Different factors such as growing environmental awareness due to the increasing negative impact of persistent plastic wastes, the uncontrollable price variations of the raw material and the rapid depletion of  reserves have increased the interest in research regarding polymers derived from renewable sources to replace petroleum-based materials. One of the earth’s most abundant macromolecules is cellulose. The production of cellulose from another resource replaces and reduces the demand from plants, the other resource being cellulose from a bacterial system. Bcaterial cellulose film were produced by fermenting apple waste (apple pomace) from cider production donated by Herrljunga Cider in Herrljunga, Sweden and expired fruit juice, produced by LoveJuice Indonesia, containing a mixture of fruits, mainly apple. As inoculum for the fermentations two different Kombucha cultures were used. To optimize the fermentation conditions, factors such as nitrogen source, sugar content, temperature, pH, surface area, sterilization of the substrate, culture condition and fermentation time was varied to obtain the desired result. The bacterial cellulose films were dried at 50-70 °C in an oven, air-dried or freeze-dried to evaluate the impact of drying technique on the final material. The behavior of the microorganism during fermentation was monitored by sampling and observation. The consumption rate of carbohydrates was analyzed using high performance liquid chromatography (HPLC). The properties of the obtained biofilms were analyzed using thermogravimetric analysis (TGA), tensile testing and determination of cellulose content in the obtained biofilms. Two different sugar concentrations (35 g/l and 70 g/l) and three different caffeine concentrations (0 g/l, 150 g/l and 225 g/l) as nitrogen source were investigated to determine the best condition. A control batch of conventional (black tea and 70 g/l table sugar) Kombucha was used as reference. The highest tensile strength (50 MPa) and thermal stability was observed in the biofilms with the highest yield that had been dried in oven. The biofilms obtained by fermenting apple pomace from the cider industry showed the highest tensile strength and highest thermal stability in comparison to fermenting expired fruit juice. The biofilm obtained by fermenting apple waste(sugar concentration 70 g/l) in combination with sterilizing the substrate without adding any nitrogen source, dried in an oven and purified using 0,1 M NaOH resulted in the highest tensile strength, highest thermal stability and the purest biofilm from a visual aspect. The highest yield was observed in the fermentation of apple pomace (sugar concentration 70 g/l) from the cider industry without sterilization of the initial media with an addition of nitrogen of approximately 450 mg/l). The optimal fermentation period was observed to be 14-15 days, at 25-28 °C under static conditions using a glass vessel with a diameter of 20 cm and an initial pH of 5,5.

This diploma thesis deals with possibilities of using of aronia fruit pomace. The theoretical part is focused on botanical characteristics of aronia fruit, description of HPLC and anthocyanins dyes. The effects of various extraction condition on content of some polyphenolic compounds (gallic and vanilla acids, katechin and rutin) in aronia berry pomace are investigated in the experimental part. The mentioned compounds were detected with HPLC. Thanks to this method the content of carbohydrates was also detected. A quantity of anthocyanins dyes was determined by pH differential method.

Interactions of wheat macromolecules and fibres from fruit processing by-products using model systems and the application example muffin

By-products of fruit, cereal and vegetable processing are often regarded as waste while they contain significant amounts of dietary fibre and phytochemicals that can positively contribute to the human diet when reused as food ingredient. The application of fibre from by-products in baked goods could increase the sustainability of the processing chain but is usually associated with changes in product characteristics, such as lower volume, denser structure and increased hardness. In the current study, the interactions of fibres from by-products and wheat macromolecules were analysed in muffins, starch slurries and wheat doughs. The three selected fibres differed significantly in their chemical composition and technofunctional properties. In muffins wheat flour replacement by apple fibre was assessed by rheological measurements of batter and determination of product characteristics. Water proportion adaption based on batter viscosity to create isoviscosity was evaluated as a promising method to develop muffins with satisfying characteristics, where a wheat flour replacement of 30 % is suggested. The addition of apple fibre influenced starch gelatinisation in muffins during baking as indicated by the results of pasting experiments and in vitro starch digestion. Starch slurries with apple and wheat fibre were analysed in pasting experiments. Soluble dietary fibre, mainly pectin, strongly influenced the pasting profile of wheat starch, in comparison to insoluble dietary fibre, that acted as an inert filler and did not interact with the starch. Wheat doughs with fibre from by-products were analysed for rheology, texture and microstructure. The gluten development was negatively influenced by the fibres, which resulted in less extensible doughs. Soluble dietary fibre resulted in increased dough stickiness and limited dough handling at high application