[endif] ></p><p>The way of consumption has changed. Now, consumers are not only rational when purchasing. They do not buy just for the functionality of the good or service they are looking for. The consumption is more affective and consumers are considered now as poly-sensorial entities that are looking for more emotional and sensorial stimulation during their purchase process. This evolution of consumption is part of the trend that is called "retailtainnment", a mixed of "Retail" and "Entertainment". It is a concept of distribution that combines both of those two activities. Earlier studies have shown the success of using the Sensory Marketing, a concept based on stimulating the five senses in a strategy view. But, if certain senses are heavily used by companies/brands, as the sight and hearing, some are still underused, as the touch, the taste and particularly the smell. Wherefore a study on scent marketing is considered relevant to measure the potential of it. Even if several studies have already explained the important role of smell in a company's strategy, only few of them are using it. Our paper aims to go further on this subject by understanding the scent marketing in stores through the aims, the obstacles, the techniques used, in Umeå, Sweden.</p><p> </p><p>For our research, we first had to collect knowledge from scientific articles and previous studies on odours, on smells or perfumes and on scent marketing. Then, we constructed three hypothesises that helped us to conduct our research and made conclusions. Those hypotheses will be discussed by conducting a mixed-method, that is to say by combining two types of researches: a quantitative one, mainly to measure how many stores are using smell as a marketing tool, and then a qualitative one to go deeper into the reasons and how those stores are applying it. The quantitative research, based on a deductive approach, was conducted by using questionnaires. The qualitative research, based on an inductive approach was conducted by making semi-constructed interview. Both types of data collected and analyzed enable us to draw conclusions about scent marketing in Umeå. In this paper we identify the stores in Umeå that have odours or perfumes, those that are using smell as a marketing tool and their reasons to use it or not.</p><p><--></p>

"Passage" presents a negotiation between the natural and the human-made realms and comments on the duality of perceptions and emotional responses associated with each. On the one hand, I aim to create a calm, quiet and peaceful environment offering a pleasant and meditative experience.  On the other hand, I offer the challenge of contemplation in a city-like space that evokes dense urban architecture in the process of decay. Both experiences draw on my personal histories of fact and fiction, reality and dream, hopefully resulting in evocative parallel experiences for those who encounter my exhibition space.

Avaluació de la qualitat aromàtica, estàndard, sensorial i sanitària de poma 'Pink Lady®' durant la maduració i la frigoconservació

L'objectiu principal d'aquesta Tesi va ser estudiar la qualitat estàndard, aromàtica, sensorial i la seguretat abiòtica de la poma 'Pink Lady®' durant tres campanyes (2003-2004, 2004-2005 i 2005-2006), tant durant la maduració en camp com després de la frigoconservació en diferents atmosferes de conservació, períodes d'emmagatzemament i de permanència a 20 ºC. Les atmosferes controlades amb nivells de oxigen i diòxid de carboni entre 1-3% van permetre una molt bona retenció de la fermesa de la polpa, del contingut de sòlid solubles, de l'acidesa i del color de fons de l'epidermis durant la frigoconservació. Els fruits conservats sota la tecnologia de fred normal varen presentar una caiguda significativa de l'acidesa i la fermesa, sobretot en emmagatzematges llargs (25-28 setmanes) i després de 7 dies a 20 ºC. Els ésters volàtils més importants tant durant la maduració en camp com durant la frigoconservació van ser l'acetat de butil, l'hexanoat de butil, l'acetat de 2-metilbutil, l'acetat d'hexil, el propanoat d'hexil, el butanoat d'hexil, l'hexanoat d'hexil i el 2-metilbutanoat d'hexil. La màxima producció de compostos volàtils aromàtics es va aconseguir després de 13-15 setmanes de frigoconservació independentment de les condicions d'atmosfera. No obstant, el fred normal va ser la tecnologia més recomanable per a obtenir major concentració total de compostos volàtils. La biosíntesi dels compostos volàtils aromàtics al llarg de la maduració en camp i durant la frigoconservació va estar condicionada fonamentalment per la disponibilitat dels precursors dels compostos volàtils, més que per l'activitat de l'alcohol o-aciltransferasa (AAT), l'enzim responsable de forma directa amb la producció d'ésters volàtils. En relació amb l'acceptació sensorial, l'atmosfera controla amb baix oxigen (2%) i molt baix oxigen (1%) van ser les tecnologies de conservació que han proporcionat pomes amb més acceptació