Amoniza??o de feno de Coast-cross. / Ammonization in coast-cross hay.

The effects of increasing levels of urea addition were evaluated on the chemical-bromatologic and microbiologic composition of Coast-cross hay. The hay was treated with 5 levels of urea (0, 0,5, 1,0, 1,5 e 2,0% of dry matter), during 28 and 35 days. The experimental design used was the completely randomized with five treatments in a split-plot design, two ammonization periods (28 and 35 days) and three replications. Urea (45% N) was used and diluted in the proportion 1 to 4 parts of water. The treated hay was stored in sealed plastic bags (3kg/bag) and, when opened, samples were collected for chemical and microbiological analysis. It was verified that the crude protein levels increased linearly in function of higher doses of urea and period, which suggested an elevation of the nitrogen level available in the material. The addition of urea promoted a significant reduction (P<0,05) on the levels of neutral detergent insoluble protein (NDIP) and acid detergent insoluble protein (ADIP). There was no influence of the ammonization on the levels of neutral detergent fiber (NDF) and hemicelluloses (HEM). The increasing levels of urea were efficient on the reduction of colonies generator unities, keeping them under tolerable levels aiming the preconized limits to vegetable health. The present experiment showed that the process of ammonization is efficient on the improvement of the chemical composition of coast-cross hay. / Este trabalho foi realizado no Departamento de Nutri??o Animal e Pastagens, do Instituto de Zootecnia da Universidade Federal Rural do Rio de Janeiro. Avaliaram-se os efeitos da adi??o de ureia em n?veis crescentes sobre a composi??o qu?mico-bromatol?gica e microbiol?gica do feno de coast-cross. O feno foi tratado com 5 n?veis de ureia com base na mat?ria seca durante 28 e 35 dias de amoniza??o. O delineamento experimental utilizado foi o inteiramente casualisado com um arranjo em parcelas subdivididas, com cinco tratamentos (0, 0,5, 1,0, 1,5 e 2,0% de ureia na mat?ria seca), dois per?odos de amoniza??o (28 e 35 dias) e tr?s repeti??es. Foi utilizada ureia pecu?ria (45% N), dilu?da na propor??o de 4 partes de ?gua para cada parte de ureia. O feno tratado foi armazenado em sacos pl?sticos (3 kg feno/saco), lacrado e ap?s abertura, foram coletadas amostras para as an?lises qu?micas e microbiol?gicas do material. Verificou-se efeito linear positivo (P<0,05) para os teores de prote?na bruta em fun??o dos n?veis crescentes de ureia, sugerindo uma eleva??o nos teores de nitrog?nio dispon?vel no material amonizado. A adi??o de ureia promoveu redu??o significativa (P<0,05) nos teores de prote?na insol?vel em detergente neutro e prote?na insol?vel em detergente ?cido. Os n?veis crescentes de ureia foram eficientes na diminui??o das unidades formadoras de col?nias, reduzindo-as a n?veis aceit?veis ao limite preconizado como par?metro de higiene para vegetais. N?o houve influ?ncia da amoniza??o sobre os teores de fibra em detergente neutro, hemicelulose para os n?veis de ureia utilizados. O presente trabalho mostrou que o processo de amoniza??o ? eficiente na melhoria da composi??o qu?mica do feno de coast-cross.

O experimento foi realizado em delineamento inteiramente casualizado, utilizando-se 15 bovinos, sendo 5 machos castrados, 5 f?meas castradas e 5 f?meas. Os animais foram distribu?dos aleatoriamente em baias individuais, onde receberam a mesma dieta por um per?odo de 106 dias. Ao final do experimento, foram abatidos e coletados os dados referentes ?s caracter?sticas de carca?a: pH, temperatura, peso das carca?as quentes e frias, ?rg?os e v?sceras. Da meia carca?a direita foram pesados os cortes: ac?m, paleta, ponta de agulha, cox?o e alcatra completa. Na meia carca?a esquerda, foram mensuradas a ?rea de olho de lombo, a espessura de gordura subcut?nea e o comprimento da carca?a. A sec??o HH foi retirada de cada animal, entre a 9? e a 11? costela; e dela foram separados e pesados os m?sculos, gordura e ossos. Foi coletada uma amostra do m?sculo Longissimus dorsi, correspondente a cada animal para an?lises de composi??o qu?mica, ?ndice de fragmenta??o miofibrilar, for?a de cisalhamento, porcentagem de col?geno sol?vel e teor de col?geno total, colora??o e c?lculo das perdas. Entre as classes sexuais n?o houve diferen?a estat?stica para ganho de peso, consumo e digestibilidade da mat?ria seca e dos nutrientes, efici?ncia alimentar e caracter?sticas de carca?a. Programa de P?s-Gradua??o em Zootecnia, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2010. / ABSTRACT The goal of this work was to evaluate how cattle gender profile influences performance, intake, feed efficiency, as long as carcass and traits beef quality. The experiment was carried out in a complete randomized design, using 15 animals (5 steers, 5 spayed heifers and 5 intact heifers.) They animals were distributed randomly in individual pens. All animals receive the same diet for a period of 106 days. At the end of the experiment, they were slaughtered and data related to the carcass were collected: pH, temperature, of hot and cold carcass weight, organs and visceral weight. The right half carcass was processed into chuck, shoulder, flank boneless, round, and d-rump. From de left half carcass was taken of measure of the rib eye area, fat thickness and carcass length. From the 9th to 11th left half carcass, the rib was cut off (HH section) and then dissected into muscle, fat and bones. A sample of the Longissimus dorsi muscle from each carcass was collected and analyze for it?s chemical composition, myofibrillar fragmentation index, shear force, percentage of total and soluble collagen, color, and losses. Among the sexual classes there wasn?t any difference on performance, intake and digestibility of dry matter and nutrients, feed efficiency or carcass characteristics. Evaluating the Longissimus dorsi muscles of the cattle from different sexual classes it was verified that there wasn?t any difference for the variables: MFI, Shear force, color, pH, percentage of total and soluble collagen, loss and chemical composition. From the data of carcass traits, performance, intake, feed efficiency and meat quality evaluated it can be concluded that there isn?t necessary to castrate heifers and steers in order to increase performance and improve carcass traits and meat quality.

