Esta dissertação investiga alguns aspectos da história das bebidas no século XVIII. A partir de uma caracterização inicial do processo de domesticação da embriaguez na Europa moderna, fornecemos a descrição de elementos do moralismo lusitano respeitantes à questão dos usos de vinho e aguardentes. Disso extraímos a hipótese de que a moderação teria sido o valor que orientou o comportamento alcoólico na sociedade portuguesa. Já na sociedade colonial, examinada nos dois capítulos finais, defendemos que o referido valor cumpriu a função ideológica de mascarar a experiência etílica dos habitantes daquelas paragens, experiência esta marcada por diferentes formas de beber e de embriaguez. Numa sociedade organizada para a expropriação de recursos valendo-se de mão-de-obra escrava, o beber moderado entrou em choque com as diversas circunstâncias apresentadas aos colonizadores nos trópicos. / This study investigates some aspects of the history of drinks in the eighteen century. From an initial characterization of the domestication process of being drunk in the modern era, provides the key element of moralism Lusitanian relating to the question of the uses of wine and spirits. From this we extract the hypothesis that moderation would be the value that guided the alcoholic behavior in Portuguese society. In the colonial society, examined in the last part, we argue that the value of the ideological function served to mask the experience of the inhabitants of those areas, this experience marked by different forms of drinking and drunkenness. In a society organized for the expropriation of resources by availing itself of slave labor, moderate drinking has clashed with the different circumstances presented to the colonists in the tropics.

Habits such as smoking and alcohol intake may influence negatively the vocal health of these individuals. OBJECTIVE: To determine and compare the prevalence of smoking and alcohol use among teachers, call center operators, singers and actors. METHODS: The sample was composed by voice professionals of the database of the group of researchers from the Clinic of Vocal Arts at Santa Casa, São Paulo. A questionnaire of Identification of Vocal Health Habits was answered by 400 subjects, divided into: 100 teachers; 100 call center operators; 100 singers and 100 actors. The total group was formed by 235 were women and 165 men, mean age 30.3 years. For this study two questions that investigate smoking and alcohol consumption were selected. RESULTS: In the group of 400 subjects, 19.4% were smokers, 26.1% men and 14.5% women. The alcohol consumption was reported by 43.8% of the participants, 49.7% men and 39.7% women. The group with higher prevalence of smoking and alcohol intake was aging between 16-25 years, 46.2% and 40.6% respectively. The prevalence of smoking for call center operators was 25%, for actors, 24%, teachers, 18% and singers 11%. Regarding gender the prevalence of smoking was higher in male call center operators (38.2%). Cigarette smoking, according to profession and age, was more prevalent among actors (35.7%) aging between 36-45 years. The alcohol intake was reported by the actors (55%), call center operators (45%), singers (40%) and teachers (35%). The alcohol intake considering gender was higher among male actors (64.7%) and aging between 36-45 years it was 71.4%. CONCLUSION: Among the four groups of voice professionals analyzed, smoking prevalence was higher in the group of call center operators and related to alcohol intake the prevalence was higher in the group of actors / INTRODUÇÃO: Para os profissionais, que no seu instrumento de trabalho têm a voz, o bem-estar vocal é de grande importância. Hábitos como o tabagismo e a ingesta de bebidas alcoólicas podem influenciar, de forma negativa, a saúde vocal destes indivíduos. OBJETIVO: Determinar e comparar a prevalência de tabagismo e ingesta alcoólica em professores, teleoperadores, cantores e atores. MÉTODOS: A amostra foi composta por profissionais da voz do banco de dados do grupo de pesquisadores do Ambulatório de Artes Vocais da Santa Casa de São Paulo. Foi aplicado um Questionário de Identificação de Hábitos de Saúde Vocal em 400 sujeitos, distribuídos em: 100 professores, 100 teleoperadores, 100 cantores e 100 atores. Do total do grupo, 235 eram mulheres e 165 homens, com média de 30,3 anos de idade. Para este estudo, foram selecionadas duas questões que investigaram o tabagismo e a ingesta alcoólica. RESULTADOS: No total do grupo analisado, 19,4% eram tabagistas, 26,1% homens e 14,5% mulheres. A ingesta alcoólica foi referida por 43,8% dos participantes, 49,7% homens e 39,7% mulheres. A faixa etária, com prevalência maior de tabagismo e ingesta alcoólica, foi de 16 