sensorial després de la frigoconservació. Els fruits més apreciats pels consumidors no sempre van ser els que mostraven una producció de compostos volàtils aromàtics més elevada. Per tant, es suggereix que la concentració d'alguns compostos volàtils aromàtics va ser més important que l'emissió total a l'hora de determinar l'acceptació general del fruit. Així, els compostos volàtils aromàtics que van permetre diferenciar les pomes 'Pink Lady®' més acceptades van ser el propanoat d'hexil, el hexanoat d'hexil, el 2-metilbutanoat de butil i el 2- metilbutanoat d'hexil. Cal destacar l'elevada influència de l'hexanoat d'etil i el 2-metilpropanoat de propil sobre l'acceptació sensorial per part del consumidor durant la 3ª campanya. Tots ells contribueixen de forma predominant en l'aroma de la 'Pink Lady®' aportant un aroma característic a 'poma' i 'afruitat' amb notes a 'poma verda'. La fermesa, l'acidesa i el contingut en sòlids solubles també van influir positivament en l'acceptación per part dels consumidors. Respecte a la seguretat abiòtica dels fruits, els resultats indiquen que el contingut de difenilamina, folpet i imazalil es van retenir majorment a la pell. La concentració de difenilamina a la pell dels fruits conservats en fred normal va ser menor que a les mostres conservades en les atmosferes controlades. El contingut de folpet a la pell va disminuir de forma marcada després de 13-15 setmanes de conservació més 1 dia a 20 ºC en totes les atmosferes de conservació estudiades, amb una reducció del 80%. L'imazalil va ser més persistent que el folpet durant la conservació frigorífica. Després de 13 setmanes en atmosfera controlada amb baix contingut d'oxigen més 4 setmanes en fred normal es va reduir la concentració de difenilamina als fruits conservats amb les atmosferes controlades en baix oxigen (LO) i també de folpet en els els fruits procedents d'atmosfera controlada amb molt baix oxigen (ULO). Després de 27 setmanes sota atmosfera ULO més 4 setmanes en fred normal es va reduir la concentració d'imazalil a la pell als fruits. En tots els casos, Els nivells de residus en fruit fresc sencer procedents de tractaments postcollita van respectar els límits màxims fixats per la legislació. / El objetivo principal de esta Tesis fue estudiar la calidad estándar, aromática, sensorial y seguridad abiòtica de la manzana 'Pink Lady®' durante tres campañas (2003-2004, 2004-2005 y 2005-2006), tanto durante la maduración en campo como después de la frigoconservació en diferentes atmósferas de conservación, periodos de almacenamiento y días de permanencia a 20ºC. Las atmósferas controladas con niveles de oxígeno y dióxido de carbono entre 1-3% permitieron una muy buena retención de la firmeza de la pulpa, del contenido en sólidos solubles, de la acidez y del color de fondo de la epidermis durante toda la frigoconservación. Los frutos conservados bajo la tecnologia de frío normal presentaron una caída significativa de la acidez y la firmeza sobretodo en largos periodos de almacenamiento y 7 días a 20 ºC. Los ésteres volátiles más importantes tanto durante la maduración en campo como durante la frigoconservación fueron el acetato de butilo, el hexanoato de butilo, el acetato de 2-metilbutilo, el acetato de hexilo, el propanoato de hexilo, el butanoato de hexilo, el hexanoato de hexilo y el 2-metilbutanoato de hexilo. La máxima producción de compuestos volátiles aromáticos fue después de 13-15 semanas de frigoconservación independientemente de las condiciones de atmósfera. No obstante, el frío normal fue la tecnología más recomendable para obtener mayor concentración total de compuestos volátiles. La biosíntesis de compuestos volátiles aromáticos a lo largo de la maduración en campo y durante la frigoconservación estuvo condicionada fundamentalmente por la disponibilidad de los precursores de los compuestos volátiles, más que por la actividad del alcohol o-aciltransferasa (AAT), el enzima responsable de forma directa con la producción de ésteres volátiles. En relación con la aceptación sensorial, la atmósfera controlada con bajo oxígeno (2%) y muy bajo oxígeno (1%) fueron las tecnologías de conservación que han proporcionado manzanas con más aceptación sensorial después de la frigoconservación. Los frutos más apreciados por los consumidores no siempre mostraron una producción de compuestos volátiles aromáticos más elevada. Por tanto, se sugiere que la concentración de algunos compuestos volátiles aromáticos fue más importante que la emisión total a la hora de determinar la aceptación general del fruto. De esta manera, los compuestos volátiles aromáticos que permitieron diferenciar las manzanas 'Pink Lady®' más aceptadas fueron el propanoato de hexilo, el hexanoato de hexilo, el 2-metilbutanoato de butilo y el 2-metilbutanoato de hexilo. Cabe destacar la elevada influencia del hexanoato de etilo y el 2-metilpropanoato de propilo sobre la aceptación sensorial por parte del consumidor la 3ª campaña. Todos ellos contribuyeron de