In economic analysis, one can observe higher profit to the producer with the use of conventional feed. However, between the levels of inclusion of sugar cane juice is observed that the level of 1.5% DCJS obtained the best results in economic analysis, obtaining only a difference of relative gross margin of 0.47% compared to conventional. It is recommended 1.69 and 2.50% DCJS for higher carcass, thigh + drumstick weight and lower percentage of abdominal fat quails, respectively.

Estes setores geram emiss?es massivas de gases e material particulado para a atmosfera. Este trabalho teve como objetivo caracterizar o material particulado suspenso no ar em um local representativo do Vale do A?u exposto, entre outros, a emiss?es de queima de biomassa, onde foi quantificado o material particulado total atrav?s de an?lise gravim?trica, e a composi??o qu?mica e a an?lise morfol?gica do material particulado foi feita atrav?s da Microscopia Eletr?nica de Varredura (MEV) equipada com detectores de Energia Dispersiva de Raios-X (EDS). A coleta das amostras foi realizada no Instituto Federal de Educa??o Ci?ncias e Tecnologia do Rio Grande do Norte, campus Ipangua?u, por um per?odo de dois meses (25/05/2016 ? 25/06/2016 e 01/11/2016 ? 30/11/2016), cada m?s referente ? esta??o seca e ?mida, respectivamente. Para a coleta foram utilizados dois amostradores, um de material particulado grosso (AGV-MP10) e outro de part?culas totais em suspens?o (HANDI-VOL). As coletas foram realizadas de acordo com as Normas da Associa??o Brasileira de Normas T?cnicas (ABNT), descrita para o Amostrador de Grande Volume (AGV) e para Part?culas Totais em Suspens?o (PTS). Posteriormente realizou-se an?lise de gravimetria durante a qual foi realizado o c?lculo de concentra??o desse material atrav?s da diferen?a entre a massa do filtro antes e ap?s a coleta. Os resultados mostram que as m?dias di?rias de concentra??o de massa do MP10 para o m?s de junho variaram de 10,13 a 86,48 ?g/m3. J? as concentra??es m?dias di?rias de PTS variaram de 29,86 a 146,05 ?g/m3 no per?odo de junho, em novembro essas concentra??es variaram de 44,37 a 81,25 ?g/m3. Os resultados das concentra??es dos poluentes foram relacionados estatisticamente com vari?veis meteorol?gicas para obter rela??o sobre os efeitos dessas vari?veis na concentra??o desses poluentes. A partir da an?lise por MEV (EDS), foi poss?vel identificar part?culas com forma de aglomerados, esf?ricas e placas, com os elementos qu?micos com maior concentra??o presentes nos filtros sendo: S, K, Si, Al, Cl, Fe, Ba, Ca, Na, Mg e Zn. Finalmente, foram feitas simula??es para identificar a origem deste material particulado, usando o modelo de retro-trajet?rias HYSPLIT. / To understand the emission processes of pollutants to the atmosphere, as well as their chemical transformation and, consequently, eventual contamination of the atmosphere ,monitoring is important to seek identifying and quantifying the present different chemical species, mainly in the anthropogenically influenced areas influenced by industrial and transportactivities, and generation of energy. These sectors produce massive emissions of gases and particulate matter into an atmosphere. This work aimed at characterizing the suspended particulate material at a representative location of the A?u Valley exposed, among others, to biomass burning emissions, where total particulate matter was analyzed through gravimetric analysis, and chemical and morphological analysis of the particulate material were assessed through Scanning Electron Microscopy (SEM) equipped with X-ray Dispersive Energy (EDS) detectors. Sampling was carried out by the Institute of Science and Technology of Rio Grande do Norte, Campus Ipangua?u, for a period of two months (May 25, 2016 to June 26,2016 and November 1-30, 2016), each month referring to the dry and humid season, respectively. Two samplers were used: one for coarse particulate matter (HVS-MP10) and one for Total suspended Particulate Matter (HANDI-VOL). Samples were taken according to the Brazilian Association of Technical Standards (ABNT), describing the High Volume Sampler (HVS) and Total Suspended Particles (PTS). Subsequently, the gravimetric analysis was carried out, where the concentration of material was calculated through the difference between the filter massbefore and after collection. The results show that average daily PM10 mass concentrations for the month of June ranged from 10.13 to 86.48 ?g/m3. Mean daily mass concentrations of PTS varied from 29.86 to 146.05 ?g/m3 in June, while in November mass concentrations ranged from 44.37 to 81.25 ?g/m3. The pollutants concentration results were statistically related to meteorological variables to obtain a relation of the effects of those variables on pollutant concentrations. By the SEM analysis, it was possible to identify particles in agglomerated, spherical, and plaque formats. The major chemical elements of the collected samples were: S, K, Si, Al, A, S, K, Si, Al, Cl, Fe, Ba, Ca, Na, Mg and Zn. Finally, simulations of the area of origin of this particulate material were performed by using the HYSPLIT backward trajectory model.

Pesquisa do Estado de S?o Paulo - FAPESP / The Lamiaceae family has great economic importance as a source of essential oils, in addition to being well studied from a chemical standpoint. Pharmacological studies reports are also extensive in the scientific literature because the specimens of this family are found in various parts of the world. This study aims to evaluate the chemical composition and antinociceptive activity in mice of the essential oils obtained from the leaves of Oocephalus nubicola and Leptohyptis macrostachys. The plant material was collected in the semiarid region of Bahia. The essential oils were obtained by hydrodistillation (3 h), on a Clevenger-type apparatus. The oils were analyzed by capillary gas chromatography using flame ionization detection and mass spectrometry. Two general pharmacological tests were used to assess possible effects of the extracts on the central nervous system of animals: the screening behavioral pharmacology and the rota-rod test. Antinociceptive effects were assessed using acetic acid-induced writhing test and formalin test. Both oils were presented as a mixture of monoterpenes and sesquiterpenes, and Oocephalus nubicola showed predominance of sesquiterpene components, while in the Leptohyptis macrostachys monoterpenes were major. The pharmacological evaluations demonstrated that the samples did not affect motor coordination of animals, besides their antinociceptive properties in the three experimental doses, with evidence of central effects. / A fam?lia Lamiaceae tem grande import?ncia econ?mica por ser fonte de ?leos essenciais arom?ticos, al?m de ser bem estudada do ponto de vista qu?mico. Relatos de estudos farmacol?gicos tamb?m s?o extensos na literatura cient?fica, pois as esp?cimes desta fam?lia s?o encontradas em v?rias partes do mundo. O presente trabalho tem como objetivo avaliar a composi??o qu?mica e a atividade antinociceptiva em camundongos dos ?leos essenciais obtidos das folhas de Oocephalus nubicola e Leptohyptis macrostachys. O material vegetal foi coletado na regi?o do semi?rido do Estado da Bahia. Os ?leos essenciais foram obtidos por hidrodestila??o (3 h), em um aparelho do tipo Clevenger. Os ?leos foram analisados por cromatografia capilar gasosa, usando detec??o de ioniza??o de chama e espectrometria de massas. Dois testes farmacol?gicos gerais foram aplicados para avalia??o de poss?veis efeitos das amostras no Sistema Nervoso Central dos animais: triagem farmacol?gica comportamental e teste da barra girat?ria. Para avalia??o da atividade antinociceptiva foram empregadas duas metodologias: o teste das contor??es abdominais induzidas pelo ?cido ac?tico e o teste da formalina. Ambos os ?leos apresentaram-se como uma mistura de monoterpenos e sesquiterpenos, sendo que Oocephalus nubicola apresentou predomin?ncia dos constituintes sesquiterp?nicos, enquanto que em Leptohyptis macrostachys os monoterpenos foram majorit?rios. As avalia??es farmacol?gicas demonstraram que as amostras n?o afetam a coordena??o motora dos animais, al?m de possu?rem propriedades antinociceptivas nas tr?s doses experimentais, com ind?cios de mecanismo de a??o central.