a 25 anos, 46,2% e 40,6%, respectivamente. A prevalência de tabagismo nos teleoperadores foi de 25%, nos atores, 24%, nos professores, 18% e nos cantores, 11%. Quanto ao sexo, a prevalência de tabagismo foi maior nos teleoperadores masculinos (38,2%). O tabagismo, segundo a profissão e faixa etária, foi mais prevalente nos atores (35,7%), dos 36 a 45 anos. A ingesta alcoólica foi referida pelos atores (55%), teleoperadores (45%), cantores (40%) e professores (35%). A ingesta alcoólica, segundo o sexo, foi mais elevada entre os atores masculinos (64,7%) e na faixa etária entre 36 a 45 anos, 71,4%. CONCLUSÃO: Dentre os quatro grupos de profissionais da voz analisados, a prevalência de tabagismo foi maior no grupo dos teleoperadores, e em relação à ingesta alcoólica, no grupo de atores

Consumo de bebidas açucaradas e características associadas: inquérito com adultos do Estado de São Paulo / Consumption of sugar sweetened beverages and associated characteristics: survey with adults from the State of São Paulo

Introdução- O aumento da ingestão de bebidas açucaradas tem sido relacionado à epidemia de obesidade e de outras doenças crônicas não transmissíveis (DCNTs). Essa ingestão promove menor saciedade e difere quanto ao mecanismo de resposta ao apetite quando comparado a alimentos sólidos, estimulando o consumo em excesso e, consequentemente, o maior consumo energético e ganho de peso. Compreender as características associadas a esse comportamento pode contribuir para a prevenção e controle das DCNTs no Brasil. Objetivo- Analisar o consumo e as características associadas ao consumo de bebidas açucaradas por adultos no Estado de São Paulo. Métodos- Trata-se de um estudo transversal que utilizou os dados do Sistema de Vigilância de Fatores de Risco e Proteção para Doenças Crônicas por Inquérito Telefônico no Estado de São Paulo (VIGITEL São Paulo). Os dados corresponderam à coleta em 2012/2013 e 2014, realizadas por meio de entrevistas padronizadas com indivíduos adultos. Foi realizada análise descritiva da prevalência do consumo regular de bebidas açucaradas segundo as características sociodemográficas, nutricionais e comportamentais da população adulta do Estado de São Paulo. As estimativas foram calculadas com intervalo de confiança de 95 por cento e a associação entre o consumo de bebidas açucaradas e as características estudadas foi avaliada através de modelo de regressão de Poisson. Resultados- Foram estudados 11.320 indivíduos, representativos da população adulta do Estado de São Paulo. A maioria era do sexo feminino e o consumo regular de bebidas açucaradas foi observado em 28,6 por cento da população. O consumo regular dessas bebidas foi observado em maior frequência entre homens, indivíduos jovens, com escolaridade intermediária e que consomem lanches em substituição das refeições. Conclusão: O consumo regular de bebidas açucaradas é elevado na população do Estado de São Paulo. Desta forma, estratégias e políticas públicas baseadas no perfil de consumo na população são essenciais para reverter esse quadro / Introduction- The increased intake of sugar sweetened beverages is related to the epidemic of obesity and other noncommunicable chronic diseases (NCDs). Since the intake of these beverages promotes less satiety and differs in the mechanism of response to appetite compared to solid foods, it induces overconsumption, resulting in a greater energy consumption and weight gain. Understanding the characteristics associated with this behavior may contribute to the prevention and control of NCDs in Brazil. Objective- To analyze the consumption of sugar sweetened beverages by adults in the State of São Paulo and its characteristics. Methods- This is a cross-sectional study with data from the Surveillance System for Risk and Protection Factors for Chronic Diseases by Telephone Survey in the State of São Paulo (VIGITEL São Paulo). The data collection was conducted from 2012 to 2014 through standardized interviews with adult individuals. A descriptive analysis of the prevalence of regular consumption of sugar sweetened beverages according to the sociodemographic, nutritional and behavioral characteristics of the adult population of the State of. Estimates were conducted with a 95 per cent confidence interval. The association between consumption of sugar sweetened beverages and the population characteristics was evaluated using the Poisson regression model. Results- We studied 11,320 individuals, in a representative sample of the adult population of the State of São Paulo. The majority were female and regular consumption of sugar sweetened beverages was observed in 28.6 per cent of the population. Regular consumption of sugar sweetened beverages was observed more frequently between men, young individuals with middle education level and who consume snacks instead of meals. Conclusion- The regular consumption of sugar sweetened beverages is high in the population of the State of São Paulo. In this way, strategies and public policies based on the population profile of consumption are essential to reverse this situation

