Como pressupostos epistemol?gicos orientadores do estudo, adotamos a Psicologia S?cio-hist?rica e as categorias subjetividade, sentidos e significados (significa??es). / Disserta??o (Mestrado Profissional) ? Programa de P?s-Gradua??o em Sa?de, Sociedade e Ambiente, Universidade Federal dos Vales do Jequitinhonha e Mucuri, 2017. / This study aimed at revealing the meaning linked to Food and Nutritional Education (FNE) by analysis and interpretation of meanings that teachers of the elementary school had. As epistemological suppositions guiding this study, we adopted the Sociohistorical Psychology and the subjectivity, meanings and significance categories. This theoretical and methodological reference allowed the acknowledgment of subjective issues as pertaining of the person and the reality and, therefore, fundamental for the understanding of the inclusion process of the FNE by the teachers in the school context. The field research was developed in three city schools of Diamantina/MG, with the participation of six teachers of elementary school. As tools of information production we used the semi-structured interview and, to proceed in its analysis and interpretation, we were inspired in the proposal of Aguiar and Ozella of the Significance Core and also in the complementary strategy of the Theme Core. From the teachers? speeches, we selected three Theme Cores: 1) Significance related by the teachers to the concept of FNE: concepts and implications in the knowledge construction, 2) Process of (non) inclusion of FNE in the school context: difficulties and challenges and 3) Significance of the performed actions: the punctual character, shared responsibilities and the progress possibilities in the FNE approach. Elements as the strictly nutritional of the concept of FNE, the ideia that they had on FNE as a relevant topic, but that in opposite, they do not find objective conditions for its inclusion, the punctual character of the actions, and the given responsibility to the health professionals, the school and/or family, the interdisciplinary and transversal actions connected to the instrumental logic, the FNE as another subject to be worked with are the subjective meanings given by the teachers to the FNE and justify its not inclusion. We consider that these revealed elements help to understand how FNE is lived in the school context. Hence, the final reflections of this research point to the necessity of thinking the training and reality of teachers in the city school in order to an increased autonomy of action of these professionals, and the developing of creative strategies for the inclusion of FNE as a reality in school.

This is a descriptive study with a cross-sectional design. To calculate sample size, it was considered a margin of error of 20%, confidence level of 95% and prevalence of 52.5% for verifying nutritional information in a pilot study conducted in 2007. A total of 145 subjects were interviewed, resulting in 371 consumers in Natal, Rio Grande do Norte, Brazil, in order to determine prevalence of consulting nutritional information contained on food labels as a nutritional guideline for consumers and its association with sociodemographic variables as well as identify the intervention measures suggested by intervieweds so that this information can be better used to select healthy foods. Twenty-five of the 69 supermarkets belonging to the Supermarket Association of Rio Grande do Norte (ASSURN) were randomly selected. Data collection relied on interviews and extensive direct observation, using a semi-structured form composed of eight closed questions, some of which were multiple choice, and ten open questions. The chi-square test was performed for statistical analysis, using Statistical Package for Social Sciences (SPSS) 15.0 software. Label information most consulted was: expiry date (91.6%); product brand (49.4%); nutritional information (47.0%); zero trans fat (32.9%); zero sugar content (12.8%); zero fat content (3.0%); rich in fibers (2.7%); whether light or diet (30.4%); list of ingredients (16.8%); whether the product contained gluten or not (4.1%). When asked about the importance of nutritional information, 96.8% of the subjects responded important or very important ; of these 46.6% and 3.8% reported partially or totally understanding the information presented. It was found that 41.6% of the consumers consulted nutritional information for dietary reasons related to nontransmissible chronic diseases and 35.7% to be able to choose healthier foods. The data show a significant association between motivation to choose healthier foods and higher family income and schooling (p<0.0001). The intervention measures mentioned to make nutritional information better understood and used were: information and orientation about nutritional information, provided by qualified professionals in the supermarkets, the commercial establishment or the product manufacturer (73.9%) and media disclosure about the nature, importance and purpose of nutritional information (42.9%). In despite of communication noises the consumers use the nutrition claim for the nutritional guidance, showing association with some demographic variables.