levels. It can be reasoned that dough with 10% fibre from by-products would produce products with satisfying characteristics, whereas higher application levels cannot be recommended without using additives to increase the gluten strength. Fibres from by-products are suitable wheat flour replacers in bakery products, where the negative effects of the high water binding capacity of the fibre, can be partly balanced by water proportion adaption, especially in products were gluten development is not that dominating for product structure, like in muffins or cakes. / Nebenprodukte der Obst-, Getreide- und Gemüseverarbeitung werden oft als Abfall betrachtet, wobei sie signifikante Gehalte an Ballaststoffen und sekundären Pflanzeninhaltsstoffen aufweisen, und bei der Verwendung als Lebensmittelzutat positiv zur menschlichen Ernährung beitragen können. Die Anwendung von Fasern aus Nebenprodukten in Backwaren könnte die Nachhaltigkeit der Verarbeitungskette erhöhen, ist jedoch mit Änderungen der Produkteigenschaften verbunden, wie verringertes Volumen, dichtere Struktur und erhöhte Härte. In der vorliegenden Studie wurden die Wechselwirkungen von Fasern und Weizenmakromolekülen in Muffins, Stärkesuspensionen und Weizenteigen analysiert, wobei sich die drei ausgewählten Fasern in ihrer chemischen Zusammensetzung und ihren technofunktionellen Eigenschaften unterschieden. In Muffins wurde die Mehlsubstitution durch Apfelfaser anhand von Teigrheologie und Produkteigenschaften analysiert. Die Anpassung des Wassergehaltes basierend auf der Teigviskosität wurde als vielversprechende Methode zur Entwicklung von Muffins mit akzeptablen Eigenschaften bewertet, wodurch ein Mehlersatz von 30% möglich war. Die Zugabe von Apfelfasern beeinflusste die Stärkeverkleisterung in Muffins, wie durch die Ergebnisse von Verkleisterungsexperimenten und In vitro-Stärkeverdauung gezeigt wurde. Stärkesuspensionen mit Apfel- und Weizenfasern wurden auf ihr Verkleisterungsverhalten analysiert. Lösliche Ballaststoffe beeinflussten das Verkleisterungsprofil von Weizenstärke im Vergleich zu unlöslichen Ballaststoffen, die als inerter Füllstoff fungierten und nicht mit der Stärke in Wechselwirkung traten. Weizenteige mit Fasern wurden auf Rheologie, Textur und Mikrostruktur untersucht. Die Glutenentwicklung wurde durch die Fasern negativ beeinflusst, was zu weniger dehnbaren Teigen führte. Lösliche Ballaststoffe führten zu einer erhöhten Teigklebrigkeit. Weizenteig mit 10% Faser besitzt zufriedenstellenden Eigenschaften, während höhere Fasermengen nicht zu empfehlen sind, ohne Zusatzstoffe, um die Glutenfestigkeit zu erhöhen. Fasern aus Nebenprodukten sind geeignet als Mehlersatz in Backwaren, wobei die negativen Auswirkungen der hohen Wasserbindekapazität der Faser teilweise durch Wasseranpassung ausgeglichen werden können, insbesondere in Produkten, bei denen die Glutenentwicklung nicht die Produktstruktur dominiert, wie in Muffins oder Kuchen.

Strategies enabling comprehensive upcycling of currant pomace in food systems

Exploring the use of currant pomace in foods is favourable due to its nutritional profile but also for economic and sustainability aspects. This by-product of fruit juice processing contains in addition to the dominating dietary fibre fraction considerable amounts of fat, protein, and polyphenols that are lost when the pomace is disposed of. Regardless of the intended use, the perishable material must be dried immediately or alternatively preserved. Three processing strategies (A, B, C) with different energy input and impact were outlined and related applications were implemented. The minimal (A) and intensive scenario (B) were examined comprehensively, whereas the complex processing (C) was considered only theoretically. For a prospective use in low-cost products (A), whole dry pomace was ground using various technologies. Ready-to-use powders were obtained by impact milling below 1 mm or simultaneous drying and grinding in a turbo rotor mill. A wide range of applications is possible, especially in baked products. The powder was used to partially replace flour in bread by considering its high water-binding capacity. In the example of wheat bread, 10% flour were simply replaced with pomace and dough handling properties (reduced stickiness) as well as bread quality parameters (lower baking loss, moister crumb) were improved by pre-hydration of the pomace in hot water. To expand the applicability of the pomace in the intensive scenario (B), the seeds were separated prior to milling and the remaining fibre fraction was treated thermomechanically either by planetary ball milling or extrusion cooking. This processing resulted in high fibre material with increased swelling capacity and water solubility. Based on the micronised seedless pomace, sweet creamy spreads were designed as an application example and the effects on rheology and physical stability were characterised. The pomace below 30 μm performed very well in spreads where it decreased oil separation. Das bei der Fruchtsaftherstellung anfallende Nebenprodukt besteht überwiegend aus Ballaststoffen sowie nennenswerten Mengen an Fett, Protein und Polyphenolen, welche im Falle einer Entsorgung für die menschliche Ernährung verloren gehen. Ganz unabhängig von der weiteren Nutzung muss der leicht verderbliche Trester zunächst getrocknet oder alternativ haltbar gemacht werden. Es wurden drei Aufarbeitungsstrategien (A, B, C) entworfen, welche sich in Energieaufwand und Intensität unterscheiden. Davon wurden das sogenannte minimale (A) und das intensive Szenario (B) inklusive