Turnover na hotelaria: estudo de caso da rotatividade de funcionários de uma rede hoteleira de Curitiba (PR)

Este trabalho trata fundamentalmente da questão relativa ao turismo e hotelaria, configurando a gestão de serviços e a gestão de pessoas. Enfatiza o estudo de caso da rotatividade de funcionários de uma rede hoteleira de Curitiba, analisando estratégias que podem ser adotadas para reduzir esta rotatividade que tem se apresentado acima da media ideal. Sendo a rede hoteleira uma empresa de prestação de serviço, a retenção e o investimento no capital humano é muito importante para o seu perfeito funcionamento e para a sobrevivência da organização. Neste contexto, evidencia-se o objetivo geral desta pesquisa na busca pela identificação dos fatores e as variáveis que influenciam o turnover, propondo estratégias de mudança na gestão de pessoas. O método utilizado para a organização e sistematização do trabalho se enquadra na pesquisa exploratóriodescritiva, alicerçada por um referencial teórico na busca pela identificação das prováveis causas que geram o turnover nas redes hoteleiras. Os principais resultados identificam que há necessidade de revisão nos processos de gerenciamento e das condições motivacionais do capital humano. / This work is fundamentally about the issue about tourism and hostelry, configure service management and people management emphasizing the case study about a Curitiba´s hotel chain turnover of staff, by analyzing strategies that may be adopted to minimize the turnover of staff, which has been above average ideal. Being the hotel chain a provision of service company, the retention and investiment in human capital is very important to the perfect running of service and the organization surviving. In this context, it is evidenced the general goal in this research on the pursuit for the identification of facts and the variable that influence the turnover, propound change strategies in the people management. The used method for the organization and systemization of the work fits on the descriptive exploratory research, based by theorist referencial in search by identifying the probable causes that generate the turnover in the hotel chains. The main results identify that there is a need to review of the human management processes and the motivational terms of human capital.

Informações de hóspedes sobre conservação e gestão do uso da água em meios de hospedagem

Cada vez mais as atividades econômicas e recreativas demandam recursos naturais para o seu desenvolvimento. No entanto, são inevitáveis os impactos negativos causados sobre o meio ambiente e a discussão da sustentabilidade, como condição básica e indispensável para assegurar a continuidade desses processos. Esta pesquisa teve como objetivo analisar as informações de hóspedes sobre práticas ambientais relacionadas à gestão, conservação e ao uso da água em meios de hospedagem, em conformidade com a NBR 15401. Para tal, foram aplicados 166 questionários a hóspedes de três Meios de Hospedagem (MHs) do Roteiro Turístico Termas e Longevidade, em duas semanas com eventos na região. Os dados indicam que 38% dos sujeitos realizam o controle do consumo de água nos MHs em que se hospedam; 32% afirmam que a sua maior preocupação está relacionada ao desperdício e à contaminação da água; 15,1% indicam que os MHs em que se hospedam apresentam medidas de racionalização de uso de água, porém, de maneira isolada e não na forma de programas ambientais. As principais medidas, destacadas pelos hóspedes, implantadas nos MHs, são as torneiras com fechamento automático ou com restritores de vazão, reuso de toalhas de banho e troca de roupas de cama em dias alternados. Os dados também revelam que os MHs, eventualmente, apresentam informações aos hóspedes sobre a racionalização e a minimização no consumo de água e outros recursos naturais. Os resultados da pesquisa sinalizam medidas adotadas por hóspedes e MHs relacionadas à gestão da sustentabilidade, em especial a gestão dos recursos hídricos. Como continuidade, sugerem-se novos estudos sobre a gestão ambiental nesses empreendimentos, sobretudo em relação à participação dos hóspedes, colaboradores e gestores, identificando suas informações e atitudes em prol da minimização do consumo de água e do processo de construção do turismo sustentável. / Recreational and economic activities require natural resources for theirs development, more and more. Nevertheless, negative impacts on environment and the sustainability discussion as a basic and indispensable condition are unavoidable, to ensure the continuity of these processes. This research aims to analyze the guest information about related environmental practices to the management, conservation and at the water use in lodging means, according to NBR 15401. In that case, 166 questionnaires were applied to guests of three MHs of the Longevity and Thermal Baths Tourist Route in two weeks with events in the region. The data indicate that 38% of the interviewees accomplish the water consumption control in the MHs where they are guests; 32% say that theirs biggest concern is related to waste and water contamination; 15,1% indicate that the MHs where they are guests introduce water use rationalization measures, but from isolated manner and not in the environmental programs shape. The detached main measures by guests implanted in the MHs are automatic stopcock or flow restrictors, bath towels reuse and bedclothes replace in alternated days. Occasionally, the data also reveal that the MHs introduce information to the guests about water consumption minimization and rationalization and others natural resources. The research results signalize adopted measures by guests and MHs related to sustainability management, specially the hydric resources management. As continuity, they suggest new studies about environmental management in those enterprises, especially in relation to the managers, collaborators and guests’ participation, identifying theirs information and attitudes in favor of the water consumption minimization and of the sustainable tourism construction process.