Mexicans' Consumption of Taxed Sugar-Sweetened Beverages and the Psychosocial Determinants of Consumption in the Context of the 2014 Sugar-Sweetened Beverage Tax - A Mixed Methods Study

In Mexico about 73 percent adults and 33 percent children have overweight or obesity; and nearly 14 percent adults are estimated to have Type 2 diabetes, being the principal cause of mortality. Obesity and diabetes rates rose sharply starting in the 1980's and 1990's, coinciding with the globalization processes that Mexico underwent resulting in a higher availability and consumption of energy-dense and nutrient-poor ultra-processed foods. Sugar-sweetened beverages (SSBs), carbonated cola beverages such as Coca-Cola in particular, are widely consumed and well integrated into Mexico's cultural fabric and constitute the major source of added sugars in the Mexican diet. High intake of SSBs is associated with weight gain, type 2 diabetes, coronary heart disease, and metabolic syndrome, In 2014, the Mexican government introduced a 1-peso-per-liter (approx. US 8 cents; about 10 percent of the pre-tax price) on industrialized SSBs along with many other public health measures in an attempt to curb rising obesity rates. Two years into the SSB tax, purchases of sugary beverages in stores decreased by 7.6 percent on average. This decrease in purchases is remarkable, nevertheless, based on the existing cross-sectional data, the change cannot be s attributable solely to the effect of the taxation. Moreover, there are many other concurrent factors that might have affected demand and purchases of SSBs: like an 8 percent ad valorem tax imposed on discretionary energy-dense food in 2014, the regulation of foods and beverages in schools, and the regulation of food and beverage marketing on TV targeted to children. Further, it may be plausible for the SSB tax to have exerted effect via other mechanisms, such as increasing awareness of negative health outcomes. There is evidence from other countries that junk food and SSB taxes imposed with public health goals contribute to enhancing people's awareness about the negative health consequences of unhealthy foods. The purpose of this study was to explore what are Mexicans' beliefs, attitudes, social norms, and behaviors in relation to SSBs in the context of the SSB tax, and why and how behaviors have been modified. This purpose was addressed using a sequential explanatory mixed methods design, starting with a quantitative survey with a nationally representative sample, followed by a qualitative study with parents and construction workers. Quantitative study. The first phase of the study consisted of closed-ended questions (designed to ask about awareness of and opinion about the effectiveness of the tax, psychosocial determinants of SSB consumption, and perception of change in SSB consumption since the year the tax was implemented) that were developed and inserted into a new questionnaire of the 2016 National Health and Nutrition Survey (ENSANUT) carried out by the Mexican INSP. The questionnaire was administered face-to-face to 6,650 Mexican adults 20-59 years old, providing a representative sample at the national, urban and rural, and regional levels. The two principal statistical analysis conducted were: (a) Logistic regression, used to evaluate the probability of a person reporting a decrease in SSB consumption, given their awareness of the tax, opinion about its effectiveness, psychosocial (SSB health-related beliefs, self-efficacy, and liking of SSBs) and environmental (availability of potable water) determinants, after controlling for covariates; (b) Multiple linear regression analysis, utilized to examine the association between the same factors and current consumption of taxed SSBs. Results showed that compared with adults not aware, adults who were aware of the SSB tax were more likely (OR=1.30) to report a decrease in SSB consumption (p=.012). In urban areas, adults aware of the tax drank a significantly lower amount of taxed SSBs (-15.7%; p=.023) than those not aware. Self-efficacy and liking of SSBs were significantly associated with a reported decrease in consumption and with current consumption (p<.001), while health beliefs and availability of potable water were not significantly associated with either reported change in SSB consumption or current consumption of taxed