Constru??o do jogo; III. / Current society has been preoccupied about childhood eating habits because of the rising prevalence of overweight / obesity in this stage of life. However, in so far as children increasingly take ownership of technologies, Serious Games in the perspective of Food and Nutrition Education can contribute to the improvement of this scenario. This study aimed to develop and to evaluate a Serious Game of Food and Nutrition Education for schoolchildren between 7 and 10 years in the city of Natal-RN. This is an action research of qualitative approach and developed by the technique of participatory design under the light of the perception of Merleau-Ponty, whose methodology involved three steps: I. Understanding of the participants about food and interests to the game, besides testing of a paper prototype; II. Construction of the game; III. Evaluation of satisfaction and perception of the game by schoolchildren. Results of step one showed that the students' understanding of healthy foods was influenced by parents, teachers, socioeconomic factors and the media. As for the electronic game, the interviewees proposed the inclusion of the themes of physical activity and hygiene habits. The prototype test pointed to the need for improving menus and characters, as well as adapting the game script. This was materialized by the creation of the Ran-gO? game under a structure of role-playing game in which the player assumes the role of a character. In step three, the user satisfaction test demonstrated children's satisfaction as to knowledge about feeding, motivation and user experience. The need for adjustments was identified in order to reduce information overload to increase confidence. The older the child the higher was the satisfaction. However, there were difficulties of those with seven years in relation to the ability / competence to play. The perception assessed by means of interviews in the last step was associated to the nutritional quality of the food and the amount consumed by the character in the game environment, and there was contextualization of the child to its real life. The perceptive experience was related to the past and the present of the child, which can lead to habit, in a relationship with the future. Ran-gO? shows itself as a Food Education tool fruitful as what concerns informing the child about food habits to make its choices consistent with its needs.

Alimenta??o e nutri??o: conhecimentos de educadores do munic?pio de ?gua Boa, Minas Gerais / Food and nutrition: knowledge of educators at ?gua Boa, Minas Gerais

MAGALH?ES, Heloisa Helena Silva Rocha 29 March 2016 (has links)
The knowledge of educators on food and nutrition are the basis for the formation of healthy eating habits in schools, and are essential for the process of food and nutritional education of children. Therefore, know how they're built all of this knowledge for this group it is extremely important for educational planning and health. Thus, this study aimed to analyze knowledge about food and nutrition of all educators of early childhood education of ?gua Boa, Minas Gerais. A survey was conducted with a qualitative approach, grounded in the theory of Social Representations, with all preschool teachers of ?gua Boa. It was found that all are female and 86% have completed higher education. Most educators has participated in educational activities involving the issue of food and nutrition and report the project stocks on the subject in the school in which they work. It was found that none of the educators part of the school faculty of its institutions, although 80% of these educators anyone knows the political pedagogical project. For educators, food and nutrition education is important to promoting healthy eating habits of children. However, the knowledge of educators and nutritional education are based on the biological feed perspective, covering its relationship with the body and health. Cultural, social and psychological dimensions of food and nutrition education are not recognized by educators. The issues involving food and nutritional education are taught in isolation by educators. It follows that educators have their knowledge food and nutrition education built on biological feed perspective, making it necessary to carrying out work with this group on the other dimensions of food and nutritional education, through the enhancement of food culture, the local food system. These educators need encouragement to participate in the school faculty, as well as working the theme of food and nutritional education transversely.

This paradigm is essential in the author's work. So, the search on screen is based on this perspective, by using inter-subject groups of work conduced by professionals of Computer Science, Social Communication, Architecture and Urbanism, Pedagogy, Psicopegagogy, Nutritional Science, Endocrinology, Occupational Therapy and Nursing, it was also part of this group an 8 year old child, daughter of one of the professional who took part of the group. This thesis aims to present the course of investigation developed, analyzing the action of inter-subject Occupational Therapy and Nutrition on the promotion of learning nutritional concepts through educative-nutritional games in order to prevent child's obesity in an educative context. The research was analytic, interventionist and almost experimental. It took place in a public school in Fortaleza, Cear?, Brazil, between August and December 2004. It was selected a sample non-probabilistic, by convenience, of 200 children, born from 1994 to 1996. It was selected almost nonprobabilistically, by convenience, 200 children born between 1994 and 1996. To analyze the results it was used a triangulation, associated by quantitative and qualitative approaches. The basis collect happened through games specially manufactured to these research- video-games, board games, memory games, puzzles, scramble, searching words and iterative basics. There were semi-structured interviews, direct and structured observations and focus in-groups. It was noticed the efficiency of educativenutritional games in the learning process, which lead to a changing of attitude towards the eating choices. These games gave similar results in relation to the compared variations preferences, experience and attitudes, theses attitudes were observed through the game; and the categories to compare the possibility of learning by playing, the fantasy in the learning process, learning concepts of nutritional education and the need of help in the learning process (mediation). It was proved that educativenutritional games could be used to teach nutritional concepts, in an inter-subjective action of Occupational Therapy and Nutrition in schools. The simultaneous application of these games lead to the optimization of child s learning process. It should be emphasized the need of studies about the adaptation of tools used in a child s Nutritional Education, with the help of inter-subjective action. Because just one subject, in a fractionated way can give an answer to complex problems and help to a change of the reality with effectiveness and resolution / A interdisciplinaridade constitui resposta na busca de solu??o de problemas complexos, e contempla as interfaces dos saberes, respeitando suas fronteiras.