forma predominante en el aroma de la 'Pink Lady®' aportando un aroma característico a 'manzana' y 'afrutado' con notas a manzana 'verde'. La firmeza, la acidez y el contenido en sólidos solubles también influyeron positivamente en la aceptación por parte de los consumidores. Respecto a la seguridad abiótica de los frutos, los resultados indican que el contenido de difenilamina, folpet y imazalil se retuvo mayormente en la piel. La concentración de difenilamina en la piel de los frutos conservats en frío normal fue menor que las muestras conservadas en átmosfera controlada. El contenido de folpet en la piel disminuyó de forma marcada después de 13-15 semanas de conservación en todas las atmósferas de conservación estudiadas, con una reducción del 80%. El imazalil fue más persistente que el folpet durante la conservación frigorífica. Después de 13 semanas en atmósfera controlada con bajo contenido más 4 semanas en frío normal redujo la concentración de difenilamina en los frutos conservados en atmósfera controlada con bajo oxígeno (LO) y también de folpet en los frutos procedentes de atmósfera controlada con muy bajo contenido de oxígeno (ULO). Después de 27 semanas bajo atmósfera ULO más 4 semanas en frío normal se redujo la concentración de imazalil en la piel de los frutos. En todos los casos, los niveles de residuos en fruto fresco entero procedentes de tratamientos postcosecha respectaron los límites máximos fijados por la legislación. / The main objective of this thesis was to study the changes in the standard quality parameters, volatile compounds emitted, consumer acceptance and abiotic safety of 'Pink Lady®' apples picked at three consecutive seasons (2003-2004, 2004-2005 and 2005-2006) during on-tree maturation and after storage under different conditions, including atmosphere composition, storage period and ripening time at 20 ºC Controlled atmospheres with oxygen and carbon dioxide levels in the range 1-3% allowed very good retention of firmness, soluble solids content, titratable acidity and background colour during cold storage. Cold storage under air led to a drop in acidity levels after long-term storage (25-28 weeks) plus 7 days at 20 ºC. The most important volatile esters in quantitative terms emitted both during on-tree maturation and after cold storage were butyl acetate, butyl hexanoate, 2-methylbutyl acetate, hexyl acetate, hexyl propanoate, hexyl butanoate, hexyl hexanoate and hexyl 2-methylbutanoate. In addition, the maximum total concentration of aroma volatile compounds was found after 13-15 weeks of cold storage irrespective of atmosphere composition; nevertheless, storage under cold air was the most advisable technology to obtain the maximum production of total aroma compounds. The biosynthesis of aroma volatile compounds both during on-tree maturation and after cold storage was conditioned by the availability of the necessary precursors rather than by the activity of alcohol o-acyltransferase (AAT), the direct enzyme responsible for the production of volatile esters. In connection with consumer's acceptance, CA storage appeared as highly advisable in order to get the best sensory quality of 'Pink Lady®' apples after cold storage. The best accepted fruit did not always show the highest production of aroma volatile compounds, suggesting that the concentration of some specific volatile compounds is more important than total aroma volatile emission in determining overall fruit acceptability. Some specific aroma volatile compounds, namely hexyl propanoate, hexyl hexanoate, butyl 2-methylbutanoate, hexyl 2-methyllbutanoate, ethyl hexanoate and propyl 2-methylpropanoate (only during the last experimental season), accounted for the differentiation between well-accepted and only marginally accepted samples. These compounds contributed to the aroma profile of 'Pink Lady®' apples by conferring a characteristic aroma of 'apple' and 'fresh-green fruity'. Firmness, titratable acidity and soluble solids content were found to have a positive influence on acceptability. Regarding abiotic safety of 'Pink Lady®' apples following treatments with different agrochemicals, results indicate that diphenylamine, folpet and imazalil were retained mainly in the skin. Diphenylamine concentration in the skin of air-stored fruit was smaller than that of CAstored samples. Folpet concentration in the skin diminished after 13-15 weeks of cold storage plus 1 day at 20 ºC in all the atmosphere conditions studied, with a reduction of 80%. Imazalil was more persistent during storage than folpet. After 13 weeks in controlled atmosphere with low oxygen plus 4 weeks in normal air, diphenylamine and folpet contents in skin were reduced in low oxygen (LO) and ultra low oxygen (ULO) stored samples. Imazalil content in the skin of fruit was reduced after 27 weeks in ULO plus 4 weeks in normal air. In all cases, residue levels in the whole fresh fruit were lower than the maximum residue limits established by the Spanish legislation.