entsprechender Anwendungen umfassend untersucht, während eine komplexe Verarbeitung (C) nur theoretisch betrachtet wurde. Für den Einsatz in niedrigpreisigen Lebensmitteln wurde getrockneter Trester im Gesamten (A) unter Anwendung verschiedener Technologien vermahlen. Direkt verwendbare Tresterpulver unter 1 mm wurden durch Vermahlung in einer Prallmühle oder mittels Mahltrocknung hergestellt. Es bieten sich eine ganze Reihe von Anwendungen, vor allem im Bereich der Backwaren, an. Unter Berücksichtigung der hohen Wasserbindekapazität erfolgte der Einsatz des Pulvers als Mehlsubstituent in Brot. Im Fall von Weizenbrot konnten 10% Mehl problemlos durch Trester ersetzt werden, wobei die Verarbeitungseigenschaften des Teigs (verminderte Klebrigkeit) und qualitätsbestimmende Broteigenschaften (geringerer Backverlust, feuchtere Krume) durch Vorquellen in heißem Wasser verbessert werden konnten. Um die Einsatzmöglichkeiten des Tresters zu erweitern, wurden im intensiven Verarbeitungsszenario (B) die Samen abgetrennt und die verbleibende Faserfraktion thermo-mechanisch behandelt, zum einen in einer Planetenkugelmühle, zum anderen durch Extrusion. Die intensive Aufarbeitung resultierte in einer ballaststoffreichen Faserfraktion mit erhöhtem Quellvermögen sowie höherer Wasserlöslichkeit. Als Einsatzbeispiel wurden ausgehend von der feinstvermahlenen Faserfraktion süße Streichcremes entwickelt, und die Auswirkungen des Tresters auf Rheologie und physikalische Stabilität charakterisiert. Der Trester unter 30 μm eignete sich hervorragend in der Herstellung von fettreichen Aufstrichen, da die Ölseparation vermindert wurde. Aprovechamiento de subproductos de zumos de frutos rojos para el diseño de alimentos

Tesis por compendio / [ES] La presente tesis plantea distintas estrategias para el diseño de alimentos a partir del aprovechamiento del bagazo que se genera como subproducto en la industria de elaboración de zumos de frutos rojos. De este modo, se puede aportar un valor añadido al subproducto, al mismo tiempo que se desarrollan alimentos capaces de cubrir las necesidades y exigencias nutritivas que demanda el consumidor actual. Uno de los aspectos más interesantes que tiene el uso de estos subproductos, es su alto contenido en polifenoles y fibra, de gran importancia en la industria alimentaria por su efecto en las propiedades de los alimentos y sobre la salud. Se realizó un primer estudio para conocer el efecto de la sustitución de grasa en bizcochos por diferentes tipos de fibra: soluble, insoluble y una mezcla de ambas. En este trabajo se observó que las características texturales, estructurales y sensoriales se vieron afectadas con la incorporación de fibra, principalmente en el caso de la fibra insoluble. Por todo esto, se establecieron dos estrategias de mejora. Por una parte, se incorporaron diferentes impulsores químicos en combinación con bicarbonato (normal o encapsulado) en bizcochos formulados con bagazo y se caracterizaron desde un punto de vista físico químico, estructural y sensorial. Por otra parte, se estudió cómo afecta a la textura, estructura y a la digestibilidad in vitro del almidón la sustitución parcial de harina de trigo por harina extrusionada en magdalenas formuladas con bagazo. En ambos estudios se obtuvieron resultados satisfactorios en cuanto a la mejora de las propiedades del producto. Además de las estrategias de mejora en productos horneados, se decidió incorporar bagazo en matrices lácteas para desarrollar nuevas formulaciones de batidos. Se estudió el efecto de un tratamiento no térmico, las altas presiones hidrostáticas, sobre el contenido fenólico y la capacidad antioxidante de los batidos, y sobre la capacidad antimicrobiana de los fenoles presentes en el bagazo. Se observó que la mayor retención de compuestos fenólicos y capacidad antioxidante con la mínima supervivencia microbiológica se obtuvo para las presiones y tiempos más altos (500 MPa durante 10 min) en los batidos con las concentraciones más altas de bagazo estudiadas (10%). Por último, se llevó a cabo un estudio con sistemas modelo para conocer las interacciones que tienen los polifenoles, cuando forman parte del bagazo o cuando se encuentran en forma de extracto, con los principales macronutrientes de los alimentos y sus efectos sobre la bioaccesibilidad de los compuestos fenólicos tras la digestión in vitro. La bioaccesibilidad de los polifenoles cuando se incorporaron en los sistemas modelo en forma de bagazo aumentó en comparación con cuando se adicionaron como extracto. Por otro lado, los sistemas modelo formulados con bagazo y un solo nutriente, presentaron una mayor bioaccesibilidad de los compuestos fenólicos que cuando se encontraron todos los nutrientes en el sistema modelo. / [CAT] La present tesi planteja diferents estratègies per al disseny d'aliments a partir de l'aprofitament del bagàs que es genera com a subproducte en la indústria d'elaboració de sucs de fruits rojos. D'aquesta manera, es pot aportar un valor afegit al subproducte, al mateix temps que es desenvolupen aliments capaços de cobrir les necessitats i exigències nutritives que demanda el consumidor actual. Un dels aspectes més interessants que té l'ús d'aquests subproductes, és el seu alt contingut en polifenols i fibra, de gran importància en la indústria alimentària pel seu efecte en les propietats dels aliments i sobre la salut. Es va realitzar un primer estudi per a conéixer l'efecte de la substitució de greix en bescuits per diferents tipus de fibra: soluble, insoluble i una mescla d'ambdues. En aquest treball es va observar que les