PhD.-dissertation thesis deals with the effect of microoxidation on white wine technology. The varieties ‚Pinot Blanc‘ and ‚Pinot Gris‘ were used for the experiment in 2016 and 2017. Micro-oxygenation was applied in the first third of the fermentation process and during the maturation of wine. The effect of microoxidation on the course of fermentation was monitored. In micro-oxygenated wines, a statistically significant increase in the number of living yeast was observed immediately after the micro-oxygenation treatment, compared to the control experiment. The increase in cell mass was also observed by measuring the consumption of ammoniacal nitrogen and nitrogen contained in the amino acids. The results of the experiment show a higher consumption of ammonia nitrogen in the micro-oxygenated wine. The amino acid content did not change significantly. During the whole fermentation process, the course of antioxidant activity was monitored. There were no statistically significant differences between micro-oxygenated wines and control, in some cases the antioxidant activity of micro-oxygenated wines was significantly higher. This phenomenon can be explained by the formation of new phenolic compounds, such as gallic acid, which in some cases has been confirmed by HPLC results and theoretically higher production of yeast cell wall breakdown intermediates, which are potent antioxidants. An aromatic profile was determined in the resulting wine by GC analysis and sensory evaluation. Results from GC analysis show higher concentrations of higher alcohols and esters. This diploma thesis deals with the analysis of the impact of dietary measures and physical activities on the changes of the body constitution of two participants after participating in a weight loss course. Theoretical part describes energetic intake including metabolism of macronutrient, energy expenditure and the ways of identifying nutrient needs. Methods that are used for identifying physical characteristics and body constitution are also defined. This thesis addresses to obesity in general, its causes, complications and the treatment. Practical part centred at the analysis of changes of physical constitution of two participants who took the weight loss course which took 12 weeks. We evaluated changes of physical constitution, body fat, the active body mass and girths at the beginning and at the end of the course. Parameters are confronted with the changes of person´s body mass index. The attention is also aimed at the physical activity, transitions of energy intake and essential nutrients intake at the beginning and at the end of the course. Outcomes are statistically and graphically processed.

Porovnání jakostních parametrů salámu Vysočina v závislosti na obsahu soli

The aim of this thesis was to compared physical, chemical and sensory parameters of two groups Vysočina salami. First group is a control group with salt content 2 %. Second group is experimental group with a reduced content of salt 1,5 %. The salami were produced at Mendel University in Brno, where all parameters were also measured. The results showed that experimental group had higher water activity during maturing. Accordingly, other parameters as colour, texture and pH were different. Instrumental analyses showed lighter colour compared to the control group. Also salami were more tender and pH was higher. No statistical significant differences were found between groups in sensory evaluation.

This master thesis depicts process of composting of food waste using an electric composter. Electric composters are eligible solution for waste management of catering facilities, that are in accordance with current legislation. The problematics of the food waste is being described using the literature review. The main goal of this thesis is quality evaluation of the final product of the composting process. The main focus is on evaluation of enzymatic activity of compost named arylsulfatase, which corelate with sulphur cycle. The enzymatic activity itself is being measured by spectrophotometer UV/VIS Lambda 25 (Perkin-Elmer, Shelton, CT, USA) using 5 mMp -Nitrophenyl sulfate as a substrate. Thesis also studies pH values of compost and phototoxicity (by Phytotoxkit test), that demonstrate an effect of final product of composting on white mustard seeds (Sinapis alba L.).

Empirical analysis is based on the use of BMA to limit uncertainty associated with the selection of the wrong determinants, and then uses a regression model of time series with the inclusion of delayed indicators that demonstrate the different impact of credit determinants in financial systems based on banking and commercial mediation.

Vplyv regulačných opatrení bankového sektoru na úverovú aktivitu komerčných bánk

The diploma thesis deals with impact of regulatory measures on bank credit activity. Banking regulatory frameworks Basel II and III are approximated via selected capital requirements. The empirical analysis is based on a panel regression analysis with fixed effects. The sample consists of 4313 European banks. Determinants of supply are selected indicators of bank characteristics. Factors of demand are taken into account via macroeconomic fundamentals. The impact of monetary policy is examined through a three-month interbank interest rate. The results of the empirical analysis point to the importance of regulatory measures in relation to credit activity. Subsequently, the robustness analysis deals with the closer impact depending on the size of the bank and the operating market.

The wider context of the impact of solar activity on mortality by cause in the Czech Republic Abstract The presented dissertation investigates the influence of extraterestrial phenomena, in the whole scope of their possible effects, on human population. It analyses the influence of climate-change induced fluctuation of solar activity on the population, as well as the impact of the concentration of cosmogenic radionuclides on human health. In the introduction, the manifestation of solar activity on Earth is described, the results of the present research is summarized, and the used methods of data processing and the data sources are described. Lucie Cahlíková, Ph.D. Title of diploma thesis: Derivatives of Amaryllidaceae alkaloids and their biological activity The plants of Amaryllidaceae family are source of a large amount of biologically active substances called Amaryllidaceae alkaloids. Their effects include cytotoxic, antifungal, antiviral, antibacterial or antimalaric activity and, last but not least, the inhibition of cholinesterases. The Amaryllidaceae alkaloids, galanthamine type also includes alkaloid chlidanthine, which is a positional isomer of the clinically practice used alkaloid galanthamine. The sources of chidanthine are Chlidanthus fragrans, Haemanthus multilflorus and Hippeastrum aulicum. The object of this thesis was the preparation of chlidanthine derivatives, and the study of their biological activity connected to the therapy of Alzheimer's disease and cancer. Ten aromatic ester derivatives of chlidanthine were prepared. The chemical structures were elucidated by NMR, MS experiments and optical rotation.