A qualidade no serviço hoteleiro : um estudo de caso na cidade de Gramado-RS com base no modelo SERVQUAL

O turismo é um dos setores que mais cresce, gerando emprego e renda em todo mundo, tornando-se um fator importante para o desenvolvimento econômico. Dentro do turismo, o setor hoteleiro destaca-se na economia do país em razão da capacidade de atender a demanda causada pelo deslocamento de pessoas. O objetivo da presente pesquisa é analisar, com base no modelo SERVQUAL, a qualidade do serviço hoteleiro oferecido pela cidade de Gramado – RS. Este estudo tem caráter exploratório, de natureza qualitativa. Para isso, utilizou-se de um levantamento bibliográfico (em banco de dados e nos principais periódicos do turismo). O objeto de estudo foram os 13 hotéis de categoria luxo e conforto localizado na cidade de Gramado – RS. Os resultados foram alcançados através das análises feitas nos sites e das avaliações destes hotéis feitas pelos clientes nas Online Travel Review. As visões foram estudadas separadamente e na sequência feitas um comparativo entre elas com respaldo da literatura. As análises foram realizadas através do modelo SERVQUAL de acordo com as seguintes variáveis: tangibilidade, confiabilidade, presteza, segurança e empatia. Os resultados apresentados mostraram que o capital humano é o elemento que mais carece de investimento por parte dos hotéis. / Coordenação de Aperfeiçoamento de Pessoal de Nível Superior, CAPES. / Tourism is one of the fastest growing sectors, generating employment and income worldwide, making it an important factor for economic development. Within tourism, the hotel sector stands out in the economy of the country because of the capacity to meet the demand caused by the displacement of people. The objective of this research is to analyze, based on the SERVQUAL model, the quality of the hotel service offered by the city of Gramado - RS. This study has an exploratory character, of a qualitative nature. For this, a bibliographical survey was used (in databases and in the main journals of tourism). The object of study were the 13 hotels of category luxury and comfort located in the city of Gramado - RS. The results were achieved through the analyzes made on the websites and the evaluations of these hotels made by the customers in the Online Travel Review. The visions were studied separately and in the sequence made a comparative between them with support of the literature. The analyzes were performed through the SERVQUAL model according to the following variables: tangibility, reliability, readiness, safety and empathy. The results presented showed that human capital is the element that most requires investment by hotels.