característiques texturals, estructurals i sensorials es van veure afectades amb la incorporació de fibra, principalment en el cas de la fibra insoluble. Per tot això, es van establir dues estratègies de millora. D'una banda, es van incorporar diferents impulsors químics en combinació amb bicarbonat (normal o encapsulat) en bescuits formulats amb bagàs i es van caracteritzar des d'un punt de vista físic químic, estructural i sensorial. D'altra banda, es va estudiar com afecta a la textura, estructura i a la digestibilitat in vitro del midó la substitució parcial de farina de blat per farina extrusionada en magdalenes formulades amb bagàs. En tots dos estudis es van obtindre resultats satisfactoris quant a la millora de les propietats del producte. A més de les estratègies de millora en productes enfornats, es va decidir incorporar bagàs en matrius làcties per a desenvolupar noves formulacions de batuts. Es va estudiar l'efecte d'un tractament no tèrmic, les altes pressions hidroestàtiques, sobre el contingut fenòlic i la capacitat antioxidant dels batuts, i sobre la capacitat antimicrobiana dels fenols presents en el bagàs. Es va observar que la major retenció de compostos fenòlics i capacitat antioxidant amb la mínima supervivència microbiològica es va obtindre per a les pressions i temps més alts (500 MPa durant 10 min) en els batuts amb les concentracions més altes de bagàs estudiades (10%). Finalment, es va dur a terme un estudi amb sistemes model per a conéixer les interaccions que tenen els polifenols, quan formen part del bagàs o quan es troben en forma d'extracte, amb els principals macronutrients dels aliments i els seus efectes sobre la bioaccessibilitat dels compostos fenòlics després de la digestió in vitro. La bioaccessibilitat dels polifenols quan es van incorporar en els sistemes model en forma de bagàs va augmentar en comparació amb quan es van addicionar com a extracte. D'altra banda, els sistemes model formulats amb bagàs i un sol nutrient, van presentar una major bioaccessibilitat dels compostos fenòlics que quan es van trobar tots els nutrients en el sistema model. / [EN] This thesis proposes different strategies for the design of foods based on the use of pomace generated as a by-product in the berry juice processing industry. In this way, it is possible to add value to the by-product while developing foods capable of meeting the needs and nutritional requirements demanded by today's consumers. One of the most interesting aspects of the use of these by-products is their high content of polyphenols and fiber, of great importance in the food industry due to their effect on food properties and health. A first study was carried out to determine the effect of replacing fat in sponge cakes with different types of fiber: soluble, insoluble and a mixture of both. In this work it was observed that the textural, structural and sensory characteristics were affected by the incorporation of fiber, mainly in the case of insoluble fiber. For all these reasons, two improvement strategies were determined. On the one hand, different chemical leavenings agents were incorporated in combination with bicarbonate (normal or encapsulated) in sponge cakes formulated with pomace and characterized from a physical-chemical, structural and sensory point of view. On the other hand, it was studied how the partial substitution of wheat flour by extruded flour in pomace-formulated muffins affects texture, structure and in vitro starch digestibility. In both studies satisfactory results were obtained in terms of improved product properties. In addition to the improvement strategies in baked products, it was decided to incorporate pomace in dairy matrices to develop new milkshake formulations. The effect of a non-thermal treatment, such as high hydrostatic pressures, on the phenolic content and antioxidant capacity of the milkshakes, and on the antimicrobial capacity of the phenols present in pomace was studied. It was observed that the highest retention of phenolic compounds and antioxidant capacity with the lowest microbiological survival was obtained for the highest pressures and times (500 MPa for 10 min) in the milkshakes with the highest pomace concentrations studied (10%). Finally, a study was carried out with model systems to learn about the interactions that polyphenols have when they are part of the pomace or when they are in extract form, with the main macronutrients of food and their effects on the bioaccessibility of phenolic compounds after in vitro digestion. The bioaccessibility of polyphenols increased when it is incorporated into the model systems as pomace compared to when it is added as extract. Les marcs de raisin issus de la viniculture constituent un gisement de ressource naturelle abondant, sous valorisé et riche en polyphénols. Une méthode d?extraction de ces tannins condensés a été développée et optimisée en vue d'une application en adhésif pour les produits dérivés du bois. Les tannins ont été caractérisés par Résonance Magnétique Nucléaire, spectroscopie Infra Rouge (FTIR), spectrométrie de masse (MALDI TOF) et Analyse Thermomécanique (TMA). Des panneaux de particules ont été fabriqués à l'aide des colles élaborées en laboratoire et testés suivant les normes françaises en vigueur, plusieurs dépassent largement les valeurs seuils / The extraction of condensed tannins from grape pomace was examined using water medium in the presence of different bases as catalyst (NaOH, Na2CO3, NaHCO3 and Na2SO3). Two different extraction processes and the influence of 4 parameters (i.e., temperature, reaction