SSBs. We conclude that implementation of an SSB tax accompanied by highly visible campaigns may further influence the impact of taxes on SSBs consumption. Qualitative study. The second phase consisted of a qualitative multi-case study involving interviews and focus groups with parents of children 9 years old or younger and construction workers that assisted in interpreting the findings of the quantitative study. This study also expanded upon the quantitative findings particularly in relation to the ways people modified (or not) their purchasing and consumption behaviors after the imposition of the SSB tax and the reasons why. The analysis was informed by the Reasoned Action Approach and the hyperbolic (future) discounting concept from behavioral economics theory. The main findings of the study with parents are that most reported drinking less soda than in the two-four years prior and that they largely are trying to reduce their children's consumption of SSBs and encourage water consumption. Changes in parents' behaviors and practices were precipitated by health concerns and not necessarily by price increases (although these were of concern). Half of the participants knew about the tax and its purpose; and it seems like the debate around the tax might have contributed to increasing awareness about the detrimental health consequences of taxed beverages. We conclude that for many of these parents the current taxation of SSBs may have had a mild effect on SSB consumption; a higher level of the tax (20 percent) may impose an additional constraint. The main findings of the study with construction workers are that they consume a high amount of both soda and water during their work days (approx. 1.25. liters and 4 liters, respectively). They associate consumption of soda to pause and meal breaks, and consumption of water to the times when they are working. Nevertheless, their identity as construction workers is constructed in relation to their soda consumption. While they are aware of the health consequences that a high soda consumption can entail, it seems like they had never contemplated the need and/or possibility of changing their practices. Construction workers have not (permanently) altered their patterns of soda consumption in the context of the tax. Presence of an illness (i.e., kidney problems) triggered changes in some, but they were only temporary. We conclude that a 1 peso-per-liter (10 percent) tax is not enough to trigger changes in practices in this group, and that the government should consider a higher level of the tax to have an effect on these consumers. In this dissertation, the interpretation of the quantitative and the qualitative results in combination yields a better understanding about the potential influence of the SSB tax on Mexicans SSB-related behaviors and psychosocial factors. The key conclusions of this work are that: 1) A considerable number of the Mexican adult population is aware of the tax on SSBs, but that awareness differs by socio-demographic characteristics; 2) A large majority of the population beliefs that the tax is not reducing consumption of taxed SSBs meaningfully; 3) having been exposed to debates/campaigns in relation the tax, combined withto the price increase, may have contributed to increasing health awareness and/or rethinking beverage choices in some population groups that are more sensitive to diet/nutrition and health (e.g., parents in their role as caregivers) but not of others (e.g., construction workers); 4) the most salient determinants of SSB consumption are: social norms, liking for SSBs, perceived behavioral control, and the beverage environment; 5) Mexican adults are knowledgeable about the health consequences of a high consumption of industrialized SSBs, however, while knowledge is necessary, it might not be sufficient to result in large behavioral changes. This study contributes to the fields of public health and food and nutrition policy by suggesting an alternative pathway through which health taxes may exert an impact on people's behavior. It also highlights the complexity of food choice and behavior change and the need for comprehensive approaches, grounded in research of psychosocial determinants, to have a meaningful impact on changing consumers' behaviors. The findings of this dissertation suggest that in the future, governments could consider accompanying public health taxes with comprehensive and targeted education campaigns in an attempt to create synergy between both approaches. In addition, future nutrition education and public health campaigns might focus more on teaching self-regulation skills, after motivation has been established, and on shifting social norms around SSB drinking.