Was adopted a completely randomized design with repeated measures in time (grazing cycles) and three replications (paddocks). The sward heights, in pre and post grazing were influenced by the clones and grazing cycles, being the highest values observed for clone CNPGL 03-01-00. The production of dry mass of green forage was influenced by clone and grazing cycle, with higher mean value observed for CNPGL 03-01- 00, which was 17% higher than that observed for CNPGL 92-198-7, and there was decreased of dry mass of green forage with the advance of grazing cycles. The production of dry matter of leaves was influenced only by grazing cycle, with gradual reduction from the first to the third cycle. However, in fourth cycle was increase in biomass of leaves, which did not differ from that observed in the second cycle. There was interaction clone x cycle for the production of dry matter of stem, being observed differences in the first and third cycles for the clones. There was no effect of the factors studied for the production of senescent material. The leaf: stem ratio was influenced by grazing cycles, with interaction of the factors. The clone CNPGL 91-198-7 kept the leaf:stem ratio stable over the cycles, while clone CNPGL 1-3-00 presented a decrease in leaf:stem ratio from first until to third cycle. The number of aerial tillers was influenced by grazing cycles, increasing from the first until to third cycle, while the fourth cycle was observed decreased in the number of these tillers. The basal tillers were only effect of clones, where CNPGL 91-198-7 showed a higher number of these tillers. Crude protein (CP) and lignin (LIG) content were not affected by clones or by grazing cycles. Neutral detergent fiber (NDF) and the in vitro dry matter digestibility (IVDMD) were affected only by grazing cycles. The highest values of NDF were observed at the firsts three grazing cycles and, in the fourth grazing cycle the NDF was reduced. The IVDMD decreased until the third cycle; however, in the fourth cycle the values obtained were similar to those of the first cycle. According to results obtained the clone CNPGL 92-198-7 showed higher production of dry matter of the leaves, lower production of dry matter of stem and higher density of basal tillers, which may indicate its greatest potential for use under grazing, when compared to CNPGL 01-03-00. / Objetivou-se estudar as alturas no pr? e p?s-pastejo do dossel forrageiro, a produ??o de biomassa seca de forragem verde, a composi??o morfol?gica, a rela??o folha:colmo, a densidade de perfilhos e o valor nutritivo de dois clones de capim-elefante manejados sob lota??o rotacionada. Foi utilizado delineamento inteiramente casualizado com medidas repetidas no tempo (quatro ciclos de pastejo) e tr?s repeti??es (piquetes). As alturas do dossel pr? e p?s pastejo foram influenciadas pelos clones e pelos ciclos de pastejo. Os valores mais elevados foram observados para o clone CNPGL 00-1-3. Para massa seca de forragem verde houve apenas efeito do clone e do ciclo de pastejo. O valor m?dio da massa seca de forragem verde do CNPGL 00-1-3 foi 17% maior do que a do CNPGL 92-198-7. Com o avan?ar dos ciclos de pastejo houve redu??o da massa seca de forragem verde. A produ??o de biomassa seca de folha foi influenciada apenas pelo ciclo de pastejo, com redu??o gradual do primeiro at? o terceiro ciclo. No quarto ciclo houve aumento na massa seca de folha, que n?o diferenciou daquela obtida no segundo ciclo. Houve intera??o clone x ciclo para a massa de colmo, sendo observadas diferen?as entre clones apenas no primeiro e terceiro ciclos. N?o foi observado efeito dos fatores estudados ou intera??o para a massa seca de material morto. A rela??o folha:colmo foi influenciada pelos ciclos de pastejo, havendo intera??o dos fatores estudados. O CNPGL 92-198-7 manteve a rela??o folha:colmo est?vel ao longo dos ciclos, enquanto que o CNPGL 00-1-3 apresentou decr?scimo na rela??o folha:colmo do primeiro at? o terceiro ciclo, com maior valor obtido no quarto ciclo. Quanto ao n?mero de perfilhos a?reos foi observado efeito dos ciclos de pastejo, com aumento do primeiro ao terceiro ciclo, enquanto que no quarto ciclo houve redu??o do n?mero desses perfilhos. Para os perfilhos basais houve efeito dos clones, onde o CNPGL 92-198-7 apresentou maior n?mero de perfilhos que o CNPGL 00-1-3. Os teores de prote?na bruta (PB) n?o foram influenciados pelos clones ou pelos ciclos de pastejo. Os teores de fibra em detergente neutro (FDN) e o coeficiente da digestibilidade in vitro da mat?ria seca (DIVMS) foram influenciados apenas pelos ciclos de pastejo. Os maiores valores de FDN foram observados nos tr?s primeiros ciclos de pastejo, j? no quarto ciclo de pastejo o teor de FDN reduziu. Quanto ? DIVMS houve queda at? o terceiro ciclo, enquanto que no quarto ciclo os valores obtidos foram semelhantes aos do primeiro ciclo. Para lignina n?o foi observada diferen?a dos fatores estudados. De acordo com os resultados obtidos, o clone CNPGL 92-198-7 apresentou maior produ??o de biomassa seca de folhas, menor produ??o de biomassa seca de colmo e maior densidade populacional de perfilhos basais, o que pode indicar seu maior potencial para uso sob pastejo, quando comparado ao CNPGL 00-1-3.