time, chemical reagents and concentration of the chemical reagents) on the tannin extracts yields and properties were studied. The tannin fractions were characterized by Fourier transform-infrared spectroscopy, thermogravimetric analysis, carbon nuclear magnetic resonance spectroscopy and matrix assisted laser desorption ionization time of flight mass spectrometry ( MALDI-TOF ). It was demonstrated that it is possible to extract reactive tannins from grape pomace in basic medium. The tannin extracts obtained by precipitation in acidic conditions display a high phenolic content (Stiasny number higher 95%) but low water solubility and low reactivity toward formaldehyde because of the formation of catechinic acid phlobatannins during the acidification step. The tannins extracts obtained by lyophilization of the liquid, despite of their lower phenolic contents, displayed promising properties for adhesive applications. The optimum temperature of the extraction process was 100 °C, reaction time was 120 min; the best concentration of reagent was 10% (w/w). It was also shown that addition of sulphite ions during the extraction step improved the process :y the introduction of a sulfonic group through sulfitation increased both tannin solubility and reactivity as a result from the opening of the heterocyclic ring during extraction The structure of grape pomace sulfited tannin extracts did not present noticeable discrepancy exception of the ratio of the opening pyran ring which was different as a function of the catalyst used. The opening of pyran ring during the tannins extraction seem to be more important by using Na2CO3 and NaHCO3 than when using NaOH. The FT-IR bands assigned to aromatic ring vibration and carbonyl groups were stronger and no bands attributed to sulfited groups were tested detected in acidified tannins compared to lyophilized tannins. The TG2 results showed that the weight lost of these tannin extracts mainly composed of two steps. The first step starts from room temperature to 200 °C. It is attributed to the mass lost of water and some easy-degraded small low molecules. The secondly steps which is the mainly degradation step of tannin extract samples from 200 to 400 °C. The results from 13C-NMR showed that condensed tannin extracts from grape pomace were consistent with dominant procyanidin units with a minor amount of prodelphinidin units that are linked together by a C4-C8 bond. Relatively low carbonhydrate and high catechinc acid content was observed in acidified tannins compared to lyophilized tannins. It was shown by MADI-TOF experiments that grape pomace tannin extracts are mainly composed of flavoinoid oligomers up to 6 repeating units in lyophilized tannins and 10 repeating units in acidified tannins respectively, with dominant procyanidin units. A small proportion of substitution with glucose and gallic acid was detected in procyanidin units of polyflavonoid oligomers. The degree of polymerization of acidified tannins is higher than lyophilized tannins. Two different formulations (nonfortified tannin adhesive and fortified with addition of 20% of polymeric 4, 4'-diphenyl methane diisocyanate (p-MDI)) were used to press one layer wood particle board. It was shown that the nature of the extraction reagent (NaOH, Na2CO3 or NaHCO3) greatly impacts the properties of the resins and the mechanical properties of the panel internal bonding strengths. The particleboards bonded by the tannins extracted using Na2CO3 as catalyst give the best performance and were good enough to pass relevant international standard specifications for interior grade panels. Formaldehyde emission of these panels was below the European Norm requirements (<= 6.5 mg/ 100g panel)

Etude de la conversion de la biomasse en energie par un procédé hydrothermal de carbonisation - Caractérisation des produits issus des grignons d'olive / Study of biomass conversion into energy by hydrothermal process of carbonization Characterization of products formed from olive pomace

La carbonisation hydrothermale (HTC) est un procédé de conversion en énergie de la biomasse dans l’eau sous critique (180-250°C) à faibles pressions (10-40 bars). Ce procédé conduit à la production d’un matériau solide carboné appelé "hydro-char". L’objectif de ce travail est d’optimiser le procédé HTC par l’étude des performances de l’hydro-char comme source d’énergie. La biomasse étudiée est un résidu d’extraction d’huile d’olive dénommé grignons d’olive constitués de peau, de pulpe et de noyau (taux d’humidité de 70%). Ces grignons d’origine marocaine ont été préalablement séchés (GOS). Au cours de l’HTC, la biomasse est décomposée via des réactions de déshydratation et de décarboxylation. Les hydro-chars sont moins humides et plus riches en carbone que les GOS. Aussi, ils s’appauvrissent en cendres en les transférant dans la phase liquide. Les hydro-chars ont un PCS plus élevé que celui de la tourbe et de lignite. Les résultats montrent que le rendement et les propriétés de l’hydro-char dépendent surtout de la température du procédé. Pour mieux analyser l’effet des conditions opératoires, l’approche des plans d’expériences a été appliquée pour optimiser et modéliser le procédé HTC. Grâce au plan de Doehlert, on peut relier les propriétés de l’hydro-char avec son rendement massique et son comportement thermique de combustion. La représentation des surfaces de réponses a permis de définir les zones de production d’hydro-char avec ses propriétés permettant d’orienter l’élaboration de l’hydro-char pour répondre aux critères d’une application prédéfinie. Le