Bloom : Thoughts for food— re-thinking the norms of (toxic) consumption and masculinity

An exploration of the idea that tangible change could be made in the world when norms are unsettled rather than reinforced or left untouched. Bloom focuses on creating a space for the individual to re-define the outdated, toxic norms surrounding masculinity to explore ‘what men can be’. This is tied into questioning ‘what food can be’ — now and in the future — in relation to the norm of consuming animal food products in western societies. In collaboration with people who have actively reduced their meat consumption or identify as plant based or vegan, I have aspired to use my practice as a visual communicator to illustrate connections and reveal hidden narratives of these individuals who are already challenging these norms as change agents within society. The outcome is the Bloom Box — an interactive box containing their stories visualised with ‘out of the norm’ plant foods.

The Impact of a University Wellness Requirement on Student Nutrition and Physical Activity Behavior

Purpose: The Brigham Young University General Education Wellness Program has three options available to students to fulfill the programs requirement. The purpose of this study was to assess the impact of these three wellness options. Specifically we wanted to know; does the university wellness requirement affect student nutrition and physical activity behaviors and do the various options available differ in their abilities to impact student nutrition and physical activity behaviors? Methods: A three-group pretest/posttest design was used and a survey was administered, at both the beginning and end of the semester, to all students enrolled in HEPE 129, live and online, and all 100 level Physical Education activity classes. The final study design included 303 student responses from HEPE live, 551 responses from HEPE online and 270 responses from the activity classes. Data analysis of between and within group differences was conducted for each nutrition and physical activity behavior. Results: HEPE online students had small but significant improvements in estimated VO2 max, and in the percentage of students who ate bran or whole grain cereal once/day or more. The activity classes increased significantly for almost all of the physical activity behaviors including estimated VO2 max, days/week of moderate activity, and the percent of students getting 30 minutes/day of vigorous activity, but only one of the nutrition behaviors, whole wheat food intake. HEPE live students increased for every variable, some more significantly than others. Conclusion: These findings suggest that of the three wellness options offered at Brigham Young University, the HEPE live class had the largest impact on improving nutrition and physical activity behaviors across a one semester time period, the activity classes had the next largest impact, and HEPE online had the least impact.

Disordered Eating Behaviour, Unhealthy Eating Patterns and the Association with Body Mass Index among Canadian Youth Aged 12-17: A Cross-sectional Study

This is the final submission of my Masters Thesis. / OBJECTIVES: Cognitive disordered eating behaviours (body shape concerns) are prevalent among youth with higher unhealthy body mass indexes (BMIs), while physical disordered eating behaviours (unhealthy changes in eating habits) are common mechanisms in determining future BMI. This thesis investigates the associations between these disordered eating behaviours and BMI categories and evaluates potential covariate modification. As a secondary objective, this thesis investigates the association between unhealthy eating patterns and BMI categories. METHODS & DATA ANALYSIS: This study was conducted among Canadian youth aged 12-17 (n=12,350). Body shape concerns were measured as the frequency of having a preoccupied desire to be thin while changing eating habits was measured as the frequency of changing eating habits to manage weight. Unhealthy eating patterns were defined as frequent restaurant eating, energy drink consumption, and skipping breakfast. Categorical BMI classifications consisted of obesity, overweight and normal/underweight. Adjusted multinomial logistic regression models were constructed. Covariates were independently tested for statistical interaction in the primary relationships. Measures of association were reported as adjusted odds ratios (ORs) with 95% confidence intervals. RESULTS: Having a preoccupied desire to be thin was associated with increased odds of being overweight and having obesity. These relationships were modified by sex, physical activity, and sleep. Changing eating habits to manage weight was associated with increased odds of being overweight and having obesity. These relationships were modified by sex. Skipping breakfast increased the odds of being overweight and having obesity, while consuming energy drinks increased the odds of having obesity. CONCLUSION: Over 40% of the sample experienced some frequency of having body shape concerns or changing eating habits to manage weight. These disordered eating behaviours increase the odds of being overweight and having obesity. Continued monitoring through national–level surveys, will be crucial in understanding changes in rates of disordered eating behaviour. / Thesis / Master of Public Health (MPH)

Guidance implications related to the eating habits of adolescents

Text in English / Due to the fact that many adolescents do not follow a balanced diet, an investigation into the eating habits of adolescents was undertaken. Much research has been done on eating disorders but little research has been done on the concomitants and possible precursors to unhealthy eating habits among adolescents. A literature study was done to clarify which factors cause unhealthy eating habits. The developmental aspects of adolescence and the reciprocal effect on eating habits was also investigated. A valid and reliable measuring instrument was developed in order to measure eating habits of adolescents. This instrument was used in an empirical investigation including 340 respondents with the aim of determining the most important factors, which relate to the eating behaviour of adolescents. Educational implications of the findings are discussed in order to provide curriculum developers, teachers, parents, counsellors and the media with guidelines to help children to adopt healthy eating habits. / M.Ed. Är Instagram en pådrivande faktor till utvecklande av Ortorexi? : En kvalitativ innehållsanalys om hur flödet av bilder på Instagram påverkar unga kvinnors kroppsuppfattning, fysiska aktivitet och matvanor i relation till fenomenet ortorexi.