Por?m, pouco se conhece sobre a composi??o qu?mica e efeitos biol?gicos dos res?duos de seus frutos. Diante disso, o presente trabalho teve como objetivo avaliar a composi??o qu?mica, o potencial antioxidante (in vitro) e hipolipid?mico (in vivo) da farinha das cascas do fruto de Myrciaria cauliflora. Para tanto, frutos (jabuticabas) maduros foram despolpados manualmente e suas cascas secas e trituradas at? a obten??o de uma farinha homog?nea (FCJ). Avaliou-se sua composi??o centesimal, conte?do mineral, fen?licos totais, flavon?ides e antocianinas, assim como sua atividade antioxidante in vitro atrav?s de diferentes m?todos (DPPH, ABTS?+, FRAP e ?-caroteno/?cido linol?ico). A FCJ foi submetida ? extra??o hidroalco?lica e os extratos fracionados em Cromatografia em Coluna (CC). Os fitoconstituintes isolados foram caracterizados por IV e RMN. O potencial hipolipid?mico foi avaliado em grupos de ratos machos alimentados com dietas semipurificadas, sendo a dieta Padr?o (PDR) baseada na AIN93M, a dieta Controle (CTRL) semelhante ? PDR e suplementada com 7% de banha de porco, e tr?s dietas experimentais semelhantes ? CTRL, por?m suplementadas com 7, 10 e 15% de FCJ (JAB1, JAB2 e JAB3, respectivamente). N?veis s?ricos e hep?ticos de colesterol, bem como n?veis s?ricos de HDL, triglicer?deos e glicose foram avaliados. A excre??o fecal de lip?deos foi avaliada tamb?m. A FCJ foi classificada como fornecedora de alto teor de fibras (15,26%). Os teores de fen?licos totais (1895 mg ?cido g?lico/100 g), flavon?ides (8,960 g de catequina /100g) e antocianinas (0,6823 g de cianidina-3-glicos?deo/100g) foram altos assim como a atividade antioxidante verificada pela captura de radicais-livres DPPH (3,184 g de FCJ/g DPPH) e ABTS?+ (1017 ?mol Trolox/g de FCJ), redu??o dos ?ons Fe+3 (167,7 mM de Fe2SO4/100g) e capacidade de inibi??o do branqueamento do ?-caroteno (75,96% de inibi??o para a concentra??o de 1000 mg/L). O ?cido c?trico, o sitosterol e o sitosterol-D-glicopiranos?deo foram isolados, sendo, os dois ?ltimos, citados pela primeira vez nesta esp?cie. A inclus?o da FCJ, nas tr?s propor??es, reduziu o colesterol total (CT) e os triglicer?deos (TG) s?ricos em rela??o ? dieta CTRL. A dieta JAB3 elevou os n?veis de HDL s?ricos e reduziu os de colesterol hep?tico em rela??o ? CTRL. A dieta JAB3 reduziu a glicose s?rica em compara??o ? Programa de P?s-Gradua??o em Qu?mica, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2011. / ABSTRACT Myrciaria cauliflora (jabuticabeira) is a fruit specie, native in Brazil and created mainly in domestic gardens in Minas Gerais. However, little is known about its chemical composition and biological effects in the fruit residue. In front of this, the present work had as a goal to evaluate the chemical composition, antioxidant potential (in vitro) and hypolipidemic (in vivo) of Myrciaria cauliflora fruit peel flour (FCJ). For that, mature fruits (jabuticaba) were pulped manually and its peel was dried and crushed to obtain a homogeneous flour (FCJ). There had been evaluated the proximate composition, mineral content as well as total phenolic, flavonoids and anthocyanins as their antioxidant activity in vitro through different methods (DPPH, ABTS?+, FRAP and ?-caroten/acid linoleic). The FCJ was also subjected to extraction with water-alcohol extracts fractionated in column chromatography (CC). The phytochemicals isolated were characterized IR and NMR. The lipid-lowering activity was evaluated in groups of male rats, fed with semipurified diets, being a PDR diet based on AIN93M; a CTRL diet based on PDR, but added 7% of pork lard; and three experimental diets similar to CTRL, but added MPF at 7, 10 and 15% (JAB1, JAB2 and JAB3, respectively). Serum and liver cholesterol as well as serum levels of HDL, triglycerides and glucose were evaluated. Fecal output of lipids was also evaluated. The FCJ was classified as a supplier of high-fiber (15,26%). The levels of total phenolic (1895 mg gallic acid/100 g), flavonoids (8,960 g de catechin /100g) and anthocyanins (0,6823 g de cyanidin-3-glucoside/100g) were high as the antioxidant activity verified to capture of free radicals DPPH (3,184 g de FCJ/g DPPH) and ABTS?+ (1017 ?mol Trolox/g de FCJ), to reduction of ions Fe+3 (167,7 mM de Fe2SO4/100g) and capacity in inhibition of whitening of ?-caroten (75,96% of inhibition of concentration of 1000 mg/L). The citric acid, sitosterol and sitosterol-?D-glucopyranoside were isolated, being the last two, mentioned in this specie for the first time. The inclusion of the MPF, at the three ratios reduced serum cholesterol and triglycerides compared to CTRL. JAB3 diet raised serum HDL cholesterol and reduced liver cholesterol compared to CTRL. JAB3 diet reduced serum glucose compared to JAB2, but this difference was not significant compared to PDR, CTRL or JAB1. There was no difference in fecal output of lipids between the groups. The results obtained may serve as an aid to better utilization of residue and to understand the MFP metabolic effects in addition to ensure the safety of its intake as a food.