liquide issu de l’HTC des GOS montre une sensibilité à la variation des conditions opératoires. Le carbone soluble dans ce liquide lui donne un pouvoir polluant. Pour le diminuer, deux procédés de traitement ont été testés: l’évaporation et l’oxydation en voie humide. Les résultats ont montré que la quantité d’eau utilisée pour le traitement est le facteur le plus influent sur le bilan énergétique du procédé HTC. / Hydrothermal carbonization (HTC) allows pre-treating humid biomass in subcritical water (180-250°C) and at low pressures (10-40 bars) in the absence of air. This process produces a carbonaceous solid material called "hydro-char". The main aim of this work is to optimize the HTC process by studying the potential of hydro-char to produce energy. The studied biomass is a by-product of the olive oil industry called olive pomace containing water, residual oil, olive skin, olive pulp, and olive stones (with 70% moisture content). The moroccan olive pomace was first air-dried (DOP) and characterized. During the HTC process, the biomass is decomposed via dehydration and decarboxylation reactions. The obtained hydro-char has much less moisture and higher carbon contents than that of untreated DOP. Also, the hydro-char becomes poor in ashes by transferring them into the liquid phase. Hydro-chars have a higher HHV than that of peat and lignite. The results show that hydro-char mass yield and its properties depend on the process temperature especially. For a better analysis of the effect of operating conditions, a Design of Experiments Response Surface Methodology (DoE/RSM) approach was applied to optimize the HTC process. The DoE/RSM allows identifying a relationship between hydro-char properties and its mass yield and thermal combustion behavior. Response-surface plots show defined areas of production of hydro-char which allows tailoring hydro-char elaboration to a specific application. The process liquid from the HTC treatment of DOP shows a sensibility to operating conditions. The soluble carbon in the HTC liquid increases its polluting power and to decrease it two treatment process have been tested: evaporation and wet oxidation. Finally, the results show that the amount of water used for the hydrothermal treatment is the most influential factor on the energy balance of the HTC process.

As bactérias probióticas, além de diversos possíveis efeitos benéficos à saúde do consumidor, podem apresentar um potencial para bioenriquecer alimentos através da produção de compostos de interesse nutricional e para a saúde durante a etapa de fermentação. Nesse sentido, a produção de vitaminas naturais por bactérias láticas, incluindo as probióticas, emerge como alternativa promissora ao uso de vitaminas sintéticas para a fortificação de alimentos. O uso de substratos vegetais para estimular a produção de vitaminas do grupo B por probióticos compreende uma solução sustentável para o reaproveitamento desse material oriundo, principalmente, do processamento de frutas. Os subprodutos de frutas são compostos por diversas substâncias bioativas e a incorporação desses ingredientes para o desenvolvimento de alimentos com alto valor agregado representa uma solução sustentável para o seu reaproveitamento. Sendo assim, o presente trabalho tem como objetivo avaliar a influência da adição de subproduto de fruta no bioenriquecimento de um produto de soja fermentado tipo frozen yogurt probiótico com riboflavina (vitamina B2). Para este fim, a capacidade de diferentes cepas de Streptococcus thermophilus, Lactobacillus spp. e Bifidobacterium spp. em produzir riboflavina foi avaliada, utilizando-se um meio de cultura desprovido desta vitamina (Riboflavin Assay médium, RAM). Paralelamente, foi avaliada a capacidade dessas cepas em fermentar os subprodutos de uva (Vitis spp.) e de caju (Anacardium occidentale L.). De acordo com os resultados de produção de riboflavina em RAM e de fermentação dos subprodutos de fruta, foram selecionadas as cepas para o desenvolvimento do produto fermentado de soja tipo frozen yogurt (FY). Dentre as cepas testadas, os Streptococcus thermophilus (ST-M6, TA-40 e TH-04) e o probiótico Lactobacillus fermentum PCC apresentaram potencial para produzir riboflavina em meio RAM. As cepas PCC e ST-M6 mostraram-se capazes de fermentar os subprodutos de caju e de uva (atingindo 8,25 e 8,40 log UFC/mL, respectivamente, para PCC e ST-M6 com subproduto de uva e 4,82 e 8,38 log UFC/mL, respectivamente, para PCC e ST-M6 com subproduto de caju em 24h). Por outro lado, as cepas TH-4 e TA-40 fermentaram apenas o subproduto de uva (atingindo 6,87 e 7,24 log UFC/mL, respectivamente, em 24h). Sendo assim, foram selecionadas as cepas de St. Thermophilus ST-M6, TH-4 e TA-40 e a de Lactobacillus fermentum PCC para a aplicação nos produtos visando o seu bioenriquecimento. O FY suplementado com 1% de subproduto de uva foi preparado, utilizando-se as cepas em co-cultura totalizando 3 combinações, ou seja, entre Lb. Fermentum PCC e as 3 cepas de St. Thermophilus. As formulações de FY foram capazes de atingir uma concentração de riboflavina de 8,40 e de 5,18 &#181;g/mL (combinando TA-40 e PCC) em 60 dias, respectivamente, sem e com o subproduto de uva. Já a associação de STM6 e PCC, sem o subproduto, resultou na menor concentração obtida (2,30 &#181;g/mL), atingindo 5,62 &#181;g/mL na presença do subproduto. Dessa maneira aplicação do subproduto de uva para estimular a produção de riboflavina só foi efetiva para a formulação que combinou St. Thermophilus ST-M6 e Lb. Fermentum PCC. / Probiotic bacteria, in addition to several