Los objetivos de esta tesis fueron: estudiar la influencia de las características y procesado del grano de cacao en la composición físico-química y propiedades sensoriales del chocolate negro así como estudiar la influencia que las propiedades no sensoriales tienen sobre las expectativas del consumidor. El origen y condiciones de procesado del cacao afectan al contenido de grasa, perfil de ácidos grasos y composición volátil del chocolate, siendo parámetros determinantes de las características finales del producto. El estudio de las propiedades sensoriales permite explicar cómo la variación en el origen del cacao y condiciones de procesado del chocolate afectan a la aceptabilidad de los consumidores, y qué propiedades pueden conllevar a la aceptabilidad o rechazo de los mismos. Este trabajo aporta también novedades respecto al efecto que los atributos no sensoriales (información del etiquetado) tiene en las expectativas y aceptabilidad del chocolate por parte de los consumidores, demostrando que éstos le dan mayor importancia a las propiedades sensoriales del producto que a las no sensoriales. La información obtenida en esta tesis constituye una base imprescindible para la industria chocolatera, tanto en el desarrollo, como en la mejora y optimización de chocolates para asegurar la máxima aceptabilidad entre los consumidores. / Els objectius d’aquesta tesi van ser: estudiar la influència de les característiques i processat del gra de cacau en la composició físico-química i propietats sensorials de la xocolata negra així com estudiar la influència que les propietats no sensorials tenen sobre les expectatives del consumidor. L’origen i les condicions de processat del cacau afecten al contingut de greix, perfil d’àcids grassos i composició volàtil de la xocolata, essent paràmetres determinants de les característiques finals del producte. L’estudi de les propietats sensorials permet explicar com la variació en l’origen del cacau i les condicions de processat de la xocolata afecten a l’acceptabilitat dels consumidors i quines propietats comporten a l’acceptabilitat o rebuig dels mateixos. Aquest treball també aporta novetats respecte a l’efecte que els atributs no sensorials (informació de l’etiquetatge) té en les expectatives i acceptabilitat de la xocolata per part dels consumidores, demostrant que aquests li donen una major importància a les propietats sensorials del producte que a les no sensorials. La informació obtinguda en aquesta tesis constitueix una base imprescindible per a la indústria xocolatera, tant en el desenvolupament, com en la millora i optimització de xocolates per assegurar la màxima acceptabilitat entre els consumidors.

Sensing Sound And Space:Auditory And Visual Spatial ImpressionIn Three Auditoria

In some contexts, the experience of sound and space are often considered as two unrelated experiences. In an auditorium, the senses of hearing and seeing are not necessary unrelated. This thesis proposes that there is a sensorial relationship between sound and space in the context of symphonic concert halls. Through a study of three auditoria, this thesis explores the relationship, and the degree of correspondence and interaction between auditory and visual spatial impression. It begins by exploring the concepts of auditory and visual spatial impression in relation with auditorium acoustics and architectural design. In auditorium acoustics, a number of terms are used to describe auditory spatial impression, such as �spaciousness,� �envelopment,� and �intimacy.� These terms have connotations beyond the auditory. The thesis suggests that they may also be used to describe visual spatial impression in auditoria. Through textual analyses, the thesis finds that the auditory and visual terms do not always relate to the same physical characteristics of auditoria and can conflict with one another. Hence, it is apparent that further subjective analyses of auditory and spatial impression are needed. Three chapters in this thesis are devoted to auditory and visual subjective experiments. Their purpose is to explore the degree of correspondence or contrast, and interaction between auditory and visual spatial impression. The degree of correspondence and contrast between auditory and visual spatial impression appear to vary between auditoria and within auditoria. The relationship between auditory and visual spatial impression appear to be both necessary and arbitrary, and the degree of interaction between them appear to be strong in some cases and weak in other. From the findings, this thesis suggests that the degree of correspondence or contrast, and interaction between auditory and visual spatial impression could be used to create an audiovisual experience that suit specific musical events. Concert auditoria are culturally and artistically unique spaces. Hence, consideration must be taken to understand the relationships between, and intentions of the acoustical and architectural designs, music and architecture, for a successful and creative collaboration between designers - since the ultimate goal is to create an extraordinary audiovisual experience in a concert hall.