Diante disso, o presente trabalho teve como objetivo avaliar os constituintes a??cares, s?lidos sol?veis totais, fen?licos, flavon?ides, cafe?na e determinar a acidez total, o pH e a atividade antioxidantepor diferentes m?todos (DPPH, ABTS?+ e FRAP) no gr?o de caf? cru. Tamb?m avaliar os efeitos do tratamento sub-cr?nico com cafe?na e caf? no peso corporal e dos ?rg?os (ba?o, cora??o, f?gado, rins, supra renais e test?culos), comprimento dos ossos (f?mur e t?bia), ingest?o de alimentos (s?lidos e l?quidos) e par?metros bioqu?micos (colesterol total, glicemia e triglic?rides) em ratos machos Wistar. Foram utilizados 30 ratos: Controle (C) ? receberam ra??o e ?gua; Cafe?na (CA) ? receberam ra??o e ?gua contendo 0,1% de cafe?na; Caf? 0,1% (CC1) ? receberam ra??o e caf? contendo 0,1% de cafe?na; Caf? 0,05% (CC5) ? receberam ra??o e caf? contendo 0,05% de cafe?na; caf? 0,025% (CC25) - receberam ra??o e caf? contendo 0,025% de cafe?na. As amostras de caf? das safras de 2010 e 2011 analisadas, apresentaram diferen?as significativas para os teores de fen?licos totais, flavon?ides, cafe?na, s?lidos sol?veis, a??cares totais e n?o-redutores, al?m de acidez total e pH. A atividade antioxidante total para os m?todos utilizados (ABTS, DPPH e FRAP) e teor de a??cares redutores n?o variaram significativamente de um ano para o outro. No ensaio biol?gico os animais CC1 pesaram menos do que os C, CC5 e CC25. Em rela??o ao ba?o, os CC5 pesaram menos do que os C e CC25; os CC1 menos do que os C. As supra renais dos CC1 pesaram menos do que as dos Ca e CC25. Os CC1 apresentaram menor peso dos test?culos do que os C, CA, CC5 e CC25 e os CC25 pesaram mais do que os C. Os ratos CC1 apresentaram menor comprimento do f?mur do que os C, CC5 e CC25 e menor t?bia do que os C, CA, CC5 e CC25. Programa de P?s-Gradua??o em Qu?mica, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2012. / ABSTRACT Coffee is among the most important agricultural products in international trade and its quality as a product is an important factor in price formation, besides being one of the most widely consumed beverages worldwide and therefore arouses interest for studies of the physiological effects of its constituents. Thus, the present study was to evaluate the constituent sugars, soluble solids, phenolics, flavonoids, caffeine and determine the total acidity, pH and activity antioxidantepor different methods (DPPH, FRAP and ABTS ? +) in raw coffee beans . The objective was also to evaluated the effects of sub-chronic treatment with coffee and caffeine on body weight and organs (spleen, heart, liver, kidneys, adrenals and testicles); bone?s length (femur and tibia); food intake (solid and liquid) and biochemical parameters (total cholesterol, glucose and triglycerides) in male Wistarrats.A total of 30 rats were used: Control (C) - received food and water; Caffeine (CA) - received food and water containing 1% caffeine; Coffee 1% (CC1) - received food and coffee containing 1% caffeine; Coffee 0.05% (CC5) - received food and coffee containing 0.05% caffeine; coffee 0.025% (CC25) - received food and coffee containing 0.025% caffeine. Samples of coffee crop in 2010 and 2011 analyzed showed significant differences in the levels of total phenolics, flavonoids, caffeine, soluble solids, total sugars and non-reducing sugars, and total acidity and pH. The total antioxidant activity for the methods (ABTS, DPPH and FRAP) and reducing sugars did not vary significantly from one year to another. In the biological tests the animals CC1 weighed less than the samples C, CC25 and CC5.Regarding the spleen, CC5 weighed less than C and CC25; the CC1 less than C.The adrenal glands of CC1 weighed less than that of the Ca and CC25.The CC1 testicles weighed less than C, CA, CC5 and CC25; and CC25 were heavier than C.The CC1 rats had lower femur length than C, CC5 and CC25; and lower tibia than the C, CA, CC5 and CC25.The CC25 animals showed higher rates of glucose than the CC1 and CC5; and CC1 higher total cholesterol than the C and CC25.CC1 animals ate less than C during the treatment and drank lessduring the first week.The results obtained may serve as an aid to improve the quality of coffee beverage and the understanding of its metabolic effects in the body.