possible beneficial effects on the consumers health, may present a potential to bioenrich food through the production of compounds of nutritional and health interest during fermentation. In this sense, the production of natural vitamins by lactic acid bacteria, including probiotics, emerges as a promising alternative to the use of synthetic vitamins for food fortification. The use of vegetable substrates to stimulate the production of B-group vitamins by probiotics comprises a sustainable solution for the reuse of this material coming mainly from fruit processing. Fruit by-products are composed of various bioactive substances and the incorporation of these ingredients into the development of high value-added foods represents a sustainable solution for their reuse. Therefore, the present study aims to evaluate the influence of the addition of fruit by-product on the bio-enrichment of a probiotic frozen yogurt-like fermented soy product with riboflavin (vitamin B2). For this purpose, the ability of different strains of Streptococcus thermophiles, Lactobacillus spp. and Bifidobacterium spp. in producing riboflavin was evaluated using a culture medium devoid of this vitamin (Riboflavin Assay Medium, RAM). In addition, we evaluated the ability of these strains to ferment the grape (Vitis spp.) and cashew (Anacardium occidentale L.) by-products. According to the results of riboflavin production in RAM and fermentation of fruit by-products, strains were selected for the development of a fermented frozen yogurt-like (FY) soybean product. Among the strains tested, Streptococcus thermophiles (ST-M6, TA-40, and TH-04) and the probiotic Lactobacillus fermentum PCC had the potential to produce riboflavin in RAM medium. The strains PCC and ST-M6 were able to ferment the cashew and the grape byproducts (reaching 8.25 and 8.40 log CFU/mL, respectively, for PCC and ST-M6 with the grape by-product, and 4.82 and 8. 38 log CFU/mL, respectively, for PCC and STM6 with cashew by-product in 24h). On the other hand, TH-4 and TA-40 fermented only the grape by-product (reaching 6.87 and 7.24 log CFU/mL, respectively, in 24h). Therefore, the strains St. thermophiles ST-M6, TH-4, and TA-40 and the strain Lactobacillus fermentum PCC were selected for application in the products for bioenrichment. The FY supplemented with 1% of grape by-product was prepared using the co-culture strains comprising three combinations between Lb. fermentum PCC and the three strains of St. thermophiles. The FY formulations were capable of producing 8.40 and 5.18 &#181;g/mL (combination of TA-40 and PCC) in 60 days, respectively, without and with the grape by-product. However, the association of ST-M6 and CCP, without the by-product, resulted in the lowest concentration obtained (2.30 &#181;g/mL), achieving 5.62 &#181;g/mL in the presence of the by-product. Thus, the application of the grape byproduct in order to stimulate the production of riboflavin was only effective for the formulation that combined St. thermophiles ST-M6 and Lb. fermentum PCC.

Tertiary biovalorisation of Grape pomace

This study reports on the hyper-extraction of fermentable sugars from GP treated with white rot fungi (WRF) Phanerochaete chrysosporium BKMF 1767 to facilitate improved biovalorisation for total reducing sugars (TRS) extraction in conjunction with Nepenthes mirabilis digestive fluids. TRS were quantified using the 3,5-dinitrosalicylic acid (DNS) reagent method. The free readily dissolvable sugars from the GP recorded for the bio-treated (BT) samples was 206.39 ± 0.06 mg/L and for the untreated (UT) samples was 271.05 ± 0.02 mg/L. Overall, the TRS yield for the Bio-treated (BT) and untreated (UT) samples was recorded as 205.68 ± 0.09 and 380.93 ± 0.14 mg/L, respectively, using hot water pretreatment (HWP) with 2266.00 ± 0.73 (BT) and 2850.68 ± 0.31 mg/L (UT), respectively, for dilute acid pretreatment (DAP); with 2068.49 ± 6.02 (BT) and 2969.61 ± 8.054 mg/L (UT) respectively, using the cellulase pretreatment (CP) method. Using the HWP as a reference, the relative increases imparted by the biotreatment was higher (51%) for DAP and low (33%) for CP. The combination of conventional used pre-treatment methods (hot water pretreatment, dilute acid pre-treatment, and cellulase pre-treatment) in a single pot system was also done while monitoring the total residual phenolics (TRPCs) in the samples. Furthermore, powder X-ray diffraction (pXRD) were used to measure the crystallinity index (CrI) and functional groups of pre- and post-pretreated GP to ascertain the efficiency of the pre-treatment methods, with quantification of lignin, holocellulose, and ash. Overall, the TRS yield for N. mirabilis pre-treated agro-waste was 951 mg/L ± 4.666 mg/L, with biomass having a lower CrI of 33%, and 62% residual lignin content. Furthermore, reduced TRPCs were observed in hydrolysate, suggesting limited inhibitory by-product formation during N. mirabilis pre-treatment