The aim of this study was to explore if young women aged 18-20 years experienced that Instagram affected their body image, their physical activity and their eating habits in relation to the phenomenon orthorexia. The method for the study was a qualitative content analysis based on semi-structured interviews with four young women with the age of 18-20 years old. The results showed that Instagram affected young women's body image, their physical activity and their eating habits. Primarily body image and physical activity were most affected, eating habits were less affected. The results showed that there were both a positive and a negative impact, but by far a negative impact. Respondents experienced feelings like anxiety and guilt when, for example, a training session did not go as planned or after they had eaten an unhealthy meal. Their mindset and emotions that came forward in the results were partly linked to the phenomenon of orthorexia. The young women were adversely affected by the pictures and videos on Instagram and also by other social media. They exposed themselves to develop mental and physical ill health. Society should consider prioritizing the young women to prevent them from falling into the mindset that is similar to the phenomenon of orthorexia. / Syftet med studien var att utforska vad unga kvinnor i åldern 18-20 år hade för upplevelser och erfarenheter om hur Instagram påverkade deras kroppsuppfattning, deras fysiska aktivitet och deras matvanor i relation till fenomenet ortorexi. Metoden för studien var en kvalitativ innehållsanalys baserat på semi-strukturerade intervjuer med fyra unga kvinnor i åldern 18-20 år. Resultatet visade att flödet på Instagram påverkade unga kvinnors kroppsuppfattning, deras fysiska aktivitet och deras matvanor. Främst var det kroppsuppfattning och fysisk aktivitet som påverkades, matvanor påverkades mindre. Resultatet visade att det både var en positiv och en negativ påverkan, däremot var det främst en negativ påverkan. Respondenterna upplevde känslor som ångest och skuld när ett planerat träningspass uteblev eller efter konsumtion av en onyttig måltid exempelvis. Deras tankesätt och känslor kunde delvis kopplas till fenomenet ortorexi. De unga kvinnorna påverkades negativt av flödet av bilder på Instagram samt andra sociala medier. De utsatte sig själva för risken att utveckla psykisk och fysisk ohälsa. Samhället bör överväga att prioritera unga kvinnor för att undvika att de hamnar i det tankesätt som liknar fenomenet ortorexi.

The first chapter of the theoretical part deals with nutrition of children, proper diet composition, nutritional habits and their formation and also mistakes in nutrition. The second chapter focuses on the education of children of primary school, the area of healthy nutrition in the Core curriculum and health education in the school and its integration into teaching. It continues describing projects which are already operating and promoting healthy eating habits. The practical part presents data on the eating habits of pupils acquired by questionnaire method. This thesis deals with nutrition and diet, especially at a young age. The aim of this thesis is to investigate and compare the dietary habits of selected pupils from the Czech Republic and Denmark. It is divided into theoretical and practical parts. The theoretical part deals with the basic elements of nutrition, proper eating and water intake, general nutritional recommendations for children and adults, and nutrition of children. In addition the theoretical part of the thesis is focused on a catering in the Czech Republic and Denmark. The practical part contains results of a research concentrated on eating habits of a selected group of school children in the Czech Republic and Denmark. As a method of data collection was chosen the written form of an anonymous questionnaire. As part of the survey were compared to partial aspects of eating. These were mainly the consumption of fruits, vegetables, sweets, soft drinks, dairy products and fast food. The survey shows that a selected group of Danish children in selected aspects eat better. A group of Danish children consume more vegetables and fruits and consume more whole grain dark bread instead of light. Diploma thesis Fenomén labužnictví a časopisy věnující se gastronomii na území České republiky v letech 2004-2012 is devoted to the questions of publishing gastronomical magazines in Czech republic in the years 2004-2012 and describes the culinary trend which is frequent issue of the Czech media discourse in the year 2012. The first parts of the thesis deal with the sociological perspectives on food, its role within society is explained as well as its ability to produce the meanings and symbols and to express social differentition. The attitude of Czech population towards food and lifestyle is characterized. The following chapter focuses on the culinary trend in various kinds of masmedia content, it reveals the context of the trend, its impact and the way it is represented in Czech republic. The last two chapters of the thesis deal with the gastronomical magazines, which are divided into two main categories according to their content. The current situation on the Czech market with magazines is explained. The final chapter focuses on selected gastronomical magazines F.O.O.D. Apetit and Gurmet which are analyzed from the point of their sections arrangment, graphic design, advertisement and language. Short semiotic analysis of selected articles is presented.