Transit Advertising with Alcohol and Violent Content on Public Platforms: A Descriptive Study of Advertisements Within the New York City Subway System

Two of the most important behaviors affecting youth are alcohol use and aggression. Advertisements that promote alcohol consumption and display aggressive images and words may influence attitudes and behaviors of youth. While there is considerable research on these kinds of advertisements in various media channels, there is limited research describing such advertising within public transit systems. The purpose of this study was, therefore, to describe and prevalence and characteristics of advertisements about alcohol and with violent content on the platform walls of the New York City subway system. Methods: A cross-sectional design with direct observations was used to document all advertisements in four boroughs: Bronx, Brooklyn, Manhattan, and Queens. Subway stations with and without advertising were identified and selected characteristics of advertisements about alcohol and with violent content were described. The presence of advertisements was examined based on racial/ethnic and income characteristics of station location using logistic regression. Results: Of 472 subway stations observed, 143 contained 8,737 advertisements, including duplicates. Of the 143 stations with any type of advertisements, 76 (53.1%) displayed one or more alcohol advertisements while over 95% included one or more advertisements with violent content (136 of 143). Of the 8,737 advertisements observed, 129 (1.5%) were for alcohol (including three public service messages) and 1,154 (13.2%) had violent content. Almost two-thirds of the 129 advertisements about alcohol were for beer. There were 144 advertisements that pictured guns. Not one public service announcement for violence prevention was observed. Examination of the presence of advertisements based on racial/ethnic and income characteristics of station location (n = 454 with complete data) showed no differences for advertisements with violent content, but greater odds of alcohol advertisements being present in locations with a higher percentage of Black population. Considerable variability existed between neighborhoods within each borough. Conclusions: Almost 9,000 advertisements were documented in this study. Despite the low number of advertisements about alcohol, one or more such advertisements was present in over one-half of the stations with advertising. Advertisements with violent content were pervasive. Recommendations focus on how public transit spaces can be used more productively to help cultivate caring communities.

Estabilidade de néctar de jabuticaba e caldo de cana acondicionados em garrafa plástica incorporada com agentes inorgânicos microestruturados de prata e óxido de zinco / Stability of jabuticaba nectar and sugarcane juice in plastic bottle incorporated with silver and zinc oxide microstructured inorganic agents

A embalagem desempenha uma função crucial na estabilidade dos alimentos. Neste estudo avaliou-se a estabilidade microbiológica de néctar de jabuticaba e caldo de cana pasteurizados (85 ºC/30 s), acondicionados assepticamente em garrafa de polietileno de alta densidade (PEAD) incorporada com agentes inorgânicos microestruturados com Ag/ZnO. Os lotes processados foram estocados a 5 ºC na ausência de luz. Testes físico-químicos, microbiológicos e sensoriais foram conduzidos para avaliar a estabilidade e estimar o tempo de vida útil das bebidas. Médias de notas superiores a 5 (na escala hedônica de 9 pontos) e percentagens de aceitação superiores a 60% foram estabelecidas para estimar o tempo de vida de prateleira das bebidas. Os resultados dos testes físico-químicos para o néctar de jabuticaba variaram de 3,40 a 3,76 para o pH, de 11,0 a 12,5 ºBrix para sólidos solúveis totais, e de 0,52 a 0,76% (m/m) de ácido cítrico para acidez total titulável. Para o caldo de cana, os valores de pH, sólidos solúveis totais e acidez total titulável