Em 2009 foram exportados 10,83 milhões de litros gerando uma receita de US$ 15,58 milhões. Dentre os principais mercados de destino estão Alemanha, Estados Unidos, Portugal e França (ALVES, 2009). Diante das novas exigências do mercado, os produtores começam a se preocupar em agregar maior valor à bebida, investindo em novas tecnologias e aperfeiçoamento de pessoal, no controle de qualidade e oferecendo embalagens mais sofisticadas, com o intuito de inserir a cachaça nos melhores pontos de consumo do país, ao lado de outras bebidas destiladas já consagradas no país e no mundo. A adição de açúcar tem sido utilizada como uma forma de padronizar o sabor de algumas bebidas destiladas, visando reduzir o sabor do etanol e eventuais defeitos sensoriais (CARDELLO e FARIA, 2000). O objetivo deste estudo foi avaliar o efeito da adição de açúcar na qualidade sensorial da cachaça, comparando-se amostras obtidas tradicionalmente e redestiladas contendo, diferentes concentrações de açúcar. As amostras foram obtidas a partir de um mesmo lote de aguardente tradicional considerada de baixa aceitação com graduação alcoólica de 47%. Inicialmente foram obtidas sete amostras, contendo concentrações crescentes de açúcar, que foram então diluídas para 40ºGL. Posteriormente após redestilação do lote acima referido foram obtidas amostras, contento também concentrações crescentes de açúcar e também diluídas para 40º GL. As 14 amostras de aguardente, obtidas conforme acima descrito, foram então submetidas a testes de aceitação em relação aos atributos aroma, sabor, doçura e impressão global, e atitude de compra. Among the main destination markets are Germany, United States, Portugal and France. 7 The addition of sugar has been used as a way to standardize the flavor of some liquor, to reduce the taste of ethanol and other sensory defects. 3 The purpose of this study was to evaluate the effect of adding different concentrations of sugar in the sensory quality of cachaça, comparing samples obtained by the traditional way and by re-distillation. From the same bach of “cachaça” obtained traditionally and considered of low acceptance, seven samples were added of increasing concentrations of sugar, end then diluted to 40 GL. Subsequently, a volume of the same batch was redistilled in order to obtain more seven samples, also having increased concentrations of sugar and also diluted to 40 GL. These samples were then tested for acceptance in relation to the attributes aroma, flavor, sweetness, overall impression and purchase attitude. The results showed that the practice of adding sugar undoubtedly influences positively the final product acceptance, minimizing sensory defects related to inadequate techniques of production, as well showed that the re-distillation process may also improve the acceptance of the Brazilian cachaça

O uso de proteínas de leguminosas como uma alternativa para a proteína animal tem sido estudada. O tremoço branco (Lupinus albus L.) apresenta elevada concentração de proteína e óleo, principalmente ácidos graxos insaturados e poliinsaturados, fibra alimentar, açúcares e vitaminas B1 e B2. Por outro lado, o tremoço não pode ser consumido diretamente porque possui alcaloides, que além de serem tóxicos, atribuem gosto amargo ao grão. Como a maioria dos alcaloides é solúvel em água, a quantidade de alcaloide do grão pode ser diminuída através de água corrente, fervente ou salmoura. Sucos de frutas são bastante consumidos no Brasil, especialmente no verão, não somente pelo sabor, mas como fonte de hidratação e por serem ricos em nutrientes. Os sucos de frutas tropicais conquistam cada vez mais o mercado consumidor, sendo o Brasil, um dos principais produtores. A pitanga, fruto da pitangueira (Eugenia uniflora L.) é uma planta frutífera nativa do Brasil (das regiões Sul e Sudeste e que tem se adaptado favoravelmente às condições climáticas e edáficas da região Nordeste), da Argentina e do Uruguai. A pitanga é uma fruta cuja polpa apresenta excelentes condições para industrialização, devido ao seu alto rendimento, aroma agradável e sabor exótico. O objetivo do presente estudo foi o de verificar, através da metodologia de superfície de resposta, as melhores condições para a utilização simultânea de extrato aquoso de tremoço branco e de suco tropical de pitanga, no desenvolvimento de uma bebida. The use of