Ante la aparición del virus COVID-19 en China y su propagación por el mundo en el 2020, el sector hotelero afronta una de las crisis más importantes de la historia. Con una reducción aproximada del 90% en transporte aéreo, los hoteles tuvieron que diseñar nuevas estrategias de reactivación para hacerle frente a la reducción de llegada de huéspedes. La presente investigación analiza, de forma académica, los cambios producidos por la crisis de la pandemia del COVID-19 en la industria hotelera mundial y las estrategias implementadas por los hoteles para contrarrestar sus consecuencias en el Perú. Teniendo en cuenta que el fenómeno mencionado se encuentra aún en desarrollo, las investigaciones sobre las acciones tomadas por los hoteles para reactivar sus operaciones aún son escasas; por ello, se aborda la temática de estudio alrededor del mundo, enfocándose en el sector hotelero y su respuesta ante la pandemia del coronavirus. Se utilizó como metodología la revisión bibliográfica descriptiva a partir de fuentes académicas y fuentes primarias como entrevistas a profundidad a expertos hoteleros sobre las estrategias implementadas en los hoteles ante la crisis que trajo la pandemia al Perú. Como resultado se obtuvo que el turismo y la hotelería son de los sectores más afectados por la pandemia, por lo que los hoteles siguen ideando estrategias dirigidas a diseñar nuevos productos que se ajusten a las nuevas exigencias del huésped. La investigación es un aporte a la sistematización y documentación de la gestión en los hoteles y estrategias de reactivación en Lima, Perú. / Faced with the emergence of the COVID-19 virus in China and its spread around the world in 2020, the hotel sector faces one of the most important crises in history. With an approximate 90% reduction in air transport, the hotels had to design new reactivation strategies to cope with the reduction in guest arrivals. This research analyzes, in an academic way, the changes produced by the crisis of the COVID-19 pandemic in the global hotel industry and the strategies implemented by hotels to counteract its consequences in Peru. Taking into account that the aforementioned phenomenon is still under development, investigations into the actions taken by hotels to reactivate their operations are still scarce. For this reason, the subject of study around the world is addressed, focusing on the hotel sector and its response to the coronavirus pandemic. Descriptive bibliographic review from academic sources and primary sources was used as methodology, such as in-depth interviews with hotel experts on the strategies implemented in the hotels in the face of the crisis that the pandemic brought to Peru. As a result, it was obtained that tourism and hotels are among the sectors most affected by the pandemic, so hotels continue to devise strategies aimed at designing new products that meet the new demands of the guest. La tercerización de servicios en la industria hotelera y su aplicación en el contexto peruano / The outsourcing of services in the hotel industry and its application in the Peruvian context

A pesar de la vasta información que se encuentra sobre los beneficios e inconvenientes que la tercerización de servicios puede generar en las empresas, se sabe poco acerca de la tercerización de servicios en el sector hotelero peruano. La presente investigación se centra en el análisis de los elementos a favor y en contra de la tercerización en la industria hotelera y su desarrollo en el contexto peruano. La metodología empleada fue la revisión bibliográfica que se complementa bajo un enfoque cualitativo exploratorio mediante una entrevista a profundidad a dos expertos en la gestión de hoteles. Los resultados encontrados demuestran que existen ciertas actividades hoteleras que se tercerizan con mayor frecuencia en el Perú debido a que representan un ahorro en costos y gastos de capital, tales como las áreas de entretenimiento (spa y gimnasio), eventos, lavandería, seguridad y mantenimiento, y en menor grado las áreas de housekeeping y Alimentos & Bebidas. Asimismo, se tercerizan estas actividades debido al alto grado de especialización que requieren, que no se relacionan con las actividades principales del hotel y que pueden ser realizadas por empresas tercerizadoras. En tanto, existen otras actividades como la recepción, concierge y personal de botones que no son aconsejables tercerizar debido a que son actividades claves para el hotel y son consideradas front of the house, es decir, aquellas que tienen contacto directo con los clientes e inciden en la reputación del mismo. / Despite the vast information found on the benefits and drawbacks that outsourcing services can generate in companies, little is known about outsourcing services in the Peruvian hotel sector. This research focuses on the analysis of the elements for and against outsourcing in the hotel industry and its development in the Peruvian context. The methodology used was a bibliographic review that is complemented under an exploratory qualitative approach by an in-depth interview with two experts in hotel management. The results found show that there are certain hotel activities that are outsourced more frequently in Peru due to the fact that they represent savings in costs and capital expenditures, such as entertainment areas (spa and gym), events, laundry, security and maintenance, and to a lesser degree the cleaning areas and A & B. Likewise, these activities are outsourced to the high degree of specialization they require, which are not related to the main activities of the hotel and which can be carried out by outsourcing companies. Meanwhile, there are other activities such as reception, concierge and bell staff that are not advisable to outsource because they are key activities for the hotel and are considered front of the house, that is, they are the people who have direct contact with customers and affect its reputation. / Trabajo de investigación