variaram de 5,10 a 5,37; 14,3 a 24,0 ºBrix e de 0,05 a 0,13%(m/m) ácido cítrico, respectivamente, durante o período do estudo. Para o néctar de jabuticaba, as contagens de mesófilos, psicrotróficos e bolores e leveduras variaram de 1 a 1,5; &lt; 1est a 1; &lt; 1est a 1,3 logUFC/mL respectivamente, durante o período de estocagem. Para o caldo de cana as contagens variaram de &lt; 1est a 4,5 1est a 4,4; 1est a 4,0 logUFC/mL. O néctar de jabuticaba alcançou maior estabilidade microbiológica que o caldo de cana. As médias de notas para sabor, aparência e impressão global obtidas nos testes de escala hedônica variaram entre 6 a 7,1 para o néctar de jabuticaba e 5 e 7,7 para o caldo de cana. O néctar de jabuticaba e caldo de cana permaneceram microbiologicamente estáveis por um período de 120 e 50 dias, respectivamente. Os agentes inorgânicos microestruturados com Ag/ZnO não exerceram influência na estabilidade microbiológica dos dois produtos. / Packaging plays a crucial role in food stability. In this study, the microbiological stability of pasteurized (85 ºC/30 s) jabuticaba nectar and cane juice, aseptically packaged in high density polyethylene (HDPE) bottle treated with silver and zinc oxide (Ag/ZnO), was evaluated. All processed batches were stored at 5 ºC in the dark. Physicochemical, microbiological and sensory tests were conducted to evaluate the stability and estimate the beverage´s shelf life. Average scores greater than 5 (in the 9-point hedonic scale) and percentage of approval greater than 60% were both used as threshold values for estimating the product´s shelf life. As for the nectar, the pH ranged from 3.40 to 3.76; soluble solids from 11.0 to 12.5 ºBrix and titratable total acidity from 0.52 to 0.76% (w/w) citric acid. The pH values, total soluble solids and titratable acidity of cane juice varied from 5.10 to 5.37; 14.3 to 24.0 ºBrix and 0.05 to 0.13%(w/w) citric acid, respectively, during the storage. For nectar, counts of mesophiles, psychrotrophs and molds and yeasts ranged from 1 to 1.5; &lt; 1est to 1; &lt; 1est to 1.3 logCFU/mL, respectively, during the storage period. For the cane juice the counts ranged from &lt; 1est to 4.5; &lt;1est to 4.4; &lt;1est to 4.0 logCFU/mL. Jabuticaba nectar achieved longer microbiological stability than cane juice. The mean scores for flavor, appearance and overall impression obtained in the nine-point hedonic scale tests ranged from 6 to 7.1 for jabuticaba nectar and 5 and 7.7 for cane juice. Nectar and cane juice remained microbiologically stable for 120 and 50 days, respectively. The Ag/ZnO microstructured inorganic agents had no influence on the microbiological stability of both products.

Já na sociedade colonial, examinada nos dois capítulos finais, defendemos que o referido valor cumpriu a função ideológica de mascarar a experiência etílica dos habitantes daquelas paragens, experiência esta marcada por diferentes formas de beber e de embriaguez. Numa sociedade organizada para a expropriação de recursos valendo-se de mão-de-obra escrava, o beber moderado entrou em choque com as diversas circunstâncias apresentadas aos colonizadores nos trópicos. / This study investigates some aspects of the history of drinks in the eighteen century. From an initial characterization of the domestication process of being drunk in the modern era, provides the key element of moralism Lusitanian relating to the question of the uses of wine and spirits. From this we extract the hypothesis that moderation would be the value that guided the alcoholic behavior in Portuguese society. In the colonial society, examined in the last part, we argue that the value of the ideological function served to mask the experience of the inhabitants of those areas, this experience marked by different forms of drinking and drunkenness. In a society organized for the expropriation of resources by availing itself of slave labor, moderate drinking has clashed with the different circumstances presented to the colonists in the tropics.