Para isto, foram determinados os percentuais de: umidade, cinza, lip?deos, prote?na e carboidrato. Foram analisadas por ICP-OES as concentra??es dos elementos: c?lcio, cobre, ferro, magn?sio, cromo, mangan?s, pot?ssio, s?dio, zinco, n?quel e cobalto. Os resultados mostraram que as sementes da JM e da JD t?m composi??es bromatol?gicas muito pr?ximas: 63% de umidade, 18% de carboidrato, 15% de prote?na e 3% de cinzas. A maior diferen?a foi no teor de lip?deos (0,4% - JM e 0,9% - JD). As composi??es minerais s?o bem distintas. O pot?ssio e o magn?sio s?o os mais abundantes em ambas as variedades (95,8% - JM e 93,2% - JD). As sementes de JD t?m 5,5 vezes mais Na, 24% mais Ca, 3 vezes mais Zn e 2% mais K. As sementes de JM t?m 32% mais Fe, 37% mais Mn e 16% mais Mg. Do ponto de vista fisicoqu?mico, as polpas t?m uma grande distin??o. A polpa da JD tem 9,5 vezes mais lip?deos e o dobro de carboidrato. A polpa da JM tem 10% mais umidade e 14% mais cinza. O teor de prote?na ? muito semelhante. Nas polpas, a composi??o de minerais ? bem diferente, embora o pot?ssio e o magn?sio sejam os elementos majorit?rios nas duas variedades. (96,1% - JM e 92,4% - JD). A polpa de JM tem 33% mais K, 29% mais Mg, 26% mais Mn, 48% mais Na, 16% mais Cu, 24% mais Fe e 5% mais Zn. A polpa da JD tem 45% mais Ca, o que pode explicar sua maior firmeza. A composi??o qu?mica das polpas da JM e da JD in natura s?o muito parecidas em rela??o ?s concentra??es de Fe, Cu, Mn e Mg. A polpa da JD in natura tem 2,6 vezes mais Ca e 27% mais Zn. A variedade mole in natura tem 5% mais K e 25% mais Na. A liofiliza??o preservou mais o teor de carboidratos nas polpas das duas variedades de jaca. Os resultados foram submetidos ao teste t pareado, com 95% de signific?ncia, para inferir sobre a signific?ncia da igualdade ou desigualdade dos par?metros comparados. / This work had as objectives to determine the physicochemical and mineral compositions of the dehydrated seeds of the soft jackfruit (SJ) and of the hard jackfruit (HJ), of the dehydrated, in nature and lyophilized pulps of the SJ and HJ. For this, were determined the percentages of: moisture, ash, lipids, protein and carbohydrate. The concentrations of the elements calcium, copper, iron, magnesium, chromium, manganese, potassium, sodium, zinc, nickel and cobalt were analyzed by ICP-OES. The results showed that the seeds of SJ and of HJ have very close bromatological compositions: 63% moisture, 18% carbohydrate, 15% protein and 3% ash. The major difference was in the lipids contente (0,4% - SJ and 0,9% - HJ). The mineral compositions are quite distinct. Potassium and magnesium are the most abundant in both varieties (96% - SJ and 93% - HJ). The seeds of HJ have 5,5 times more Na, 24% more Ca, 3 times more Zn and 2% more K. The seeds of SJ have 32% more Fe, 37% more Mn and 16% more Mg. From a physicochemical point of view, the pulps have a great distinction. The pulp of HJ has 9,5 times more lipids and twice the carbohydrate. The pulp of SJ has 10% more moisture and 14% more ash. The protein content is very similar. In pulps, the composition of minerals is quite different, although potassium and magnesium are the major elements in the two varieties (96% - SJ and 93% - HJ). The pulp of SJ has 33% more K, 29% more Mg, 26% more Mn, 48% more Na, 16% more Cu, 24% more Fe and 5% more Zn. The pulp of HJ has 45% more Ca, which may explain its greater firmness. The chemical composition of the pulps in nature of SJ and HJ are very similar in relation to the concentrations of Fe, Cu, Mn and Mg. The HJ in nature pulp has 2,6 times more Ca and 27% more Zn. The in nature soft variety has 5% more K and 25% more Na. The freeze-drying preserved the carbohydrate content in the pulps of the two varieties of jackfruit. The SJ lyophilized pulp had the lower metal content than the pulp dehydrated in the oven. The results were submitted to the paired t test, with 95% significance, to infer the significance of the equality or inequality of the parameters compared.