<p>Основни приступ истраживању стратегије развоја хотел менаџмента и одрживог развоја у заштићеним природним подручјима Србије, проистиче из потребе детаљне туристичке валоризације и истовременог очувања заштићених подручја. Природне и антропогене туристичке вредности заштићених предела Србије бројне су и разноврсне. Међутим развој туризма у истим није сразмеран потенцијалима. Валоризација ових простора и пословање објеката хотелијерства у њима почива на традиционалним основама и не даје задовољавајуће резултате. Већим туристичким прометом истичу се Национални парк Копаоник, Национални парк Тара, Национални парк Ђердап, Парк природе Палић и Специјални резерват природе Лудошко језеро. У заштићеним природним пределима не треба да постоји дилема између комерцијалног и одрживог туризма. Стратегија развоја хотел менаџмента у србији треба да уважава позитивне и проверене ставове из света и да их прилагођава нашој стварности, посебно у заштићеним пределима, уважавајући реалне капацитете простора.</p> / <p>Osnovni pristup istraživanju strategije razvoja hotel menadžmenta i održivog razvoja u zaštićenim prirodnim područjima Srbije, proističe iz potrebe detaljne turističke valorizacije i istovremenog očuvanja zaštićenih područja. Prirodne i antropogene turističke vrednosti zaštićenih predela Srbije brojne su i raznovrsne. Međutim razvoj turizma u istim nije srazmeran potencijalima. Valorizacija ovih prostora i poslovanje objekata hotelijerstva u njima počiva na tradicionalnim osnovama i ne daje zadovoljavajuće rezultate. Većim turističkim prometom ističu se Nacionalni park Kopaonik, Nacionalni park Tara, Nacionalni park Đerdap, Park prirode Palić i Specijalni rezervat prirode Ludoško jezero. U zaštićenim prirodnim predelima ne treba da postoji dilema između komercijalnog i održivog turizma. Strategija razvoja hotel menadžmenta u srbiji treba da uvažava pozitivne i proverene stavove iz sveta i da ih prilagođava našoj stvarnosti, posebno u zaštićenim predelima, uvažavajući realne kapacitete prostora.</p> / <p>l management should draw on positive and tried-and-tested approaches applied internationally and adapt them to our reality, especially in the protected areas bearing in mind their realistic capacities. There should not be conflict between commercial and sustainable tourism in the protected natural areas. In this context, the hotel management strategy as its clear conclusion identifies the need for the realisation of the following activities and measures: ownership transformation in hotel facilities, redirection of capacities to market business operation. Raising the service level, expansion of the options offered to visitors, working together with facilities in the vicinity to make a joint offer of services, qualification of personnel for all jobs and types of work, business planing for individual seasons and the whole year.</p>

Los cambios repentinos como cierre de aeropuertos, restricciones de viajes, disminución de turistas, caídas del nivel de ocupación, entre otros, hicieron que diferentes hoteles alrededor del mundo formulen e implementen estrategias de recuperación, para poder hacer frente a esta situación. Teniendo en cuenta que desde inicio del 2020 existen diversas publicaciones acerca de la forma en que los hoteles alrededor del mundo están enfrentando la actual crisis sanitaria, existe la necesidad de poder integrarlas con la finalidad de aportar conocimiento que contribuya a la reactivación económica del sector hotelero. Por ello, el presente trabajo de investigación tiene como propósito analizar y organizar la información relevante del impacto del Covid-19 en el sector hotelero e identificar y dar a conocer las estrategias empleadas, y las nuevas tendencias en el sector hotelero durante la actual crisis sanitaria mundial. La metodología empleada fue la revisión de literatura de tipo integrador, tomando en cuenta fuentes académicas como: tesis y artículos de revistas científicas. / The Covid-19 pandemic has had a strong impact on the hotel and tourism industry, and is currently facing one of the most important crises in recent years. Although the hotel sector is used to facing different crises, never on this large scale. Sudden changes such as airport closures, travel restrictions, decrease of tourists, drops in occupancy levels, among others, made different hotels around the world formulate and implement recovery strategies in order to cope with this situation. Taking into account that since the beginning of 2020 there are several publications on how hotels around the world are facing the current health crisis, there is a need to integrate them in order to provide knowledge that contributes to the economic recovery of the hotel sector. Therefore, the purpose of this research is to analyze and organize the relevant information on the impact of Covid-19 on the hotel sector and to identify and publicize the strategies employed and the new trends in the hotel sector during the current global health crisis.