Comportamento do ácido elágico em bebidas lácteas simbióticas suplementadas com L-triptofano e polpa de frutas vermelhas durante armazenamento refrigerado / Behaviour of ellagic acid in synbiotic lactic beverages supplemented with L-tryptophan and red fruit pulp during cold storage

Os benefícios à saúde oferecidos pelos leites fermentados probióticos podem ser ampliados pela adição de polpa de frutas vermelhas uma vez que estas apresentam reconhecidas propriedades funcionais. Ácido elágico e elagitaninos presentes nas frutas apresentam função fisiológica e metabólica na alimentação. Porém, a estabilidade destes compostos bioativos em produtos probióticos durante armazenamento refrigerado ainda não foi estudada. Sendo assim, este projeto tem por finalidade investigar o comportamento do ácido elágico em bebidas lácteas simbióticas suplementadas com L-triptofano e polpa de frutas vermelhas durante armazenamento refrigerado. O estudo foi realizado através de um delineamento experimental do tipo simplex centróide para modelagem de misturas. Foram preparadas 16 bebidas lácteas divididas em duas diferentes matrizes de ensaios segundo: (i) enriquecimento ou não da bebida láctea com triptofano e (ii) composição em frutas vermelhas do preparado de frutas. As amostras de bebida láctea foram avaliadas quanto as suas características físico-químicas (pH, reologia e atributos de cor), microbiológicas, microestrutura e quanto ao teor de ácido elágico. As bebidas lácteas apresentaram reduzidas pós-acidificação sem variações significativas para as bebidas contendo triptofano. As mesmas bebidas apresentaram melhora significativa na viabilidade da bactéria probiótica Lactobacillus acidophilus ao longo do período estudado. Os parâmetros de cor se mostraram estáveis nas bebidas lácteas durante o armazenamento refrigerado. O comportamento reológico das bebidas lácteas foi semelhante e adição de polpa de fruta proporcionou um efeito benéfico na consistência e viscosidade dos produtos. Foi possível estimar o conteúdo ótimo de ácido elágico nas bebidas lácteas simbióticas pela metodologia de superfície de resposta. As bebidas lácteas adicionadas de polpa de morango apresentaram maiores teores de ácido elágico, principalmente nas bebidas contendo triptofano. As fotos micrografias obtidas através da microscopia eletrônica de varredura permitiram avaliar a interação dos componentes da matriz das bebidas lácteas simbióticas de forma satisfatória. / The health benefits provided by probiotic fermented milk can be enhanced by the addition of native fruit pulp as they have recognized functional properties. Ellagic acid and ellagitannins present in fruis show physiological and metabolic function. Identification of these bioactive compounds in the formulation of symbiotic fermented beverages supplemented with L-tryptophan and red fruit pulp is innovative. Therefore, this project aimed to investigate the behaviour of ellagic acid in symbiotic lactic beverages supplemented with L-tryptophan and red pulp fruits during cold storage. Through an experimental simplex centroid design for mixtures modelling 16 beverages were prepared divided into four different matrices according to : (i) enrichment or not with L-tryptophan and (ii) composition of the prepared fruit pulp. The responses to be evaluated will be defined between the physical-chemical (pH, rheology and colour attributes), microbiological, microstructure and the amounts of ellagic acid. Lactic beverages have shown low post-acidification without significant variations for beverages containing tryptophan. The improvement in the viability of the probiotic bacteria Lactobacillus acidophilus throughout the study period was achieved. The colour parameters were stable during cold storage. The rheological behaviour was similar and the addition of red fruit pulps provided a beneficial effect on the consistency and viscosity of the products. It was possible to estimate the optimum amount of ellagic acid throughout response surface methodology. Lactic beverages added with strawberry pulp have had higher amounts of ellagic acid, particularly when L-tryptophan was supplemented. The photomicrographs obtained by scanning electron microscopy allowed adequate assessing the interaction of the matrix components of symbiotic lactic beverages.