<p>Apple pomace is a by-product of the industrial production of apple juice, amounting to approximately 20-30% of freshly processed apples. Several million tonnes of apple pomace is produced in the world annually. Fresh apple pomace is characterised by high sugar and moisture content, which makes it susceptible to microbial contamination, uncontrolled fermentation and spoiling. Despite increasingly stricter legal regulations in managing biodegradable waste, large quantities of apple pomace are still being disposed of at landfills, posing a serious environmental issue. Since apple pomace has a certain nutritive value, it seems necessary to consider possibilities for using it as animal feed.<br />The main goal of this research was to examine the possibility for using dried apple pomace as animal feed, i.e., as a raw material in the industrial production of animal feed. Accordingly, the nutritive value of dried apple pomace was examined, along with the process of pelleting, since pelleting is one of the most common technological procedures in the industrial production of animal feed.<br />The testing of the chemical composition of dried apple pomace, used to determine its nutritive value, included the analyses of the content of raw proteins, raw fats, raw fibres, ash, neutral detergent fibres (NDF), acid detergent lignin (ADL), lignin, total sugars, individual sugars &ndash; fructose, glucose and sucrose, essential amino-acids, vitamins and mineral elements. When compared with the majority of commonly used animal feeds, the dried apple pomace was found to contain large amounts of raw fibres and sugars and small amounts of proteins and fats.<br />In accordance with the determined nutritional composition of the dried apple pomace, concentrate mixtures for fattening pigs were prepared, after which a trial was performed to examine the effect of feeding the animals on the mixtures containing dried apple pomace in different concentrations on the production performance of the fattening pigs. The results of the feeding trial showed that adding 7% of dried apple pomace in the growing period and 10% in the finishing period had no negative effects on the animal health, production and meat yield.<br />In the next part of the research, the dried apple pomace was pressed into pellets, with three starting moisture contents in the unpelleted material &ndash; 10%, 13% and 16%. The examination of the produced pellets showed that they had very good physical quality in terms of the pellet durability index (PDI) and hardness. The value of PDI exceeded 99% for all three starting moisture contents. The bulk density of the pelleted dried apple pomace was nearly twice as large as it was before pelleting. Increasing the moisture content in the dried apple pomace from 13% to 16% resulted in lower temperatures and energy consumption in the process of pelleting.<br />The goal of the next part of the research was to examine the effect of adding apple pomace into the concentrate mixture models consisting of corn and sunflower meal on the physical quality of the obtained pellets, the specific electricity consumption of the pellet press and the temperature of the pellet press die. Three concentrate mixture models were prepared for the test, comprising 0%, 10% and 20% of dry apple pomace. The mixtures were conditioned by adding water to reach the moisture content of 13%, 15% and 17% and pelleted at three settings of the press die (8, 24 and 30 mm). Therefore, three parameters were varied at three levels, in a full factorial experimental design. The dependent variables (response variables) were: PDI, pellet hardness (H), dust content in the pellets, bulk density of the pellets, matrix temperature of the pellet press and the specific energy consumption of the pellet press. The results showed that adding dried apple pomace into the model concentrate mixtures led to a significant increase in pellet quality, especially in terms of increasing the PDI value and decreasing the dust content. The results of the analysis of standard scores (SS) showed that the optimum values for pellet quality, specific energy consumption and temperature of the press die were obtained for the model concentrate mixture containing 10% of dried apple pomace, using 30 mm press die and with 17% of the starting moisture content. Good results were also obtained for the model concentrate mixture containing 20% of dried apple pomace, using 24 mm press die and with 17% of the starting moisture content.<br />To define the effect of the concentration of dried apple pomace in the model mixtures, the press die thickness and the starting moisture content on the change of the response variables, the response surface methodology (RSM) was used. The analysis of variance (ANOVA) of the response models for each of the analysed quality parameters and pelleting processes, showed which of the process parameters (percentage of apple pomace in the concentrate model mixtures, press die thickness and starting moisture content) had statistically the biggest effect on creating the mathematical response models, presented in the form of the second order polynomial (SOP). The results of this research showed that the increase in the percentage of dried apple pomace, press die thickness and starting moisture content led to an increase in PDI value, hardness (H) and bulk density of the pellets and a decrease in the content of dust in the pellets. The increase in the share of apple pomace in the model mixtures and in the die thickness of the pellet press led to an increase in the specific energy consumption and die temperature. On the other hand, the increase in the starting moisture content led to a decrease in the specific energy consumption and die temperature.<br />In the last part of the research, on the basis of the determined nutritive value of the dried apple pomace the author made a calculation, in terms of optimising the concentrate mixtures containing dried apple pomace in the optimum amount for feeding particular species and categories of farm animals. The results suggest the way of practical utilization of dried apple pomace in feeding farm animals as well as in the industrial production of animal feed.</p>