vegetable protein as an alternative to animal protein is being studied. The white lupine (Lupinus albus L.) has high concentrations of protein and oil, especially non saturated fatty acids and polynonsaturated fats, dietary fiber, sugars and vitamins B1 and B2. On the other hand, the lupine bean can’t be consumed straight because it has alkaloids which besides being toxic, add a bitter taste to the bean. As most alkaloids are water soluble, the amount of alkaloid in the beans can be reduced by running water, boiling or brine. Fruit juices are widely consumed in Brazil, especially in the summer, not only for their flavor, but as a source of hydration and because they are rich in nutrients. The tropical fruit juices are conquering the market more and more, with Brazil being one of the main producers in the world. The Pitanga (Eugenia uniflora L.) is the fruit of the Pitangueira, a native plant of southern Brazil (which has adapted positively to weather and soil conditions in the country’s Northeast), Argentina and Uruguay. Pitanga is a fruit which pulp presents excellent conditions for industrialization, due to its high yield, pleasant aroma and exotic flavor. The aim of the present study was to verify, through the response surface methodology, the optimum conditions for the combined use of aqueous extract of white lupine and tropical pitanga juice in the development of a drink. Em torno de 80% da laranja produzida no Brasil é processada na forma de suco de laranja concentrado e congelado (frozen concentrated orange juice-FCOJ). Durante o processamento do suco, podem ocorrer alterações das características do suco influenciando sua aceitação pelo consumidor. Os objetivos desse trabalho foram reunir informações referentes às características da laranja e à produção, à exportação, ao consumo de FCOJ, às etapas do processamento, às alterações sensoriais e físico-químicas que podem ocorrer durante o processamento, e avaliar a aceitação sensorial e a estabilidade físico-química do suco de laranja proveniente das etapas do processamento do suco concentrado e congelado. Uma equipe de 101 julgadores avaliou a cor, a impressão global, o aroma, o sabor e a textura do suco das etapas de extração, de filtração, de concentração, de resfriamento e de mistura de duas coletas, processados no início e no final da safra de 2009 da laranja da variedade Pêra-Rio. A estabilidade físico-química do suco de laranja proveniente das etapas do processamento do suco concentrado e congelado também foi avaliada no decorrer da safra de 2009, em cinco coletas. Foram realizadas análises do teor de sólidos solúveis, da acidez total titulável, de açúcares redutores, de açúcares totais, de ácido ascórbico, além do ratio e pH nos sucos das etapas de extração, filtração, concentração, resfriamento e mistura. Around 80% of oranges produced in Brazil are processed in the form of frozen concentrated orange juice (FCOJ). During the juice processing can result changes of the juice characteristics, influencing consumer acceptance. The aim of this work was to gather information regarding of orange characteristics and its production, exports and consumption of FCOJ, the processing steps and changes in sensory and physical-chemical properties that may occur during processing and to evaluate the sensorial acceptance and physical-chemistry stability of the juice coming from different steps of the concentrate juice processing. A group of 101 judges evaluated the color, the overall impression, aroma, flavor and texture of the juice from the steps of extraction, filtration, concentration, cooling and blend of two collections, processed at the beginning and end of the crop of pêra-rio orange variety in 2009. The physical-chemistry stability of the juice coming from the steps of processing of the concentrated juice was also evaluated during the 2009 harvest, in five collections. Were analyzed the soluble solids content (SS), total titratable acidity (TTA), reducing sugars (RS), total sugars (TS), ascorbic acid (AA), besides the ratio and pH in the juices of extraction, filtration, concentration, cooling and blend steps. The juices of the extraction and filtration steps were the most accepted for the attributes of overall impression, aroma and flavor, and showed higher purchase intention between “probably would purchase” and “definitely would purchase”.