This tree produces a fruit of good appearance, nutritive quality, and much appreciated aroma, which is consumed as in natura or processed fruit as frozen pulps, juices, candies, nectars, popsicles and ice creams. This evidence shows its increasing commercialization in grocery stores, supermarkets and restaurants of country. However, there are commercial losses, which can be attributed to biologic and phytopatologic causes that indicate alarming numbers to producers. The study of red mombin composition can contribute to popularize the use of this fruit, once that it is unknown to the most of Rio de Janeiro city people. This research had as objective the characterization of the red mombim fruit (Spondias purpurea) produced in West Zone of Rio de Janeiro and the formularization of products made from pulp aiming to expand the increasing of its productive chain. The centesimal composition demonstrated that the fruit fractions with peel present greater fiber contents, therefore, the consumption of the fruit with peel must be stimulated in order to get its benefits. The researched minerals were found in larger concentrations in the fruit fractions with peel, with prominence for iron and zinc contents. However, studies should be made in order to verify the biodisponibility of these minerals. The analytical data also demonstrated that the red mombin had high vitamin C content, which is an important aid in the iron absorption by the organism. The fractions with peel had a more intense color than the pulp, probably because of the amount of received solar radiation. The red mombin had the - criptoxantin xanthophyll as main carotenoid, one of the most important provitamin A compounds. The formulated red mombin products were jellies and fruit pastes with different concentrations of sucrose. The microbiological analysis performed on elaborated products showed that hygienical-sanitary and technological conditions were satisfactory. The sensorial analysis showed that the attributes appearance, color, aroma, texture and flavor got average around seven at nine point scale hedonic, which represents the category ?I like it moderately?. It indicates that exotic flavor of fruit was well accepted by consumers. The percentage of judgers demonstrated that purchase intentions for jelly and red mombin paste was fairly representative, 92 % and 82% respectively. It evidences the possibility to introduce the products made from red mombin to the market, increasing the period of useful life and the added-value of the fruit. / Frut?fera tropical t?pica do continente americano, a serigueleira (Spondias purpurea L.) ? origin?ria da Am?rica Central, tendo se adaptado satisfatoriamente ?s condi??es clim?ticas de alguns pa?ses da Am?rica do Sul, como o Brasil. Entretanto, existem perdas comerciais, as quais est?o ligadas principalmente a fatores biol?gicos e fitopatol?gicos, que indicam n?meros preocupantes para os produtores. O estudo da composi??o da seriguela pode contribuir para popularizar o uso deste fruto, desconhecido pela maior parte da popula??o da cidade do Rio de Janeiro. A pesquisa teve como objetivo a caracteriza??o qu?mica da fruta Seriguela cultivada na zona oeste do Rio de Janeiro e a formula??o de produtos a partir da polpa do fruto visando expandir o crescimento da sua cadeia produtiva. Os resultados da composi??o centesimal demonstraram que as fra??es com casca cont?m maior teor de fibras, portanto deve-se incentivar o consumo dos frutos com casca que representa h?bito alimentar saud?vel. Os minerais pesquisados foram encontrados em maior concentra??o nas fra??es da fruta com casca, com destaque para os teores de ferro e zinco. Entretanto, devem ser realizados ainda estudos no sentido de verificar a biodisponibididade desses minerais. Os dados anal?ticos demonstraram tamb?m que a seriguela possui alto teor de vitamina C, sendo importante aux?lio na absor??o do ferro pelo organismo. As fra??es com casca possu?am uma colora??o bem mais intensa que a polpa, provavelmente devido ? quantidade de radia??o solar recebida. A seriguela possui a xantofila - criptoxantina, importante por sua atividade pr?-vitam?nica A, como caroten?ide majorit?rio. Os produtos de seriguela formulados foram gel?ias e doces de corte com diferentes concentra??es de sacarose. As an?lises microbiol?gicas realizadas nas gel?ias e nos doces de corte elaborados atestaram que os produtos apresentavam condi??es higi?nico-sanit?rias satisfat?rias. A an?lise sensorial indicou que os atributos apar?ncia, cor, aroma, textura e sabor apresentaram m?dias pr?ximas a sete em uma escala hed?nica de nove pontos, que representa a impress?o ?gostei moderadamente?, indicando que o sabor ex?tico da fruta foi bem recebido pelos consumidores. O percentual de provadores que demonstrou inten??o de compra para gel?ia e doce de corte de seriguela foi bastante representativo, 92 % e 82% respectivamente, evidenciando a possibilidade de introduzir no mercado produtos a base de seriguela, aumentando a vida-de-prateleira e o valor agregado do fruto.
